Quick Cabbage Slaw

This quick, simple slaw is a staple in my house. Perfect when you need something acidic to balance a savory dish. Everyone loves this, including my toddler only for her I leave out the red onion. It’s also low-carb, vegetarian, gluten-free and whole30 compliant.
A few weeks ago I updated the photo on my Slow Cooker Pernil Recipe (this is on regular rotation in my house) and I often serve it with this quick slaw. I’ve since gotten so many emails on how to make the slaw, so here it is. Hope you enjoy!
Quick Cabbage Slaw

Delicious! So quick and easy to make too. I made it as a side with fish tacos and it was a hit with the whole family. Already pinned on my board for next time. 😋
Can I just say yum! I’ve never been a fan of sweet mayonnaise laden coleslaws. This is easy to make, savory, and keeps well. Plus it’s delicious!
One of the things that I love about your salads/slaws is that they require so little dressing, but pack so much flavor..
We’re having this again tonight along with your seasoned sweet potato wedges and your buttermilk oven “fried” chicken (both Skinny Taste Cookbook recipes). So glad we found your site. Dinners are really good and we’re losing weight!!
Thanks Katy! So glad you are enjoying the recipes!
Great side dish. Made this as part of a large Memorial Day feast with grilled summer squash and asparagus, pulled pork, and Gina’s Instant Pot Brown Sugar Baked Beans (also delicious).
Thanks Maria!
Love the dressing on this slaw. I bought prepackaged slaw and added onion, redpeppers and the oil and vinegar. Super easy!
It’s rare that I find a veggie recipe like this that is a) fast and easy, b) healthy, c) cheap, and d) tasty enough that the whole family is happy. It’s a keeper! I keep a 4-quart restaurant food prep container full of shredded cabbage at all times, this is a nice way to use it up and make sure we all get our veggies. Thank you!
Loved this slaw. It was delicious and the whole family enjoyed.
Does it have to be apple cider vinegar or would red wine vinegar work ?
This cabbage slaw is so good! I will definitely be making it regularly!
My husband who is normally a creamy coleslaw kind of guy, loves this slaw! On the other hand I’m not a big coleslaw fan but this recipe converted me. I make it often now because it goes well with so many things. Sometimes I cheat and use coleslaw mix.
These days I buy grass-fed beef and I saw this recipe goes with pork. What is the best, healthiest way to get pork?
So glad to see this recipe for a fresh summer salad without the lettuce …I’m still nervous after the romaine scare.

I make this often; however, I use only 1 T olive oil; I find the full 2 T. is too much. I sometimes add carrots or radishes. I often add cilantro and serve it with tacos, burritos or other spicy dishes.
Have made slaw similar to this for a long time. Great to go with barbecue. Made it today to go with Crock Pot Balsamic Pork Roast.

Easy and delicious! Love the fact that it’s super tasty and not mayo based. Made it to go with the shrimp cakes.

This is probably a REALLY dumb question… is white cabbage you ask for here the same as green cabbage? Or if not, which type? Thank you!
Yes
How long work cabbage slaw stay in the fridge? It’s my favorite I want to make it in a larger quantity?
I personally like to eat it right away.

Just made it! So great and refreshing for these warm days ahead. Thanks!
Can you make this the night before? Will it still be good? Or should you make it fresh just before dinner?
I think it was best made before dinner. SO GOOD….ate with pulled pork on top as a salad with side of jalapeno pickles and marinated artichoke hearts.
I found the slaw tastes even better the next day. Great recipe…I added more vinegar as well.
This is so good! Everytime I bring it to an outing, it gets tins of compliments!
Very Tasty! I added shredded carrot and a lot more vinegar. We will be having this at a tailgate with pulled pork.
I have been making this at least twice a week. I love this simple recipe!
This sounds simple and delicious. May just go the lazy route and make it with broccoli slaw and maybe some pulled pork or chicken
The quick cabbage slaw makes a great dish. Thanks a lot for posting this recipe. 🙂
Coleslaw is a staple in our house during the warmer months! This sounds wonderful!
totally agree with you jamie! I love any type of slaw sans mayonnaise!
Yum! Would go great with sesame seeds!
Gina, l love your menu plans, recipes and shopping list. Thanks for sharing. It saves me so much time and we love everything you post.
Looks delish, can't beat yummy and healthy!
Slaw is such a staple around here – especially in the summer! This looks a little spicy and delicious!
Why spicy? There’s nothing spicy in this recipe
Probably very sensitive to the pepper.
We make a slaw very similar to this recipe. I agree…. this is a teensy bit spicy, but delicious!
