This recipe is perfect for a busy weeknight because it’s quick to prepare and only requires one pot for cooking. Plus, it’s packed with flavor from the sausage, spinach, and corn, and the orzo adds a satisfying and creamy texture. I love one pot meals so much I wrote a whole cookbook with one pot dinners! My husband and I have traveled all over Italy (it’s one of our favorite places!) and we just love easy Italian pasta dishes like this orzo that combine simple and fresh ingredients to create something so irresistible.

Italians put so much passion and love into their cooking, and you can really taste the difference! Our favorite restaurants in Italy also use the highest-quality ingredients that are sourced from regenerative farms that are healthier for humans, animals and this beautiful earth.

And when I cook at home, I do the same! For this dish I used organic produce and certified humane sausage from a local regenerative farm (for more on regenerative agriculture check out the awesome film Kiss The Ground).

It’s amazing how combining just a few fresh and healthy ingredients produces such a tasty and satisfying dinner! I serve this orzo with a big green salad and some Italian bread from my local bakery.

How do you cook orzo?

You cook orzo the same way you would any pasta. Add the pasta to boiling water and cook until al dente, approximately 8 to 10 minutes.

Is orzo gluten free?

Because orzo looks like rice, some people assume orzo is gluten-free, but traditional orzo is not gluten free. Gluten is a protein found in wheat, and orzo usually made from semolina flour, a type of flour that comes from durum wheat. However, some brands, such as DeLallo, have created a gluten-free orzo.

Is orzo healthy?

Orzo and pasta can be a part of a healthy diet. It is a good source of carbohydrates, the bodies preferred energy source, and you can pair orzo with lots of different veggies and proteins to create a delicious and balanced meal.

Instructions

  • Remove the sausage from the casing and add it to a heavy bottom sauce pot or Dutch oven.
  • Cook over medium-high heat for 5 minutes, breaking it up with a wooden spoon.
  • Add the onion and corn (no need to thaw) and sauté for 10 minutes.
  • Add the orzo and chicken broth, stir to combine then bring to a boil.
  • Reduce heat to medium low and simmer 10 minutes, stirring every few minutes and scraping the bottom of the pot to make sure the orzo doesn’t stick.
  • Remove from the heat, add the spinach, stir and cover for a couple minutes, until the spinach has wilted.
  • Top with freshly grated parmesan and black pepper, to taste and serve.

  1. SO. GOOD. 30 min and DONE, includes prep/chopping and cooking. I doubled it, used 5c bone broth instead of 6, and did 4c spinach instead of 6c for family taste. will absolutely be in the rotation

  2. This was delicious and received many compliments in my house! I did use hot Italian sausage because that’s what I had on hand, which I think probably brought even more delicious flavor! I also added a little extra orzo and 4 cups of broth to use up the entire container. Will go on the rotation!

  15. 5 stars for ease AND taste. I used extra chicken sausage since I would have been left with 2 extra links. I used the entire bag of baby spinach, but it wasn’t much over the 3 cups recommended, because I know spinach wilts down to almost nothing. This dish was a home run with me & my daughter.     The mild Italian sausage we got happened to be really spicy, so my 13 yo didn’t like it. My husband and I did though, and I also liked the leftovers I had today. Good combo of ingredients and love the ease of one pan.

  20. This was super easy and REALLY tasty! Although my 1yr old and 5yr old were not a fan (both can be quite picky), my teenager who HATES sausage loved it and asked for seconds!! I did substitute Italian turkey sausage, since I could not find chicken, but kept everything else true to the recipe. I will definitely make this one again!

    1. We love this! It’s a staple in the rotation because it’s easy, hearty, and healthy. I add sun dried tomatoes occasionally and definitely add more seasoning. Sometimes I’ll use a seasoned chicken sausage as well. 2 kids under 4 and one I pull some out before adding the spinach. Other one will eat it all! We call it sausage rice/pasta haha

  24. Nice change of what I usually make for a one pot meal. I had two leftover kielbasa so they went into the pot with the Italian chicken sausages. Summery, and a nice use of my homemade bone broth! Splash of lemon at the end but otherwise followed as written. Another winner from this site!

  30. This is one of my favorite recipes! It’s perfect for a veggie dump. I added zuchinni, and brocolli tonight, but mistakenly bought Chickpea Orzo which isn’t holding up very well- mushy. It still tastes good.

  31. we make this recipe often & love it. the only change is I slice chicken sausage links instead of crumbled sausage & we also add a can of chickpeas for some extra protein & fiber. we also double it every time for leftovers because it’s so good!

  32. It is a little bland, with the left overs I threw in a spicy italian sausage and It gave it some MUCH needed flavor. I would make it again omitting the mild italian sausage and using spicy italian sausage.

  33. I made this this week using quinoa instead of orzo (simply b/c we already had that on hand), and it came out great! It worked well with a larger batch for leftovers. I had to use pre-cooked chicken sausage b/c our store didn’t have uncooked, but it was still great. It will probably be more flavorful with uncooked though, so I’ll keep an eye out for it to make this again soon.

  38. I just made this recipe. I used Jalapeno chicken sausage from Trader Joe’s. I also used gluten free orzo. I added a little fresh basil and fresh garlic. I used plant based Parmesan cheese. Most things I use are organic. I used organic chicken bone broth from Trader Joe’s and used half broth and half filtered water, to cut down on the sodium. It was very good 😋.

  39. This recipe instantly went into our regular rotation. The first time I made it, I followed the directions as written and it was a home run (I hate when people review recipes based on the things they changed). That being said, this is a very versatile recipe, and we now sub in different veggies for the corn depending on what we feel like, red bell pepper is really good in this! That is really the only thing we change in it. I probably add more spinach than what is called for, one of my daughters loves spinach and when we make it keeps telling me to add more and I never measure it! It is great leftover either warmed up or as a cold pasta salad. The first time I made it, my oldest had just come back from college and thought it was a cold pasta salad in the fridge and loved it that way! Do not sleep on this recipe!

    I devoured this!! Only thing I changed was adding garlic and a lot more Parmesan than 1/4 cup. So easy and quick, and now I have yummy leftovers for tomorrow!

  42. I made this tonight. Very simple so that’s good. But it was pretty bland. I might try it again but I would add a lot more flavors. Probably cherry tomatoes (or maybe sun dried), some garlic, and more. A good start.

  43. It was good but unfortunately I could not find orzo nor Italian sausage in our grocery store so I made risotto and ground up beef instead which turned out fine and I did have to add a little bit of seasoning and a tint built of salt to mine.

  45. I made this yesterday and we thought that it was really delicious. I added 2 garlic cloves and 2 bell peppers (red and orange) that I needed to use. I used 2 cups of broth based on the reviews.

  47. This is unique and delicious! It’s also easy to make. Both times I made it though, it comes out very soupy. Should I drain the sausage? Use less broth? This time I added some white kidney beans to try to make it thicker (and add fiber).

      You probably figured out a solution of your own, but I cut my broth down to 2.5 cups. I also added more like 1/2 cup Parmesan cheese and that seemed to help mine a lot! It’s so good!!

  48. I made this last night for our family of six. Straight up doubled everything. I used two packs of ground sweet Italian sausage – much easier than ripping casings off links. I shot it with a few squirts of lemon juice before adding the spinach. Everybody liked it! Thanks very much.

  63. This is great, the kids love it. I add the frozen corn much later because otherwise it’s cooking for like 20 minutes which I think makes it chewy. The chicken sausage here in the UK is pretty salty so have to be aware of that, but it’s really good

    Quick , easy and tasty weeknight meal. The last few times I made this I added diced peppers and garlic alongside the corn.

      That’s a great idea! I find it takes longer than
      10 minutes to cook down the broth. Adding more orzo or less chicken broth would probably help! This is a favorite recipe in our house!!

  71. Yummy. I made a few substitutions:I used Garlic chicken sausage, from Trader Joe’s(no casings) and Barrillo’s Gluten Free Orzo, made from chickpeas. I minced the sausage in a blender, and added it after I sauted the onions. Based on some of the reviews, that mentioned the final product being a little soupy due too much broth, I only used 2 cups of broth. However, gluten free pasta, made from chickpeas, takes longer to cook. That said, next time I’ll use the full 3 cups; I had to keep adding broth due to the pasta not being done, in the allotted 10 minutes, with just 2 cups.
    Overall, another easy, healthy, and delicious dish.

  86. I accidentally bought precooked chicken sausages from Aldi’s (tomato and basil flavor) but put them in the food processor to make it more similar to a ground chicken consistency. Turned out with great flavor! Ours did end up a bit soupy for some reason but still worked great.

  89. Had a big 16 ounce box of fresh spinach that needed to be used and this was perfect! Used a whole bag of frozen corn as well. Also switched the orzo out for brown rice to make it a bit healthier. Super fast and so good! Will definitely make again!

  90. I’m guessing because this was published in December is the reason why frozen corn is suggested. If you are making this during the time of year where corn is fresh, I would suggest doing that. The frozen corn kernels are chewy and stick to your teeth and take away from the overall enjoyment of the meal. Also, would likely recommend switching the sausage out or just not removing the casings. It was a total pain to have to peel the sausage only for it to not get really crumbly in the pot. It has potential but needs some doctoring up.

    We loved this recipe! I used ground chicken sausage because my local store didn’t have Italian sausage. It came together in about 30 minutes and was so easy and flavorful!

  108. This recipe is AMAZING, but…some notes after making a few times. First, make sure you buy a flavorful sausage as it is the primary flavor. We used the Trader Joe’s Italian chicken sausages. They were super flavorful and I only used half the package (8oz). It was very robust. We also cut down on the broth as the pasta cooked quickly and it was quite soupy the first time. I’d say 2 cups of liquid is plenty for one cup of pasta. Finally, you can infinitely adapt adding additional veggies, but don’t skip the corn! It’s an important sweet counterpoint to the salty broth/sausage flavor. Loved it so much.

    1. If you sit the sausages in water for a few mins, the casing will come free and you can pull it right off – at least in the ones I buy! Just don’t leave them in the water forever. 🙂

  122. This one is salty. I saw the other comments about saltiness so I used water instead of chicken broth. I think next time I’ll just use ground turkey. This was super easy. I did the sautee as directed in the instant pot, dropped the water to 1 cup and pressure cooked for one minute. So fast and I didn’t heat up the house. Will add more spinach next time

This is not the most attractive dish and wouldn’t serve it to company , but it’s an easy and tasty midweek meal.

    Loved it. I subbed peas for corn and used Al Fresco roasted garlic chicken sausage rather than Italian sausage. I used about 2.5 cups of broth and 1/2 cup of Parm cheese and it was perfect.👌🏻👌🏻👌🏻👌🏻

  182. Delicious! My husband and I enjoyed every bit of it. I also added mushroom and canned diced tomatoes to bulk the recipe up a bit. Didn’t have any orzo on hand but did have leftover cooked white rice. Just omitted the broth and it still all came out creamy and perfect!

      So this was delicious.

      I did modify a bit.
      Added mushrooms and grape tomatoes instead of corn because that’s what we had. Also added spicy sausage, fresh basil and oregano.

Made this in my Instant Pot since we are currently experiencing a power outage after an ice storm (our generator only powers some household essentials like furnace/AC, sump pump, well pump, fridge/deep freezer and a few plugs to charge things). Sautéed the sausage and onions dumped the corn and orzo in, added broth to just cover, set to high for 3 min. Natural release then added spinach, Parm and seasoning! Yay quick dinner!

Figured it would need a little fat since it was already cooked. The spinach was from my garden and was a great addition! I used my own homemade chicken stock (Ina Garten’s recipe) and that always gives a much richer flavor than just low sodium chicken stock. It’s pretty low in sodium to begin with. I’d make this again! Cooking the orzo like risotto is the way to go! Just takes a little more time than 10 minutes- more like 20.

    Great meal – so easy and quick! I made it the first time exactly as written but didn’t have the right ingredients the second time (only had chicken apple sausage, fully cooked), so I used the recipe as a base. Subbed the sausage I had, added garlic and about a teaspoon of thyme with the onion and corn, and deglazed with 1/4 cup of dry white wine before adding the chicken stock. Everything else (orzo, spinach, stock) was the same. So good! I realize that’s not the recipe, but sharing it herer to say that this is a great foundation for lots of combinations and a very forgiving recipe!

  242. I always wanted to try orzo pasta and I had been looking for recipes to try it out. I found this one and I made it today. I hear read some if the other reviews about 3 cups being to soupy, so I reduced it 2.5 cups and it came out amazing. Can’t wait to try out other recipes!

  245. Can rice be substituted for the orzo? I made this recipe and it was good but still had liquid. But I did use frozen broccoli bits instead of spinach and I used canned corn instead of frozen. I think I would like this dish better with rice. Any suggestions

  246. We enjoyed this! I added a little crushed red pepper flake, (which I always do when using mild/sweet sausage in a recipe), when adding the corn and onions. Use plenty of fresh ground pepper!

  248. So tasty and easy to make. I used what I had on hand; canned corn instead of frozen, frozen onions and spinach instead of fresh. Cut down on the broth to account for the extra water that came off the frozen veggies. So good I forgot to add the cheese! I will definitely make this again.

  249. Very good! I used the roasted garlic chicken sausage links from Trader Joe’s. I added some diced red pepper as well to use it up. Very good and creamy; it did take about 30 minutes to fully absorb all the liquid but as long as you know that going in it’s totally worth it!

  250. This was super tasty! And it was easily adaptable to what we had on hand/at our grocer. We ended up with a sweet Italian sausage, small pasta (out of orzo) and 1/4 cup of mozzarella & provolone blend because I didn’t fresh Parmesan

    My toddler ate it allll up!

  253. A keeper. enjoyed it. Used Dellalo whole wheat orzo, reduced salt chicken broth. Huband did the parm. but i left off mine, thought great without. used 3 cups of broth, it took a bit longer to cook up, but the orzo needed it. Thank you. Easy recipe, not a lot of prep work.

    My husband LOVED this! He even had it for leftovers the next day—and he usually won’t eat leftovers!!! I loved it too. Great flavors and less fat from using chicken instead of regular sausage. Thankbyou!

    Used lean pork mild Italian – all I could get. No corn but chopped a bit of red and yellow sweet pepper – delicious and creamy

  257. This was really flavorful but like others it was very soupy and I cooked it down for quite a while. I also could not find (went to 3 stores) Orzo so I ended up using Israeli couscous and it was great.

  258. Love this dish! I like simple and flavourful dishes like these. Today I actually used the correct sausage but substituted the corn for red pepper because I had to use it up. It was just as tasty if not more so than the first time I made it.

    1. Absolutely love this as is!! The most tedious part for me is removing the shelling from the sausage, haha. Any advice?

      1. I make a slit with a serrated knife all the way down the sausage, the long way, and it is super easy to peel off then.

  262. Tastes great. I did add some Italian seasoning. Also I don’t think it needs 3 cups of liquid. It still was soupy even though directions were followed. Not sure why but next time I will use less liquid.

    1. Agree! I had to cook this a lot longer to evaporate the extra liquid. I bet the Italian seasoning was yummy.

  264. This was one of the simplest recipes to make, but the flavor is incredible. It’s hard to believe that just a few basic ingredients can turn into something so delicious! It was a bit soupy when I turned off the heat, but after sitting a few minutes it was perfect. This will definitely go into my dinner rotation!

    So I had to sub out the orzo for brown rice. Lets just say it didn’t go super well. Even after cooking like triple the time it says and adding liquid the rice was still crunchy. I gave 4 stars because it tasted great and I’m sure will be very good the next time I make it with orzo. Moral of the story, don’t do this recipe with brown rice.

I thought the corn seemed a bit weird when I read the recipe, but once I ate it, the sweetness it added as so special! Fabulous! Will definitely be making often.

  270. My family thought this was a weird combination- but we all loved it. I used gluten-free orzo and it took twice as long to cook and I had to add extra splashes of broth before it was fully cooked. Next time I think I will prepare brown rice separately and add it to the skillet at the end with a little broth to make it saucy. Also a very flexible recipe to be able to use what’s in your fridge.   271. This dish was very easy to make and it was enjoyed by my entire family. I followed the recipe without substitutions, and it turned out sweet and creamy. I used mild Italian chicken sausage, but if you prefer your food to have a little kick, I’d suggest a medium or hot sausage. Delicious and so simple!

  272. I used Jennie o lean ground Italian turkey instead of chicken.  It was a very comforting dish!  The whole family enjoyed it.  

    I used 4.5 cups of broth when doubling the recipe.  Turned out great.

      Sure you can but the overall consistency won’t be the same since the pasta is bigger pieces. May use less broth then add if needed.

  274. Excellent! I used smoked chicken sausage because that’s what I found in the store, and I left out the corn. Very good and very easy to make. Husband loved it. I’ll be making this one again.

  275. Excellent, delicious recipe and so simple. The only change I made to the recipe was to double it since I needed to serve more than 4.. I will definitely make this again but, if doubling, I might not fully double the amount of chicken broth used. I love these one pot meals!

This recipe was incredible!  I was looking something quick and always gravitate to one-pot for meal prep/planning.  It was so simple, I didn’t have high expectations on the flavor, but it was so creamy and hearty with no added salt!  The starch from cooking the orzo in the pan makes it really creamy and the corn adds a nice sweetness.  I used pre-cooked Italian chicken sausage since my market doesn’t carry the fresh, and I cut it in 1/2 circles and browned it in the pan first.  It’s key to keep stirring, at least when using the Le Creuset as recommended to avoid sticking.

  278. I ended up making mine with 1 spicy chicken sausage link and that gave it a nice boost of flavor. I also helped out my Target brand chicken broth with a little Better Than Bouillon paste. Nice, easy dinner that I was able to meal prep with. Thanks for sharing Gina!

  279. I was determined to make this dish.. I had to make some substitutions but I made it happen!

    Did not have sausage: used turkey but added seasonings to make it like Italian sausage.

    Did not have chicken stock: used Better than Bouillon vegetable broth

    Did not have spinach: used kale.

  281. i accidentally purchased macaroni instead of orzo, and the recipe still works incredibly well! super easy week night meal. I added in some old cherry tomatoes (when the pasta went in) and they added a nice additional flavor

  283. Easy, fast, and tasty meal! Love the one pot recipe, which made for fast clean up for a weeknight, too.  This meal is a great example of how versatile orzo is.  I topped it with some grated parmesan and red pepper flakes.  My husband also loved it and had multiple helpings!

  284. Hi everyone! This was my first time ever cooking orzo, and it was a very very easy recipe to follow! I followed it to the letter, and it resulted in a very delicious simple dish. I use frozen corn and a pack of frozen spinach that I had handy, and this came together in about 40 minutes as the recipe states. my one year-old seems to like it so far, so it’s pretty exciting! I talked mine with some crushed red pepper, Parmesan, and fresh ground black pepper, and I was very happy indeed!  I will definitely be making this again!

      1. Very good! I only had pork sausage so I added Italian seasoning, parsley and garlic powder and red pepper flakes to get close to recipe and used what spinich I had. I had skeptics but doubled recipe to feed 4 adults and its all gone! Always trying new ST recipes and always good.

    1. This will freeze well as the pasta is small, I always freeze recipes that have small pasta, when it’s a larger pasta I do not like the texture when is defrosts.

    1. Chard would work for this recipe but you might need to cook it longer. I would parboil the chard so the corn doesn’t get overcooked.

  294. Family just adored this. I doubled the size & used pork sausage instead of chicken.  Added a bit of garlic powder and crushed red pepper. It was savory, hearty, delicious without putting us in a food coma. 
    Kids were in line for seconds. We had one serving left and flipped a coin on who gets it for lunch. It was THAT good! 
    I will 10/10 make this again. 

      1. Can canned corn be used instead of frozen? And if yes would it be the same amount as I never really have frozen corn on hand.

    1. Hello – the sausage I used is chicken sausage as it really gives the dish a lot of flavor. You can try it with chicken, but you’ll need to add some salt or flavor.
