Happy Saturday! I was away in Jamaica last week for a fun family vacation, but I’m back and happy to be in my kitchen again. This is week 16 of my weekly dinner plans. I use The Skinnytaste Meal Planner pictured below to plan my dinners for the week (you can of course use any meal planner).
Skinnytaste Dinner Plan (Week 16)

A 52-week meal planner, food tracker and exercise tracker in one. I’ve included the Smart Points next to the recipes since I am currently on Weight Watchers. Also, if you have The Skinnytaste Cookbook, and currently on Weight Watchers, I have all the Smart Points listed here for your convenience.

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here.

Monday: Veggie Lasagna Stuffed Portobellos (meatless monday)
7 Smart Points
Tuesday: Crock Pot Chicken alla Criolla with brown rice
10 Smart Points total (5 plus 5 for 3/4 cup rice)
Wednesday: Crock Pot Minestrone Soup (makes enough for leftovers!)
with crusty bread (1 oz 2SP)
4 Smart Points plus 2 for bread
4 Smart Points 
Saturday: Date night out!
10 Smart Points

    Aren't crock pot recipes the best?!? I usually start one in the morning and by the time I'm done work for the day, supper is ready!!!

  3. I like recipes with smart points but there is only one of me. The world is full of recipes for 4 people- can't anybody cater for singles???

  4. Hi Gina, In your menu plan you say you are making the Minestrone Soup in the Instapot, but I am not seeing instructions on how to do that. Can you add them? I just started using the Instapot, so not sure how to convert the directions. Thanks!

  5. Gina, have been happily cooking from your site for years and finally joined WW. Planning to rely on you and hoping to emulate your healthy choices! a question: you used to have a search function on your site. I can't find it now. Am I missing something obvious?
