Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. VEGGIE LASAGNA STUFFED PORTOBELLO MUSHROOMS:
- Olive oil
- Baby spinach
- Garlic
- Onion
- Red bell pepper
- Kosher Salt
- Part skim ricotta
- Grated parmesan
- Large egg
- Large basil leaves
- 4 large portobello mushroom caps
- Marinara sauce
- Part skim shredded mozzarella
CROCK POT CHICKEN A LA CRIOLLA:
- (10) skinless, boneless chicken thighs
- Onion
- Garlic
- Bell pepper
- Plum tomatoes
- Alcaparrado or pitted Spanish olives
- Tomato sauce

CROCK POT MINESTRONE SOUP:
- White beans (cannellini or navy)
- Reduced sodium chicken broth (or vegetable broth)

- Fresh rosemary sprig

Aren't crock pot recipes the best?!? I usually start one in the morning and by the time I'm done work for the day, supper is ready!!!

I like recipes with smart points but there is only one of me. The world is full of recipes for 4 people- can't anybody cater for singles???
Hi Gina, In your menu plan you say you are making the Minestrone Soup in the Instapot, but I am not seeing instructions on how to do that. Can you add them? I just started using the Instapot, so not sure how to convert the directions. Thanks!
