This recipe was inspired by the abundance of tomatoes and basil in my garden. These grape tomatoes are so sweet and addicting. Toss them with some low carb pasta and diced chicken and you have a delicious, healthy meal in less than 20 minutes. Perfect for a busy weeknight!

Calories: 329.7 • Fat: 6.8 g • Carb: 48.3 g • Fiber: 7.2 g • Protein: 25.0 g
Ingredients:
- 2 skinless chicken breast halves, diced in 1 inch cubes
- cooking spray
- 1/2 tsp each of dried oregano and dries basil
- kosher salt and fresh pepper
- 8 oz spaghetti (high fiber or low carb) I used Ronzoni Smart Taste
- 2 cups grape tomatoes, halved
- 6 cloves garlic, smashed and coarsely chopped
- 4 tsp extra virgin olive oil
- 4 tbsp chopped fresh basil
Season chicken generously with salt, pepper, oregano and basil. Heat a large skillet on high heat. When hot, spray with oil and add chicken. Cook about 3-4 minutes, until no longer pink. Remove chicken and set aside.
Add pasta and cook according to package directions. Reserve about 1/2 cup pasta water before draining.
While pasta cooks, add olive oil to skillet on high heat. Add garlic and sauté until golden brown (do not burn). Add tomatoes, salt and pepper and reduce heat to medium-low. Sauté about 4-5 minutes. When pasta is drained, add pasta to tomatoes and toss well. If pasta seems too dry, add some of the reserved pasta water. Add fresh basil and chicken and toss well. Serve and top with good grated cheese.

Thank goodness I have not went shopping yet. I am making this ASAP! It looks so light and yummy. Thanks for sharing.

ReplyDeleteI've never posted a comment online before, but wanted to let you know how much I enjoy your recipes. I've made several so far, this one included, and all have been great (just made the chocolate zucchini bread for the 2nd time). Thanks so much for posting them, along with your beautiful photos!
ReplyDeleteI made this last night and my husband and daughter (both super picky) loved it as much as I did! I see in the comment above mention of chocolate zucchini bread?? Mmm! Going to look that one up now. Love your site!
ReplyDeleteI have made this recipe twice already and each time was equally delicious! I add a bit of balsamic vinegar at the end which gives it a nice kick. And thanks so much for your wonderful recipes and photographs, Gina! I'm getting back on the WW train with my husband and your site has made me EXCITED to start cooking again!
ReplyDeleteSounds like a nice touch adding balsamic. Thanks everyone for leaving a comment. Such a simple pasta dish, I love this too!
ReplyDeleteThis is one of our favorites, So easy and sooo good! My husband and I love your recipes!
ReplyDeleteI made this for my Italian family and they loved it!
ReplyDeleteGood one, I usually make this in the summer when I have tons of tomatoes in my garden!
ReplyDeleteMy husband and I are doing WW for the first time. I hated it the first week because I felt like I wasn't allowed to cook and cooking is my favorite thing to do. Then I found your website! I love it! I have tried a several of the recipes and loved all of them. This pasta dish was really good. I think the next time I am going to try using canned tomatoes because my husband didn't care for the skin on the grape tomatoes. It is so easy and great tasting! Thanks so much!
ReplyDeleteI know its hard when you first start but you'll get the hang of it. The great part about WW is you can eat just about anything if you cook it right.
ReplyDeleteI made this last night only I used shrimp instead of chicken and I sprinkled some goat cheese on top. I wish I had had fresh basil but I only had dried. It was still good.
ReplyDeleteThank you for your blog with the fab pics. It was so good. I couldn't believe how much food came out with one and half cups....yummy.
ReplyDeleteyour welcome! I try to make the portions reasonable.
ReplyDeleteJust finished making it- wow my boyfriend and I made it in about 12 mins... house smells delicious and it tastes incredible!!
ReplyDeleteSo tasty, delicious and incredible its so low in points

ReplyDeleteThanks for this wonderful free web site!! I love all the great recipes!!
ReplyDeleteWe have eaten a recipe form your blog every night for the last 2 weeks! They have all been keepers. We had this one last night and thoroughly enjoyed it. Thank you!
ReplyDeleteI'm glad you liked it! Two weeks! What else did you make?
ReplyDeleteWow, what else have you made?
ReplyDeleteso excited to make this tonight and so happy I found this website!
ReplyDeleteJust made this tonight, only I used angel hair multigrain pasta, and added more garlic and tomatoes, it was amazing! Thanks for the recipes!
ReplyDeleteMaking this for dinner tomorrow night and was wondering how much chicken to use? I know the recipe says 2 breast halves, but would that be like one 8oz breast cut into 1 inch pieces?
ReplyDeleteAbout 14 oz of raw chicken breast. Sorry for the confusion.
ReplyDeleteSadly, this has not been my favorite dish.It smelled great while cooking, but even after adding mor salt and papper and also having a rosemary flavored whole wheat pasta, it was slightly bland. I added some crushed red pepper and some garlic powder which helped a bit. I still LOVE this site, but this recipe will probably not be in my rotation, I'll just make your chicken parm instead!!!!
ReplyDeleteSorry you didn't like it Jenn, this is great when summer tomatoes are ripe and sweet from your garden. Perhaps the tomatoes weren't as sweet. We love this dish in the summer!
ReplyDeleteABSOLUTELY FANTASTIC!
ReplyDeleteThe instructors weren't 100% clear but It all came out ok. I also forgot to keep some of the cooking water making my pasta a tad dry but it didn't matter. The flavor was out of this world!!!
instructors = instructions
ReplyDelete(sorry its monday)

ReplyDeleteJessica - Ontario Canada
This was delicious! I just made it tonight. Absolutely wonderful - it will become a favorite in our house!
ReplyDeleteMy husband and I made this for dinner this evening and it was FANTASTIC. Gina, you just keep amazing us every night. I actually did a mini promo for you on Facebook this morning telling friends to use skinnytaste.com!
ReplyDeleteWe added fresh mushrooms, steamed asparagus, fresh spinach leaves to the saute mix. This is a meal that both my husband and I agreed that we would pay for if out at a restaurant. It was THAT good. Add a 4 oz glass of wine as the drink and it was just fabulous.
Thank you, Gina!!!!
I made this dish today and it came out awesome. I also added spinach to it. My picky 4yr ate all of it including the spinach that she normally wouldn"t eat.lol.
ReplyDeleteMade this last night! Awesome! I love your site!!! I tell people about it probably everyday! Me and my husband added a bit of our favorite hot sauce and it was amazing. The kids all loved it too (without the hot sauce). Tiffany
ReplyDeleteLoved it! I agree with other suggestions about trying to add more veggies. I might try asparagus on the next go around. It's a keeper!
ReplyDeleteI had a hard time putting down the fork when I did a taste test. This recipe is phenomenal!!
ReplyDeleteThanks Jessica, I love this as well, I'm a big pasta lover!
ReplyDeleteTonight I plan to make this one for the first time. I am assuming your points calculations include the pasta since it is in the ingredients list. Just checking because it seems like a really low points dish (which is fabulous)!
ReplyDeleteThanks, Gina! I'm positive I would not have lasted on WW this time without your site. It's a different world to lose weight with a family to cook for!
Angela, I'm not sure if you are looking at the old points or the points plus.
ReplyDeleteI was looking at old points. 5.5 seems low - but I'll take it! :-)
ReplyDeleteSo yummy! Thanks for the recipe! I made a link to your blog that can be found @

ReplyDeleteLoved this! We made it with Rice Fettucini Noodles and it was delicious! Very light and flavorful
ReplyDeleteMy whole family loved this. It's very easy to make and delicious. I didn't change anything except I added some thyme to the chicken.
ReplyDeleteFound on Pinterest and tried it for dinner tonight...i LOVED it! My husband didnt really enjoy it though, he is very picky and likes big hearty meaty meals. I think i will just make this for my lunches :)
ReplyDeleteThis was really tasty and light and felt like summer. We ate it out on the balcony. Can definitely see making this again with some summer tomatoes. http://epifurious.tumblr.com/post/26319591085/linguine-with-sauteed-chicken-and-grape-tomatoes
ReplyDeleteI make this all the time, except I use Roma tomatoes (chopped) and I add cooked broccoli. My kids (7 and 10) LOVE it!! It is one of their favorite dinners (and they don't like anything) LOL
ReplyDeleteThis Spaghetti with Sauteed Chicken & Grape Tomatoes looks delicious. Like always you present us a healthy & delicious meal. Really perfect for a busy weeknight. Thanks for sharing.
ReplyDeleteI found this on Pintrest and decided to try it. I didn't have cloves of garlic so I used minced and I added the oregano and basil to the water I cooked bow-tie pasta in. It was a total hit on so many levels, Delicious, inexpensive, fast, easy and hardly no mess. My husband says this needs to be added to the menu often! He also said he thinks broccoli would be great in it as well!
ReplyDeleteI've made this twice now, and am making it again tonight. We absolutely love it! My vegatarian mom even makes it minus the chicken. So fresh and delicious with my garden tomotoes.
ReplyDeleteI made a similar dish to this but did shrimp instead of chicken..and also added a lil red pepper flakes for a bit of spice. Then when I added it all to the pot I added 4 handfuls of fresh spinach!!
ReplyDeleteHave made this recipe several times now exactly as posted and my husband says it is just like going out to eat at a nice italian restaurant. He and I love it. The kids, not so much, but they are very young, so we just give them sauce from a jar on their plain noodles and we can still eat together. Definitely a keeper recipe for this family and currently my husbands favorite. Thank you, Gina!
ReplyDeleteThis may be my favorite so far! So easy and SO yummy!
ReplyDeleteI've made this recipe a few times and it is now my favorite pasta recipe. Even my fiance loves it. I use rice vermicelli because I don't eat pasta, but it's just as good of not better. Thank you for all your wonderful recipe's! Merry Christmas to you and your family :)
ReplyDeleteI've made this twice now (Once for lunch and once for the whole family for dinner) and it's really good! Maybe it could use some zucchini, but still flavorful over Ronzoni Smart Taste spaghetti. we will keep it in our rotation.
ReplyDeleteWe made this today after a busy afternoon in the ski slopes. We were exhausted and hungry and I considered ordering pizza. I am so glad I didn't! This dish was so easy and quick to make. Both my husband and my six-year old give two thumbs up!
ReplyDeleteCan you break down the points plus values for me? I'm only getting 7 points..
ReplyDelete
