
I always have haas avocados in my house. I love them in my soup, in my sandwiches, in guacomole or in a simple salad such as this.This healthy salad makes a perfect side dish for shrimp, chicken or steak.
Avocado Salad with Citrus Vinaigrette

Calories: 171.3 • Fat: 13.9 g • Protein: 2.8 g • Carb: 13.9 g • Fiber: 6.1 g • Sugar: 2.1 g Sodium: 15.5 mg (without salt)
Ingredients:
For the vinaigrette:
- 2 tbsp extra virgin olive oil
- 1 lemon or lime
- 1/2 navel orange
- 1 clove garlic, crushed
- pinch oregano
- kosher salt and fresh pepper
- 1 hass avocado, peeled and sliced
- 1 tbsp red onion, sliced
- 1 cucumber, sliced
- 1 tomato, sliced
- 4 cups mixed baby greens
In a small bowl whisk olive oil, juice from lemon or lime, orange, crushed garlic, oregano, salt and pepper.
Arrange salad greens on a plate, top with cucumber, avocado, red onion, tomato, salt and pepper. Drizzle vinaigrette over the salad and serve right away.

Made this Monday for my in-laws as an experiment and all of us loved it. We needed a lighter meal after Easter dinner the night before and this totally fit the bill. I added a sliced hard boiled egg to each salad just to make it a touch more filling - and to use up my daughter's Easter eggs. Also although the egg added 2 points, it made it much more filling. No body needed anything else to eat, but everyone cleaned their bowls. Thanks Gina!

ReplyDeleteGina- how do you cut an avacado like that?? where is the hole for the pit? it looks like you cut straight through the avacado and it had no pit. i am soooo confused ;) lol

You cut the avocado in half long ways, remove the pit and then take a knife and cut slices into them long ways. Then take a spoon and scoop out all the slices. It's hard to explain without photos. I will photograph next time I slice one.
