
On those rare occasions I don't bring leftovers for lunch at work, I always buy the Turkey Chili Soup from Fresh and Co. It's light and healthy and one cup always fills me up.
Now I know I have quite a few chili recipes on my site, but this one is perfect when you need a quick meal. Courtesy of my friend Julia, of Julia's Healthy Italian Cooking. If you've been following me for a while, you'll know some of her recipes, Filetto di Pomodoro, Balsamic Chicken with Roasted Vegetables, Pasta con Sarde are just a few of her recipes featured here on Skinnytaste. She's an amazing cook, a working mother of four, and always cooks her family quick healthy meals made from scratch. This soup is a super easy to make and is ready in less than 20 minutes.
For a thinner soup add more broth, or you can leave the broth out and you have yourself a bowl of chili. Don't you love recipes that can be so versatile?
Turkey Chili Taco Soup
Gina's Weight Watcher Recipes
Servings: 9 • Size: 1-1/4 cups • Old Points: 3 pts • Points+: 5 pts
Calories: 198.8 • Fat: 1.4 g • Carb: 29.7 g • Fiber: 7.0 g • Protein: 19.5 g
- 1.3 lbs 99% lean ground turkey
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 10 oz can rotel tomatoes with green chilies
- 15 oz canned or frozen corn, drained
- 15 oz kidney beans, drained
- 8 oz tomato sauce
- 16 oz fat free refried beans
- 1 packet taco seasoning (you can use 40& less sodium)
- 2 1/2 cups fat free low sodium chicken broth
In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes.
Serve with a few baked tortilla chips and your favorite toppings such as low fat sour cream, jalapeƱos, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.

ReplyDeleteBecause this is a "quick" chili, the refried beans give it that creamy consistency you get from letting your chili simmer all day. You could probably just use a can of your favorite bean and puree it in the blender if you prefer.

ReplyDeleteGina, this is probably one of my favorites of your chili recipies! I used lean ground beef instead of turkey, used the whole can of tomato sauce and only one can of chicken broth, and I made my own taco seasonings so it definitely had a kick to it! I added 2% Mexican cheese, cilantro, and a dollop of sour cream. Amazing! I was nervous about using the refried beans but it was sooo good! I also made the cornmeal cake to go with it! :)

ReplyDeleteI made this for dinner tonight and WOW. It had so much flavor I did not feel like I was eating something good for me at all. The changes I made were: I used refried black beans (just because I love them), I didn't use corn (because I totally forgot - just found the package on the counter 5 minutes ago), and I used hot taco seasoning. I used maybe a cup of the chicken broth to get it to the thick and hearty consistency I like. The heat was definitely borderline too much, but once I added a dollop of sour cream it was perfect. I only cook for myself, but I am actually excited for once to eat all the leftovers!

ReplyDeletemade this tonight, so quick and easy and best of all delicious!i used lean ground beef so that uped the points to 6 points(old program) per serving(hope my math is right) i did add a few dashes cumin and adobo at the end for a little more flavor but other than that everything else was the same. top with cheese, sour cream,and with tortilla chips was the perfect way to eat this!

Vegan Option- I made the Turkey Chili Taco Soup (with 2 changes) and it was wonderful. I used 3 cups of cooked lentils in place of the turkey meat and added my own spices instead of the taco seasoning. My body has real issues with sodium and even the reduced sodium was too much for me. I tasted it and was happy with the result. While I was setting the table my eighteen year old niece showed up with three of her friends. They ate the chili soup- yes all of it !! They topped it with fat free yogurt and hot sauce. Thank you for a healthy economical recipe that even the teenagers will eat.

ReplyDeleteOMG, I just had to comment and tell you how much I loved this recipe. I was reluctant to make it because I have a chili recipe I use alot and love, but this was so easy, so good, and so different than my usual chili. It was the perfect combo of tasting fresh and tasting so flavorful like it had been cooking all day. Not sure how you do it, but keep up the good recipes. LOVED this one.

ReplyDeleteI made this for friends for a nice lunch & it was really good. I made the Crockpot Chicken Taco Chili last week and was surprised how different these were. I think it was the refried beans. Very good & definitely a keeper! :)

ReplyDeleteI don't follow WW--just try and eat healthyish. I have made this 2x and OMG YUM ALERT!!!!
I'd never know it was WW. The changes I made were: 2 full cans of low sodium chicken broth (about 3.5-4 cups), a whole lime squeezed into the finished soup, and some low fat cheese and chopped cilantro on the dishes when served. The second time I used 95% lean beef but surprisingly, I preferred the turkey. I didn't use lean turkey, just regular ground turkey.
I only cook for myself and hubby, but we demolished this. I am actually excited to eat my frozen leftovers for lunch.

I liked this chili/soup quite a bit and my husband finished two bowls of it! I also increased the amount of broth I used to 3 cups and, as a result, had to add a little extra chili powder along with the package of taco seasoning. Really quick and tasty!
ReplyDeleteI made this last night and it was delicious. I squeezed just a bit of lime over it and put in a tbsp of sour cream, reduced fat cheddar, and scallions. The scallions and lime were great (had them on hand because I also made the cilantro dressing from your site, which went great over lettuce as a side salad to this meal.) I added tomato paste because I found the soupiness unappealing and I'm a huge chili fan. The refried beans in this added an unusual taste that I liked a lot.
ReplyDeleteI also mixed in 1/4 cup baby spinach leaves for added nutrition. I do that to any food whose taste is so good that it can stand up to spinach, and this meal was definitely good enough!
I had leftovers for lunch today- great!- and froze two portions. Just the right size.
What I really like about this meal is that it satisfies my craving for Mexican food, especially when I have the salad with cilantro dressing with it- the jalapeno has a great kick!
And it was SO fast and easy to make.
This doesn't just look yummy but it's yummy too!! I took out the onions and the green peppers to share with my daughter (4 y/o) and she loved it too!! We will definitely have it again. =)Thank you for sharing.

ReplyDeleteThis was SO good! I used a little less broth, only 2 cups and let cook down a little because I really wanted it to be more of a thick chili than a soup. All the same, delicious!! Will make again and again! LOVE the refried beans in this, adds a delicious different texture to the broth! Yum!

I didn't have any rotel on hand (which shocked me), so I used to herdez salsa and I made my own batch of taco seasoning. Can't wait for dinner. Perfect football Sunday meal.

ReplyDeleteMade a quadruple batch for a church family event the other day. The turkey taco soup beat out the hamburger soup in popularity! I made it the day before and warmed it up in an electric roaster. SO great for a large group... a definite hit!

ReplyDeleteI made this for my family, tonight, and it was a HUGE hit! I added 16 oz. of tomato sauce (out of habit) and chopped up two bell peppers and put it in the crockpot...other than that, I followed the recipe to a "T." It was quite delicious and will make again!

I used ground chicken rather than ground turkey because I prefer the taste better and it turned out really well! It also refrigerates great so I had leftovers for lunch the next day! There hasn't been a recipe on here that has failed me yet!

ReplyDeleteHi Gina! I made this as a chili last night for a Chili Cook off we had at work today and I won first place! I'm directing everyone to your website for the recipe. My only comment is about bringing this to a boil. I did that and maybe because my pot was so deep but it burned at the bottom and I had to switch everything out so it wasn't completely scorched. It could just be me but next time I'm going to let it simmer slowly :) Thanks for the great recipe!

But, it is so easy to make your own Mexican seasoning (1tsp cumin, 1 tsp ground coriander, 1 tsp paprika, 1tsp onion power, 1 tsp garlic granules, 1tsp fructose sugar – you could use normal sugar, 2tsp chipotle flakes or 1 tsp chili powder (make it as spicy or mild as you like).)

ReplyDeleteBesides the good food..what I love is the serving info. Most recipes say 5 points/serving but they never tell you what the serving size is so you are still in the dark. All these recipes give the serving size! Love that.

ReplyDeleteThis was really, really good!! I used to cook a recipe that took hours and used over 25 ingredients (includes spices) - but this is my go-to now!! My 2 year old twins and 5 year old even loved it, 5 year old loved it so much he asked for it to be his "birthday dinner" this year!! Thanks for another great recipe!!
ReplyDeleteMy husband likes me to make a soup once a week. So around 3:00 pm, I was frantically looking for a recipe because most of them require all day in the crock pot. This one was fast and easy! And delicious as usual!
ReplyDeleteThe only thing I would add is about the calorie count. I added all my ingredients up, omitting the bell pepper and using only half an onion, and I came up with only about 100 calories per cup. Were you adding in for the cheese and tortilla chips?
ReplyDeleteI just made this without refried beans and without kidney beans but instead I used black beans (only because this is what I had). Turned out delicious. :)
ReplyDeleteMade this tonight---yummy! I followed the recipe to a "T", except added a little more spice- cumin, curry, and chili powder. I was skeptical about the corn as I've never tried it in chili, but I LOVED the crunch it added. Thanks!

ReplyDeleteim contemplating making this with the Boca "meat" crumbles and wondering what you think? this has such a strong flavor ,and tastes good whether its made with beef or turkey ,that im hoping the soy meat will just soak up that taco flavor. im gonna try it and see how it turns out and let you know. not vegetarian by any means but bought this meatless product while on sale and want to play around with it :)
ReplyDeleteI've never made this recipe with Boca crumbles, but I make all my chili recipes with them . . . most work, some don't. . .just try it!
Deletewell it comes out to the same amount of points(which is weird) so i would rather use meat but since i have the boca crumbles im going to give it a shot. making it today, ill come back and report my findings. ;)
Deletethe verdict is in. this taste best if you use 96/4 ground beef. however it taste the same whether you use ground turkey or the boca crumbles, which is still pretty dang good! very happy with how it turned out with the meatless crumbles, if i ever find it on sale again i wont hestitate to buy and use in this recipe! :)
DeleteMade this last night, holy cow it was delicious! I added medium heat pinto chili beans and black beans and used a mixture of hot and spicy taco seasoning with the reduced sodium seasoning. It was delicious! I will be eating this for the rest of the week, yum! Thanks for the great, healthy recipes.
ReplyDeleteI made this a few days ago and it was excellent! I made my own taco seasoning, and it had a really nice kick to it. I also added a little squeeze of lime to my bowl as well. I'll definitely be adding this to my recipe rotation.
