A Thai inspired stir fry dish with a wonderful savory, sweet and spicy flavor combination made with colorful bell peppers, fresh pineapple and chicken.
A few months ago I was invited to a Thai Kitchen event where their chef demonstrated a few recipes using their new Thai Kitchen sauces and this was one of the dishes they made. They kindly shared the recipe with me which I slightly modified to give it more kick. If you don't like your food too spicy you can leave out the chili pepper. Serve this over jasmine rice for a complete meal, also great with shrimp!
Thai Chicken and Pineapple Stir Fry

Ingredients:
- 1 lb boneless skinless chicken breast, cut into 1-inch cubes
- 1 tbsp Thai Kitchen fish sauce
- 2 tbsp cornstarch
- 1 tbsp oil, divided
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 cups cubed assorted colors bell peppers (1/2-inch cubes)
- 1 red chili pepper, chopped (optional or to taste)
- 1 cup fresh pineapple chunks
- 1/2 cup Thai Kitchen Pineapple & Chili dipping sauce
- cilantro leaves (for garnish)
Directions:
Mix chicken and fish sauce in medium bowl. Add cornstarch; toss to evenly coat. Set aside.
Heat 1/2 tablespoon of the oil in large nonstick skillet on medium-high heat. Add garlic and
ginger; stir fry 30 seconds. Add bell peppers, chili pepper if using and pineapple; stir fry 3 to 5 minutes or until peppers are tender-crisp. Add sauce; cook and stir until heated through. Remove from skillet.
Heat remaining oil in the skillet. Add chicken; stir fry 5 minutes or until cooked through. Return bell pepper mixture to skillet; stir fry until well blended. Garnish with cilantro.

ReplyDeleteYou could use soy sauce in place of the fish sauce. The rice would be extra, I served this over 1/2 cup of rice.

ReplyDeleteSweet chili sauce may work but the taste will be altered a bit. Same with any sweet and sour sauce.. without tasting it I can't be sure how it is. If you make this with changes, let us all know!
I made this with shrimp, substituted canned pineapple in juice and sweet chili sauce (because I couldn't find the kind you listed), and it came out delicious! Would absolutely make it again!

DeleteEva, don't use Oyster sauce, it's not the same. Soy sauce would probably be the closest thing but if you like Thai food, I suggest you buy Thai fish sauce, I use it a lot!

I think I've made something very similar from Cook's Illustrated The Best Light Recipe and it was fantastic. I really love the sweet and spicy combo... and yes, heavy on the spicy ;)

I made the stirfry last night and it was so yummy :) I couldn't find the pineapple sauce, so I used the thai sweet red chili sauce and added about a 1/2 tbl. of shriracha to the chili sauce, oh yes, it was so good!

ReplyDeleteI couldn't find the Thai Kitchen Pineapple & Chili dipping sauce in the store even though they had other Thai Kitchen items. I got another Sweet Chili dipping sauce.
I also added chopped onion as I love it in all savory dishes.
This will be a regular menu item for us.

I also could not find the Thai Chili Pineapple Sauce. I think I might use some Trader Joe's Island Soyaki and some sweet chili sauce to achieve the right flavor. I've checked our Shoprite and Target, neither carry the sauce. (And I live right across the river from Manhattan, in Hoboken!) Very disappointing.
ReplyDeleteI left out the chili pepper and subbed 1/4c Thai Kitchen Sweet Red Chili and 1/4c TyLing Naturals Sweet & Sour sauce instead of the Pineapple & Chili sauce since I didn't have that on hand. We loved it! It came out on the sweeter side - which I loved - but my husband probably would have appreciated it with more of a kick, so next time I'll probably add sriracha sauce.

I cooked this last night. I also couldn't find the pineapple sauce, so I bought the Thai Kitchen Spicy Thai Mango sauce, and it was really delicious. I added 1/2 of cooked rice to it, and it was one of my favorite "diet" dinners ever. FYI, I ate two servings of it, for about 600 calories for dinner. Which is about perfect for my 1900/day goal.
ReplyDeleteMy only complaint is that it's just really high in sodium. I know that this is a constant issue for asian foods. But I wondered if maybe there's a way to exclude the fish sauce and replace it with something with low or no sodium. I really think I could eat this meal once a twice a month if the sodium were a bit more manageable.
Just had this for dinner - yummmm. Sub sauce for 1/4 hot chili and 1/4 sweet chili sauce. Would add onion next time. Had it with spaghetti squash to lower the carbs. You are saving me with all these healthy dishes. Thanks once again Gina.

ReplyDeleteGina, I am so excited to make this tonight! Just wanted to let you know, I plugged this into my recipe builder online. Using Thai sweet chili sauce (for some reason even in Singapore I can't seem to find Pineapple and Chili Sauce), the Points+ comes to 7 per serving, rather than 5. Perhaps this sauce is the cause?

I am going to keep looking for it. I subbed w/ another stir-fry sauce and was not that impressed. I do love Thai food so I think this Pineapple sauce must be some kind of magic that hopefully I can find. It would probably even be good with red curry paste. So many options...

My husband said he didn't think much of it when I first told him what we were having for dinner, but once he tried it, he kept raving about how great it was. I accidentally forgot the cornstarch coating on the chicken- not sure how I did that! But it was still delicious. I also couldn't find the pineapple chili sauce, so I used half Thai sweet chili sauce and half pineapple sweet and sour sauce, and added in some sriracha. Can't wait for the leftovers tonight!

I made this tonight. Delicious! I couldn't find the Pineapple sauce here in Canada but I did get the Thai Kitchen Sweet Chili Dipping Sauce and it worked perfectly! I also added some water chestnuts and about a 1/3 cup of onion. Yum!

ReplyDeleteLove this! Like a lot of other people, I couldn't find the Thai Kitchen Chili and Pineapple sauce anywhere in my area, so I improvised a bit. I used my stick blender to blend some pineapple with a bit of bottled sweet and sour sauce and a bit of the Thai Kitchen sweet chili dipping sauce. I don't know if it tastes like yours, but it was delicious. I'll keep looking for that Chili and Pineapple sauce, though, because it sounds really good.

BUT i did have a habanero (which i always put in here).. so instead i tried it with some brussel sprouts and peas, and it was just as yummy! This is one of my favorites. I tried this for dinner tonight and it was A.MAZE.ING!!! My local grocery store didn't have the Thai Kitchen Pineapple and Chili sauce. But I did get a sweet and sour sauce that was pineapple and chili based (two top ingredients). I imagine it was just as good. Instead of the chili pepper i used some crushed red pepper flakes. This was great! Prepped the night before it's a fast weeknight meal. For those who don't want to use or can't use fish sauce a great alternative is 2 parts soy sauce and 1 part lime juice.

Had to go to 3 grocery stores and finally found it at Albertsons. It was well worth the search though. I did use the hot pepper in it and loved the sweet/hot flavor in it. ReplyDeleteI made this for dinner last night. I used a habanero and the heat level was perfectly balanced against the sweet. I used quinoa for my grain and that gave it a nutty balance that was well suited to my taste.

ReplyDeleteI was plugging this recipe in to calorie count and my fitness pal (since I use both), and I too found that the calories were significantly off. I use 3 bell peppers so when I measured in cups, I was able to bring it up to 5.5 1 1/4 cup servings but the calories are still sitting at 271. Still pretty good but I hope maybe the calories could be updated in recipes!

DeleteI just checked the calories and I am not getting such high numbers as you. Are you using raw or cooked chicken in my fitness pal, as that will alter the calories. Send me an email so we can figure this out.
ReplyDeleteI have tried a few recipes and they have ALL came out really good! This one too was very good!! I used frozen pineapple cuz I can't seem to keep fresh fruits and vegetables or they go bad too quickly. My family loved it! My kids have not rejected a recipe yet!! I am not a very good cook and I don't like to cook, but when I make one of your recipes, I actually get excited and enjoy cooking it. Thank you for the pictures. I also appreciate the comments, cuz I learn alot from them.
ReplyDeleteThis is SO good. I used some kind of frozen chile cubes in the freezer section and I put WAY too many in but I like the spice so it was ok. The color and flavor were amazing.
ReplyDeleteThis was excellent and easy! I left out the chili because I was also serving this to a 4 and 6 year old (they loved it), but I don't think it significantly impacted the overall flavor of the dish. I also used sweet chili dipping sauce because I had it on hand and after searching high and low I still couldn't find the the Thai Kitchen pineapple chili sauce. I'm sure if I had made this according to Gina's exact directions it would have been even better!
ReplyDeleteThis is an awesome recipe. Tastes amazing, but is not really a healthy alternative. The Thai Kitchen sauce (which calls for a 1/2 cup!) is loaded with sugar. Try using unsweetened pineapple juice and soy sauce instead. Keep the ginger, the garlic and the red chile pepper, and it will still be awesome.
