Fresh watermelon makes these martinis a perfect summer cocktail! Enjoy them at your next back yard party but be careful drink too many!! **wink wink**
Watermelon Martinis
Gina's Weight Watcher Recipes
Servings: 4 • Size: 6 oz + 1/4 cup watermelon • Old Points: 2 pts • Points+: 3 pts
Calories: 90.3 • Fat: 0.5 g • Carb: 11.6 g • Fiber: 0.6 g • Protein: 0.9 g • Sugar: 7.6 g
Sodium: 2.6 mg
Ingredients:
- 3 cups seedless watermelon
- 2 oz Absolut Citron
- 1 oz Midori Melon liqueur
- 1 oz fresh lime juice
- 1 cup ice cubes
- watermelon with rind and lime wedges
Directions:
Dice one cup of watermelon into small cubes. Puree remaining 2 cups of watermelon in a blender and add vodka, liqueur, lime juice and ice and blend well. Pour 6 oz martini into each martini glass, add 1/4 cup remaining watermelon into each glass and garnish with watermelon and lime slices.
For those who don't drink alcohol, add ice cubes and replace it with a splash of orange juice.

ReplyDeleteYou read my mind! I have a great watermelon martini recipe. It's similar except I blend up chunk of watermelon and then freeze the liquid in ice cube trays - then I add the frozen cubes, vodka, lemon juice & agave to a blender. Makes a delicious frozen watermelon martini!

ReplyDeleteOK, I gotta ask how did you get this to 3 Points Plus? Alcohol containing things tend to be much higher than that or am I just missing something? I've had to cut back on beer (being an ale drinker at 5 PP a bottle it's just too much) but I could have one of these on my patio instead if that's right.

ReplyDeleteI freeze watermelon all the time. Cube it, put it on a sheet tray, freeze it and then ziploc bag it. My girls LOVE it in their water and I use them instead of ice in smoothies. And now, I'll make martinis! Yay!

I made these, and at first they were a bit texture-y. There was a lot of watermelon pulp, so I strained them and they were sooooo good.

ReplyDeleteIt is a little early yet for good watermelons so I tried freezing mine and skipping the ice cubes so it didn't water it down...FABULOUS!!!
ReplyDeleteI made these last night, delicious! It tastes like summer in a glass.
ReplyDeleteDid this with some modification. Froze about 400 grams of watermelon and made up some lemon water with Splenda (heavy on the lemon), and tossed the watermelon into the blender and churned that up with just enough of the lemon water to make into a thick blended margarita texture. Wonderful, light and delicious. Was a HUGE hit with everyone and this non-alcohol delight contained only 39 calories for each martini glass full. A keeper recipe for sure!
