Mexican Shrimp Cobb Salad



A beautifully layered salad with shrimp, avocados, grilled corn, black bean salsa, cucumbers, tomatoes and cheese. I served this with creamy cilantro tomatillo dressing.

Because there is no cooking involved, this makes a perfect summer potluck dish and the presentation is beautiful. One of my facebook fans mentioned she always brings a trifle dish to a party and gives the host the dish as a gift, cute idea! If you don't have a trifle dish, you could always layer this in a large platter in neat rows. Shredded chicken can be used in place of shrimp.

As a main course salad this would be more than enough for six people, if you are bringing this to a party where it will be eaten as a side, this would certainly serve a lot more.





Mexican Shrimp Cobb Salad

Servings: 6 as main course • Size: little over 2 cups • Old Points: 6 pts • Points+: 7
Calories: 288.4 • Fat: 10.6 g • Protein: 28.7 g • Carb: 25.1 g • Fiber: 8.8 g • Sugar: 3 g
Sodium: 588 mg

For the Shrimp:
  • 16 oz cooked large shrimp, peeled
  • chipotle chili powder to taste
  • 1 tbsp lime juice
  • salt to taste

For the Salad:
  • 6 cups romaine lettuce, shredded
  • 15 oz black beans, rinsed and drained
  • 1 cup grilled corn kernels (I used Trader Joe's frozen roasted corn)
  • 2 tbsp red onion, divided
  • 2 tbsp cilantro, chopped
  • juice of 1/2 lime
  • 1 seedless cucumber, diced
  • 2 cups diced tomatoes
  • 1 ripe hass avocado, diced
  • 1 cup reduced fat Sargento Mexican Blend shredded cheese

Directions:

Rinse shrimp and chop into large chunks. Toss shrimp with a little salt, chipotle chili pepper, and fresh lime juice.


Combine drained beans, corn, red onion, cilantro, lime juice and salt to taste.


In a large glass trifle dish or clear bowl, layer salad ingredients starting with the lettuce, black bean mixture, cucumber, tomatoes, avocado, cheese and shrimp on top.

  6. I came to your site to find something to go with a pork carnita recipe I am going to try this weekend. I'll minus the shrimp and this will fit the bill! Hubby won't eat it because of the beans (he can be sooo picky!) but my guests will eat it and so will I and he can be jealous!!

  7. Just wanted to add--I did the points for the salad w/out the shrimp and avocado (I'm making Gina's guacamole) and for 6 servings it came out to 3 PP.

    So, Gina's Carnitas (in a 1 PP wheat tortilla), Guacamole and Mexican Cobb salad all for 12 PP! Thanks for helping to plan a get together with friends, Gina!!

    Samantha, thanks for sharing! I think the shrimp makes the dish but if anyone is vegetarian you could leave out the shrimp and increase the avocado and cucumbers!

  17. Mmmmm, this looks sooo good! I plan on making this very soon! I discovered your website two weeks ago and I am HOOKED!! I have made over half a dozen recipes, and I have one in the crock pot right now (chicken ropa vieja) and they have all been fantastic.

    I usually hate cooking for a few reasons 1) I don't like to clean up the mess 2) the food never comes out as good as I had hoped so I feel like I wasted alot of time for something not worth it.... Your website has eliminated that 2nd reason for me, each recipe I have tried has exceeded my expectations. Thank you so much!

  51. i made this tonight, but not exactly the same. I didn't have any corn or black beans so it was lettuce, shrimp, cilantro, onion, lime, and cucumber. I also added a red bell pepper. I made the tomatillo dressing too. Both were super good. Really fresh, easy, and low point!

  58. This is such an amazing looking salad- I have recently transitioned to vegetarianism (I still eat seafood) and this salad just screamed to me. I made the dressing a few hours before the rest of the salad to give it time to chill. I will be making the salad shortly, and adding black olives, and crispy onion strings on top.
