You can make this with any combination of nuts and fruit you like, the possibilities are endless! But I really loved biting into a sweet warm banana, I felt like I was eating dessert.

Baked Oatmeal with Blueberries and Bananas
Modified from Ambrosia Baking

Servings: 6 • Serving Size: 1/6th • Old Points: 4 pts • Points+: 6 pts
Calories: 211.7 • Fat: 5.4 g • Protein: 5.6 g • Carb: 38.1 g • Fiber: 3.8 g • Sugar: 22.8 g
Sodium: 76.9 mg (without salt)
Ingredients:
- 2 medium ripe bananas, (the riper the better) sliced into 1/2" pieces
- 1 1/2 cup blueberries
- 1/4 cup honey (or agave)
- 1 cup uncooked quick oats
- 1/4 cup chopped walnuts or pecans
- 1/2 tsp baking powder
- 3/4 tsp cinnamon
- pinch of salt
- 1 cup fat free milk (or any milk you desire)
- 1 egg
- 1 tsp vanilla extract
Directions:
Preheat the oven to 375° F. Lightly spray a 8 x 8" or 9 x 9" ceramic baking dish with cooking spray; set aside.
Arrange the banana slices in a single layer on the bottom of the ceramic dish. Sprinkle half of the blueberries over the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil. Bake 15 minutes, until the bananas get soft.
Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, and salt; stir together. In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.
Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.
Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats. Sprinkle the remaining blueberries and walnuts over the the top.
Bake the oatmeal for about 30 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven.

I have the same green polka dot bakeware (that you can see in my blog too!), and I just used it on Sunday to make my own version of your baked oatmeal! Apples and cranberries would be great!! I would probably simmer the apples and cranberries over the stove first so they are soft and yummy.

Old-fashioned oats would work. I make a version of baked oatmeal with bananas and brown sugar and I exclusively use old-fashioned oats for everything. I like the texture better with the whole oats, and you can nuke it in the microwave as well.

I used apples and raisins instead of the bananas and blueberries, no nuts and extra cinnamon. I baked the apples in the cinnamon and honey first (just like the bananas). It's FABULOUS! My 11 year old twins are eating it for dessert right now with vanilla ice cream on top! Thanks!

ReplyDeleteI have another baked oatmeal recipe, not skinny like this, that I can make ahead of time and let sit overnight in the fridge, then just pop in the oven in the morning to bake. Do you think this could be done the same way? If so, I will go make & assemble it now! I struggle with finding a hearty breakfast that will last and I don't like regular oatmeal (which the rest of my family LOVES) but baked with these fruits & nuts is something right up my alley!!

This really is like a dessert! The texture is like the moistest cake you've ever had, not crispy or dry.
ReplyDeleteYou can leave the cinnamon out, or replace it with a spice you like. I'm sure you can assemble this the night before, then add the liquid in the morning and bake. And if you want to bake the night before, go for it! I would undertake it so it doesn't dry out when you re-heat it.

ReplyDeleteWe have made a similar "clafoutis" recipe. I cut it into the appropriate serving sizes and wrap each one individually and freeze. Take one out at night and put it the refrigerator. In the morning just put in the microwave for a minute or two. If you forget to take it out the night before you can still microwave it from frozen. Fast and delcious breakfst!

When I was off Weight Watchers during the holidays, I made a very similar recipe with tons of butter in it that I knew I would have to give up once back on. My daughter who hates oatmeal with a passion happily munched away thinking we were being naughty eating dessert for breakfast. I only had one banana so chopped up a pink lady apple and threw that in with the blueberries and banana. Just tasted some cold (for investigating purposes lol) and it was sooooo good . I made a vegan version of it with unsweetened soy milk and 1 TBSP of ground flaxseed mixed with 3 TBSP of Water to replace the egg I also used AGAVE instead of honey. I didn't check to see what the difference in calories were but this dish was WONDERFUL...so good right out of the oven! It doesn't taste too sweet and it is VERY moist! The hot blueberries just popped in my mouth! Looking forward to eating it in the morning as well! THANKS!

My only substitutions/changes were no nuts (forgot!), I used blackberries AND blueberries, and I added a layer of banana slices on top. I broiled the dish at the very end to caramelize the banana slices on top. Tonight I'm making your empanada recipe. Thanks so much for your site.

ReplyDeleteFor those wondering about making it ahead... I assembled this last night for this morning, skipping the 15 minute banana bake, using old-fashioned oats. Chose those oats b/c they'd be soaking in the milk all night. It came out soft, like a bowl of hearty, thick oatmeal loaded with fruit. Didn't have time to bake longer to see if it would get crispier. As it was though, everyone loved it and it'll see regular rotation in our Saturday morning "big breakfasts." Do think I'll try swapping some of the honey for brown sugar.

ReplyDeleteMade this today and loved it. But the rather gray-blue color from the blueberries was a bit off-putting. Yours didn't look at all like that in photo. Do you have a secret? I used fresh blueberries and whole oats. Thanks for a wonderful site...I love using it.
ReplyDeleteI love this recipe! It looks wonderful. I would like to make it for my daughter to have an easy breakfast on school mornings. Sometimes it can be tough be get her to eat breakfast as she is too busy putting on make up and doing her hair. ;)

ReplyDeleteI just made this today as a Sunday morning treat. And it is soo delicious! I shared it with my friends on Facebook and they all want to make it now. I used frozen blueberries, and the finished product ended up more liquidy than what your picture shows, so I think the next time I make this with frozen blueberries I will adjust the amount of milk I put in the recipe. Now the only problem is it's so hard to eat just one serving for breakfast!

Im on WW and their recipies, usually , not so great. but this was awesome and decent portion. i also had a 1/2 c yogurt to fill me up for breakfast. and i had ot make it with some frozen fruit mix that i had cuz my bananas werent ripe enough. I cant wait to make it with bannanas! Thank you!
ReplyDeleteI made this today and it's so great! I peeled and sliced 3 apples instead of bananas and cooked that with the blueberries an extra 10 minutes and it was plenty soft when the whole thing was done. I find your points a little high. Do you add every ingredient into the recipe builder or only those ingredients that have known PP values? I didn't do any of the fruit (fruit is 0 points) and came up with slightly fewer WW points. All that said, it's amazing. Thank you! I may omit the nuts next time because it will bring down the points evern more as what I really liked is the fruit on the bottom and the yummy cake like oatmeal goodness on the top. YOU'RE THE BOMB!!

ReplyDeleteAbsolutely delicious. My husband is tough to cook healthier foods for as they typically are not very flavorful and filling, but this was a huge hit. He and I both really enjoyed the not too sweet taste and the richness with the egg. Yummo. Will definitely be recommending this to friends.

ReplyDeleteFYI-- I baked it the last 30 minutes uncovered, used no nuts, and frozen blueberries-- turned out great. For a breakfast or brunch it is wonderful as it was out of teh oven. To make it a dessert, we drizzled maple syrup over the servings.
ReplyDeleteMade this again yesterday with cherries and apples. Instead of vanilla I used almond essence and it was so good, tasted just like cherry apple bakewell. Delicious served with 0% Greek yogurt. I had also frozen a piece of baked oatmeal on Saturday and took it out yesterday to see how it tasted after freeing it. It was okay,it lost it's bite and felt a bit mushy but the flavour was still good.
ReplyDeleteI made it this morning and took it to a brunch. Everyone loved it (however I agree with a previous post, the blueberries turned the whole thing a blue/gray color so it wasn't super pretty - I used frz blueberries). The pan was gone in about the first 15 minutes though and I made sure to let everyone know how healthy it was! Thanks!! I will be making this for our family's Saturday breakfast instead of a heavy coffee cake!

ReplyDeleteHowever, when I put it in the recipe builder on WW, it came out to 6 points+. I talked to my meeting leader about it and she said that when you bake the fruit, you have to count the points for it, so it is actually 6 Points+.
Still worth it for a treat!

Not sure why some had the blueberries running the color, mine did not. Either way, I'm sure the flavor is the same.
I always count the fruit in my nutritional info, fruit is not free. Not sure why you got 6 and I got 5. Steel cut oats I believe is higher than quick oats. Maybe that is why? I will recheck to be sure.
I serve this on a plate like a slice of cake. I reheat it in the microwave just to get it warm. Reading all these comments makes me want to make it again!!
Wow! Thanks for another wonderful recipe! I just made this this morning with strawberries instead of blueberries. I live in Senegal, West Africa, and it's hard enough to find fresh strawberries here. Gina, it has been a while since I have commented on one of your recipes but I HAVE to tell you how much I love this one!
ReplyDeleteFirst of all, the title has three of my toddler's favorite foods in the title--banana, blueberries and oatmeal. I knew I had to make it! I made it for dinner (as breakfast in our home is usually super simple and quick, like yogurt or toast) and when my husband came home from work he thought I had made a blueberry crisp for dessert--and I said, "No, this is actually a healthy dinner". Needless to say, we were ALL happy and satisfied!
The leftovers heated beautifully in the microwave so it would be a good make ahead option at the beginning of the week so we can enjoy it for breakfast all week long. In fact, I'll be doing that soon.
In my opinion, the bananas made the dish amazing. I read some comments of people asking what they could replace the bananas with--I can't think of anything that would make it taste as amazing as the bananas did.
I'll be printing this recipe and adding it to my permanent collection.

I have to tell you I was prepared to write a "it's not you it's me" type of thing because I'm not really a lover of bananas BUT I had everything to make this dish in my fridge so I knew I had to give it a whirl. I am so glad I did!!!!!!!!! I couldn't wait to try it the minute I took it out of the oven. It is AMAZING! And guess what?! I even love the flavor & texture the bananas lend!! I won't change a thing when I make it again - this is going into my recipe binder pronto!

I make a version of this quite frequently, use some raisens . I cut mine into 9 portions . I use 9+9 pan. Let cool and wrap on plastic wrap and freeze pull out for bfast or snack...I also use egg beaters instead of egg , Splenda for sweetner , my recipe calls for small amt yogurt .

ReplyDeleteWhat a great alternative to plain oatmeal. I've tried it so many ways and never been a fan but this I liked. We only have 2 people in our house so there was a lot of extra that I was hoping to eat during the week. I did have it a few days but by about the 4th day it had turned sour - I'm assuming it was related to the cooked fruits. Anyway, next time we'll have to eat it faster :)

ReplyDeleteWe just made this and it was amazing! We made two small changes - We used 2 1/2 sliced bananas to cover the bottom so we smashed the remaining half and mixed it in with the milk. It spread the banana all over the oatmeal! The other change was we reduced the agave a lot.

ReplyDeleteI'm making this right now, :DDD smells good! I made some changes; I used maple syrup instead of honey, and a coconut almond milk blend just because I like the flavor more. I also mixed the nuts into the oats instead of sprinkling them on top which was an accident, they won't get toasted on top:(( but OHWELL. can't wait til the oven beeps !

I made this the other night and not quite what I was looking for. It was soggy, is that normal? I am going to try again cuz it really does look delish. Any advice?
ReplyDeleteI had the same issue noted just above about this turning out soggy. I followed the directions exactly and did not make any substitutions. I even baked it an extra 5 minutes when I checked at 30 and noticed it didn't look set as your pics demonstrated. While the flavors were still very good, the sogginess was tough to get over. I would still try to make this again, but if you have any insight into what could have caused this, I would love to hear it!

ReplyDeleteThis was pretty good. I omitted the blueberries because the ones I purchased from the store were not very good. I do think it would have been better with some sort of berry to sweeten it up a bit for my 4 year old. I will definitely make this again when I have access to fresher berries!
ReplyDeleteMy daughter who "hates oatmeal" loved this! She first ate it reheated and thought it was blueberry banana bread. I didn't correct her of course! When I served it to her fresh from the oven it was more like oatmeal consistency, and she didn't care for it. But as long as I serve it to her reheated she LOVES it!
