This easy sausage and potato soup is hearty, healthy and dairy-free, made creamy by pureeing cannellini beans.

Potato soups are so comforting in the colder months and this sausage and potato soup is sure to be a family dinner pleasure! Made with sweet Italian chicken, turkey or pork sausage, potatoes, spinach and white beans. Dairy free Sausage and Potato Soup

This recipe is from the Feeding Littles and Beyond Cookbook; 100 Baby-Led-Weaning-Friendly Recipes the Whole Family Will Love. My friend Ali Maffucci, of Inspiralized and one of the author’s of this cookbook writes “You may be surprised that this Creamy Sausage Potato Soup has no cream! I know many families avoid dairy because of allergies or intolerances but miss the flavor and texture of dairy foods. That’s why I have lots of dairy-free-but-still- creamy recipes.”

The key to making this soup creamy without cream is the cannellini beans. I do this a lot with many of my soup recipes. Plus beans are packed with protein and fiber, adding a richness to this soup that complements the hearty flavors of the Italian sausage. If you have young ones, the potatoes are softened making them great for beginner eaters, passing the “squish test.” You may ask yourself why you would ever need dairy to thicken a soup again once you try this trick.

Potato Soup Ingredients

  • Sausage: Use your favorite mild Italian sausage. I like chicken or turkey, but you can use pork or even vegan sausage can be used here. If you like it hot, try using spicy sausage instead.
  • Beans: Rinse and drain one can of cannellini beans. I usually use any canned white beans I have in my pantry, try Northern or Navy beans.
  • Broth: Low-sodium chicken or vegetable broth will work.
  • Potatoes: Yellow potatoes are used for this soup recipe. You can also try red or any waxy potato.
  • Spinach: Add chopped spinach to the pot after the potatoes are tender and simmer for a minute.
  • Extra flavor: Onion, garlic, Italian seasoning, salt, and pepper make this healthy soup so delicious.

How long is sausage and potato good for in the fridge?

Stock your freezer with soup so you have quick meals on hand when you’re too busy to cook. This creamy potato and sausage soup will hold in the refrigerator for 4 days and in the freezer for 3 months. Reheat it in the microwave or on the stove.

What to Serve with Sausage and Potato Soup

This creamy potato soup is very filling since it has 25 grams of protein from the sausage and beans. Serve it with a slice of crusty bread, and/or a salad and call it a meal!

Ingredients

  • 1 teaspoon extra-virgin olive oil
  • 4 mild Italian turkey or chicken sausage links, pork or vegan sausage can also work
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 can, 15 ounces cannellini beans, drained and rinsed
  • 1 container, 32 ounces low-sodium chicken or vegetable broth
  • 4 cups cubed yellow potatoes, peeling optional
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • 1 cup finely chopped spinach

Instructions

  • Heat a large pot over medium-high heat and spray with oil.
  • Add the sausage links, crumble, and cook until browned, about 7 minutes,  stirring often. Using a slotted spoon, remove the sausage and set aside in a bowl.
  • Immediately add 1 teaspoon oil, and then the onion and garlic. Cook until the vegetables soften, about 5 minutes.
  • Add the Italian seasoning and stir well to coat the vegetables. Add the beans and broth to the pot and stir.
  • Using an immersion blender, blend the soup until creamy. If you don’t have an immersion blender, transfer the soup mixture to a high-speed blender and blend until creamy. Return to the pot.
  • Add the cooked sausage, potatoes, and salt and pepper, and bring the soup to a boil.
  • Reduce the heat to a simmer, cover, and let the soup simmer for about 30 minutes or until the potatoes are tender.
  • Once the potatoes are tender, add the spinach to the pot. Simmer for 1 minute and then serve.

  1. Very good! I added chopped celery with the onions and also used small red potatoes because I had them from the garden (didn’t peel, worked great). It’s a good way to get legumes into a soup when your husband doesn’t eat them!! 🙂

  2. I can’t believe that I haven’t left a review considering this delicious soup recipe it is on my ‘winter soup a week rotation,’ It’s Excellent!
    I use Beyond Sausage and mushroom broth to keep the recipe vegetarian.
    I also use any green vegetable I have, spinach, kale, peas, whatever and It’s always delicious!

  7. This was great! Ended up using 16oz JeannieO Turkey Italian sausage roll and russet potatoes, peeled, and itwas still great! My husband said to put it on rotation! Creamy and delicious, great for a brisk fall day.

  9. Delicious! I make this a lot. I use either mild or sweet italian sausage and add a cup of diced celery hearts. I don’t puree it though because I’m not a fan of creamy soups. I also add a squeeze or two of tomato paste at the end…perfect!!

  11. Delicious soup. The recipe is so easy and FAST. I used 2 sweet and 2 spicy chicken sausages. Out of habit I peeled carrots so I cooked them with the potatoes. Next time I might use 2 cans of beans. Yum.

  15. Fantastic! I didn’t make it quite as healthy as I used half turkey and half regular Italian sausage. I did use more sautéed onion, garlic and also baby Bella mushrooms in the puréed mix. Also added some fresh chopped basil with the spinach. My husband said to please be sure and save the recipe! And asked if he could take some to work for his lunch tomorrow!

I used Impossible Sausage since my husband and I don’t eat pork and I believe that made it also 100% vegan, which is great for when our vegan relatives come to visit.   17. really liked this – easy to put together. used a bag of baby yellow potatoes, sweet italian turkey sausage taken out of the casings. I really liked the added creaminess of the beans emulsified. As others have said- reminds me of my favorite soup at Olive Garden.

Sometimes I make the recipe exactly as written, but I’ve also changed it up a few times (e.g., two cans of beans/one pureed, one not), kale instead of spinach, added mushrooms, twice the garlic, etc, — it’s wonderful as written, but also easy to adjust, so maybe that’s the beauty of this one. 🙂

    I substituted rutabagas for potatoes. I pierced the skin with a fork and microwaved for 2 minutes.
    Very easy to peel after it cooled.
    This makes it a little more diabetic friendly.

  23. Delicious — just the kind of warm you up from the inside recipe for a cold, drizzly winter day.
    I made two modifications.
    Since I used mild Italian pork sausage I browned the meat in a separate pan and drained off the grease rather than using the main soup pot to cook the sausage.
    Instead of kale or spinach I added a cup of chopped celery a couple of minutes before serving for the pop of bright green and the flavor of the celery perfectly complimented the smoky, savory flavor of the rest of the soup and the crunch of the al dente celery is a nice contrast to the potato and sausage.
    One note — this recipe makes way more than 4 1 1/2cup servings. 4 cups of cubed potatoes, 16oz of ground sausage, 32 oz of broth, a small onion — it all adds up. Not complaining, it all gets eaten!

  29. My husband was so happy with this soup. It’s the lighter version of his favorite soup at Olive Garden! I seasoned the sausage with garlic powder, fresh ground pepper and red pepper flakes.     Easy! Delicious!
    I forgot to buy some fresh spinach but had a package of frozen spinach in the freezer. I just added it to mix when bringing the soup to a boil.
    You will love it!

  31. Absolutely delicious and easy to make. I did blend about 1cup of the soup. It just made it more creamy. I used chicken sausage. I’ve made this many times and will continue to do so. Our favorite.

  32. Where does the 1164 mg of salt come from? This needs to be cut back for my total intake. I want very much to make this if I can reduce the salt. Thanks. Bev

    1. Mostly the sausage and the broth. You can reduce the sausage to 1 link and add ground turkey in its place.

      In order to keep the sodium down, I use Herb ox sodium free granulated bouillon. I can’t really tell the difference between Herb ox and regular broth in soups. I buy it on Amazon.

    Fabulous and easy to make!!! This soup has become a top favorite of mine- and my husband loves it, too!
    I added some diced carrots and used ground breakfast sausage instead of plain turkey. Yum!!!!

  34. This soup is excellent! I wasn’t sure what to expect but it turned out great! I will definitely be making this again. I made the recipe exactly as written, and I entered all of the ingredients to calculate the calories and came up with the same calories as reported!

  35. We loved this! I used 1 lb hot Italian pork sausage. Next time I will cook 1/2 the potatoes with the beans, blend them, then add the rest of the potatoes and the sausage.

  36. Absolutely delicious! My 9year old granddaughter asked for a taste and came back for a soup mug of it. I used Sprouts Italian chicken sausage. I added 2 more cups of broth…personal preference. It’s on repeat make cycle especially as we come into cooler temps! A big hit!

    1. I doubled the recipe and made this it without beans and left it chunky. I did not use the immersion blender. I made my own homemade Italian turkey sausage. It was very good! Thank you.

  46. I make this all the time!! I do add steamed cauliflower to the soup base to thicken it up and sneak more veggies in. Such a heart and flavorful soup that’s perfect for the cold months!

  53. This is great! I’m lazy, so I didn’t bother pureeing. Used kale instead of spinach bc I knew it’d sit in the fridge for a few days. Great delicious and cheap recipe for this cooler weather.

    1. Me too. I might try blending the beans, etc. next time, but I don’t think it’s necessary. Added a bit more spice but other than not blending and that, it’s a winner.

    A new Favorite!  So flavorful and hearty. I used Italian Turkey sausage and it was delicious. Could you publish the number of ounces of sausage to use for more accuracy of the WW points?

  58. My family loves this soup. It’s so hearty and satisfying, and easy. My husband rarely comments but has said a few times how good this soup was, It’s a cold, damp fall day and it’s on the menu again for tonight. I don’t find the need to make any changes, the flavor is right on target, I did have a few mushrooms in the fridge that needed to be used, so they were sliced and browned with the sausage.     1. You could try cornstarch as a thickener.  I mix a little with water or broth – does better if the water or broth are cold. 

  59. Perfect fall soup! I used trader joes garlic chicken sausage and their soy chorizo cause I didnt have enough sausage. The chorizo was just spicy enough to give a little kick. Also used kale instead of spinach. I got tired of chopping potatoes so went with 2 cups and it was more than enough for me. A couple of my cannelini beans slipped through and it was a nice addition. Super simple, filling, and inexpensive. My new go to!

  60. Best soup ever and so easy.  I used a tube of turkey sausage with spices in it instead of sausages links and put in a little more potatoes.   The best soup I have had in a long time.  Cannot wait to have leftovers tomorrow.

  64. I made this tonight for me and my husband. I doubled the spinach because we had a lot in the crisper. I served it with some crusty sour dough rolls and it was really delicious! Great fall dinner!

    1. I am going to try it. I’m going to pressure cook it for 10 minutes since all you really need is to cook the potatoes. I’m also going to blend it after it’s cooked.

    1. Claire – I made this in the Instant Pot last night. Use sauté button to brown the sausage. remove and drain. Then, add oil and sauté onion. I don’t add my garlic with the onion due to how quickly garlic can burn. Add other ingredients as instructed through step 4. Use immersion blender right in the pot. Add remaining ingredients except spinach (though you probably could add your spinach at this point). My Instant Pot has a soup button; otherwise, cook under pressure for 8 minutes. Do a quick release, add spinach, and enjoy!

  68. I made this soup this morning. I have already had a cup. Delicious. I used a sweet Italian sausage, because that’s what I had available. Next time I think I will use a hot sausage. I like heat. I added hot sauce in my cup.

  70. I made this last night, just so happen to have some sausages and potatoes I didn’t know what to do with. It was great! Both my husband and I loved it! I really like the idea of blending the beans to make it creamy.
    I only had a can of white navy beans but that seemed to do the trick. Also, I didn’t have any spinach so I didn’t add it. It was still good without it, but I will add it next time.

    1. Italian sausage, I like Premio they are medium size. Comes 5 in a package, not small and not breakfast sausage.
