This Spaghetti and Meatball Soup recipe is from the archives and has been greatly overlooked. I finally got a chance to rephotograph it, which I have wanted to do for a while. Lean turkey meatballs cook in a light tomato broth with cut-up spaghetti. It’s very popular in my home, and I’m sure it will be in yours too. Kid-Friendly Spaghetti and Meatball Soup

When Madison was younger, I would give her less broth, and she would eat the spaghetti soup with her messy hands. I’d also leave out the red pepper for her.

Can you cook spaghetti directly in the soup?

The spaghetti cooks in this soup. Since it’s in smaller pieces, it’ll cook in the amount of time listed in the package’s directions since you’re adding it to simmering, not boiling, broth.

How to Cook Spaghetti and Meatball Soup

  1. Broth: Bring the chicken broth, water, one crushed garlic clove, two tablespoons of parsley, one-quarter of the onion, tomato sauce, crushed red pepper, and black pepper to a boil over medium heat in a big pot. Simmer it for about five minutes.
  2. Meatballs: Meanwhile, make the meatballs by combining the ground turkey, parmesan, egg, breadcrumbs, salt, pepper, and remaining garlic, onion, and parsley. Form the mixture into about 36 one-inch meatballs.
  3. Cook: Drop the meatballs into the broth and cook for three minutes. Then add the pasta and cook it according to the package directions.
  4. Finishing Touches: Add fresh basil, adjust the salt and pepper to taste, and serve the soup with grated parmesan.

How to Freeze

Freeze leftover spaghetti soup in small containers so you can pull it out on busy nights when you need something fast to feed your kids. The soup will last in the fridge for about four days and in the freezer for three months. You can thaw it overnight in the refrigerator or reheat it in the microwave or on the stove straight from frozen.

Variations:

  • Meatballs: Swap ground turkey for lean ground chicken or beef.
  • Pasta: Substitute spaghetti for another pasta shape, like elbow macaroni or rotini. You can also use whole-wheat noodles.
  • Liquid: Since the pasta expands, you can add more broth if necessary.
  • Vegetables: Feel free to add some vegetables like spinach or chopped carrots and celery.

  • Heat a large pot over high heat and add chicken broth, water, 1 clove crushed garlic, 2 tbsp chopped parsley, 1/4 of the chopped onion, tomato sauce, crushed red pepper flakes and fresh black pepper to a boil, When it comes to a boil simmer about 5 minutes.
  • Meanwhile, make the meatballs by combining ground turkey, Parmesan cheese, egg, remaining garlic, remaining onion, remaining parsley, breadcrumbs, salt and pepper. Form into little 1 inch meatballs (about 36).

    Hi,
    tired soup and love that it was quick. I used my homemade chicken broth and added carrots celery to the broth in the begining and then at the end after adding the meatballs, added greens from backyard (swiss chard, chickory, dandelion) and zuchinni. I also air fryers the meatballs 4 minutes on each side before putting them in the soup as this browns them. Quick and easy and yummy on a work night

  4. I liked this and hubby loved it, had to up the seasoning for our taste. In case anyone is wondering if you can use other meats I used venison for the meatballs and venison stock for the broth and water and instead of tomato sauce I used tomato paste. Would absolutely make this again.

  5. I loved this recipe! I added 2 cups of Raos Marinara instead of the water as suggested by a previous poster and I added celery, carrots, and a bit more onions than called for. I also used 2 T tomato paste instead of tomato sauce. This soup is so good!

  11. Great but I highly highly recommend sautéing the onions first . I do not like undercooked onion and I found this was the case if you don’t throw them in first 

  12. So yummy and definitely hits the comfort food feel with the low calorie perk. I accidentally left the pot cooking a little too long, so the pasta absorbed more of the liquid, which made the sauce thicker and a little creamier.

I made the meatballs tiny got 60 for one pound and used all low sodium chicken broth, doubled the tomato sauce, broke the spaghetti ( Used thin whole grain) into tiny pieces. I made it one day and we had it the next so it absorbed the broth but we liked it that way. A favorite recipe. Thank you

  17. I really loved this! Flavor was great! Rich and hearty.  I would definitely make more broth if you’d like it to be more of a soup soup. We chose to make our meatballs smaller and I’d break the noodles even smaller or use another pasta next time. Hard to get spaghetti noodles on a spoon! Lol

  18. Made this lower carb using Palmini Linguine and it was delicious! We did find the Palmini Linguine difficult to eat with a spoon, so we will definitely be cutting it up into small pieces next time we make this.

  19. This was really good!  Husband and kids approved. I added 6 tbsp of marinara (only had jarred so used Rao’s) for a little more tomato sauce flavor but it was delicious! And easy!

  23. DELICIOUS!!! We used farm-raised pork instead of ground turkey, and soba noodles (gf), and added more-than-called-for pasta sauce, but otherwise followed the recipe. Truly a delicious soup! Interesting tastes, interesting textures, a new family favorite! We will definitely put this into our rotation!

    I made this yesterday. Really good. I used about double the tomato sauce to make it a little thicker of a broth. Delish.

  28. Followed other’s suggestions and baked the meatballs before adding them to the soup. I also substituted the 2 c. water with 2 c. of Rao’s marinara sauce and used fresh basil instead of parsley. Forgot to add spinach as other suggested but will do so with left-overs. Was very good as all Gina’s recipes are.

  29. I found it easier to do all the prep first, so the meatballs were ready to go into the soup when I needed them. Great flavor and picky-kid approved! Perfect for dinner on a rainy night like this one. Will make again for sure. 

  30. Does your recipes include lowering cholesterol? Some of the recipes I found somewhere else had ingredients I didn’t care for or never heard of them. It’s just me to cook for and I love your meal planning. I would appreciate any help you can give me. 

    1. Hi! Lowering cholesterol is certainly about your whole diet, not just one meal. Increasing your overall daily fiber intake, at least 25 grams a day is recommended.

  32. It’s supposed to be 115 degrees in Northern California today so I’m going to wait a few weeks for soup weather, but I really like how this sounds. I’m looking forward to it. It should be easy to adjust for gluten free.

    Gina, I love your recipes. I make almost exclusively all your recipes. You do a great job of being thorough in your directions. I do have a question and it might seem silly that I don’t know this. I usually only buy large eggs. Not sure I want to buy small eggs just for this recipe. Can I use a large egg or would I need to add more breadcrumbs? (I also read thru the comments to see if anyone else asked this but didn’t see it.) Thanks!

    Love this soup the only change I made was instead I used my homemade spaghetti sauce. I used about 50/50 between broth and sauce and didn’t add water. I also added mushrooms and served with garlic croutons.

  40. The meatballs cook enough in three minutes and the boiling of noodles?  You don’t need to cook them first?

    1. I was wondering the same thing! 3minutes of cooking and they’d still be raw. I’m going to cook mine first.

    2. I just read the directions again. They cook in there 3 minutes, then you put in the spaghetti and cook according to package directions so the meatballs end up cooking at least 10 minutes. I’ll probably still cook mine first, but at least 10 minutes is better than 3.

      If you make the small one inch meatballs it’s plenty of time. Remember you still are cooking after.

    I think I would make this again with ground beef, or even LAMB. Lamb meatballs are delicious, but then again, I am Irish so I might be bias 🙂

  51. I made this today so that it would be ready for my teenage son to eat between soccer practice and his part-time job. He loved it. When I went to the grocery store, though, they were out of ground turkey. Instead I bought the premade turkey meatballs that you find next to the ground turkey. Made this one super easy!

  53. So I made a vegetarian (vegan, even, i think) version of this soup and we loved it. I used Gardien meatballs and Better Than Bouillion's "No Chicken Chicken Base" We added more noodles and an extra cup of the broth. It was AWESOME!!! Everyone had seconds. Great recipe.

  55. This soup was amazing! Both the broth and meatballs are so flavorful. It was husband approved and will be going on our dinner rotation. We ate with lite garlic bread for a low point dinner. I agree that next time I will make some more broth since I was mostly left with noodles. Looking forward to my leftovers for lunch tomorrow!

  60. I made this today, and my husband and I just had it for dinner. It was sooo good!!! I added frozen chopped spinach to it, and cooked the pasta separately, because I find cooking it in the soup causes the soup to be too starchy.   62. This is a GREAT recipe…it's my daughter's favorite thing that I make. I find that we end up with some meatballs and mostly pasta left (it sucks up all of the broth) so I will typically save that in a container. In the next day or so I just make a few more cups of broth (using chicken broth, tomato sauce, basil and/or italian spices, and a bit of minced garlic), add the remaining meatballs and pasta to it, heat it all for a few minutes, and it's a whole second round.

  63. This reminds me of albondigas, a Mexican soup my grandmother used to make. It has cilantro in the meatballs and zucchini in the broth. Sooo good!

  66. This was so good! I used Lean Ground Turkey, added an extra cup of broth, extra red pepper flakes (gave it a nice kick) and used egg beater instead of a real egg. It turned out great!

    This is listed under a freezer meal… when should I freeze it?? Assemble the meatballs and soup and then freeze it or cook it all (except the spaghetti) and then freeze? Anyone?

  71. Hmmm I'm not sure why people are saying this isn't a "pretty" dish. I think it looks lovely! This soup is absolutely delicious! My 19 year old daughter has never liked onions (I love them) so I would always exclude them from anthing I made. Tonight I waited for her to finish her soup before I told her there was onion in it!   76. Fantastic! My picky toddler (normally exists on air and water) even had a few sips. Next time I will dice the onion smaller; big pieces were popping out of the meatballs when I tried to roll them. Small changes I made: used dry whole wheat breadcrumbs (couldn't find seasoned) and 3 ounces of Catelli Smart spaghettini. I don't know if it's just me but whenever I use pasta in soop, it always takes over and makes it stew (hence the reduced amount of pasta). Will make again, thank you!

  77. My husband and I just ate this for lunch and LOVED it! Yet another completely fabulous recipe from Skinnytaste. It was so easy and the flavors were great. When I put the stats into my WW calculator though it said it was 6p+, not 5. I'm wondering if there was a mis-calculation or if that is excluding the numbers for veggies?   88. Made this last night. It was great! I need thought to chop my onion smaller. DH has to have his onions "hidden". Other than that it was great!! (He still ate 2 portions & I think he wanted thirds but held off…) My son (age 2) gobbled it up too and it wasn't as messy since it didn't have all the spaghetti sauce!   94. I made this today with ground chicken breast (ground it myself in my Ninja). I also used 5 oz of elbow macaroni in place of the spaghetti because that's what I happened to have sitting in the cupboard waiting to be used up.

    I didn't see basil on the ingredient list, so it didn't make it on my shopping list. 🙁 Even without the basil, it is a fantastic soup! Definitely don't skimp and go with fresh herbs over dried if you can. I forgot how amazing fresh parsley smells while you chop it!

    I found the soup to have the perfect ratio of broth to "other stuff." I like lots of "other stuff" in my soups. 🙂

  95. For the person concerned about the meatballs only cooking 3 minutes. Remember, they are still cooking when add the pasta and it is cooking for another 11 minutes or so.

  101. I made this tonight. I added two stalks of chopped celery and two chopped carrots. I also used Ronzoni Garden Delight spaghetti. It was so good! It passed the Hubby test and son had two huge helpings of it.

  106. My husband grew up eating a dish the family called "Spaghetti Soup". It didn't have meatballs — rather ground beef — but looked quite a bit like this. I think the turkey meatballs are a super addition and will make this for him tonight. I'm betting on his loving a stroll down memory lane with an improvement!

  108. I made this last night… My family LOVED it!!!!! It was surprisingly delicious! I thought I would be able to bring leftovers for lunch but my folks went back for seconds and thirds! I added some pecorino romano to the meatball mixture because I had some I needed to get rid of. It added a wonderful flavor. Thanks so much for this recipe!

    This looks tasty! I'm thinking I'll use flaxseed meal in place of bread crumbs and egg beaters in place of the egg. What about adding spinach?

  110. This sounds really good and easy. If you wanted it thicker, you could use less broth and a little more tomato sauce (although that would obviously alter the nutrition facts but still be a low calorie meal).

  112. I made this last night for my husband and 2 year old daughter, it was a huge hit! I added chopped frozen spinach as well because we love spinach, I cant wait to have my leftovers for lunch today! Thanks for sharing this great mdeal.

    If you make it in the crockpot, I would cook it low for 4 hours. Then when you get home, add the pasta and cook it until done.

    1. Hi. Coming in a couple yrs late on this one, so hopefully you'll see my question! 🙂 I'm cooking for a crowd after a dance recital (8 adults; 5 kids who are 8 yrs old and up). I'm thinking of doubling this in crockpot so can eat when get home. Because it is is crockpot, would you add any extra liquid, or follow exactly just cooking on low for 4 hours? Thanks so much!! Looks awesome!

  116. Delicious!! For the leftovers I heated up 2 cups of stock and added another TBS of tomato sauce and mixed it back in since the broth ran loa after we all ate.

  119. How do you think this would do in the crockpot? I am think throw everything in, and then add the pasta at the last minute and let that cook on high until done? Anyone try it that way? I know the recipe is quick, but I work late and am always looking for yummy crockpot recipes.

  120. For those that are worried that the meatballs are not cooking long enough to get done – remember – they will be cooking for the initial 3 minutes PLUS whatever time it takes to cook the pasta. Will be plenty of time!

    Yes, I am doing the old ones now and then because they are hidden since I didn't get much traffic back then. For my little one, I just give her less broth and she eats the rest with her messy hands 🙂

  122. Thanks for re-posting this..i would have missed it otherwise. I have a one year old that loves to eat spaghetti and meatballs. Since he cant use utensils yet, it usually ends up being a HUGE mess. This will be easy for me to feed to him and I am sure he will LOVE it. Thanks Again! Allison

    They cook 3 minutes, PLUS the time it takes to cook the pasta which will vary by cut but yes, they cook quick, they are very small.

  126. This soup is great! Very flavorful. Both my children and my husband enjoyed it…no small feat! Not necessarily the prettiest dish I've ever made, but pretty isn't why I eat!
