
My father is from Prague and always made these delicious crepes, known as Palacinky for us when we were young. They can be filled with fruit, jam, ice cream, you name it!
Czech Crepes filled with Berries and Cream
Gina's Weight Watcher Recipes
Servings: 12 servings • Time: 20 minutes • Old Points: 2 pts • Points+: 3 pts
Calories: 106.2 • Fat: 1.1 g • Carb: 19.8 g • Fiber: 2.4 g • Protein: 3.6 g
Ingredients:
For the Crepes (makes about 12):
- 1 cup flour
- 1 1/2 cups 1% milk
- 1/3 cup egg whites (or 2 large egg whites)
- 1 whole egg
- 1 tsp oil
- non-stick spray
- powdered sugar
- 6 oz package blackberries
- 6 oz package raspberries
- 12 oz package strawberries, cut in quarters
- 2 tbsp sugar
- whipped topping (I like Tru Whip)
Directions:
In a blender, blend flour, milk, eggs and oil until smooth.
Heat a nonstick crepe pan on medium-low flame. When hot, spray with cooking spray to coat bottom of skillet. Pour about 1/4 cup crepe mixture into pan, swirling pan slightly to make crepe thin and smooth. Cook for 1 to 2 minutes or until bottom of crepe is light golden brown. Flip; cook 30 seconds to 1 minute or until light golden brown. Repeat with remaining crepe mixture.
To serve, spoon whipped cream into center of each crepe. Top with berry mixture and fold each edge of crepe over filling. Sprinkle lightly with powdered sugar. Best if served warm.

Recipe can easily be doubled to serve more. Extra batter can be refrigerated for up two days.

Splenda will be fine, I've never used skim milk but I don't see a problem using it.

Love these! So do my kids. For the cream I use lo fat vanilla yogurt mixed with a little extra vanilla and splenda. It is thick and creamy. Keep the great recipies coming!

ReplyDeleteI am Polish and the picture reminded me of the crepes my mom used to make, byt ours were filled with sweet farmers cheese type of a filling. Would you have any idea how to make something like that? Ricotta is not right, too watery. Cottage cheese's curdles are too thick. I guess I can't find the right type of cheese.
ReplyDeleteHi,I'm from Slovaka and when my mom made palacinky,she would fill them with cottage cheese.All you do is whip the cottage cheese with blender,until smooth.She would add raisins to it as well after it was whipped(those were not my favorite,I like hem with jam,or nuttela)

My husband makes pierogi and fills them with farmer's cheese (for those he adds eggs, sugar, a little sauteed onions/shallots in butter).

I took a quick peek at your pumpkin crepes and I noticed how similar they were, with the whole wheat flour replacement. I was just wondering if you've ever tried whole wheat for these kinda non-flavored crepes, or do you think using half cup flour and half cup whole wheat would work just as nicely? Let me know your thoughts!

ReplyDeleteMy family is from Hradec Králové, Ceska Republika and I grew up with Crepes as a Sunday breakfast treat (NOT the healthy kind!). Often times we also filled ours with savory meat mixtures but hands down, the best way to have these is with fresh fruit.

Just made these this morning & I must say, they were absolutely delicious!!! I used whole wheat flour & fat free milk, and also used spiced apples instead of berries, since I didn't have any on hand. Sooooo yummy! And very filling! Love your recipes, and my picky 4 year old and hubby do too!

ReplyDeleteGina I love these crepes but wanted to make them even lighter so I used three egg whites instead of the whole egg and 1/2 tsp of oil instead if a whole teaspoon and didn't put berries or cream inside I just ate them plain. In your opinion would that make each crepe only 1 point or still 2?

ReplyDeleteWas feeling like fresh berries for breakfast - only had frozen googled ww berry crepes and this is the first recipe that came up! Thawed some raspberries and blackberries and used non fat plain yogurt instead of the cool whip for a most wonderful breakfast! Thanks for another great recipe! I also used Silk Almond milk in the batter, added a nice flavor.

ReplyDeleteDelicious!!! I microwaved frozen blueberries and strawberries for the filling- didn't add any sugar. Worked out well for the filling. The whole family loved it!

ReplyDeleteI often make french crepes (which is basically the same thing) Only I add a little bit of vanilla and cinnamon to the mix and top with yogourt, berries and maple syrup... Once you've had crepes, pancakes just don't cut it anymore. :)
