Servings: 4 • Serving Size: 1/4 lb salad, 1/4 cucumber • Old Points: 2 pts • Points+: 3 pts
Calories: 117.5 • Fat: 2.8 g • Protein: 18.8 g • Carb: 3.7 g • Fiber: 1.0 g
Ingredients:
- 3/4 lb cooked shrimp, peeled (weight after peeled)
- 2 celery stalks, chopped
- 1 tbsp red onion, chopped
- 2 tbsp light mayonnaise (I used Hellmann's)
- 1 tbsp fat free Greek yogurt
- Goya Adobo
- salt and fresh ground pepper
- 30 thin slices cucumber (about 1 large)
- chopped chives for garnish
Combine shrimp, celery, onion, mayonnaise, yogurt, and season to taste with adobo

ReplyDeleteI did make a few changes, because of what I had on hand....I subbed the celery for green pepper, yellow onion for red and the bread for arnold rounds ( 1pt for a whole round) I also added a squeeze of lemon juice. The adobo is pretty salty on its own, so I also omitted the salt altogether. I think this would make an awesome wrap as well, just cube up the cukes and add some lettuce!

ReplyDeleteJust found your site and just made these. They are divine. No one would know they are light. The yogurt makes it taste real. In fact, my husband who can sniff out a "light" recipe in a heartbeat was popping them. He said, "those are addictive." The only problem with this recipe is that it made me think I am at the beach and then I wanted a margarita!!!

ReplyDeleteI made this with chicken instead of shrimp, and used the seasoning salt. It was super yummy. I like to add red grapes to my chicken salad but I didn't have any so I added about 2/3 of a packed of splenda and it was SO good.

ReplyDeleteAdobo is a latin seasoning that usually has cumin, garlic powder, salt, black pepper and turmeric.

ReplyDeleteThanks Gina! I made this last night for lunches today and couldn't find Goya Adobo so I used Lawry's Seasoned Salt - perfect. Delicious and so easy! I bought salad shrimp at the meat market and the tiny shrimps were just perfect!

ReplyDeleteOk, this is one of two recipes that I am going to try for xmas eve. I have the shrimp salad already made and in the fridge so, all I have to do is cut up the cucumbers and put the shrimp salad on them. I am also going to put the cucumbers on pumpernickel cocktail bread, instead. The other is the buffalo chicken dip. So, here's to seeing what happens.
