
Warm oven-fried coconut chicken over a bed of baby greens, cucumber, tomato, shredded carrots topped with a hot honey mustard vinaigrette. It's the perfect mix of salty and sweet, warm and cold.
I'm not sure what it is about spring, maybe the thought of having to get into a bathing suit in just a few more months, or maybe it's just the sunshine that switches my brain to want less soups and stews to large main dish salads. This salad has plenty of protein to keep you satisfied and the warmth of the chicken doesn't leave me feel like I'm missing something. Serve this for lunch or dinner; use any combination of salad fixins' and dig in!
For the chicken I found the cornflake crumbs gave this a nice crispy texture, but unseasoned breadcrumbs would work just as well in their place. This would also be great with shrimp, enjoy!!
Coconut Chicken Salad with Warm Honey Mustard Vinaigrette

Servings: 3 • Serving Size: salad with 2 chicken tenders • Points: 8 pts • Points+: 8 pts
Calories: 397.6 • Fat: 11.0 g • Protein: 26.8 g • Carb: 32.5 g • Fiber: 4.4 g • Sugar: 10
Ingredients:
- 6 (about 12 oz) chicken tenderloins
- 6 tbsp shredded coconut
- 1/4 cup panko crumbs
- 2 tbsp crushed cornflake crumbs
- 1/3 cup egg substitute or egg whites
- pinch salt
- olive oil spray
- 6 cups mixed baby greens
- 3/4 cup shredded carrots
- 1 large tomato, sliced
- 1 small cucumber, sliced
For the Vinaigrette:
- 1 tbsp oil
- 1 tbsp honey
- 1 tbsp white vinegar (balsamic would work too)
- 2 tsp dijon mustard
Directions:
Whisk all vinaigrette ingredients; set aside.
Preheat oven to 375°.
Combine coconut flakes, panko, cornflake crumbs and salt in a bowl. Put egg whites or egg beaters in another bowl.
Lightly season chicken with salt. Dip the chicken in the egg, then in the coconut crumb mixture. Place chicken on a cookie sheet lined with parchment for easy cleanup. Lightly spray with olive oil spray and bake for 30 minutes turning halfway, or until chicken is cooked through.
Place 2 cups baby greens on each plate. Divide carrots, cucumber, tomato evenly between each plate. When chicken is ready slice on the diagonal and place on top of greens. Heat dressing in the microwave a few seconds and divide equally between each salad; a little over 1 tbsp each.

ReplyDeleteQuestion, if you use shrimp how long should they cook? 10 minutes?
If your oven is properly preheated, it should only take about 5 minutes...that being said, you are also going to want the breading to get browned, so it might take a little longer. Shrimp just seems to be one of those things that you have to keep staring at! ;p

ReplyDeleteGina, have you ever used almond meal in anything? I got a bag at Trader Joe's and was thinking of subbing out the bread crumbs & cornflake crumbs for the almond meal. Most likely not as crispy, but perhaps worth a shot? I've never cooked with it before, but wanted to mix things up.

Panko crumbs are Japanese bread crumbs. They make a great substitute when baking instead of frying because they maintain crispy.
I used sweetened coconut, I will fix that. I've never tried almond meal, I bet it would be great! I thought of adding some crushed macadamia nuts instead of the cornflake crumbs, maybe next time!
I'm not sure if Points plus and Pro points are the same, I think they are but don't quote me on that. You may want to google that one.

ReplyDeleteMade this with shrimp last week and it was AMAZING!! I toasted the coconut first and it added flavor and texture. Just spread it out on a baking sheet and put in the oven on 300 for about 7 mins. Keep an eye on it and stir occasionally. So good!!

I just joined WW and I also generally want to eat less processed garbage. I don't want to resort to frozen lunches or meal-on-the-go bars/shakes, but a lot of recipes I have found either seem way too difficult or way too boring to even bother with. Your site is easy to navigate (love that it's tagged so many different ways so I can find based on points or meal type, etc) and the recipes are easy to follow. Made this last night with a side of sauteed green beans and garlic for a low carb meal....AWESOME RECIPE!!! My husband and cousin loved it! The chicken had a great taste and crunch to it, made me feel like this wasn't a light meal. And the honey mustard vinegarette was delish. A definite weekly meal! 8 PP and 2 more for the olive oil I used on the beans, 10PP is so doable for a meal.

ReplyDeleteHusband and I wanted a salad and I was too lazy to go to the store, so I used what I had on hand and made the following changes:
ReplyDeleteChicken - Reg. bread crumbs with grated Parmesan cheese in place of the corn flake crumbs.
Salad - Spinach, chopped mango and strawberry, and port goat cheese with caramelized onions
Dressing - blood orange olive oil and agave syrup.
And -- I served it with a peach infused white wine!
WOW -- It was awesome!!! I'll keep using this and changing it up...it was awesome!

Of course when I went to get the eggs out of the fridge they were all gone (kids went on an egg eating spree!) so I improvised and used buttermilk with some ground flax mixed in for a binder. The whole family loved it and the honey mustard vinaigrette definitely needs to accompany this dish.....if you like coconut you will love this recipe.

Has anyone tried using unsweetened (dessicated) coconut in this recipe? It's sometimes hard to find the sweetened stuff here in UK. I think I saw a method somewhere of spraying the dessicated coconut with simple syrup to sweeten it, but I'm just wondering if I would need to since the dressing would be sweet from the honey. Hmmmm. Looks so delicious, and I love coconut!

YUM! Made this tonight and it was SO GOOD! Knew it the moment I saw it that it would be, so not really a surprise. I do have one complaint though. I know that you want everything to look perfect for your site, but DARN if it makes all of my stuff look like crap by comparison! The toppings on the chicken were not as even and lovely, the browning wasn't quite as even. It wan't gross looking but I wish I could have matched the loveliness. HMMM....I guess that wasn't really a complaint, just an inside out compliment on your photos.

We're getting married in a few months, and though we naturally eat pretty healthy, we are trying to eat more fresh food and veggies in order to look our best for our big day. I found this recipe and just knew I had to make it!! It was so easy to make, and we loved how all the flavors came together so nicely. The chicken was nice and crunchy on the outside, moist on the inside. We loved the sweetness of the chicken paired with the tangy-ness of the dressing, and then the coolness of all the veggies. I threw in some golden raisins for a little extra sweetness and texture, and we loved it! I was so excited that there were leftovers too, because that is lunch today!

ReplyDelete-I didn't have any cornflakes on hand, so I just increased the coconut and panko quantities.
-I pulled out my lightly-used Pampered Chef hand chopper gadget. I chopped the coconut a bit so the flake size was a little shorter.
-I chopped the chicken into bite sized pieces and breaded/baked it this way. Mmm! Lots more coconut flavor because there was more surface area for the breading.It also made it easier for the dinner guests to eat it bite-sized instead of cutting. (Minor, I know. I just wanted more coconut flavor to shine.)

ReplyDeleteMade this salad today for lunch and it was absolutely amazing!! From the chicken to the dressing it was incredible. So much flavor! When I got done cooking and assembling everything on my plate, it was as if I had ordered it from a restaurant. I impressed myself, with how great it looks.

ReplyDeleteI made this last night for hubby and myself; fantastic! It looked beautiful, and the simplicity of the salad ingredients worked beautifully with the lightly sweet dressing. The coconut flavor shines beautifully through the chicken and marries so well with the mustard vinaigrette. Though the chicken was good on its own, I wouldn't do the salad without the dressing. And why - for one measly point?
ReplyDeleteModification: As I was shopping, I came across a Macadamia Coconut Coating Mix from NutCrusters. Not inexpensive, but the ingredients are Macadamia nuts meal, breadcrumbs, coconut, flax, and spices. After having read the comments here, I gave it a try - it was amazing, and I boosted my fiber content a little, though it probably added a point to the meal.

I counted up the salad dressing points+ and got 4 pts for that if anyone was wondering. Thanks so much for the great recipes you make dieting delicious!
ReplyDeleteI'm obsessed with this. I actually just made the chicken with some green beans (didn't have salad or honey handy!), and my husband and I loved it. He dippped the chicken in mango chutney (rather than the sauce provided on the recipe) and said it went perfectly. THANK YOU for this awesome recipe!!

ReplyDeleteThat looks so delicious! I'd really love to try this recipe but here in Italy I have a hard time finding panko crumbs. Could you suggest an alternative for those? Would it work equally well with regular bread crumbs for example? Keep up the great work, I love your blog!

ReplyDeleteI made this last night and it was delicious. Served it atop Arugula with cucumber, shredded carrots, red peppers and a slice of avocado. My son who never eats salad loved it. It will definitely be made again and again. Made extra chicken and sliced up and used with Arugula , honey mustard in the kids sandwiches the next day for school. They loved them too. Tonight I'm trying the Sofrito Chicken stew.....smells good!!

ReplyDeleteMy sister-in-law recommended your site two weeks ago and so far I've made this, the spinach stuffed chicken rollatini, and the white bean turkey soup. I just made the Kansas City barbecue sauce in preparation for pulled pork and also this week will be the mini turkey meatloaf with mashed potato frosting. Every single recipe has been amazing. Because there are two of us I've shared with my daughter and son-in-law who just had a baby and have little time to cook, which they ordinarily love to do. They have sent back rave reviews too. (And I've told three friends - so far - about your site). It is AMAZING and you are wonderful and you have a growing fan club in southern Connecticut!
I just made this and it is DELICIOUS! the only thing I do different is I like to dip my chicken in plain Greek yogurt before I put it in the breadcrumbs mixture. Thank you for a simple, quick, healthy, and TASTY recipe!! I just stumbled on your site via pinterest and I am so glad for that...my entire menu for the next week is from your web site. Made this for dinner last night and it was delicious! I only made one minor change, and that was to throw some raspberries into the salad to make it even more summery! The raspberry flavor worked really well with everything else here.

ReplyDeleteIf you add some curry powder and some garlic powder to the breading mixture it really adds some great flavour. We have added cayenne to it too, just a teeny pinch and it is yummy :)
