I’m not sure what it is about spring, maybe the thought of having to get into a bathing suit in just a few more months, or maybe it’s just the sunshine that switches my brain to want less soups and stews to large main dish salads. This salad has plenty of protein to keep you satisfied and the warmth of the chicken doesn’t leave me feel like I’m missing something. Serve this for lunch or dinner; use any combination of salad fixins’ and dig in!

For the chicken I found the cornflake crumbs gave this a nice crispy texture, but unseasoned breadcrumbs would work just as well in their place. This would also be great with shrimp, enjoy!!

Warm oven-fried coconut chicken over a bed of baby greens, cucumber, tomato, shredded carrots topped with a hot honey mustard vinaigrette. It's the perfect mix of salty and sweet, warm and cold.


  • 6 about 12 oz chicken tenderloins
  • 6 tbsp shredded sweetened coconut
  • 1/4 cup panko crumbs, or GF panko
  • 2 tbsp crushed corn flake crumbs
  • 1/3 cup egg whites, beaten
  • pinch salt
  • olive oil spray
  • 6 cups mixed baby greens
  • 3/4 cup shredded carrots
  • 1 large tomato, sliced
  • 1 small cucumber, sliced

For the Vinaigrette:

  • 1 tbsp oil
  • 1 tbsp honey
  • 1 tbsp white vinegar, balsamic would work too
  • 2 tsp dijon mustard


  • Whisk all vinaigrette ingredients; set aside.
  • Preheat oven to 375°.
  • Combine coconut flakes, panko, cornflake crumbs and salt in a bowl.
  • Put egg whites or egg beaters in another bowl.
  • Lightly season chicken with salt. Dip the chicken in the egg, then in the coconut crumb mixture.
  • Place chicken on a cookie sheet lined with parchment for easy cleanup. Lightly spray with olive oil spray and bake for 30 minutes turning halfway, or until chicken is cooked through.
  • Place 2 cups baby greens on each plate. Divide carrots, cucumber, tomato evenly between each plate.
  • When chicken is ready slice on the diagonal and place on top of greens.
  • Heat dressing in the microwave a few seconds and divide equally between each salad; a little over 1 tbsp each.

  1. Are the points wrong because I inputted into the WW app and it came to be 11 pts for green and blue. I’m pretty disappointed because the meal was delicious but now I have gone over my points.

  2. Needed up marinating the chicken on light coconut milk ans used unsweetened coconut for the coating  even my very picky ds liked it. Served with jasmine rice. The warm dressing was phenomenal and I definitely did. It portion that as it was supposed to but it made th dish

  4. Try lightly coating in flour seasoned with salt/pepper or seasoned salt or garlic salt, then in beaten egg, then crumbs. The flour absorbs the moisture released during cooking. Works for me everytime.

  6. This quickly became a family FAVORITE! My kids cannot get enough of it. I adapted it for frozen (thaw first) cod and served both at a dinner party because friends are pescatarian. Everyone loved both the chicken and the cod. I cannot recommend it enough.

  9. YUM! We often don’t have corn flakes so just use extra panko. We also don’t use sweetened coconut but unsweetened and I have to think this is better. We pan saute the chicken before putting it in the oven so we’re probably swapping sugar for fat because of the oil but I’ll take it. It turns out so crisp. Because we cook in a pan first we only need to have in the oven for about 15″ or until the meat thermometer hits 165. We love these !

  11. Corn flakes are technically not gluten free because they have malt in them. What is your suggestion for a substitution? Thanks!

    • The recipe doesn’t say it’s GF but the health food stores usually have GF cornflakes 

      • It does say GF, right under the title. But maybe corn chex would work? And panko is not gf either, so hopefully you gf panko or double the chex.

    So I make it all the time but want to use my own dressing for lower points.

    • You can just enter the ingredients for the chicken separately into the recipe builder. 🙂

      • That’s what I did. I entered the ingredients for the chicken separate from the dressing. My recipe made enough for 5 people so it equalled 3 points per serving. It all depends on your portion sizes for personal points.

I had two chicken breasts marinating in a very light miso-ginger dressing in the fridge, so I pounded them thin and used them instead of tenders.   44. I just wanted to add in another alternative to using the egg whites as coating before the panko/coconut. I had no eggs, and also I think it's a bit wasteful to only use the whites of an egg. So instead of coating the chicken with egg wash before panko/coconut, I coated the chicken with a tiny bit of dijon mustard on each side. Voila 🙂

    • "wet" the chicken with a tiny dab of dijon mustard spread on each side of the chicken! then coat with panko/coconut. did that myself 🙂

  79. I made this last night for hubby and myself; fantastic! It looked beautiful, and the simplicity of the salad ingredients worked beautifully with the lightly sweet dressing. The coconut flavor shines beautifully through the chicken and marries so well with the mustard vinaigrette. Though the chicken was good on its own, I wouldn't do the salad without the dressing. And why – for one measly point?

    Modification: As I was shopping, I came across a Macadamia Coconut Coating Mix from NutCrusters. Not inexpensive, but the ingredients are Macadamia nuts meal, breadcrumbs, coconut, flax, and spices. After having read the comments here, I gave it a try – it was amazing, and I boosted my fiber content a little, though it probably added a point to the meal.

  89. Delicious! I modified just a little:

    -I didn't have any cornflakes on hand, so I just increased the coconut and panko quantities.
    -I pulled out my lightly-used Pampered Chef hand chopper gadget. I chopped the coconut a bit so the flake size was a little shorter.
    -I chopped the chicken into bite sized pieces and breaded/baked it this way. Mmm! Lots more coconut flavor because there was more surface area for the breading.It also made it easier for the dinner guests to eat it bite-sized instead of cutting. (Minor, I know. I just wanted more coconut flavor to shine.)

    Great recipe, wonderful dressing — it was a hit at dinner!

  97. I made this last night for dinner for me and my fiance, and it was a huge hit! We're getting married in a few months, and though we naturally eat pretty healthy, we are trying to eat more fresh food and veggies in order to look our best for our big day. I found this recipe and just knew I had to make it!! It was so easy to make, and we loved how all the flavors came together so nicely. The chicken was nice and crunchy on the outside, moist on the inside. We loved the sweetness of the chicken paired with the tangy-ness of the dressing, and then the coolness of all the veggies. I threw in some golden raisins for a little extra sweetness and texture, and we loved it! I was so excited that there were leftovers too, because that is lunch today!

  109. YUM! Made this tonight and it was SO GOOD! Knew it the moment I saw it that it would be, so not really a surprise. I do have one complaint though. I know that you want everything to look perfect for your site, but DARN if it makes all of my stuff look like crap by comparison!   117. Has anyone tried using unsweetened (dessicated) coconut in this recipe? It's sometimes hard to find the sweetened stuff here in UK. The whole family loved it and the honey mustard vinaigrette definitely needs to accompany this dish…..if you like coconut you will love this recipe.

  130. Husband and I wanted a salad and I was too lazy to go to the store, so I used what I had on hand and made the following changes:

    Chicken – Reg. bread crumbs with grated Parmesan cheese in place of the corn flake crumbs.

    Salad – Spinach, chopped mango and strawberry, and port goat cheese with caramelized onions

    Dressing – blood orange olive oil and agave syrup.

    And — I served it with a peach infused white wine!

    WOW — It was awesome!!! I'll keep using this and changing it up…it was awesome!

The chicken had a great taste and crunch to it, made me feel like this wasn't a light meal. And the honey mustard vinegarette was delish. A definite weekly meal! 8 PP and 2 more for the olive oil I used on the beans, 10PP is so doable for a meal.

  137. Ah this was so yummy! I have also made your baked zucchini sticks and spinach ziti, which were delicious. I love your site! It's incredibly helpful. I just joined WW and I also generally want to eat less processed garbage. I don't want to resort to frozen lunches or meal-on-the-go bars/shakes, but a lot of recipes I have found either seem way too difficult or way too boring to even bother with. Your site is easy to navigate (love that it's tagged so many different ways so I can find based on points or meal type, etc) and the recipes are easy to follow.   157. Made this with shrimp last week and it was AMAZING!! I toasted the coconut first and it added flavor and texture. Just spread it out on a baking sheet and put in the oven on 300 for about 7 mins. Keep an eye on it and stir occasionally. So good!!

    Jodi, I would use jumbo shrimp, 10 minutes sounds right but I would check one to be sure.

    Panko crumbs are Japanese bread crumbs. They make a great substitute when baking instead of frying because they maintain crispy.

    I used sweetened coconut, I will fix that. I've never tried almond meal, I bet it would be great! I thought of adding some crushed macadamia nuts instead of the cornflake crumbs, maybe next time!

    I'm not sure if Points plus and Pro points are the same, I think they are but don't quote me on that. You may want to google that one.

    • If your oven is properly preheated, it should only take about 5 minutes…that being said, you are also going to want the breading to get browned, so it might take a little longer. Shrimp just seems to be one of those things that you have to keep staring at! ;p
