Course: Salad
Cuisine: American
Bangin Good Chicken Salad is delicious, made with tender chunks of breaded chicken baked until golden topped with delicious Bang Bang sauce. I served this over mixed greens and swooned with every bite!
Prep: 10 minutes
Cook: 15 minutes
Total: 25 minutes
Yield: 4 servings
Serving Size: 6 pieces chicken + salad

  • olive oil spray, I used my Misto
  • 2 tsp olive oil
  • 6 tbsp whole wheat or gluten-free Italian seasoned breadcrumbs
  • 2 tbsp plain or gluten-free panko
  • 16 oz 2 large skinless boneless chicken breasts, cut into 24 1-inch chunks
  • kosher salt and pepper to taste
  • 4 cups shredded romaine
  • 1 cup shredded red cabbage

For the Skinny Bang Bang Sauce:

  • 2 1/2 tbsp light mayonnaise
  • 2 tbsp scallions, chopped fine plus more for topping
  • 1 1/2 tbsp Thai Sweet Chili Sauce
  • 1 tsp Sriracha, or to taste

  • Preheat oven to 425°F. Spray a baking sheet with olive oil spray.
  • Put the olive oil in one bowl and the breadcrumbs and panko in another.
  • Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
  • Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet.
  • Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.
  • Meanwhile combine the sauce in a medium bowl. When the chicken is ready, drizzle it over the top and enjoy!!

To make in the air fryer:

  • In batches, cook the chicken in a pre-heated air fryer 400F 8 minutes, turning halfway.

Made it. Loved it. Will def make it again. SO GOOD!  I haven’t made a skinny taste recipe yet that I didn’t love.

  3. Made this tonight for dinner.  Cooked the chicken in the air fryer.  It was Moist and a little crispy on the outside.   doubled the dressing and added 2 Tbsp of water to thin it just a bit.  Really tasty and will definitely make again.  Thank you.

  4. This was easy and absolutely FANTASTIC!! My family agreed it’s a keeper for the menu and i can’t wait to make it again. Although it was baked it was still crunchy and I loved using the olive oil instead of eggs and Flour to dredge it in. I also used some shrimp and it all turned out great. Thanks for the awesome recipe.

  5. Could you substitute the mayo for Greek yogurt instead? Or is there a better way to substitute the mayo?

  6. These are a huge favorite in my house, especially with the kids. I just had a quick question. Have you tried doing these in an air fryer? I am just wondering if there’s any recipe changes or what the cooking times and settings would be. Thanks.

  7. This was so good, probably one of my favourites from this site! I made a little extra sauce and I paired it with raw cucumbers, carrots, celery and peppers. I was totally craving pub style food…this was way better tasting and way better for you! My entire family gobbled this up….yum!

Is there a way to thin the sauce or dressing we like it on shrimp but want flavor but not more mayo at least. We found at dinner this evening we either couldn’t taste it or had enough we have up the calories. I was cuirous.

  9. We had this for supper tonight and it was delicious! I used a bag of Dole Asian Salad which had chopped Romaine and Cabbage and chicken already diced in the butcher’s case. It was as easy as it gets, full of flavor and be a trusted go-to recipe. Thank you!

Does the nutritional information/SP values include the bang bang sauce? I made this in the air fryer and it was great! Thanks!

  11. This was delicious, light, yet filling! I grabbed broccoli slaw by accident, instead of red cabbage but the crunchiness of cabbage/slaw was so nice. Loved this recipe and so did my family. Thank you for another hit!!

  12. How do you get the breading to be crispy? Every time I make a recipe like this the meat comes out soggy. Help. 🙂

OMG. This.was.amazing. Seriously. Soooo tasty!! And very easy to make!!! Thank you SO much Gina for making this weight loss thing/eating healthier a little bit easier and much more delicious than I could have done on my own!!!

  14. I can’t get over how this dish can be so tasty, so filling, and yet not ruin an eating plan! Gina, I just found your blog about three weeks ago, and I bought one of the cookbooks last week. Thanks to you, I’m actually looking forward to learning how to modify my cooking, rather than dreading it like a punishment. I can honestly say you have transformed the way I see the whole process, and I’m loving it. Thank you!

  15. I made this last night for dinner and it was amazing…the chicken nuggets were the best like so perfect and moist!! Me and my husband could not get enough..I will make this again and again. Add it to the every other week mix in! If you haven’t tried this you need tonight.

  16. This Bangin Good Chicken is DELICIOUS. I will be making this again for sure. This was a big hit in my house. I am counting the days until her new book comes out!

  17. I made this last night and it was delicious! It was even great on top of the simple salad. I thought I'd want something else on the side but was completely satisfied with this. Yum yum! My kids also very much enjoyed the chicken and my husband loved everything. Thank you 🙂

  18. I love this recipe. Thank you. My brother is a picky eater, even he enjoyed it. So light yet satisfying.

  19. So delicious! I made this for my friend and I and we both absolutely loved it. My boyfriend doesn't like salads and ate just the chicken the next day which convinced him to eat the salad the next time I made it. This is so easy and SO yummy.

    Dear Gina,
Thank you so much for! I am a life long weight watcher who loves to cook and eat. My husband is skinny as rail and was raised on deep southern cooking. We both have loved every single recipe of yours that I have made. Your weekly meal plans have made planning (the hardest part) easy! Tonight I made this salad with tilapia instead of chicken and Tobasco instead of Shriracha and it was delicious! Since I learned of your website I have hardly opened one of my other cookbooks. Over Christmas this weekend I told the whole family about your website so you will have some more faithful followers soon!
    Thanks again,
    Sara G. from Charleston, SC

  21. Is the sauce included in your calculated points? I don't see where it says how much of the sauce to use per serving. Thanks.

  22. Made this tonight, it was super easy! I had plain, whole wheat bread crumbs so I added some italian seasoning and garlic powder to the mix. Made the Bang Bang sauce with 2% greek yogurt since I don't care for mayo- my fiancé made his with mayo and loved it. Will def make this again.

  23. This is so good and easy to make; I have made it several times now changing up the salad ingredients depending on what I have on hand. The sauce is good on shrimp and even on sandwiches!

  24. Tried this the other night and it was so good! Added crunchy snow peas, carrots, and extra purple cabbage! Thank you so much for all of your amazing recipes. Since about a year ago I have lost 20 lbs and a large part of my success has been your website. Some weeks I track points, others I don't..but when most of my favorite recipes are healthy it makes it easy to keep the weight off. Whenever I am getting bored with my rotation, I just hop on the site and find something new to try. Thank you for helping me nurture my desire to cook new fun things for my husband and I and a healthier lifestyle!!

  25. Kim, you can buy Thai chili sauce (sweet chili sauce) in most grocery stores. Look in the Asian food section. I have the Thai Kitchen brand…

  26. Excellent salad, but for me not quite enough dressing (partially due to me using a lot more lettuce). Just wanted to report that instead of making more dressing, I sprinkled my salad with a little bit of Trader Joe's Orange Muscat Champagne Vinegar, and along with the dressing from the recipe, it was perfect. I also added thinly sliced carrots, chopped red peppers, green onions, and toasted almonds to the salad. The breaded baked chicken nuggets were delicious too! Thanks!

  27. This past weekend I had some chicken breast and made this like 4 or 5 times. It was amazing!! My husband thumb his nose at it at first but got curious!! Soon he was eating the extra chicken I made as a snack. This was a perfect lunch after a hard workout!! I love a simple but filling salad!! BTW: I give your website to everyone I meet that wants healthy but good food.

  28. OH MY GOD that was good. I thinned down the sauce with a bit of milk to make it more like a dressing. I am amazed at how filling it was too. Seriously, you rock my world.

  29. This is excellent! My husband was disappointed we didn't have any extras for him to have a 2nd serving (he doesn't grasp the concept of one serving. So jealous of his metabolism)

  30. I made this the other day. The sauce tasted awesome, but it came out very thick – great for putting on the chicken but not really enough to be a salad dressing. Suggest taking a small portion of sauce and watering it to more vinaigrette consistency and tossing the greens first with that – then top with chicken and the thicker dressing on the chicken bits.

  31. And again, a keeper! I made a little more sauce to use over the lettuce (i.s.o. cabbage). So also a few more calories…

32.! Just made this for dinner and the dressing/sauce was AMAZING!! THANK YOU SO MUCH for creating this! I am a dressing whore 😉 and I was very skeptical that this would go very far but to my surprise it did! One quick question, did you calculate your dressing points at about 4 for the entire mixture? Thanks again Gina!!

  33. Fabulous idea! Had some leftover chicken, so I made a batch of the sauce and tossed it with the chicken and some arugula… delicious dinner! 🙂

made this for dinner last night, skipped the scallions as I did not have any and I used only panko (no breadcrumbs)… turned out great! Hubby said "what IS this awesome sauce? put it on everything, please". ha! delicious!

Bang bang anything tastes so good 😀 and this looks incredible 😀 I love when you get a proper crisp coating for the chicken 😀 Thanks for the recipe! x

  36. Hi Gina! I got your book!!! I need all the help in the world because I am feeling a bit derailed these days. Your recipes are so inviting, points or no points, so I am looking forward to trying these tomorrow. For Sure. I promise. Really. No, Really really.

Are the calories calculated with the sauce included? And how much sauce is one serving? Thanks so much 🙂

  38. I have a hard time eating salad in the winter but with these little chicken tenders on top it would be much easier. Yum!

  39. The sauce is DIVINE! Didn't have breadcrumbs so I used Corn Flakes instead. Really lovely dish. Will definitely be included in our meal plans going forward. Thanks!

  40. Gina, you have the best recipes! There isn't one that I haven't loved! I have your cookbook and it is AWESOME!!! Thanks for all the great, healthy recipes!

  41. I love your site, it's so full of wonderful recipes, so happy to have found you (via Bloglovin) and this is baked too!!!!

  42. Looks amazing! But I have a question… at the stores near me I can find seasoned bread crumbs (white) or plain whole wheat bread crumbs, but not seasoned whole wheat. Can you tell us where you get your bread crumbs? Or is there a brand you like that I could maybe order online (and save myself the step of seasoning them myself)? Thanks so much! Love your recipes!!!
