Bang Bang Chicken Salad

This is a fun spin on Bang Bang Shrimp recipe. I basically modified my Healthy Baked Chicken Nuggets and topped it with this banging good sauce. Results… AMAZING!! And it’s SO easy to make, I promise! You can easily halve the recipe for two. Oven or air fryer directions.

Here's an EASY dinner solution: tender chunks of chicken, breaded and baked until golden topped with Bang Bang sauce. I served this over mixed greens and swooned with every bite!

Serving Size: 6 pieces chicken + salad

Ingredients

  • olive oil spray, I used my Misto
  • 2 tsp olive oil
  • 6 tbsp whole wheat or gluten-free Italian seasoned breadcrumbs
  • 2 tbsp plain or gluten-free panko
  • 16 oz 2 large skinless boneless chicken breasts, cut into 24 1-inch chunks
  • kosher salt and pepper to taste
  • 4 cups shredded romaine
  • 1 cup shredded red cabbage

For the Skinny Bang Bang Sauce:

  • 2 1/2 tbsp light mayonnaise
  • 2 tbsp scallions, chopped fine plus more for topping
  • 1 1/2 tbsp Thai Sweet Chili Sauce
  • 1 tsp Sriracha, or to taste

Instructions

  • Preheat oven to 425°F. Spray a baking sheet with olive oil spray.
  • Put the olive oil in one bowl and the breadcrumbs and panko in another.
  • Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
  • Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet.
  • Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though.
  • Meanwhile combine the sauce in a medium bowl. When the chicken is ready, drizzle it over the top and enjoy!!

To make in the air fryer:

  • In batches, cook the chicken in a pre-heated air fryer 400F 8 minutes, turning halfway.

  3. Made this tonight for dinner.  Cooked the chicken in the air fryer.  It was Moist and a little crispy on the outside.   doubled the dressing and added 2 Tbsp of water to thin it just a bit.  Really tasty and will definitely make again.  Thank you.

  4. This was easy and absolutely FANTASTIC!! My family agreed it’s a keeper for the menu and i can’t wait to make it again. Although it was baked it was still crunchy and I loved using the olive oil instead of eggs and Flour to dredge it in. I also used some shrimp and it all turned out great.   7. This was so good, probably one of my favourites from this site! I made a little extra sauce and I paired it with raw cucumbers, carrots, celery and peppers. I was totally craving pub style food…this was way better tasting and way better for you! My entire family gobbled this up….yum!

    Is there a way to thin the sauce or dressing we like it on shrimp but want flavor but not more mayo at least. We found at dinner this evening we either couldn’t taste it or had enough we have up the calories. I was cuirous.

  11. This was delicious, light, yet filling! I grabbed broccoli slaw by accident, instead of red cabbage but the crunchiness of cabbage/slaw was so nice. Loved this recipe and so did my family. Thank you for another hit!!

  15. I made this last night for dinner and it was amazing…the chicken nuggets were the best like so perfect and moist!! Me and my husband could not get enough..I will make this again and again. Add it to the every other week mix in! If you haven’t tried this you need to..like tonight.

  22. Made this tonight, it was super easy! I had plain, whole wheat bread crumbs so I added some italian seasoning and garlic powder to the mix. Made the Bang Bang sauce with 2% greek yogurt since I don't care for mayo- my fiancé made his with mayo and loved it. Will def make this again.

  26. Excellent salad, but for me not quite enough dressing (partially due to me using a lot more lettuce). Just wanted to report that instead of making more dressing, I sprinkled my salad with a little bit of Trader Joe's Orange Muscat Champagne Vinegar, and along with the dressing from the recipe, it was perfect. I also added thinly sliced carrots, chopped red peppers, green onions, and toasted almonds to the salad. The breaded baked chicken nuggets were delicious too! Thanks!

  27. This past weekend I had some chicken breast and made this like 4 or 5 times. It was amazing!! My husband thumb his nose at it at first but got curious!! Soon he was eating the extra chicken I made as a snack. This was a perfect lunch after a hard workout!! I love a simple but filling salad!! BTW: I give your website to everyone I meet that wants healthy but good food.

  30. I made this the other day. The sauce tasted awesome, but it came out very thick – great for putting on the chicken but not really enough to be a salad dressing. Suggest taking a small portion of sauce and watering it to more vinaigrette consistency and tossing the greens first with that – then top with chicken and the thicker dressing on the chicken bits.

    made this for dinner last night, skipped the scallions as I did not have any and I used only panko (no breadcrumbs)… turned out great! Hubby said "what IS this awesome sauce? put it on everything, please". ha! delicious!

  42. Looks amazing! But I have a question… at the stores near me I can find seasoned bread crumbs (white) or plain whole wheat bread crumbs, but not seasoned whole wheat. Can you tell us where you get your bread crumbs? Or is there a brand you like that I could maybe order online (and save myself the step of seasoning them myself)? Thanks so much!
