Lean Italian chicken sausage with summer bell peppers and zucchini sauteed with baby red potatoes and fresh herbs for a quick one pot meal.
I love a meal that only dirties one pot because although I may love to cook, I really don't love to clean! I labeled this as kid-friendly because my older one (the pickier one) loves this and my younger one will eat the sausage and peppers, but picks out the potatoes. Since every child is different I'll let you decide! This is also gluten-free for those of you with a gluten intolerance, dairy-free and egg-free.
You can use Italian chicken sausage or turkey sausage depending on what is available to you in your area. I've tasted several brands and really came to love Al Fresco's sweet chicken sausage and Premio's chicken sausage. My local health food store and Italian deli also carry their own homemade sausage which is wonderful. If rosemary isn't your thing, use fresh thyme instead.
Summer Vegetables with Sausage and Potatoes

Ingredients:
- 1 lb baby red potatoes, cut in half or quartered
- 2 tsp oil
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- fresh cracked pepper
- 14 oz Italian chicken sausage, sliced 1-inch thick
- 1 large onion, chopped
- 4-5 cloves garlic, smashed with the side of the knife
- 1/2 orange bell pepper, diced 1-inch squares
- 1/2 yellow bell pepper, diced 1-inch squares
- 1 red bell pepper, diced 1-inch squares
- 2 tbsp fresh rosemary (or other fresh herb such as thyme)
- 2 cups zucchini, 1/2 inch thick and quartered
Directions:
Place oil and potatoes in a large, deep non-stick skillet with a tight fitting lid on high heat; season with garlic powder, salt and pepper. When the skillet gets hot and starts to sizzle, reduce heat to low and cook with a tight lid on for about 20-25 minutes, shaking the pan occasionally to prevent the potatoes from burning. Remove from heat and let them sit 5 minutes without removing the lid. Set potatoes aside on a dish.
Add the sausage to the skillet and saute on medium-low and cook, stirring occasionally until browned but not quite cooked through, about 10 minutes. Season chopped vegetables with salt and pepper. Add onions, peppers, garlic and rosemary to the skillet and mix. Continue cooking stirring occasionally until onions and peppers become slightly browned. Add zucchini and cook an additional 5 minutes, mixing as it cooks until cooked through.
Return the potatoes back to the skillet and mix well. Adjust salt and pepper as needed; cover and cook 5 more minutes.
Makes about 7 1/2 cups.

My favorite Italian chicken sausage comes from Whole Foods, if you have one where you live. Sunfower Market/Sprouts and Trader Joe's are also prety good.

I saw this recipe this morning and my future mother-in-law and I decided that we NEEDED to do this tonight. I literally just ate it. It was sooo good. A couple of things I tried/wanted to add:
ReplyDelete* Use FRESH rosemary, not the dried stuff. We used dry, thinking it was a shortcut. It didn't wreck it, but it would have been better had we not tried the dried stuff.
* I might suggest slicing the onions instead of chopping them. They got lost in all of the thicker-cut stuff. The recipe did not specify which onions to use, so we went with red which was perfect.
* The timing was just right for everything. Whoever timed this did a great job. Also, the serving sizes were accurate too. We fed 3 people, and we had about 2 cups left over...enough for another person to eat.
*We just used regular salt and pepper, not Kosher Salt or Cracked Pepper. I don't know if it would have made it better, but it tasted good with the regular stuff.
Everyone try this RIGHT NOW. I highly recommend it!

ReplyDeleteWe have a weekly CSA produce box from a local farmer and hadn't used up a bunch of our stuff from last week. This used quite a bit of it and was fantastic! Hubby is a bit picky with veggies and he loved it. We ran out of onion so we omitted it and added a mix of rosemary and thyme from our garden to add a little bit more flavor since the onion went missing.

Didn't have the rosemary but I have the Wildtree Herbs Rancher's Steak Rub that I use with zucchini all the time. Was perfect! When we finished, we decided we were having the leftovers for brunch tomorrow with added scrambled eggs and tortillas!! Thank you!!

But I also got to hand it to you because you do the almost impossable, you make healthy foods so darn yummy! Love this! Looking for things I can add hot peppers to that my boyfriend is growing in the garden (he has 25 pepper plants. I don't eat spicy foods. Needless to say they are coming out of ears!) I bet this would be sooooo good with peppers!

Just mushroom slices and big rings of onions and 2 tbsp of oyster sauce, if they are lucky i add chicken breast strips. It works all the time.Yours is much healthier with veggies.I'll try it too!happy to know it wasn't a lazy meal after all ;D

ReplyDeleteThis is very tasty, but nothing got browned or charred on medium-low heat. The sausage looks a little sad. Next time, I'll sauté stuff on medium-high. I also made it with basil. :-)

Also, I used zucchini and squash and only red peppers. It was delightful with spicy parmesan sausage! I will definitely make this again.
I made this on Sunday to have for dinner for the week. Somehow some way I didn't end up having a bit of it until today, and it's sooo good! When I tasted it, I wanted a bit more salt, so I added a few shakes of hot sauce (also cause I'm a bit country, lol). Something about the hot sauce and the rosemary, wow! This is something I'm definitely going to have again before summer vegetable season is out!

This was delicious. I expected complaints from my two picky children, but they ate the food up without any whining. I put ours in a tortilla with a little sour cream and tabasco and it was perfection!

ReplyDeleteThis is so delicious. The skillet I had on hand was too small, so I ended up roasting the potatoes while I cooked everything else. I also substituted an Italian seasoning blend for the rosemary because I'd run out. Very pleased! Economical, healthy, easy, and delicious. My favorite meal.

ONLY diference was that 1 # of potatoes = 5 small/medium red potatoes - I cut each into 6-8 pieces. 20 mins was perfect for the cooking time. Also added a bit of cajun seasoning to the veg and added 1/2 # of haricot verts (thin green beans). AWESOME!! THANK YOU!!!!

ReplyDeleteThis is really tasty! I used hot italian turkey sausage in place of the chicken sausage, a mix of dried rosemary, dried thyme, and herbes de provence in place of the fresh rosemary, and a summer squash in place of the zucchini. It takes a while to put together, but it is really good.

After a long week at work this didn't require too much effort on a Friday night and all of the fresh veggies add tons of flavor (hint: I like things spicy so I cut up a fresh large jalepeno to kick it up a notch) and it doesn't make me feel like all of my calorie watching and running I did this week as gone to waste! I boiled my potatoes till they were just about done and then drained them and added the oil and potatoes back to the pot to brown them and proceeded on with the rest of the recipe. I used the same pot (my dutch oven) so it was still a one-pot meal! I also added more of the other veggies. Had enough left for hubby and daughter to take to work and some for me this morning for breakfast (scrambled an egg with it.)

ReplyDeleteI made this tonight and it was amazing! My hubby is anti chicken or turkey sausage and I am on WW so pork was out. Instead I used chunks of sirloin and adjusted the cooking time. I forgot the onions (not sure how that happened) and the herbs, but it was still great! Mushrooms would be delish in this!
ReplyDeleteAmazingly delicious! Made this for dinner tonight almost exactly as written, except my potatoes weren't done after 20min, so I nuked them for a bit while the sausage and veggies cooked. I deglazed the pan with a splash of white wine because I was afraid of the stuck spices/onions burning. My husband votes strongly for shrimp next time and I think it'll be awesome, and it was already super good and flavorful. I'll be making this often!

ReplyDeleteI pinned this on pinterest and finally made it tonight, it was delicious! I used an enameled cast iron dutch oven to make it, and used an italian dried herb mix instead of rosemary. Needed to cook longer until the potatoes were more 'done' or softer. My husband loved it and I will definitely make it again.

DeleteThis is a sausage dish my family has made for generations, potatoes, onions and sausage being the constant--other veges as are in season. Good stuff. For a twist, add quarters of fresh tomatoes and serve with crumbled feta on top. Sliced apple or pear also adds a nice dimension.
