This quick, simple cabbage slaw is a staple in my house. Perfect when you need something acidic to balance a savory dish.

This is perfect along side my Slow Cooker Pernil Recipe (this is on regular rotation in my house) or my Picadillo recipe.

Everyone loves this, including my youngest daughter. When she was a toddler I left out the red onion. It’s also low-carb, vegetarian, gluten-free and whole30 compliant.

This quick, simple slaw is a staple in my house. Perfect when you need something acidic to balance a savory dish. Everyone loves this, including my toddler only for her I leave out the red onion. It's also low-carb, vegetarian, gluten-free and whole30 compliant.

Ingredients

  • 1/2 small head white cabbage, about 5 cups, cored and shredded
  • 1/2 red bell pepper, seeded and sliced thin
  • 1/4 small red onion, sliced thin
  • 2 tbsp extra virgin olive oil
  • 5 tsp apple cider vinegar
  • 1/4 tsp kosher salt
  • fresh black pepper, to taste

Instructions

  • In a large bowl combine all the ingredients, toss to combine and let stand 15 minutes before serving.

Notes

Any color cabbage will work!

  1. This delicious cabbage slaw is my go-to recipe when I make barbecue. The slaw is fresh and tasty, and the clean taste pairs well with heavy, smoked meats.

  2. Love this recipe! If I am making with a Mexican recipe I will add a jalapeño. I also make it to go on Buffalo chicken sliders.

  3. Made according to instructions, found it a bit bland. Added a little more salt, pepper, and 6 drops of Tabasco… perfection!

    I love how quickly this cabbage slaw came together when I needed a slaw recipe in a pinch. I made salmon tacos and used this slaw for the tacos along with some salsa verde I made as well. Delicious! 😋 I loved the crunch/ texture this slaw added to my tacos. However, I did not rate this recipe five stars because personally the dressing is not good. It is way too oily and not seasoned enough for my liking. I used my own homemade vinaigrette dressing for the slaw and it still turned out amazing.

  5. Just like Grandma used to make. My family loved this recipe. Really good with a pot of beans and cornbread.

  6. So good and easy to make.
    I add a little allulose to make it slightly sweet. We had the leftovers the next day in tacos.
    It also works with broccoli slaw but needed extra vinegar because of dryness. A restaurant near our home sells $$ protein bowls…a bowl of slaw with bbq meat on top.

    Excellent. I only had white balsamic on hand to sub for the cider vinegar, and it was delicious. I can’t wait to have some leftovers later today.

  8. I love how quick and easy this recipe is and it tastes great! I realized that it says 5 tsp and not 5 Tbsp of Apple Cider Vinegar….it was still great! I served it with chicken enchiladas.

  9. So easy and quick!! I use a jalapeño instead of red bell pepper and pre-cut multi-colored slaw from Publix to make it even simpler. Yummy and refreshing!

    First time was good second time i added a grated carrot and a thinly sliced jalapeño as good or better. And im expecting to use this a a baseline for many more variations. Lasts all week

  11. Simple and delicious – served it with brisket and had it the next day on slaw and tomato toast (it’s good!) Started with a bag of mix from the grocery store.

  12. I honestly didn’t expect to like it as much as I did. It was even good for a couple days after. 

  13. YUM! Perfect for our fish tacos tonight! I agree w/ another comment and LOVE vinegar so added more- I did the 5 tsp of cider, than added about the same of red wine. Since we were having fish tacos, I also added cilantro. We have plenty of leftovers that will serve as a side for our turkey sandwiches this week.

    Made this for dinner tonight with your BREADED PORK CUTLETS and it was a perfect match. I’m sure white rice and your PR Beans would make a perfect meal! 

  15. What is the best way to measure 5 cups of shredded cabbage?  I weighed it, but seems like a lot of cabbage in relation to the onion and pepper.

    1. When you prepare this you’ll be surprised at how much the volume of cabbage decreases as it marinates.  I pack the cabbage but not overly tight. 

  16. I made this recipe, substituting a kale/cabbage slaw mix for just cabbage and it was delicious! Very light and crisp tasting and better the second day once the flavors had a chance to sit. 

  17. I’m surprised that I haven’t reviewed this one yet. I make this recipe frequently. The first time I made it, I thought it said 5 T of apple cider vinegar. I like the acidity of the vinegar, and it cuts through the olive oil for those of you that thought there was too much. I find it perfect that way and have since always used 5 T. I’ve got a tiny kitchen with almost non-existent counter space, so I always buy a bag of pre-cut slaw mix to make this. This is the perfect complement to taco dishes or to add to bowls.

  19. Can I just say yum! I’ve never been a fan of sweet mayonnaise laden coleslaws. This is easy to make, savory, and keeps well. Plus it’s delicious!
    One of the things that I love about your salads/slaws is that they require so little dressing, but pack so much flavor..
    We’re having this again tonight along with your seasoned sweet potato wedges and your buttermilk oven “fried” chicken (both Skinny Taste Cookbook recipes). So glad we found your site. Dinners are really good and we’re losing weight!!

  20. Great side dish. Made this as part of a large Memorial Day feast with grilled summer squash and asparagus, pulled pork, and Gina’s Instant Pot Brown Sugar Baked Beans (also delicious).

  21. Love the dressing on this slaw. I bought prepackaged slaw and added onion, redpeppers and the oil and vinegar. Super easy!

  22. It’s rare that I find a veggie recipe like this that is a) fast and easy, b) healthy, c) cheap, and d) tasty enough that the whole family is happy. It’s a keeper! I keep a 4-quart restaurant food prep container full of shredded cabbage at all times, this is a nice way to use it up and make sure we all get our veggies. Thank you!

  23. My husband who is normally a creamy coleslaw kind of guy, loves this slaw! On the other hand I’m not a big coleslaw fan but this recipe converted me. I make it often now because it goes well with so many things. Sometimes I cheat and use coleslaw mix.

  26. I make this often; however, I use only 1 T olive oil; I find the full 2 T. is too much.  I sometimes add carrots or radishes.  I often add cilantro and serve it with tacos, burritos or other spicy dishes.  

  27. Have made slaw similar to this for a long time. Great to go with barbecue. Made it today to go with Crock Pot Balsamic Pork Roast.

  32. Can you make this the night before?  Will it still be good? Or should you make it fresh just before dinner?

    1. I think it was best made before dinner. SO GOOD….ate with pulled pork on top as a salad with side of jalapeno pickles and marinated artichoke hearts.

    2. I found the slaw tastes even better the next day.  Great recipe…I added more vinegar as well.

    This sounds simple and delicious. May just go the lazy route and make it with broccoli slaw and maybe some pulled pork or chicken

    Slaw is such a staple around here – especially in the summer! This looks a little spicy and delicious!
