Ice pops are daughter’s favorite way to cool off in the summer, a few favorites are Pina Colada Ice Pops, Lemon and Ginger Ice Pops and Coconut Mango Pops.

These are so refreshing on a hazy, hot summer day, and I love that I know what I am putting into them. Have you ever looked at the labels on ice pops? Some of those bright colors are so unnaturally and many of the ingredients are completely foreign to me. As for the popsicle mold, sizes will vary so you make get more or less depending on the size of your mold. I bought my popsicle mold from Progressive a few years ago on Amazon, I am linking to it here for all of you who asked where I bought it. Small plastic dixie cups would work too, just freeze them for about an hour until almost set, then insert the wooden sticks so they stay in place.

These Citrus Basil Mojito ice pops are the perfect balance of orange, lemon and lime, plus I added fresh mint and basil from my garden which adds just a hint of flavor inspired by my favorite cocktail – mojitos! Ingredients

  • 1 1/4 cups fresh squeezed orange juice
  • 8 tsp raw sugar, or your favorite sweetener (raw honey for Paleo)
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 3/4 cup water
  • 8 fresh mint leaves
  • 8 fresh basil leaves
  • 2 tbsp rum, optional
  •  

Instructions

  • Squeeze the orange juice, I used about 2 to get 1 1/4 cups.
  • Combine the remaining ingredients in a blender until smooth.
  • Pour about 1/3 cup into each popsicle molds and freeze until solid, about 4 hours.

  1. Hi! I’m wondering if I did something wrong? The basil overpowered everything, couldn’t taste the rum and it was just too sour.

  3. Receipt worked great! Thanks a lot! On one batch, beefed the alcohol content a little by adding 4 oz rum and 1 oz triple sec orange. Did not stay together as well, but tasted just as outstanding.

  4. These look great. Would it work if I froze in a bowl and scooped out like frozen ice (ice cream scoop or melon baller) to put in martini glasses for fancy presentation?

  6. These turned out great! Very refreshing, I used fresh juice and loved them.

  7. I used orange-pineapple juice because that's all I had, and two teeny tiny drop of mint extract in place of the mint leaves. It turned out ok, my three year old didn't care for them but the one year old loved them! Probably would have been better with fresh-squeezed juice but I don't think I'll make them again.

  8. These were fabulous. Made them with our two kids. We also had some of the "juice" remaining so we added some olive oil and garlic to make a marinade for chicken breasts and grilled. Delicious!

  9. I plugged just the point items into the WW recipe builder and put 6 servings (my pops mold is 6) – it came up as 1 pt each. Then when I added the fresh lime juice, fresh lemon juice, and water – they came up as 2 pts each. Strange.
