I love breakfast smoothies, a few of my favorites are Superfood PB Banana and Cocoa Smoothie, Strawberry Peanut Butter Swirl Smoothie Bowl and Skinny Green Tropical Smoothie.

If you’re wondering why I haven’t been around as much these past two weeks, I just spent an amazing two weeks on set in NYC for the Skinnytaste Cookbook photo shoot! It was a wonderful experience and I worked with a great group of inspiring people who truly love their job. I miss them already, but I’m also happy to get back into a normal routine and this smoothie was the perfect way to start my Monday morning!

I’m obsessed with sweetening my smoothies with dates. It’s the best way to sweeten a smoothie naturally without the need to add sugar plus it adds fiber. I just wish someone would invent a date paste, it would be so much easier to dissolve in the blender (does this exist?). Until then, I find it helpful to let the dates soak in a little boiling water to soften them before adding to my blender, and I let my blender run a little longer.

Ingredients

  • 3/4 cup unsweetened vanilla almond milk, Almond Breeze
  • 1 pitted date
  • 1 tbsp raw shelled hemp seeds, or seeds of your choice
  • 1/2 ripe medium banana
  • 1/2 tbsp chia seeds
  • 3/4 cup baby kale, or spinach
  • 1 cup ice

Instructions

  • Combine all the ingredients in the blender and blend until smooth.

  2. You can make your own date paste. I saw this somewhere. Soak your date and process in food processor with a little water. Store in refrigerator. 😉

  3. There is actually a date paste that you can use. Middle Eastern stores sell it. 

  4. I discovered DATE PASTE when I did the Daniel Diet. I still use it like MAD! So easy. 8oz dates, one cup water (add if necessary to make sure dates are covered) bring to boil, lower heat and simmer for about 45 minutes until soft and mushy. Dump the dates, including the liquid, in your blender, zap, add a shake or two of cinnamon and put it in the fridge. You can add vanilla too. I sweeten my yogurt with it as well as using it as a dip for apples, spreading it on toast or biscuits, goes well with some cheeses and nuts. I’m considering switching it out for the pumpkin in your awesome skinny pumpkin granola. I never thought to put dates in a smoothie! Thanks for that and all your amazing recipes. You made cooking light fun and tasty again.
