This easy, delicious Sheet Pan Teriyaki Salmon and Vegetables (I seriously devoured this, it was THAT good) is made all on one sheet pan and ready in 20 minutes!

I’m a huge fan of sheet pan meals as they are a huge kitchen time saver! I like to line the sheets with foil or parchment for easy clean-up, completely optional. Here I marinated the fish, then cooked the sauce down on the stove to create a glaze over the fish (I highly recommend this) but if you wish to skip this step, it will still taste fine.

This recipe can easily be doubled in a larger sheet pan or use two pans. This is filling and can certainly be eaten on it’s own, but if you want to add a grain on the side, brown rice, forbidden rice or quinoa would be great.

The fish marinates for about 10 minutes which is enough to get great flavor, if you want to marinade it longer you can do it in the morning or night before, then cook it when you get home from work.


  • You can swap mini peppers for larger bell peppers cut into strips.
  • A medley of cauliflower and broccoli would also be great.
  • Asparagus or string beans also work great here.
  • Like it spicy? Add some sriracha to the marinade for heat.

For vegetables:

  • 2 cups bite-size broccoli florets
  • 10 mini sweet rainbow peppers, seeded and halved
  • 1 tablespoon sesame oil
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper, to taste

For salmon:

  • 2 (4-ounce) wild salmon filets
  • 1 teaspoon sesame oil
  • 1 garlic clove, grated
  • ½ teaspoon grated ginger
  • 2 tablespoons reduced sodium soy sauce, or gluten-free soy sauce
  • 1 teaspoon unseasoned rice vinegar
  • 1 teaspoon brown sugar

For garnish:

  • ½ teaspoon toasted sesame seeds
  • 1 large scallion, chopped


  • Preheat oven to 400F degrees. Cover a large sheet pan with foil or parchment, lightly spray olive oil and set aside.
  • Meanwhile, combine sesame oil, garlic, ginger, soy sauce, vinegar and brown sugar in a small bowl and mix. Pour into a large ziplock bag and add salmon, marinate 10 minutes.

  • In a medium bowl, toss broccoli and peppers with 1 tablespoon sesame oil, ¼ teaspoon salt and pepper. Spread them evenly on prepared sheet pan and roast for 10 minutes.
  • Remove veggies from oven, toss, and move them over slightly to make room for the salmon. Place the salmon on the sheet pan, reserving the marinade and return to oven, roast an additional 7 to 8 minutes, or until salmon is just cooked through.
  • While salmon is cooking, heat a small skillet over low heat. Pour the remaining marinade and simmer stirring until the sauce has thickened slightly, about 1 to 1 1/2 minutes.
  • Brush sauce over salmon and sprinkle fillets with sesame seeds and scallions. Serve with veggies on the side.

  3. When I took my first bite of this fish and roasted veggies…I just screamed “Gina did it again!” Gina!!!!! This is so fantastic. I don’t know how I doubted if the flavors would be as good as you were saying. I was looking at how simple everything was and wasn’t sure mine would come out as good. This is going to be on my permanent rotation. The sauce, the fish, the veggies. It is just amazing. I was full off of just this meal without any carbs. Really wonderful dish and made great leftovers. This was amazing!  Made as written except no rice vinegar (didn’t have it) and only half of the brown sugar (to compensate for no vinegar)!  I usually don’t love  salmon but loved this and my hubby who doesn’t usually love Asian flavors couldn’t stop eating the sesame roasted broccoli AND my teens liked it too.  The best part was how fast it came together (I did use frozen Trader Joe’s crushed garlic and ginger) and clean up was a breeze!  It’s quite likely the perfect meal!!!  But I’d say definitely don’t skip cooking the marinade down it is so flavorful and definitely makes fish super tasty without longer marinade time needed!   Thank you Gina!!  Awesome recipe!!

  11. I made this last night and it was so delicious! The salmon came out tender and flavorful and the clean up was a breeze. I’ve started to keep freeze dried spices on hand so when I want to make a Skinnytaste recipe on a whim, I don’t have to run to the store. So, I used freeze dried ginger and scallions and honestly, it’s a pretty decent substitute for fresh.

  14. I have never liked the taste of salmon until I had this recipe. The combination of ingredients blend together for a wonderful glaze. You can use vegatables and brown rice, but be sure to make extra glaze because it’s so good. My husband has made this on the stovetop and in the oven.

  15. Fantastic!!! Used snow peas and red onion in addition to broccoli and red pepper. cooked veggies about 5 minutes longer than recipe says before adding salmon. Wonderful recipe!!!!

  17. I thought this sauce was plenty sweet, even with just 1 tsp. of brown sugar. I am not a fan of sesame oil, so I used half of what was called for, and that was just right for us! I wasn’t sure how it would all come out, but it was great. Will definitely be making this again!

  18. I don’t eat fish – any tips for swapping it out with chicken?

    • I was thinking the same thing. I think I’d do everything the same except use chicken strips and put it in all at the same time as the veggies.

  20. Just tried this for a group of eight and everyone loved it. Nothing left on anyone’s plate. I would highly recommend the cooked down sauce for the salmon and sprinkle it with scallions at the end is that really made a difference
