Someone gave me this idea last week after posting my mini pecan pies and I just loved it! You see I’m a huge fan of baked brie, so naturally creating baked brie a bit lighter with better portion control sounded very appealing to me.

Trader Joe’s sells a light Brie which is what I used here, Presidente also carries one. For the topping, I thought using dried cranberries would be pretty for this time of year and I used honey as my glue to keep everything in place. And the taste? Just as good as the real thing, just be sure you don’t eat the whole tray!

A wedge of brie would be enough to make two batches, so if you are serving a crowd, you can easily double this recipe.

Skinny Baked Brie Phyllo Cups with Craisins and Walnuts

Ingredients

  • 3 oz light brie, skin removed cut into (15) 1/2-inch cubes
  • 4 tbsp craisins
  • 4 tbsp chopped walnuts or pecans
  • 2 tbsp honey
  • 15 Mini Phyllo Shells, Athens

Instructions

  • Preheat oven to 325°F.
  • Combine craisins, chopped nuts and honey in a bowl and mix well.
  • Arrange mini shells on a baking sheet.
  • Fill mini shells with cheese (each piece of cheese weighs about 0.2 oz).
  • Top with sticky craisin/nut mixture and bake 5-7 minutes, or until the cheese melts.
  • Serve immediately.

  3. Loved these! Made them as appetizers on Christmas Eve (as suggested by your meal plan). Only problem is that it’s hard to eat just one and easy to eat three or more. Nice and fast appetizer to make – which is so important for appetizers and any tiny individual serving item. Would be great to keep some phyllo shells on hand in the freezer (along with the other ingredients) for throw together appetizer or snack for any drop-in guests. Fancy, fast and delicious!

  16. To answer the question I read several times in the comments and that I also had, these do not need to be eaten immediately, in fact they are delicious the next day! I took them to a party yesterday and they were cold by the time we started to have appetizers. Several people commented on how good they were, they didn't know who had made them. A real hit! I've also made the pecan filling and they are just as delicious.

  26. The first time I comment and I screwed up.

    I made these (well, kinda) today. I made the cups myself with 4 layers of phyllo each and butter in between them. I baked them for about 5 minutes. In the meantime I combined craisins, sliced almonds and since honey is too sweet for me I added a dash of pomegranate-cranberry juice. I took out the shells from the oven, added a tiny cube of brie and a spoonful of the almond mixture and baked for 10 more minutes and I turned the oven off. They were a hit! Thanks for the recipe Gina, you make me look like I actually know how to cook.

  27. These were SO easy! I made these as a last minute appetizer and they were a huge hit. I'm not exactly sure the difference, but I used the Laughing Cow Light Brie and 3 ounces of their cheese is 3 triangle pieces. I used just 2 triangles and divided them amongst the 15 cups and it was plenty, so I'm thinking the ones I made might have had a slightly lower calorie count. I will definitely be making these again. What a great idea, thank you Gina! 🙂

I really want to make these but can't get mini Phyllo cups here in Spain…I was thinking I could use puff pastry but am not sure about the form; should I try and make one big one and cut it into pieces? Or? I have a dinner party coming up and would love to use this as an appetizer. Love your website, btw!!

  31. Hi gina! Love the idea of this but I'm allergic to walnuts. What are your feelings on replacing the walnuts with sunflower seeds so it still has a crunch?

  34. These are deeeeeee-licious. We quadrupled the recipe for our Christmas cocktail party of 20 people, and all 60 were gone in no time. I prepared the nut topping early in the day and let it sit out, cut the brie into cubes and refrigerated. Just had to assemble and pop in the oven right before our party started! Tasted great when they cooled to room temp as well as hot out of the oven. These will become a staple for our parties of all sizes!

  47. Mmm. I made these this afternoon. My husband and I loved them. I had brie for the first time just a few months ago. I loved it and couldn't believe I hadn't tried it sooner. This was my first time preparing a dish with it. This was super easy and turned out wonderful!

    • If you love Brie then you can google recipes for brie cheese! I did a brie/carmelized onion with apples over the thanksgiving holiday and it wa a hit. i used the pastry sheet instead of the cups, but jus recently did the cups with turkey bacon, scrambled eggs/brie cheese! G.L.& enjoy 🙂
