What You’ll Need
Here’s the ingredients to make these easy baked brie bites. See recipe card below for exact measurements.

- Crescent Rolls: Buy a tube of crescent rolls or a crescent dough sheet.
- Brie: You’ll need one wheel of brie.
- Jam: I used this sugar plum jam for these brie bites to keep it festive. The sweet plums have a hint of citrus and spice and pair perfectly with the brie. You can use any jam you wish!
- Nuts: Chop a quarter cup of pecans or omit to keep it nut free.
How to Make Brie Bites
Here’s the step-by-step directions to make these easy baked brie bites with crescent roll dough. See recipe card below for printable directions.

- Crescent Dough: Roll out the dough on a lightly floured surface. If using the rolls, pinch the seams together. Cut the dough into 24 squares and place them into a greased mini muffin tin.
- Assemble the Bites: Cut the brie into small pieces and place them inside the dough. Top with a half teaspoon each of jam and chopped pecans.
- Bake the brie bites at 350°F for 12 to 15 minutes.
Do you take the rind off brie before baking?
There’s no need to remove it before cutting the cheese.

Variations
- Jam: These baked brie bites would also be good with raspberry, strawberry, or fig jam.
- Cranberry: Instead of jam, use cranberry sauce.
- Nuts: Swap pecans with walnuts or omit.
- Herbs: Add fresh rosemary or thyme leaves on top.

Was a great way to use up leftover cranberry sauce from freezer! Might try apricot jam next time
All my guests loved this appetizer. I used goat Brie which gave it a bit earthy flavour but was a big hit. No leftovers at all
So happy to hear!
Do you suppose these would freeze well after assembled, but before baked?
These looks amazing and perfect for an appetizer for our neighborhood progressive dinner. We have a nut allergy, would you recommend using something else, or just leaving them out? Can have almonds, but not sure if that would work.
You can omit, still delish
Can you use premade pie crust?
Probably but it will turn out different. Maybe puff pastry instead?
Thoughts on using a pie crust instead of Crescent rolls?
Have not tested this, let me know if you do!
Wondering if you could use puff pastry sheets?
Did you try the puff pastry on this recipe? If so, how did it turn out?
SOOOO yummy and so easy to make!! everyone loved them and loved the Sugar Plum Jam (used Stonewall Kitchen) but could use any jam. Might need to make a double batch next time! Leftovers are good too if you happen to be luckily enough to have any leftovers (hence possible need to do double batch!)
Yay!! Love hearing this — they’re such a fun little bite. So glad they were a crowd-pleaser!
Very easy and a great party appitiezer!
These were a hit as part of our Thanksgiving appetizers. And so easy to make! I used raspberry jam. So good!
Wonderful!
I made these last year, but instead of the crescent dough, I used little phyllo shells (it was easier – no rolling out LOL). (Sorry I didn’t review the recipe back then). Anyway – I’ve been asked to make them again but for Thanksgiving this time. So – I knew they were a huge hit last year, so much so, my niece remembered and asked for them again. She said she probably ate half the plate – LOL
So happy everyone loved them!! Thanks for sharing!
These are wonderful. A big hit at some gatherings we had. A favorite
Aw thank you!! I’m so glad they were a hit — nothing better than an easy appetizer that gets all the compliments!
These were so easy and delicious. So many compliments. I will definatleynbe making these again!
So happy they were a hit at your gathering! These really are perfect for holiday parties.
Could you do these in the frozen puff pastry cups?
Gina, do you leave the rind on the brie when you make these?
Yes
