My favorite appetizer when I go to a local Italian spot near me is the beef carpaccio. Thin sliced raw beef, arugula and shaved Asiago. Here I used rare roast beef and made a lemon vinaigrette. My husband loved it! You can serve this as an appetizer for four or have it as a lunch for two. For a vegetarian option see Zucchini Carpaccio.

Ingredients

  • 1/4 lb rare roast beef, thinly sliced
  • 1/2 lemon, juice of
  • 1 tbsp extra virgin olive oil
  • salt and fresh pepper
  • 1.5 cups baby arugula
  • .25 oz shaved Asiago or Parmesan Cheese

Instructions

  • Whisk lemon juice, olive oil, salt and pepper.
  • Lay the roast beef over a plate.
  • Add half of the vinaigrette to the roast beef.
  • Top with arugula, salt, pepper, remaining vinaigrette and shaved Asiago.
  • Serve immediately.

  1. Double this recipe! So good. I took it to my annual holiday group soup and salad friend group party and it was completely gone in minutes. Good thing I doubled the recipe! It will be my go-to and now my entire friend group has asked for the recipe to give their families over the holidays. It’s so easy to put together- light but still feels decadent. I used whole foods deli herb rubbed very thin sliced roast beef. Perfection!

  2. I made this a couple weeks ago and loved it! I also tried it with balsamic and it was really good too. I didn't check to see if the points value went up or not when I used balsamic, but it was tasty.

  3. I know! I always look for it on the menu. It seems some of the more upscale Italian restaurants have it. I love the combination of flavors!!
