Hummus Avocado Toast

Cleaning out my fridge I whipped up this easy sandwich for lunch. It was so good I had it again the next day for breakfast! It’s perfect with eggs if you want more protein and Mediterranean Diet friendly.

Meal Prep Tips for Avocado Toast:

  • To store unused ½ of avocado, wrap tightly with plastic wrap and place in refrigerator.
  • Leave the pit in and get the wrap as close to the surface of the fruit as possible.
  • If browning occurs, gently scrape the exposed flesh with a butter knife and voila, beautiful green avocado lies within!
  • Use multi-grain bread from the bakery section of the supermarket which they sell sliced and tastes so much better than the packaged bread. Dave’s Killer bread is also a great option!
  • If you’re in a hurry, you can swap a pre-boiled egg for the sunny side up one.

Ingredients

  • 2 slices sliced whole grain bread, toasted (1 oz each) I used Arnold Nature's Harvest Light multigrain bread
  • 2 tbsp hummus, store bought or homemade
  • 6 thin cucumber slices
  • 1 small radish, sliced thin
  • 1 oz avocado, sliced thin (from 1/4 small haas)
  • crushed red pepper flakes, to taste
  • 1/8 tsp kosher salt
  • black pepper, to taste
  • 1/4 cup baby arugula
  • 1 wedge fresh lemon
  • everything bagel seasoning, optional

Instructions

  • Spread the toast with hummus, top with cucumber, radish and avocado, sprinkle crushed red pepper flakes, salt and black pepper. Top with arugula and lemon juice.

  1. Who know that avocado toast could be this exciting! So fresh and delicious, my hubby said that it’s his favorite lunch so far! We both wound up having a second helping! I made this with homemade hummus too, which made it taste extra fresh and yummy!

  3. Excellent combination with the radish and cucumber. I usually choose a less peppery green, but love the rest of it. Good on crackers too. I found a Hummus “Oasis” that supposedly has 28 calories in two tabs and I love it. Hope that is really right calorie count! A local market that specializes in organic foods etc has this. I have never seen this brand at a grocery store.

  4. I make my avocado toast with chopped avocado(or leftover guacamole) and chopped hard boiled egg, mayo and horseradish sauce on hearty rye.  Simple

    I must say this was so yummy and different. i found the textures to flavor profile to be so interesting, the nutty bread, the crunchy english cucumber, the creamy hummus and avocado and then the peppery arugula with the tang of the lemon!! OMG!!

    This sounds amazing. I have reflux and cucumbers trigger it. Any suggestions of what to replace them with and still keep an amazing sandwich? Also, could you use Ezekiel bread in replace of the bakery multigrain bread?

    1. I have come across “burpless” cumber seeds and grew them last year, and they really seem to be trully burpless! I haven’t ever seen the actual cucumbers for sale anywhere, but if you are really craving cucumbers, it might be worth a try to grow your own! I grew them in a pot, and let them vine on the patio railing. They were pretty ease to grow. Sometimes Chinese or Persian cucumbers are a little less burpy, too. Good luck.
