Crustless Sausage and Spinach Quiche

Spinach and Ricotta Quiche and Chicken Quiche are so popular on my site, but I often get asked how to make it crustless. For this low-carb version, I made this with no crust, with chicken sausage and spinach plus I used some light cream to give the eggs more of a creamier custard texture, as most quiches have rather than a spongier baked egg texture. This turned out delicious! It’s so easy to make and is perfect for any meal of the day. For some more crustless quiche recipes, try my Crustless Quiche Lorraine and Crustless Broccoli Cheddar Quiche.

This Crustless Sausage and Spinach Quiche is so tasty you won’t even miss the crust. Skipping the crust saves on the calories and carbs, making this quiche low- carb, keto, and gluten-free.

How do you keep a crustless quiche from sticking?

Spraying the pie dish with oil is critical in preventing a crustless quiche from sticking. You can also line the dish with parchment paper.

Can a quiche be made the night before?

Yes, quiche is great for meal prep. You can make it ahead of time and bake it the next day before you’re ready to eat.

What should I serve with quiche?

If you’re serving quiche for breakfast, serve it with fruit salad or hash browns. For dinner, it’d be great with a nice green salad or your favorite roasted vegetables like Parmesan Crusted Delicata Squash or Roasted Brussels Sprouts and Shallots with Balsamic Glaze.

Italian Sausage Quiche Variations & Tips:

  • Swap the spinach for any wilted greens.
  • Use Romano cheese instead of Parmesan.
  • If you’d like a quiche with crust, you follow this recipe made with pie dough from the supermarket.
  • If you’d like individual portions, make crustless quiche muffins by pouring the egg mixture into a muffin tin. Bake at 350 degrees for 28-30 minutes.
  • Make Ahead – refrigerate the quiche for up to 4 days and reheat in the microwave.

  1. This is SO good! I used chicken sausage that was pre cooked and sliced it and browned it. Browned some onion and garlic as well. Used Gruyere and gouda cheese, added a dash of hot sauce. Perfect way to get lots of protein in the morning or a great lunch as well. I love that this is a healthy option for me. Thank you so much!

  2. I make this all the time, it is one of my favorites! I usually use frozen spinach and add half a diced onion and a minced garlic clove and cook in meat mixture. Today I was out of spinach so I subbed half a bag of riced cauliflower. It turned out great if anyone is looking for a spinach substitute!
Also this quiche freezes really well. I separate the pieces, and wrap parchment paper, which makes it easy to throw into the microwave from the freezer.

  3. This is one of our favorite recipes! Can’t believe I got my husband to eat spinach! It’s definitely in our breakfast rotation.

  4. LOVE THIS RECIPE!! I have made it several times now and it has become one of my go-to recipes. I use frozen peppers & onions (if I don’t have fresh) and add mushrooms while I am wilting the spinach / cooking the sausage. 6 eggs and 227g Daisy Low fat cottage cheese blended with the eggs instead of milk / 1/2&1/2 . 112g fresh shredded Parmesan in the bottom of the pan for a “crust” and 112g Fiesta Blend cheese for the top then bake it in a 9 x 13 for about 35mins. Thank you for this wonderful recipe!!

  5. The only way my son will eat spinach! I make a lot and then freeze and press and seal in the freezer

This Crustless Sausage and Spinach Quiche sounds fantastic! I love that it’s packed with Italian chicken sausage, spinach, and cheese—delicious and balanced. It’s versatile enough for breakfast, brunch, or even dinner, making it a perfect option for any time of day. Plus, the crustless twist keeps it light and healthy without sacrificing any of the comforting, savory flavors. What a great recipe to have on hand!

  7. This has been my go to for when we have guests overnight! It is easy so prepare and is delicious warm or cold the next day! A win for sure!! Thanks so much!! I feel like a thoughtful host serving this for family and friends!!

  8. I make this every week added mini sweet peppers and mushrooms chopped with sweet onion no salt just pepper and my costco organic no salt seasoning it was gone in 3 days the old man loved it. I also only use 1 cup three cheese it’s fabulous thanks for the easy recipe

  9. Super easy and tasty but next time I would reduce the salt to a quarter teaspoon or a half teaspoon …there is so much salt in the parmesan cheese and cheese I find it too salty the way the recipe is listed and of course it depends on how much salt is in your sausage as well.

  10. Very easy and delicious my husband ate it in 2 days he never likes anything but he loves this our new favorite I o ly put 1/2 the cheese and used whole milk added mushrooms to it was fabulous.

  11. Recipe comes together quickly. I did omit the added salt d/t the Italian turkey sausage was well seasoned. Beautiful dish for our brunch and everyone enjoyed so much, were no leftovers! Will definitely make this again!

  12. Scrumptious, says my husband. He was ready to eat it all. As others commented I used my cast iron skillet to cook it in. Since the pan was already hot, it did not take as long to cook and set. Also I only had an 8oz bag of spinach and used two sausage links that weighed 7.7 oz total. Will definitely make again!

  13. Who needs a crust with this delicious quiche! I couldn’t find turkey sausage, so I used chicken breakfast links and simply removed the casings to have ground chicken sausage. My family loved it!

  14. Made this tonight, yes we will eat breakfast for dinner sometimes. This turned out perfect. It is definitely a keeper. Every recipe I try with skinny taste has always been good.

  15. We love this recipe! I make this and many of your quiche and frittata recipes frequently. I love them as meal prep for a good breakfast on the boat, love them for lunch and for when we need something slightly different. I’ve managed to get my husband to be ok with spinach because of these recipes.

  16. This was delicious! I did bulk sausage that gave it great flavor! Will make again for sure! Going on my Yummy Board!

  17. I made this last week for dinner. Made some changes bad on what I had on hand. I only had noon fat milk so used 2/3 cup of that and added an additional egg. I had some mushrooms I needed to use abd threw in some onions, too. So good! Thank you for the recipe!

  18. Love this! I make them in large cupcake pan and freeze. Great to bring to work and warm in microwave. I haven’t been able to find low fat Havarti yet except in slices. So just break up the slices. Really yummy.

  19. Great recipe! I combined spinach & arugula as well as used cheddar cheese and pork sausage since that’s what I had on hand. 3/4 tsp made it a bit salty for my taste. Will cut back on that next time but def plan to make again!

  20. No matter what I do, I can’t open the recipe… I’ve sent it to myself via email and the link the brings me back to the site but not to the recipe. I’m pretty tech savvy and can navigate these sites pretty easily but you make it IMPOSSIBLE

  21. Made it, very easy, did all the steps in a cast iron pan, so just one pan, didn’t have Havarti or nutmeg, used shredded taco blend cheese, my wife had it as is I put red hot on it. We both liked it.

  22. Made this today. It is delicious. I wasn’t sure if I’d like it with all the cheeses (not a real cheese fan) but it was good. I used Jimmy Dean turkey crumbles and 2 Italian chicken sausages, as it was in the freezer and needed to be used. Will definitely make it again. There are not many of Gina’s recipes that we don’t like.

  23. I make a lot of skinnytaste recipes, but this might be my new favorite breakfast recipe! I made with a mix of gruyere and cheddar and it was delicious. Super easy to put together and very tasty. Will definitely be adding to my regular rotation – great for meal prepping for the week but I think it would also be a hit if hosting a brunch with friends.

  24. Delicious brunch recipe with chicken sausage! I used white cheddar instead of havarti and just did more 2% milk in place of the cream and it was perfect! Will definitely be making again! My husband loved it

  25. Everything you have on this site is delicious. This is the third recipe I’ve made for breakfast that has rave reviews! We are foodies and you don’t disappoint!

  26. Delicious and so easy.  I used lean ground turkey and seasoned it with Italian Sausage Seasoning.  The cheese was 2% mozzarella and grated parmesan.  It was served with fresh fruit on the side.

This was really yummy. I thought it was a little salty. It could have been the particular turkey sausage I used. Next time I will leave out the extra salt the recipe requires.

  28. I’m having trouble finding chicken sausage. Can I substitute your turkey sausage recipe in this quiche?

  29. This quiche is so delicious. My husband went crazy for it. Finished the last piece yesterday and asked me to make it again today. Taste great heated up the next day. Highly recommend.

  30. My husband and I love this quiche! We have been making it almost every week. It’s so easy and delicious!

  31. I made this and thought the spinach was too strong. I remade it substituting broccoli and red pepper. It was wonderful. Thank you for the base.

  32. I love this recipe well all your recipes.!  We have the cook books and your website. This is such a simple recipe and so good. The first time I made it with the cheddar thus tike with the Harvarti cheese. I do use lactaid milk and  it works perfectly .  I do add some garlic and onion to mine.

  33. Delicious! I omitted the half and half and used gruyere instead of havarti, since that’s what I had on hand. Also instead of physically draining the spinach, I just cranked up the head for a few minutes until the liquid was mostly evaporated. I think this could serve as a great base recipe — I may try swapping the sausage for mushrooms next time to make it vegetarian.

  34. This recipe looks amazing…can I substitute fat free milk for the 2% and half and half., if so would it be the same proportions.

    Thank you

  35. New here and have a question about Smartpoints. Its says it is 6 points for green but is this 6 points for the whole quiche or 6 points per piece? Also if it is per piece how do i know how big it should be? I just started WW and found this website and still trying to understand how everything works.

Fantastic! I used only 2 sausage links and added a green pepper. Cooked the meat/spinach in a cast iron and then used the same skillet right in the oven to save on clean up.

  37. Tried this this AM- I love all of Gina’s quiches but I think this one is my favorite. Easy too! I used milk I had on hand-no half and half today. Love how these recipes are so adaptable to what we have on in fridge or cupboard. Thank you Gina.

  38. This is delicious! My husband and I loved it. I did not have the exact ingredients so improvised a bit. I used 2 Italian sausage links (had no turkey or chicken); I used cheddar cheese and leftover cooked spinach. Also added sautéed shallots. Great for breakfast, lunch or dinner. I make the crustless zucchini quiche quite often and this was a nice change and a keeper for sure. Thanks, Gina!

This is absolutely  delicious! I tweaked the cheese and used 2 sams choice chicken apple sausages for 3 green smart points each.

  40. Spinach is my favorite! I didn’t know that I can make something out of it like this recipe, very interesting idea and dish. This will be a perfect meal for me! Healthy and at the same time it looks delicious and easy to make. Thank you!

    1. Delicious! I made some modifications because I did not have all of the exact ingredients. I used apple chicken sausage, spinach and broccoli, low fat cheddar, and added sautéed onion. My husband and mom loved it!

  41. How cow, y’all. I made this today, planning on putting it into a deep dish pie crust, and the recipe makes enough to fill TWO deep dish pie crusts, so I guess I’ll be freezing one!

I’d like to have this for my lunch next week. Is it safe to meal prep it tomorrow and have it for next 5 days?

    1. I use plain ff greek yogurt and a bit of water instead of half and half.
Yummy and my husband doesn’t know.

  43. SOOO easy and savory. I made with spicy chicken sausage … maybe a bit spicy for me, but hubs loved it. Had to sub with mozzarella. AND because I did not carefully read the recipe 🙂 I only had 5 oz. of spinach. Still wonderful and I will make again.
With all the sausage and cheese, this is very filling.

  44. Another hit for the whole family!! Tweaked it a bit to make it lactose free by using cheddar and Romano cheese and lf  half and half and lf milk. Thanks for another winning recipe to go into rotation!!

  45. This was so delicious! My husband and I loved the flavors. I made a few changes as I saw this pop up on my feed this morning and really wanted to have it ready after church today. I happened to have a bag of frozen spinach on hand and spicy Italian Turkey sausage. Both worked well, in fact I think I will always use the spicy Italian sausage.
    Thanks for a great recipe!

  46. Don’t laugh, but I made this and forgot to add the cheeses and it was still delicious! I will sprinkle the harvarti on top before I reheat left overs. This election has my head all over the place!

Wow this exceeded expectations. I only made it because I had all the stuff in the fridge. Used oat milk instead of 2% and it’s perfect.

  48. This recipe is SO good and healthy. The only change I made was I used Beyond Meat sausage. I served it with a lightly dressed arugula salad. Delicious and the variations are endless. Keep the great recipes coming!

  49. Quiches are my go to any night I don’t want to spend a lot of time cooking. My husband loves them. No matter what I put in, sausage, bacon or ham with vegetables, it is good. Those with a salad makes for a nice and easy delicious dinner.

  50. I’m the oven right now! So easy. I did add bell pepper to up the veggies. I couldn’t believe that 12oz of spinach was the correct amount, but holy crap that cooks down to nothing!

      1. Sooo yummy! I made 2. Can I freeze one and reheat? Any specific directions for that?

  51. How do you think this would freeze? My sister is having a baby soon and trying to make her a lot of healthy options to have on hand.

I made this with mushrooms instead of spinach. One of my breakfast meal preps along with the crustless broccoli quiche. Both are excellent.

    2. I have frozen quiches before and they turn out well. In fact I did so before I had my baby so I would have a quick meal. I am planning to freeze this too bc I need it for next week but only have time to make it today.
