How to Make Beef Bourguignon in the Slow Cooker

The first half of this recipe is cooked in a skillet on the stove, and yes, I promise it’s worth dirtying an extra pan! Browning the beef and veggies enhances their flavor. The printable instructions are below in the recipe card.

  1. Cook the Bacon: Heat a skillet over medium bacon and cook the bacon until crisp. Transfer it to the slow cooker and remove all but a couple of teaspoons of bacon fat.
  2. Brown the Beef: Toss the meat with flour and seasoning, then brown it on all sides in the skillet. Transfer beef to the crock pot.
  3. Cook the Mushrooms in the bacon fat and sprinkle with salt. Once they begin to brown, add the shallots and garlic, followed by the tomato paste. Add the veggies to the slow cooker.
  4. Slow Cook the Beef: Pour the red wine and broth into the crockpot and stir. Lay the fresh herbs and carrots on top. Cook on low for 8 hours or high for 4 to 6 hours. Remove the herbs before serving and ladle into bowls.

  • To make in the Instant Pot, brown the meat, bacon and vegetables as the recipe describes first then cook on high pressure for 35 to 40 minutes, until tender.

Use a Dutch Oven or a heavy oven-safe pot and bake in a 375F preheated oven for 2 1/2 hours, (check to be sure it has enough liquid after 1 1/2 hours) until the meat and vegetables are tender.

Pro Tips for Perfect Beef Bourguignon

  • Veggie Variations: If you dislike mushrooms or want to make the meal heartier, add parsnips or potatoes. For the mushrooms, you can substitute white button mushrooms.
  • Wine Matters: Wine is a major component in this recipe, so there isn’t really a substitute for it. If you don’t want to cook with alcohol, you can replace it with extra broth. However, the end result will taste differently.
  • Gluten-Free Beef Bourguignon: Use a gluten-free flour, like Cup4Cup.
  • Onions: Swap shallots for red onions.
  • Onion Powder: Replace it with garlic powder.
  • Herbs: If you only have 1 herb, that’s fine. Use all rosemary or all thyme.

Most of the ingredients are the same, but the main difference is that beef bourguignon, which originated in France, has wine and bacon. Beef stew also contains peas and potatoes, which bourguignon typically doesn’t have.

Can you overcook beef bourguignon?

Even though beef chuck benefits from a long cooking time, it’s still possible to overcook it. The meat will dry out, and the vegetables will be mushy. Once it’s done, don’t leave it on the “Keep Warm” setting for any longer than 2 hours.

  • 3 slices center cut bacon, chopped
  • 1 1/2 pounds chuck beef, trimmed, cut into 1-inch cubes
  • 2 tablespoons all purpose flour, or gluten-free flour
  • ½ teaspoon onion powder
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon black pepper
  • 2 ½ cups cremini mushrooms, halved or quartered depending the size
  • 1 cup shallots, chopped
  • 4 cloves garlic, sliced
  • ¼ cup tomato paste
  • ½ cup dry red wine, *
  • 1 ½ cups beef broth
  • 1 ½ cups carrots, cut in 1-inch pieces
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

  • Heat a large skillet over medium heat & render bacon until crisp. Using a slotted spoon, transfer bacon to the slow cooker and remove most of the fat (nearly all of it), reserving the rest.
  • Toss beef in flour, onion powder, ¾ teaspoon salt and black pepper. Brown the beef on all sides in two batches. Transfer the beef to the slow cooker.
  • Add 1 teaspoon of the reserved bacon fat, mushrooms and remaining ¼ teaspoon salt to the pan; cook until mushrooms begin to brown, 4 to 5 minutes. Add the shallots and garlic, cook until aromatic and soft; 2 to 3 minutes. Add tomato paste and stir to combine. Transfer to the slow cooker.
  • Add red wine and beef stock. Stir to create a homogenous liquid. Lay fresh herbs on top followed by the carrots.*
  • Cook on low 8 hours of high for 4 to 6 hours. Remove herbs before serving.

  6. Great recipe! I doubled it (8 portions) and it turned out perfectly. The meat really was tender and falling apart. I would say it took a bit more prep than I expected, but then it’s hands off. I will know for next time and it will be easier. Served with mashed potatoes and it was very good. Will make again!

    This is a great recipe! It takes a bit of prep on the front end, but it is worth it. Quick tip, I used stew meat the last time (the roast was already cut up in chunks in the store), and it worked great. Love this one!

    Prepped everything the night before and threw it in the slow cooker in the morning. Excellent! would definitely make this again. I cooked on high one hour and then low for 6.5 hours.

  17. Just bought alll of the ingredients to make this, and doubling it. Just curious if you or any of your followers here have ever tried making this like a roast instead of a stew? Skipping all that cubing and searing all the little bits of chuck, just leaving it whole. Any idea if that would turn out? Maybe I’ll try that next time, always like to recipes as is first time.

      I don’t like mushrooms either. I used mini carrots and at the end I put in some frozen peas.

    2. It won’t really be what the recipe says it is, without mushrooms. Then it’s basically beef stew with wine. maybe consider cooking with the mushrooms then take them out? I used some Umami seasoning that is mushroom and onion flavored. That may replicate it. But I love mushrooms, so I did both LOL

  20. This was full of deep, rich flavor. The beef melted in your mouth. Paired it with mashed Yukon gold potatoes into which I added defrosted frozen peas.
    Prrp tome takes a while. It took me over an hour from gathering ingredients to turning on the slow cooker. But the end result was well worth it.

  21. This is an amazing recipe. It is SO satisfying and rich. I followed the directions exactly. I used the cabernet sauvignon Charles Shaw from Trader Joe’s. I don’t cook with wine often so I wanted something economical. I served it with the Skinnytaste buttermilk mashed potatoes. Recipe freezes nicely. Thank you Gina for the good food.     This came out very well, but the prep time and cost make it a once in a while meal. The meat came out perfectly, and the fresh herbs are a must! I don’t know if it needs bacon, for anyone that doesn’t enjoy that ingredient.

  23. This was really delicious. But…I tried doing it in the Instant Pot as mentioned. The sauce was too thick even after I added extra broth. I kept getting a BURN notification. I ended up using the slow cooker function and we had it the next day. I added a bag of frozen pearl onions I had, left out the mushrooms (my son doesn’t like them) and added some defrosted frozen peas at the end. Great recipe, just not suited to the Instant Pot.

      There is a glitch between web page and WW app. The recipe imports as 20 points per serving ( 62 points for the Chuck). I edited it to Chuck roast and it’s now 5 per serving.

My only ingredient modifications were that I used about 2.5 lbs of grass fed beef, dried Italian seasoning, and cooked it in my Dutch oven in the oven. I cut my beef pieces a little under an 1″ because I’m paranoid. It only took about an 2 hours. It’s delicious!!

    Millionth time making a Skinnytaste recipe. First time reviewing because this is one of the best things I’ve ever eaten in my life. YUM!

  38. Really good dish. I left out the garlic but otherwise used all the ingredients. It took more than 4 hours on high in the slow cooker for my beef to tenderize fully.

  39. Family not a fan of mushrooms so I used white button and quartered them. Easy to pick out and put in MY bowl. Used dried herbs, since I didn’t have fresh. Served over mashed potatoes. Crockpot on high for 3 hours and low for 1 hour. Delicious!

Made recipe exactly as written, using a “2 Buck Chuck” Merlot, and served it with mashed potatoes and sweet/smoky seasoned green beans. I do have 2 minor “complaints”… 1. There should need a warning: “You may regret not doubling this recipe” and 2. The WW pts show as 3 per serving, but when opened in the WW app, the recipe shows as 5pts. I happily devoured those 2 missing points, but I would appreciate the points being corrected for future reference.

    Is there a substitute that you can suggest for mushrooms? My household does not care for them.

I added 4 bay leaves and dried thyme – great taste! Served over mashed potatoes!     This recipe is DELICIOUS! I made it exactly as written (I made it in a dutch over rather than the slow cooker) and just added a few more carrots and mushrooms. I served it with wide egg noodles for my family and I had mine over bulger. We will definitely make this again.

    1. We had beef bourguingnon for Christmas dinner. My Mum’s recipe from years ago, which calls for marinating the meet in red wine for 24 hrs before cooking, so I’m thinking yes. Will make it even more delicious in my opinion 🙂

  65. Based on other reviews I’m thinking maybe I didn’t do something right but I did follow the recipe, without modifications. The meat was very tender and the mushrooms & carrots were cooked to perfection but that deep rich flavor was definitely missing. Maybe I should’ve thickened the sauce? Just too much work for it to be worth making again. Gina has many other great recipes that I will choose instead.

  66. I made this last night for 8 people and it was a hit!! I used gluten free flour as my husband has celiac disease. The only suggestion he made was to serve it next time in bowls so he can get more of the sauce. I made mashed potatoes and a salad and many came back for seconds.

  69. This was very good! Super easy to make which is surprising by how robust the flavor is. Had it with a baguette and veggies. Definitely want to try mashed potato next time. Super yummy comfort food. Might have went a little overboard on the sprig of rosemary which made it a little overpowering but lesson learned!

  71. My slow cooker advises putting all root vegetables on the bottom. Will the carrots cook completely if they are put on top? I’m wondering if putting the carrots on the bottom would lead to mushy carrots. Thanks! Sounds delicious!

      Maybe try pumpkin puree instead? Not the same flavor, but similar consistency, and will have that slight thickening property.

  77. Can potatoes be substituted for the mushrooms? I do not like mushrooms and never cook with them or eat them.

    1. You can make delicious braised beef dishes without wine, but a bourguignon is pretty specifically beef braised in wine. Make my other beef stew recipe with or replace it with stock for beef stew without the alcohol.

  78. Will it still be good if I leave out the mushrooms and bacon? I know the bacon flavors the mushrooms, but we are not a mushroom loving house. (but we love wine LOL)

      there is a fabulous Chicken Bacon. You have to buy online . Alfresco uncured chicken bacon. It is shelf stable. 35 cal for 2 slices and 1 point. can be a tricky to find. i usually have to buy a volume of it. it tastes just like bacon. I will eat bacon out but don’t cook it at home. Love it.

  79. Weird question, but is it possible to make this with pork, instead of beef? Or do you have a pork recipe that is similar? I don’t eat red meat, but the other flavors of this sound terrific.

      1. I think the “of” is a typo in the cooking time instructions. Should it read “or”?

    1. I think she meant “or” as in cook 8 hours on high OR 4 to 6 low. I’ve alerted her to several typos. I think she read your question not realizing you were quoting her directions!

  80. Looks amazing! Silly question, I know, but would you make any major adjustments if you were to leave out the mushrooms? Aside from more carrots?
