How to Make Beef Stew

Here’s the step-by-stem instructions to make this cozy beef stew from scratch. See recipe card below for printable directions.

  1. Make Sauce: Blend the broth, flour, tomato paste, salt, and pepper in a blender until smooth.
  2. Brown the Beef: Heat a large Dutch oven on the stove-top over high heat, spray with oil, and brown the meat on all sides in two batches. Remove the beef from the pot and set aside.
  3. Vegetables: Add the carrots, celery, and onions and cook for five minutes. Return the meat to the pot with any juices. Add the potatoes, mushrooms, thyme, bay leaves, and broth.
  4. Cook Stew: Cover the pot and bake for two and a half hours at 375°F. (After two hours, check that there’s enough liquid.) Once the meat and veggies are fork tender, remove the Dutch oven from the oven, discard the herbs, and stir in the peas. Taste the stew and add more salt if needed.

  • 3 cups low-sodium beef broth
  • 3 tablespoons flour or gluten-free flour
  • 3 tablespoons tomato paste
  • Kosher salt and black pepper
  • 2 1/2 pounds boneless chuck roast, trimmed and cut into 1 inch cubes (I prefer Prime, I start with a 3 lb piece before trimming off fat)
  • 1 1/2 cups yukon gold potatoes, peeled and diced into 1 inch pieces
  • 1 1/2 cups carrots, sliced 1/2 inch thick diagonal, from 3 to 4 medium carrots
  • 1 cup chopped celery, from 3 ribs
  • 1 medium onion, cut into 1/2 inch pieces
  • 4 ounces white button mushrooms, quartered
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1/2 cup frozen peas, thawed

Instructions

  • Preheat oven to 375F.
  • Combine broth, flour, tomato paste, 1 1/4 teaspoons kosher salt and 1/4 teaspoon black pepper in a blender and blend until smooth.
  • Heat a large Dutch oven over high heat, spray with oil and brown the beef on all sides in two batches. Set beef aside, then spray the pot again. Add the carrots, celery and onions and brown, stirring about 5 minutes. Return the beef to the pot with any juices.
  • Add the potatoes, mushrooms, thyme and bay leaves and pour the broth on top. Cover and bake 2 1/2 hours, (check  to be sure it has enough liquid after 2 hours) until the meat and vegetables are tender.
  • Remove from oven,  discard the thyme and bay leaves, stir in the peas and let them sit 1 minute until heated through. Taste for salt and adjust as needed.

    This was delicious! I didn’t need any more broth. When I checked it at the 2 hour mark, it was done. I think any more and the potatoes and carrots would have been mushy. Unfortunately, no one else likes mushrooms, so I left them out and double the carrots. This will be my go-to beef stew recipe now!

  31. Great recipe. My diabetic husband would have me make this every week. I substitute rutabagas for potatoes. After piercing with a fork, I microwave for 2 minutes then cool. This makes them very easy to peel. The rutabagas are also very good in your sausage potatoe soup. Thanks for such great recipes that can be gluten free and diabetic friendly.

    I really like this. I added 1/2 cup of red wine and 2 crushed garlic cloves. I am single so I added the potato to each serving as I warmed it up so the potato would not get mushy. I just microwaved the potato.

    Made this twice and each time it was just perfect. The second time I used chicken bone broth instead of beef broth for an added protein boost. So good! In the last 30 min. I added an additional 1/2 cup of beef broth. Absolutely our go to recipe for stew.

    I love this stew , I cook on top of the stove on low. I add some fresh parsley, fresh string beans and a very small can of low sodium V-8 juice. It’s filling and delicious! It’s my new go to.

  76. I’m guessing this could be done in an Instant Pot but I’m terribly at figuring out cooking times. Any idea on cooking time in Instant Pot?

  77. I belong to a vegetable co-op, so I cook with whatever comes in the bin for that week. Lucky for me, the bin included mushrooms, snack carrots, celery and creamer potatoes.
    I followed the recipe as stated but instead of putting it in the oven, I put everything in the crock pot on low for 8 hours, checking after 6 hours.
    I used unsalted beef broth due to a family member’s dietary restrictions. I didn’t have any peas.so I also did not have any tomato paste, so I left that out of the recipe, but I think that would have been a welcome flavor addition.
    The stew turned out great. The meat was very tender, as were the vegetables without being mushy or overcooked. Next time, I will definitely add tomato paste or cooking wine to the broth.
    This recipe is a keeper.

  78. I loved this stew, which is full-flavored partially due to the variety of vegetables it contains. I must not have trimmed the raw meat thoroughly, because there was a distinctly shiny surface on my first serving.
    I reverted to an old trick: straining the stew and refrigerating the solids and liquids overnight. The next morning, there was an easily removed layer of fat on the liquid. My next serving was perfect, especially after I added the peas! It tasted better without the excess fat.

    WOW! This recipe turned out amazing. I substituted almond flour for regular flour and the sauce came out perfect with the best texture. It was pretty easy to do and a crowd pleaser! Definitely need to add this one to your family dinner rotation for Fall and Winter!

  88. Gave this 5 stars but it’s even better than that. So delicious! I printed out the recipe and chose the smaller version for 4 people. Had to laugh it called for 1.33 bay leaves. I put in 2. 😁 Also, I’m glad you gave advice on using a slow cooker. Might try that way next time.

  90. Made this today and followed the recipe using 2# of grass fed beef. This was so easy. Started out on the stove then into the oven for two hours. Absolutely delicious!

  91. Very tasty and filling! Made exactly as written but added 1/2 cup red wine in place of 1/2 cup broth. Will make again!

      1. I really liked this recipe. Except I did 375 and took it out at 2 hours. It was a little too mushy, not so much I couldn’t eat it but next time I’d do 350 for 1.50 hours. I’m just glad I checked it at 2.

      1. If making this in a slow cooker, do you still need to brown the meat and do you still need to brown the veggies first? LMK of any changes to consider if using a slow cooker. Thanks so much!

      2. I followed a previous beef stew recipe of hers from her Fast and Slow cookbook where she makes it in the slow cooker! You still have to brown the celery and onions, then the beef, before adding them all to the crockpot with the veggies. I kept all the other measurements the same, and put it in low for 7.5 hours with plans to check it around hour 6.

  92. Perfect timing! I literally was going to make beef stew this week and bought everything to do it just needed to find the recipe to use.
    Question though- I don’t have a dutch oven (a pot that can go in the oven) what do you suggest? I also did beef stew on the stove or crock pot. But if this is the best way i may be making a trip to the store during my lunch break 🙂

  93. This recipe looks delicious! Have you tried it in the Instant Pot? I make a stew very similar to this and the results in the Instant Pot are amazing! The meat is so tender and the flavors concentrate beautifully.

  95. Silly question but can you cut down on the actual beef broth flavor as I don’t like beef broth that much could you use anothet or combine another with beef broth?

  96. I made this tonight, followed the recipe exactly and it came out amazing! I have always struggled with beef stew so I have avoided making it but I think the blending of the broth, flour, salt/pepper, and tomato paste makes this. It was thick and flavorful and my boyfriend and I both loved it.

  97. Perfect timing! Just bought a chuck roast and was planning to make stew tomorrow. Will plan to follow your recipe except I will transfer everything to a crockpot after sautéing instead of to the oven, because I have to work tomorrow. Will let you know how it turns out. 🙂

    1. Lindsay, how did it turn out? How high and for how long did you put it into the crock pot? Interested in doing it this way as well!
