Broccoli and Cauliflower Salad with Capers in Lemon Vinaigrette

A quick and easy salad, perfect for the warmer weather or if you’re looking for a different way to make broccoli.

This lemon vinaigrette makes any vegetable taste delicious. I love it over carrots, or even over arugula or a grilled chicken salad. You can add more lemon juice if you like a tangier taste.

Ingredients

  • 1 13 oz head broccoli
  • 1 13 oz head cauliflower
  • 2 tbsp capers

For the Vinaigrette:

Instructions

  • In a small bowl, whisk the lemon juice, olive oil, garlic, shallot, salt and pepper.
  • Cut the broccoli and cauliflower into bite size florets. Using a steamer, steam the vegetables for about 5 minutes. Remove the vegetables, rinse under cold water to stop them from cooking, drain and place in a large bowl.
  • Toss with the vinaigrette and serve.

  1. I made this for lunch today with a few changes . I am not a big fan of steamed veggies, so I oven roasted the broccoli and cauliflower instead (tossed with olive oil and kosher salt; baked 375 convect for about 30 minutes until browning and tender).  Then I tossed the veggies with the vinaigrette.  I skipped the capers and added lemon zest instead.  Absolutely delicious, and a great way to enjoy the veggies!  

  2. Could you make this ahead (e.g. day before serving) or will it get too mushy? Looks great and I would like to take it camping but would need to make a day ahead. Thanks!

  3. Another winner. I love capers. The capers and lemon flavors liven up broccoli and cauliflower in a refreshing way that I have not tasted before.

  7. Sorry, I do this now but my older recipes I would have to remake in order to give an accurate serving size. Why don't you weight the whole salad, then divide it by 6. That's your portion.

  8. I love this site, but it is hard to divide portions when it just say "servings" which you could say in cups or oz.
