You’ve been asking me for more one-pot meals, and you know how much I love sheet pan dinners (so much that I even wrote an entire cookbook on one-pan recipes!). A few years ago, I shared a grilled chicken shawarma recipe in one of my books and on the site, and it quickly became a favorite. I’ve always loved the warm, aromatic spices of shawarma, and I knew they would be just as delicious in a sheet pan version. Here, everything roasts together—chicken thighs, chickpeas, and colorful vegetables—until golden and perfectly seasoned. What I love is that it’s also a high protein and high-fiber meal!

Shawarma is a popular street food in the Middle East. A large cut of meat, usually chicken, beef, or lamb, is cooked on a rotating spit and sliced off. This easy sheet pan version uses the same warm spices but simplifies the cooking process and adds vegetables to make it a meal-in-one.

  • Chicken Thighs stay juicier than breasts. Cut boneless, skinless thighs into 1-inch pieces.
  • Vegetables: Red onion, red bell pepper, and carrots
  • Canned Chickpeas are an easy, affordable source of plant-based protein and fiber.
  • Olive Oil coats all the chicken, veggies, and chickpeas, preventing them from drying out.
  • Chicken Shawarma Seasoning: A blend of eight spices gives shawarma its distinctive flavor. You’ll need smoked paprika, cumin, red pepper flakes, garlic powder, onion powder, dried oregano, cinnamon, and kosher salt.

How to Make Sheet Pan Chicken Shawarma

This one-pan chicken shawarma recipe has only two steps. Just season and bake–no marinating required! For even easier cleanup, line the baking sheet with parchment paper. See the recipe card at the bottom for printable directions.

  1. Season the chicken, vegetables, and chickpeas with olive oil and all the spices.
  2. Spread everything evenly onto a rimmed sheet pan.
  3. Bake chicken shawarma at 425°F for 30 to 35 minutes. If you want it slightly charred, broil for the last 2 minutes.

Variations

  • Use leaner protein: Substitute chicken breasts for the thighs.
  • Brighten the flavors: Squeeze lemon over the chicken mixture.
  • Experiment with spices: Try adding turmeric, curry, or black pepper.
  • Garnish with herbs, such as fresh parsley, or fresh dill.
  • Add some extras, like feta cheese, tzatziki or yogurt sauce for topping

Make Ahead Tip

While this easy chicken shawarma recipe doesn’t require marinating, you can definitely do it if that’s more convenient for you.

  • On the day before or the morning of cooking, chop the chicken and vegetables and season them with olive oil and spices.
  • Cover the bowl with plastic wrap and refrigerate until ready to bake.

Serve it over rice, with salad, or tucked into warm pita for a simple yet delicious weeknight dinner with minimal cleanup. Also great with one of the dips or sauces below.

For a more filling option, serve it over grains or cauliflower rice for a low-carb alternative. You could also make a chicken shawarma wrap with pita bread or serve it over romaine as a salad.

Storage

  • Refrigerate chicken and veggies for up to 4 days. Store tzatziki in a separate container for up to 5 days.
  • Freeze in airtight containers for up to 3 months.
  • Reheat: Thaw the container in the fridge the day before. Then, reheat it in the microwave, or air fry the chicken shawarma at 360°F for 5 to 7 minutes.

  • 1 ½ pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 2 carrots, peeled and cut into 1/4-inch pieces (about 1 cup)
  • 15 ounce can chickpeas, rinsed and drained
  • 1 tablespoon extra virgin olive oil
  • 1 ½ teaspoons smoked paprika
  • 1 ½ teaspoons cumin
  • ½ teaspoon red pepper flakes, optional
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • 1 ½ teaspoon kosher salt
  • tzatziki, or white sauce, optional for serving

Instructions

  • Preheat the oven to 425° F.
  • Add the chicken, veggies and chickpeas to a large mixing bowl. Drizzle with the olive oil and season with the spices and salt. Mix to evenly combine. Transfer the entire mixture onto a rimmed baking sheet and spread into an even layer.
  • Transfer the baking sheet to the oven and roast for 30-35 minutes, until the chicken is cooked through and the vegetables are tender. Broil for the last 2 minutes for an extra char if desired.
  • Remove from the oven. Serve with tzatziki or white sauce, if desired.

    Excellent flavor. I forgot to buy the carrots so used a yellow squash and added some cherry tomatoes. Served with tzatziki sauce and pita bread. Will make this again.
    I had eaten at a Lebanese restaurant 2 days ago and the flavor is very comparable.

    This was a one sheet pan dinner. I used the veggies that I had so I used red bell pepper, zucchini, broccolini, white onion and small yellow potatoes. Also added a bit of chicken stock before baking. It was delicious!!

  20. Quick, easy and delicious! I made this last night, but didn’t feel like peeling and cutting up carrots and I had a 3-pack of bell peppers, so I used them instead. It was amazing. I did decrease the cinnamon to 1/4 tsp. because I wasn’t sure about how it would taste. All in all a great recipe and it’s perfect for meal prep.

  24. This recipe was really good and came together super fast. My husband and I share the cooking duties so I did all the prep early in the day then he just had to combine the ingredients and bake once he got home. I added an extra bell pepper and carrot instead next time because I don’t care for chickpeas unless they are pureed but I know the added protein is a plus. We will definitely make it again though!

  25. Geez, this is pretty much the only site I go to for recipes now, they’re all winners. This was great- I’m not a fan of cooked peppers but took a leap of faith and added them anyway. SO GOOD. I made my own tzatziki to go with it. I could see where this would make an awesome pita sandwich for those lucky souls who can eat gluten. The only difference I made is that I have an apartment sized oven that didn’t fit the whole thing on a sheet pan (I would halve going forward), so I cooked the overflow in the air fryer. It was all just delicious. I think going forward I’ll make this in lettuce wraps. Thanks so much!

  30. Oh my!!! I made this tonight and it was SO good. I bought a red onion at the store today only to cut into it and find that the entire middle section was brown. SO – no red onion but – while at the store I bought mushrooms to add to it (thank goodness). Anyway – other than no onion and adding mushrooms, I didn’t change a thing. This is definitely going to be made over and over. It was easy to make, the “points” are perfect, and the taste – SO deelicious!!! Thanks, Gina, for another great recipe!

Some homemade Tzatziki sauce is highly recommended as it adds that garlic creaminess that regular shawarma’s have. Tzatziki sauce is easy to make and low in calories too!
    Served it with rice as well, but I’m sure it would still be good without it or with Califlower rice.

  46. I wasn’t able to make our planned meal tonight, so I was scrambling. I had thighs that needed to be cooked soon, and this was what I went with. And we were NOT disappointed!
    I wanted quick and easy. I had everything except the tzatziki ingredients, and I was too in a hurry to do a white sauce. BUT. It was awesome with just some basmati rice and a bit of Greek yogurt drizzled.
    When I make it again, and I will, I will make the tzatziki sauce but that will be a big bonus.
    Side note, I almost didn’t add the cinnamon because I have a weird thing with what I assume to be ‘sweet’ stuff.   53. Well, I took a chance and subbed paneer for the chickpeas. I marinated the small cubes in whole milk yogurt, plus some paprika, oregano, curry powder, cumin, salt. I used no more than a tsp of each, being unfamiliar with the flavors, and let that sit for about 3 hours. I then added that to the sheet pan ingredients when it came time to bake. What a hit! It was easy and delicious. I’m on a modified Keto diet, and the paneer sub was a winner. Thank you so much for this recipe!

  92. I made this tonight for the first time – delicious! I let the chicken marinade in the oil and spices for about 3 hours. I added one sweet potato, one sliced zucchini and a bit of fresh lemon juice (as suggested by Gina). And I used store-bought tzatziki sauce! Yummy meal!

I doubled carrots and my onion was on the larger side so got 5 servings of 1.5 cup each. Loved it. Everything cooked just right in time given. Flavorings perfect. Did a splash of lemon at the end.   103. Made this for dinner last night. Delicious!! Served with tzatziki and homemade fresh milled flour pitas. Added an extra can of chickpeas and an acorn squash, cut into chunks. Increased the spice mix by 1/2, due to the additional ingredients. I will definitely be adding this into the rotation!

  106. This was fantastic! Super easy prep and foolproof baking with it being chicken thights. I was a little wary about the amount of cinammon in it, but I rolled with the measurements as written and I’m glad I did. It was delicious. I served it over pearled couscous with tzatiki (store bought) and I can’t wait to eat leftovers

  107. This is an insanely delicious recipe! (And this is coming from someone that dislikes bell peppers!) Wow … it blew my socks off! I will definitely make this again and again. I’m making some rice now to go along with the leftovers for lunches this week. The addition of tzatziki is the “cherry” on top!

  110. When making a new recipe I typically follow the exact instructions but I know that cumin is not something I love. I reduced it by a third and it still had enough to make the dish extremely flavorful. Next time I might reduce the chili pepper as well. That being said this was so easy to put together and really delicious! I’m making it again for sure!

  113. Made this tonight and it was a hit! But I actually found mine was done (chicken at or above 165°) just less than 20 minutes in. This was in a convection oven set to 425°, so would probably take longer in a conventional, but I’d still recommend temp-checking around 20-25 minutes in.

    I also added feta for the 2-minute broil at the end, which obviously changes the nutritional values but was delicious!

    This was absolutely delicious and easy! I used boneless chicken breast because that’s what I had, but next time I will use boneless chicken thighs for more moisture! Served mine with Naan bread and tzatziki, soooo good! Thank you Gina!
