When I worked full-time in Manhattan years ago, my office was two blocks from Koreatown, and I loved having lunch there with coworkers. Since then, Korean food has become more popular, with Korean restaurants popping up everywhere. But even where I currently live, we don’t have Korean restaurants near us, so this Korean beef dish brings those great flavors to my kitchen!

Here’s everything you need to make this quick and easy ground beef Korean beef recipe. See recipe card below for a printable list:

  • Soy Sauce: Choose a low-sodium soy sauce.
  • Light Brown Sugar: Adds a hint of sweetness.
  • Sesame Oil: Gives it a nutty flavor, if you’re allergic you can omit.
  • Crushed Red Pepper Flakes: For spice, if you want it to be mild, omit or reduce the red pepper.
  • Ground Beef: I use 93% lean ground beef. You can use any ground meat here, like chicken or turkey.
  • Garlic: Crush two cloves, for flavor.
  • Ginger: Fresh ginger is best. You can store it in the freezer in a zip-locked bag and grate it with the skin still on.
  • Brown Rice: I’m obsessed with frozen brown rice from Trader Joe’s. It takes three minutes to heat up, and the texture is perfect.
  • Cucumber: If you use an English or Persian cucumber, there’s no need to peel it. Just thinly slice it.
  • Gochujang: Gochujang is what makes these bowls! Add more or less depending on your heat preference.
  • Sesame Seeds and Scallions for topping.

How to Make Korean Beef Bowls

Here’s step-by-step photos and directions for this Korean beef recipe, which is served in a bowl with rice, cucumbers and sauce. Be sure to scroll down to the recipe card for printable instructions.

  • Make the Korean Beef Sauce: Combine the soy sauce, two tablespoons of water, brown sugar, sesame oil, and red pepper flakes in a bowl.
  • Cook the Ground Beef: Heat a large skillet over high heat, spray with oil, and brown the ground beef about five minutes, breaking up the meat with a spoon. Add the onion, garlic, and ginger, and cook for a minute.
  • Add Sauce and Simmer: Pour in the sauce and simmer on low for 10 minutes.
  • Assemble: Place rice in each bowl, top with beef, cucumbers, Gochujang, sesame seeds, and scallions.

  • Vegetable Options: You can add just about any veggie. Sauteed mushrooms, bok choy, matchstick carrots, or edamame would all work.
  • Pickled Veggies: Mix in pickled onions, cucumbers, or carrots. Kimchi would also be good.

Meal Prep and Storage

My family always eats up these rice bowls when I make them, so I’ll often double the recipe to have extra for leftovers.

  • Refrigerator: The cooked beef lasts up to 4 days in and airtight container in the fridge.
  • Freezer: Freeze without the cucumbers or garnish up to 3 months. Reheat in the microwave.
  • To pack for lunch: Store the beef, rice, sesame seeds, and Gochujang in one container and the cucumbers and scallions in another. Reheat the rice container until warm and top with the veggies.

Gochujang FAQs

What does gochujang taste like?

One essential ingredient you will need for this rice bowl recipe is gochujang sauce. It’s a Korean condiment that’s a little spicy and sweet and has a distinct flavor only found in Korean cuisine. It also comes in a paste, requiring you to thin it down with a little water and sesame oil. If you can’t find it at your local supermarket, there are a lot of different brands on Amazon.

Is gochujang gluten-free?

Gochujang typically contains wheat, but not all brands do. If you’re gluten-free, check the labels first! And while we’re on the topic, soy sauce isn’t gluten-free either, so substitute tamari or coconut aminos.

What is a good substitute for gochujang?

Sriracha is probably the closest sub for gochujang, but it’s not exact. You might need to mix it with a little hoisin sauce or sugar and sesame oil to get closer. I highly recommend using gochujang if you can find it!

How do I make these Korean beef bowls mild?

If you’re not a fan of spicy food or are serving these bowls to spice-adverse family members, omit the red pepper from the beef and leave the gochujang on the side. Everyone can add as much (or little) sauce as they prefer.

  • Combine the soy sauce, 2 tablespoons water, brown sugar, sesame oil and red pepper flakes in a small bowl.
  • Heat a large deep nonstick skillet over high heat, spray with oil and add the ground beef. Cook, breaking the meat up with a wooden spoon until cooked through, about 5 minutes.
  • Add the onion, garlic and ginger and cook 1 minute.
  • Pour the sauce over the beef, cover and simmer on low heat 10 minutes.
  • To assemble the bowls, place 3/4 cup rice in each bowl, top with scant 2/3 cup beef, cucumbers, Gochujong, sesame seeds and scallions.

  39. I love this recipe and have made it lots of times. Bibimbap is my favorite thing to order when we got out for Korean food, and this is a close approximation with ingredients I usually have in hand.
    I do a quick pickling of the cucumber along with some shredded carrots. Then we always add a fried egg on top.

    This is a new family favorite! In addition, I added lime wedge, red cabbage, shredded carrots , mint and basil. I also added a bit of gochujang to the simmering meat. I made mine more as a veggie bowl with a tiny bit of rice and beef but my husband and boys loved it and told me they want this meal every week.

  44. I love Korean food enough that I had all of the ingredients on hand but my recipe did not turn out well. I used 85% and the meat was too greasy. Follow the recipe and use very lean ground beef and it will probably come out better than mine did.

  52. This was excellent! I don’t like spicy food so I omitted the pepper flakes and gochujang sauce, but my husband used the sauce. I also wanted more vegetables, so instead of cucumbers, I stir fried carrots and broccoli before browning the beef, using the same pan, and made brown rice. Will definitely make it again!

  60. This is so easy to make ahead for meal prep! I double the recipe and add 1/2 cup water and diced fresh ginger so it is saucy over rice or Asian rice noodles. I also add fresh bean sprouts ~ cilantro with the cucumber and green onions. Absolutely delicious!

  85. I made this recipe yesterday, substituting ground turkey for the beef. And I added the equivalent of 1 large carrot and 1 celery stalk, both cut into matchsticks. Arranged the sliced cucumber around the edge of the bowls. Easy and very tasty. Will make again.

  91. This is a fantastic, easy recipe that is guilty free! I make it all the time, bit my husband is not a fan of cucumbers. So tonight I’m going to increase the sauce ingredients and add a bunch of frozen broccoli (to try and keep it easy and fast). Still going to have cucumber for myself. 😉

Although I did change a few things by using chili piquing instead of the red pepper and I used thin beef steaks cut up and it was gone in seconds.! If u use the piquins then use less cause they are spicy! I roast my own and crush them into flakes for storage.

    We loved it.  It’s a simpler version of a hello- fresh meal we used to make, but this is much quicker to prepare for me.

  107. Husband and I love this one! Easily one of our top 3 recipes we like to make. We use grated ginger that comes in a squeeze bottle, which works fine instead of needing to have fresh on hand. Sometimes we do regular rice, and sometimes cauliflower rice, but it will take more cauli-rice to feel full just so you know. I like to eat it sort of like nachos: piling the beef and rice on a cucumber slice. It cools off the pepper-flake/gochujang taste perfectly!

    Note about the ground beef: I at first was concerned about using ground beef and having just another “hamburger” meal. I learned, however, that using such lean gb (mine was 96%) it cooks up as though it was very cut-up steak. There was nothing “hamburger” about it! I will use this for future stroganoff recipes, as well as this recipe.

  114. Delicious! I made my bowl with cucumbers and broccoli (google Korean broccoli banchan – very easy to make). My husband added some kimchi and loved it! I skipped the red pepper flakes in the sauce (I’m a wimp when it comes to spicy), and still very very flavorful. I’m so happy to find easy recipes like this, I’ve saved so much money from ordering out and lost a lot of weight from cooking at home. Win win!!

  116. I have made this recipe several times and each time it’s a hit. By far one of my husband’s and my favorite recipe. I do pickle an English cucumber and use jasmine rice. 

    1. I usually make this with either ground chicken or ground turkey and my “I hate ground turkey” husband likes it, lol. I do prefer the ground chicken, though.

For something that goes together this quickly, it has a ton of flavor. I did add some mushrooms and celery with the onion, because they were in my refrigerator. Added shredded coleslaw mix and pickled daikon radish to the toppings.Glad I have another serving waiting!

Marinated Zucchini carrots cucumbers and daikon with sesame oil soy sauce sriracha and rice vinager to pickle them. Added a great crunch. To the bowl. Everyone loved it. Even my picky 13 year old.

    Also— momofukus spicy Asian gochujuang sauce really kicks it up another notch if you can find it.
    Prepared with these modifications and it’s my husbands favorite meal.

  143. This is our favorite dish… favorite all around (not just when on WW and being healthy). These flavors are like nothing I’ve tasted. This week I subbed 99% ground turkey (did cook with some beef broth to make a meatier flavor) and we use the minute rice brown rice quinoa blend (slightly less points). And we add lots of extra ginger. This is incredible any way you tweak it. Thank you so much. (We have made it close to 30 times)

  146. I made this but subbed the beef with Gardein meatless ground out of the freezer section. It turned out amazing! My 5 year old loved it (without the Gochujang) and asked me to make it again, so that’s a huge success.

  147. FANTASTIC!!! This is a “keeper” in our house. However, the next time I make it, I will double the sauce. Everyone wanted a bit more sauce to put over their rice, but the meat mixture absorbed it. Might also try rice noodles for variety too. We also cut the cucumbers up in tiny bit size bits to mix in with the rice and ground meat.

I use the gochujang that Gina recommends, it’s great! I make 1.5x the sauce, although I do cut the soy sauce with water, since I’m watching sodium. Lastly, I top with a fried egg. Yum!

    This is not GF if you use gochujang sauce.  Check the ingredients.  My store bought one had wheat flour in the ingredients.   I checked the suggested sauce and it also contains wheat flour.   FYI.  I made this for my family… my daughter-in-law has celiac disease.  We didn’t catch this in time because I went with the GF recipe designation and neglected to check the sauce ingredients… with I usually do remember to do.  

    1. There are GF gochujang options available-the recipe does state to check labels. Sorry if there was any confusion as I did not use a GF sauce.

I also tweeked and added sliced shiitake mushrooms,  an orange pepper thinly sliced and a cup of broccoli florets. I served it over riced cauliflower. My husband said it had a great flavor. Addionally, I’ve tried about 6 recipes from your latest book, all have been really good. Keep u the great work. Your recipes are making weight watchers flavorful.     1. It tastes amazing even without the gochujang. You could even skip it entirely. I would also say you could try subbing in 1 tbsp tomato paste (not 2 like the gochujang) to get a similar funky umami flavor. But throw it in when you add the onions so it has a chance to cook a bit, unlike the gochujang which goes on at the end.

  171. This one is a winner! My husband loves it! It is so easy and comes together so fast! I’m not a huge fan of cucumber, so I just pickle them in rice vinegar with a little sugar and spices. It compliments the other flavors perfectly! This is in our regular rotation.

    Tweaks I make, in case others are interested:
    – I chop up 8 oz. of mushrooms and cook with the beef. This enables me to get an extra serving, plus the extra veggies.
    – I add more red pepper flakes as I’m a spice fiend. 🙂
    – This last time I quick pickled the cucumbers, along with about 1/2 cup of matchstick carrots and some shredded cabbage I had left over. Added a whole new dimension of flavor!
    – When I’m eating this at home (versus lunch at work) I always top with a fried egg. Yum!

    I’m excited to try all the recipes this week but none of the SP’s are accurate. When I calculated the using the WW app almost every one of them are at least one point higher.

    1. You have to use the recipe builder as that will figure in 0 point foods. If you just plug in the nutrition the SP values will count the calories, etc of 0 point foods.

  184. This was awesome. I doubled the sauce for the hamburger and pickled a micture of shredded cabbage and carrots with the cucumbers. I pickled them by making a sauce of rice vinegar, sesame oil, and sugar.

  188. I make this at least once once twicea month. Most times I use ground chicken breast or turkey breast ground. I always use a Trader Joe’s stir fried cauliflower rice so really low points. I serve with a cucumber salad as my husband doesn’t like hot and cold food together. But it is so delicious

  190. LOVE this recipe. I actually used this recipe as a guide and adjusted it to my IP and the frozen beef I had on hand. Because let’s be honest, I like to cook what I’m feeling that day and what I have on hand in my freezer.
    For those looking to make it in the IP, I steamed my frozen beef on the trivet with 1 cup of water on HP for 6 minutes, then drained and sauteed it with the onion until it was fully broken apart. It did get a little dry during the sauteing, so I added a tablespoon or two of beef broth. Then added in the garlic and ginger until fragrant. Add in the soy sauce mixture and stir, then go for 7 minutes HP. I did increase the measurements of the sauce slightly, since I love the flavors to be more potent. I let the IP do natural release while I was working on the rice, and when that was finished, I turned the IP on sautee and let the sauce caramelize on the meat. Unfortunately, there were no leftovers for me to take this work of art as lunch to work the next day. It was that good.

    I made this and my husband was happy that his craving for beef was satisfied.
    I knew that we aren’t a cucumber family so I pickled some shredded carrots with rice vinegar to put in the bowls, and it really added a great zing of flavor. And it was easy to do the night before!

    Excellent dish. I made it tonight. I used 1 pound of ground beef and measure out just slightly less than 2/3 cup. It looks like I will only get 3 servings instead of four. Not sure what happened. Maybe bad measuring cup. Anyways loved it. Will make it again.

For the cucumber, I thinly quartered and sliced it and marinated it all day with shredded carrot, sesame oil (very little), rice vinegar and sesame seeds. It gave the cucumbers a little extra kick and added flavor to the bowl. I plan to triple and freeze the beef portion of the recipe next time I make it. Thanks for the yummy and easy recipe!

  224. This was so delicious. I feel like I could make and eat it so often. My store did not have the gochujang, however, I looked up the ingredients online for the sauce and the store had a sauce with all the same ingredients, so I guessed it must be comparable! I think sauces can vary though so it’s good to test the spiciness on the sauce you use as mine was a bit fiery. I love that, but it was good to know so I left it off of my wuss kids food…. Every one of my kids devoured this as well and were racing to be the first to the leftovers the next day. I had taken a full serving and split it into two freezer containers and had it for lunch the next two days myself. This week I plan to make it again and make extra batches just for freezing for my lunches. I’m also going to try it with turkey just to get the points/sp even lower for the lunches. Thanks for the great recipe.

  225. Hi! Can I make this in the InstaPot? If so, how long would you cook it (and on high or low pressure)? Thanks!!

    1. We make in the Instant Pot. Brown the meat using the saute function. (Use nonstick spray, or spray butter or a little oil or a little broth or water — whatever fits your diet plan.) Drain if necessary. Add onion, garlic and ginger and saute another minute. Pour mixed sauce over beef. Pressure cook on high for 5 minutes with 10 minute natural release. Release any remaining pressure.

      I usually co-cook my jasmine rice while pressure cooking the beef. Rinse 1 cup of Jasmine rice and put the rinsed rice and one cup water in a medium stainless steel mixing bowl (or a small cake pan), Put a tall trivet down in the pressure cooker and set the bowl with the rice on top of the trivet and then put on the lid and proceed with cooking as stated, above. After 10 minute NPR and you release remaining pressure, remove the bowl of rice and fluff with a fork. Cover the rice to keep it warm until ready to serve.

  227. I absolutely love this recipe! I meal prepped it this week for my lunches. I used cauli-rice with a little brown rice mixed in. I ended up adding some mushrooms to the beef mixture that I needed to use up and it was a really delicious addition to “beef” it up a bit. I also brought some bib lettuce to make little wraps. Next time I make it at home I’ll add a fried egg becuase that sounds delicious! I thought the cucumbers sounded strange, but I really love the addition.       I think it does – I built the recipe in the WW recipe builder, and left off the rice, using 90/10 ground beef (that’s what I got), and it comes up as 6 pts.

      1. Hey, I built it too without rice and got 1 pt. Per serving Am I doing something wrong ? I added turkey,brown sug, soy sauce, sesame oil. And that it makes 4 servings . Everything else In the recipe is 0 pts. Just curious because I was excited it was so little point without rice lol

    This is my go to recipe whenever I have ground beef in the fridge. It’s so fresh and light considering its ground beef. I put the beef mix in lettuce wraps with a chili paste and fresh vegetables. My husband who usually eats it with just the plain brown rice loved the recipe even more in the lettuce wraps!

    Loved this! I sauteed some bokchoy with Garlic instead of Cucumbers and used ground Turkey instead of Beef. My daughter didn’t like the sauce so if I make in future for anybody who hasn’t had the sauce yet, I will leave it on the side. Thank you for all of these great recipes. So yummy.

  237. The great thing about this dish is that it actually is as easy as the video makes it out to be. The hardest part of the whole thing was chopping the onions. And it was delicious.   240. There is a very popular food truck here in Salt Lake City called CupBop. This recipe tastes just like it! They must use Gochujang sauce because that seems to be “the taste.” CupBop also adds sriracha mayonnaise on top of their rice bowls. I didn’t add any (due to the Smart Points) but my husband and daughter did. They really loved the addition. We put sliced cabbage, grated carrots, and chopped tomatoes on top (that’s what I had on hand). Really, really delicious!

    Didn’t understand the directions. Sesame seeds plus more for topping?? They are not mentioned except as a topping. The Korean sauce? only mentioned as a topping. I put a bit in with the meat, because I didn’t see it as a condiment – it’s spicy. I use it for making kim-chee.

    The amount for Sesame Seeds says “1/2 Tablespoon, plus more for topping.” Do you put the 1/2 tablespoon with the meat and then sprinkle more when you plate it up? (bowl it up?) or is this a typo and it should just be ?1/2 Tablespoon split among the bowls when serving?”

  280. Loved this dish. I never tried Gochujang sauce before, and it was worth finding . I used ground turkey instead of beef and it work very well. However, I did put a bit of oil in the pan because the turkey is so lean. I will certainly make this again.

      1. My husband is also allergic to soy and gluten and I have been searching for a substitute for some time. I have found coconut aminos on Amazon, however it just doesn’t taste like soy at all to us. Any other substitute for soy sauce or other Asian sauces?

    1. Coconut Aminos found at Fresh Thyme and other health food stores is a soy sauce alternative made from coconuts.  Zero soy!!!!  

    1. Gochujang is just a hot sauce that’s a little sweet. I think sriracha would be an ok substitute if you have that. 

    1. According to the WW site, 3/4 cup of brown rice is 5 points. Subtract those points, and  a good estimate would be 5 points if you substituted cauliflower rice. 

  291. Question — the Annie Chuns Go Chu Jang Korean Sweet and Spicy Sauce the list above says that it contains wheat. Is there an alternative that is gluten free? I want to try this recipe but need a non-wheat alternative.

    This is fantastic! My Korean husband even approves. Last night we decided to use it to make a “weeknight” bibimbop. It was perfect. I made a quick cucumber kimchi, steamed spinach and carrots and topped my husband’s bowl with a sunny side up egg. Delicious!!!

I made this a few nights ago, with some minor mods and it was fantastic!  I used 93% ground turkey instead of beef, didn’t have red pepper so just put some of the gochuchang into the sauce instead, and put rice and chopped salad mix into the bowls with the meat (cucumbers on the side).  The mix of sweet, savory, soft rice, and crunchy fresh salad in every bite was amazing.  I found the gochuchang (Annie Chun) at my local Walmart, so it should not be too difficult to find.

  321. After finally tracking down the gochuchang sauce at a local Korean Supermarket, I made this for dinner last night. My husband and I both loved it and agreed it would be on regular rotation! It had a nice heat kick to it, which we both love. 
    I spiralized the cucumber and it added a nice cool contrast to the spice in the dish.

I just made this recipe last night and my boyfriend and I loved it!  We ordered gochuchang sauce from Amazon but when I was buying ingredients last night at Whole Foods I saw they sold it there, too (Annie Chun brand).  The dish was a little spicy but we love spice.  Spicy food lovers should reduce the red pepper flakes.  I thought that, while the gochuchang has a little kick to it, it’s not as spicy as the pepper flakes and the depth of flavor really added to the dish.  We used a mandolin to thinly slice the cucumbers and they were crisp and fresh paired with the meat and rice.  Thanks for another great dish, Gina!

  324. I made this and we enjoyed it.  I found the gochuchang at a local Korean market.  We like hot, but I really felt that the gochuchang was so hot it overpowered the other flavors.  When I ate it leftover for lunch, I omitted the gochuchang and really enjoyed the ginger and other flavors.

  325. This is actually like a very simple version of a korean dish, bibimbap. It’s rice with marinated beef, different pickled or stir fried vegetables, a fried egg, gochujang and sesame oil drizzled on top. Have you had it before? It’s delicious! Also, you should try a korean guchujang. I promise it’ll be better than Annie Chun’s!

    Made this and the sauce is off the charts! Then I made little egg-Korean beef -cheese bakes and topped with the sauce! I freeze a lot since I am single, and every single thing I make from YOU is awesome. Plan on using the freezer left overs for lettuce wraps this week.

    1. I actually did a blend of equal parts Sriracha, oyster sauce, and sweet red chili sauce and it was delicious!

  346. OHMYDELISHNESS!  This is amazing!  I have never had the Gochujong, sauce before but know that I will be looking for other ways to use it.  

    I love how fast it is to make.  I started my brown rice in the pressure cooker and by the time everything was done browning and simmering my rice was ready!

      1. So I have made this again!  

        Leftovers (I am as shocked as you are)  were made into the most amazing omelet!  I added the gochujang into the eggs.

        The filling was the left over meat, cucumbers, scallions, a few slices of thinly sliced jalapeno and 1/8th of a diced avocado and a few cilantro leaves.  

        WOW….

    I was scared to try this because of the Gochujong.  I bought gochujong online and I tasted the tiniest bit on my finger, and I nearly DIED!  But weirdly enough, after my brave husband mixed it into his meat, the spice mellowed WAY out and it was FANTASTIC!

  357. This dish was pretty amazing! I marinated the beef with the onion, garlic and ginger for a few hours, then cooked it. I arranged the plates like a bibimbop I used to get a korean fusion restaurant place near me; spirilized cucumber, carrots and daikon, cut up some lettuce, added bean sprouts and corn kernals. wonderful!

Plus in order for me to have a version of this dish, i have to go to a local restaurant called TaKorean. But instead of getting the rice, i get the Kale salad – which has purple shredded cabbage and shredded carrot with the gochugaru sauce. I am assuming that that sauce is very similar to the Gochujang sauce. This will be on next weeks menu.

    1. 3/4 cup of rice is 5 points so the meat part of the recipe would be 5 and no points for cauliflower and cucumbers.

  366. I've made this with shredded lettuce instead of rice when I was on a pre-op, extremely low carb diet once. Subbed the sugar for Splenda too. It was still amazing. I do still occasionally have some rice now and prefer to only use real sugar. I've also considered making lettuce wraps with this and also making using a egg roll style bowl instead of the rice. There is lots you can do with this. I haven't tried (or even heard of) Gochujang sauce but now I'm intrigued. 😀
