Take advantage of summer tomatoes now while they are at their peak! I also have an Oven Roasted Tomato Sauce, perfect if you have ripe summer plum tomatoes.

This recipe is from the archives from last summer, I’ve been making it quite often these past few weeks now that grape tomatoes are at their peak so I decided to bring this recipe forward. Perfect over your favorite pasta shape for meatless Mondays in less than 30 minutes.

Meat lovers can add chicken or shrimp for a spectacular summer pasta dish! And for a spectacular way to prepare fish, try this simple fish dish with summer tomato sauce.

Easy Garden Tomato Sauce

When grape tomatoes are overflowing in your garden, whip up a quick, easy tomato sauce! Grape or cherry tomatoes sauteed with olive oil, garlic and fresh herbs are perfect over pasta, grilled chicken or fish.


  • 1 tbsp olive oil
  • 6 cloves garlic, chopped
  • 1 1/2 lbs grape tomatoes, cut in half
  • salt and fresh pepper
  • 2 tbsp fresh chopped oregano, or fresh basil
  • 1/8 tsp red crushed pepper flakes


  • In a large non-stick pan, heat oil on high heat.
  • Add garlic and cook until golden.
  • Add tomatoes, salt, crushed red pepper flakes and fresh black pepper and reduce heat to low.
  • Simmer, covered for 15 minutes.
  • Add fresh oregano and cook another 15 minutes.


Make 2 1/2 cups.

  10. I made this twice since I found out about the recipe. I LOVE IT! The last time I had some leftovers and I melted a wedge of laughing cow light garlic and herb cheese it in and put it over spaghetti squash! yumm. The cheese gave it a nice creamy texture and taste without adding a lot of extra calories!

  16. Delicious! I'm trying to cut carbs, so I skipped the pasta and tossed in some shrimp towards the end of the simmering. Served it with a simple green salad for a complete meal. PERFECT!

  32. making this right now! Smells wonderful! Of course it will be good!! Grape tomatoes were really cheap this week and ended up with 7 containers! (my son eats them like candy and him and my husband love them for snacks.) I knew I had too much… this is perfect! Putting mine over some italian-style chicken breast to give it a little more flare.   33. I made this last night and it was amazing! I love cherry tomatoes, and bought a bunch (they're cheaper than regular tomatoes where I live, in West Africa). They got super ripe, and I was lamenting the thought of them going bad, and that's when I saw your recipe. And, the cool thing is that I had exactly 1.5 lbs left!
