This recipe is from the archives from last summer, I’ve been making it quite often these past few weeks now that grape tomatoes are at their peak so I decided to bring this recipe forward. Perfect over your favorite pasta shape for meatless Mondays in less than 30 minutes.

Ingredients

  • 1 tbsp olive oil
  • 6 cloves garlic, chopped
  • 1 1/2 lbs grape tomatoes, cut in half
  • salt and fresh pepper
  • 2 tbsp fresh chopped oregano, or fresh basil
  • 1/8 tsp red crushed pepper flakes

Instructions

  • In a large non-stick pan, heat oil on high heat.
  • Add garlic and cook until golden.
  • Add tomatoes, salt, crushed red pepper flakes and fresh black pepper and reduce heat to low.
  • Simmer, covered for 15 minutes.
  • Add fresh oregano and cook another 15 minutes.

  2. I really liked this recipe over pasta and that it was a very easy way to use the grape tomatoes and fresh oregano from my garden. I plan to try it over chicken and fish that I’ll cook in my air fryer.

    I’m making a big batch this week … some for pasta, over baked fish and with spaghetti squash for lunch. I have a ton of tomatoes accumulating from being away a few days!

  7. I made this twice since I found out about the recipe. I LOVE IT! The last time I had some leftovers and I melted a wedge of laughing cow light garlic and herb cheese it in and put it over spaghetti squash! yumm. The cheese gave it a nice creamy texture and taste without adding a lot of extra calories!

  10. Made this and instead of pasta used spaghetti squash. Also only used three cloves of garlic. Will be making again soon.

  11. Delicious! I'm trying to cut carbs, so I skipped the pasta and tossed in some shrimp towards the end of the simmering. Served it with a simple green salad for a complete meal. PERFECT!

  13. Gina you are a genius. I had grape tomatoes in my fridge and didnt know what to do with them. This was delicious. I put it on top a a Tilapia filet and it tasted like heaven. Can you please put more recipes using green beans. My garden is overflowing with them.
