Skinnytaste Dinner Plan Week 34.  I’m in Boston this weekend with some blogger friends, what a great city! Great people, great food and we are having perfect weather. Now it’s time to get ready for BBQ’s, beaches and fireworks!

Pictured above is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. MEDITERRANEAN QUINOA SALAD

  • quinoa
  • red onion
  • lemon
  • kalamata olives, pitted and sliced
  • extra virgin olive oil
  • English cucumber
  • cherry tomatoes
  • crumbled feta

GRILLED STEAK LETTUCE TACOS

  • avocado
  • tomato
  • red onion
  • lime juice
  • cilantro
  • kosher salt
  • fresh black pepper

  • 1 tbsp minced jalapeno
  • 1 lb thin sirloin steaks
  • ground cumin
  • garlic powder
  • dried oregano

MEXICAN CAULIFLOWER RICE

  • cauliflower crumbles (the sell this in stop and shop now)

CROCK POT BOLOGNESE SAUCE

  • pancetta (or center cut bacon)
  • butter (or olive oil)
  • white onion
  • celery stalks
  • carrots
  • 2 lb 95% lean ground beef
  • white wine
  • 2 – 28 oz cans crushed tomatoes (I love Tuttorosso)
  • bay leaves
  • salt and fresh pepper
  • fresh parsley
  • half & half cream
  • whole wheat pasta

 

BAKED EGGPLANT PARMESAN BOATS WITH SAUSAGE

  • white eggplants
  • Sweet Italian chicken sausage, casings removed (I used Premio)
  • small onion
  • garlic
  • crushed tomatoes
  • basil leaves
  • salt and pepper, to taste
  • shredded part skim mozzarella cheese
  • grated Pecorino Romano
