This is week 47 of the Skinnytaste Dinner Plan. I am away in Park City Utah until Sunday, but I have my meals planned for the week and ordered all my groceries on Peapod this week (life saver!)

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here.

Friday: Tortilla Encrusted Chicken Tenders with avocado salad
Saturday: Dinner Out
Sunday: Sheetpan Italian Chicken and Veggie Dinner

  1. For the beef meatballs and broccoli rabe with zoodles, could I use collard greens instead of broccoli rabe?

      1. I’m not sure how it would have been with the broccoli rabe to compare it, but it was delicious with fresh collard greens! Honestly I think it would have still been great if i didn’t use any greens at all!

    Just got the new cook-book and I am super excited to try many of the recipes. I am a Weight Watcher member and I really enjoy the easy recipes, that help me to stay on plan. (one negative is the points aren’t included in the recipes, but with points changing over the years, it will help keep the book more current) I also have started meal planning again with your guidance in your meal planner. I use mine like a diary too. I really like making notes about the day and how we enjoyed the meal. Thanks for the inspiration to eat healthy and organize my life.

  3. Your new cookbook just arrived! Love it, it is so beautiful and so many great recipes. I left if with my daughter to mark her favorites and we will start cooking them next week. Thank you and congratulations! Also, I purchase most of my cookbooks in digital format but am so glad I got the hardback edition this time.

  5. Gina, I’m the person you inspire me not only weekly but daily! I have been following you since 2009 and everything I have has been awesome!! I remember we got to select the the cover of your first cookbook 2 years ago and now you have a second cookbook that is just as beautiful! I enjoyed reading the new book from the front to back cover!  Made the chili (Madison’s favorite) the zucchini meatballs, pumkin chili and now planning the dinner for the week. Congrats on #1 on NY times best seller, you deserve it!!  Hope you enjoy the weekend away everything looked beautiful!  !

  6. That’s awesome news.  I just got my new cookbook last week, along with my Instant Pot.  Looking forward to trying out your new recipes.  Love the section on the bowl meals.  And so far, I LOVE my Instant Pot.
