On the menu this week, Eggs Pizzaiola – a quick, cheap one-pot meal I’m in love with! Nachos for dinner, well yes when they are actually mini stuffed peppers, why not! And if you haven’t tried the un-stuffed cabbage bowls, read the reviews, everyone is raving about them! A few other favorites, baked fish sticks and because I’m having friends over Sunday, pasta with chicken sausage and broccoli is always a crowd pleaser!

First I have to say I never have to question making a recipe from your site. I know it will taste fantastic! I have made sooo many of your recipes and my boyfriend and I have loved them all! I have been the kind of person that would eat healthy all week and then eat really unhealthy things on the weekend. My boyfriend and I love snacks on the weekend like mozzarella stick, chicken nuggets and jalapeño poppers. Now with your wonderful recipes I can still have all of those! I have both of your cook books, they are so wonderfully written and the pictures are fantastic not to mention super tasty! I just wanted to say thank you for all the hard work you do! You have changed my life. I’m on your site everyday just to see what you have come up with next. I do still have one unhealthy thing I love to eat and was wondering if you could possibly turn it into something healthier..it’s Taco Pizza! It’s starts with a store bought thin pizza crust. On top of that is about half a can of refried beans then about? 1/4 a pound of cooked ground beef seasoned with taco seasoning..then a layer of a whole bag of mozzarella or mexican cheese (2 cup bag ? haha) then it’s baked until done. After that I take it out of the oven and top it with shredded lettuce, diced Roma tomatoes, a little red onion and Cheddar cheese and served with a side of salsa. It’s my guilty pleasure. If you could possibly come up with something that would be amazing! Thanks again for all the hard work you do and for making my life easier knowing I can always trust and count on your recipes being fantastic..sorry this is Soo long ?
