I’m away in Austin for a few days returning on Tuesday night, so I prepared Picadillo or the family for the next two days. My family loves it, and leftovers are great. Check it out as well as some other meals I have on the menu for the week!
Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Gina’s recipes are great–so flavorful. We had the Chicken and White Bean Enchiladas with Creamy Salsa Verde last night. My husband said several times how good it was. I prepped it the day before and then heated it through the next evening. The tortillas were fluffy and delicious. Thanks, Gina
