Skinnytaste Dinner Plan (Week 69)

I’m away in Austin for a few days returning on Tuesday night, so I prepared Picadillo or the family for the next two days. My family loves it, and leftovers are great. Check it out as well as some other meals I have on the menu for the week!

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

 

Skinnytaste Dinner Plan (Week 69)

Monday: Stove Top Picadillo with brown rice
Tuesday: Leftover Picadillo for tacos
Wednesday: Pickle-Brined Baked Chicken Tenders and Loaded Cauliflower Mash Bake
Thursday: Chicken Soup with Spinach and Whole Wheat Acini di Pepe
Friday: Cajun Shrimp in Foil
Saturday: Dinner Out
Sunday: Turkey Meatball Stroganoff (Instant Pot, Slow Cooker or Stove Top) with noodles

  4. Gina’s recipes are great–so flavorful. We had the Chicken and White Bean Enchiladas with Creamy Salsa Verde last night. My husband said several times how good it was. I prepped it the day before and then heated it through the next evening. The tortillas were fluffy and delicious. Thanks, Gina
