
My husband loves fajitas! It's the only thing he ordered while we vacationed in Mexico... every single day! I could never order the same meal everyday, but that's a different story. These shrimp fajitas he claimed were better than any he's ever eaten in a restaurant. Wow! Now that's a compliment from my fajita loving husband!
For the shrimp, I modified my cilantro lime shrimp recipe by adding chipotle chile powder for a little kick. Incredible! I have these wonderful clay pots from Colombia that I use to make my onions and peppers on the grill, but a cast iron pan would work as well. We also made guacamole and served them with fat free sour cream (extra points). Two fajitas filled me up. Double the recipe if you would like to serve four. Here's the recipe:
Shrimp Fajitas
Gina's Weight Watcher Recipes
Servings: 2 • Serving Size: 2 fajitas • Old Points: 8 pts • Points+: 9 pts
Calories: 330.3 • Fat: 12.4 g • Protein: 38.1 g • Carb: 30.6 g • Fiber: 15.9 g
Ingredients:
- 1 medium onion
- 1 red bell pepper
- 2 tsp olive oil
- salt + fresh pepper
- 3/4 lb shrimp, cleaned and deveined (weigh them after you peel them)
- 1 tsp olive oil
- 1 clove garlic, chopped
- salt + fresh pepper
- pinch of chipotle chile powder
- 1/2 lime
- 1/4 cup cilantro
- 4 (1 point) tortillas, such as La Tortilla Factory Whole Wheat Low Carb
Directions:
Season shrimp with chipotle chile powder, salt and pepper. While the onions are cooking, heat a large frying pan on high heat. Add oil. When the oil is hot add the shrimp and cook for about 2-3 minutes on each side until cooked through. Remove from heat. Add juice from the lime and cilantro. Toss well. Combine with the cooked onions and peppers and serve with tortillas.


















Oh my goodness goodness me. This looks absolutely delicious! Although I don't think I could get away with shrimps with my partner (as much as I'd love some right now D: ), I reckon this would come off quite well with chicken.

We had these for dinner tonight, and they were AWESOME! We used lemon pepper seasoning instead of plain black powder, and I loved the extra touch of citrus.

ReplyDeleteVery Good!! Tried it today, I didn't have all the ingredients, was missing cilantro and lime however they were still very good! I added a diced tomatoe and 1 tbsp of light sour cream......yummy! I've been on WW for about 5 weeks now, I am so upset I purchased different cookbooks at the beginning of this journey to help with cooking light family meals and all I needed the whole time was your site......this site is better than all the cookbooks combined! ReplyDeleteWow, really good! I've never cooked shrimp before so I was a little scared at first but I pretty much followed the recipe to a t and even used the low-carb whole wheat tortillas that I eat every day anyway and the came out deelish!

ReplyDeleteThis was awesome! I added the garlic with the chipotle chili powder on the shrimp. Super Filling! Served it with low fat sour cream (1pt) and mango salsa (NO Points!).

ReplyDeleteJust to clarify. These are shrimp tacos. Fajitas are not tacos nor anything with bell peppers. Fajita is a cut of meat from a cow only.
ReplyDeleteVery tasty! I seasoned shrimp with cayenne pepper instead of Chipotle, used green bell pepper and also sliced a serrano chile with the onions and bell pepper.
