Grilled chicken doesn't have to be boring, top it with sauteed spinach with garlic, mozzarella cheese and roasted peppers and you have a quick and easy chicken dish your family will love! This is perfect for any busy weeknight; serve with pasta or a simple salad for a low carb meal.
On hot days, no need to turn your oven on, you can do this all on the gas grill, put the chicken back in the bbq with indirect heat until the cheese melts.
I used homemade roasted peppers for this but jarred peppers would work perfectly fine. This makes great leftovers for lunch the next day!
Grilled Chicken with Spinach and Melted Mozzarella
Gina's Weight Watcher Recipes
Servings: 6 • S Size: 1 cutlet, spinach, cheese • Old Points: 4 pts • Points+: 4 pts
Calories: 153.3 • Fat: 4.2 g • Protein: 24.5 g • Carb: 4.0 g • Fiber: 1.3 g • Sugar: .7 g
Ingredients:
- 21 oz (3 large) chicken breasts sliced in half lengthwise to make 6 cutlets
- salt and pepper to taste
- 1 tsp olive oil
- 3 cloves garlic, crushed
- 10 oz frozen spinach, drained
- 3 oz shredded part skim mozzarella
- 1/2 cup roasted red pepper, sliced in strips (packed in water)
- olive oil spray
Directions:
Preheat oven to 400°. Season chicken with salt and pepper. Lightly spray a grill with oil (I used my George Forman
Meanwhile, heat a sauté pan on medium heat. Add oil and garlic, sauté a few seconds, add spinach, salt and pepper. Cook a few minutes until heated through.
When chicken is done, lay on a baking sheet lined with foil or parchment for easy clean-up. Divide spinach evenly between the 6 pieces and place on top. Top each with half oz mozzarella, then slices of roasted pepper and bake until melted, about 6-8 minutes.

ReplyDeleteThis may sound ridiculous, but I am giving up on trying this recipe. It seemed easy to me, too, but I can't seem to cut a chicken breast in half evenly (or even CLOSE!) Could I just use smaller breasts if I find them? Also, maybe once the grill is out and ready to go it will work, but doing the George Foreman, stovetop for the spinach, AND the broiler is too much for me. Don't get me wrong, I am a BIG FAN. Probably 3/4 of the meals I make are "Gina recipes". But I just can't seem to get this one to work out for me. Disappointed because it looks delish!

ReplyDeleteKassie, to cut the chicken breast, press down on the chicken with your hand then using your other hand take a sharp butcher knife and slice through. If you still can't do this, you can use thin pre cut cutlets. It's really a simple dish.
Just made this, loved it. I used baby spinach and sauteed it with the garlic. Added a wee flour coating to the chicken with cayenne.

ReplyDeleteMy SIL turned me on to your site. This is the first thing I made and there is only one word to describe this dish - YUMMY. The only thing I did different was I marinaded the chicken cutlets in a little lemon juice, olive oil, garlic and parsley for a couple of hours. All the tastes blended together were just perfect. The way we roast our own peppers, is to put them on a baking sheet in the broiler until charred, blistered and black (you could do it on a grill also). Once they are out of the flame, put them in a ziploc bag for about 20 minutes. The skin will peel right off, and you have homemade roasted peppers!

ReplyDeleteJust made this! I had Green Giant Lightly Sauced Spinach Steamers. I thawed in microwave then sauteed with the garlic. I had a bit of left over shredded chicken. I placed it at the bottom of a dish, put the spinach on top and topped with Kraft Swiss cheese singles. It was yummy! I have 3 toddlers in the house who loved this over some rice. I had mine over salad.

ReplyDeleteI made this the other night and it came out fantastic! I did modify a few things, instead of using chicken breasts I used chicken thighs. Instead of using roasted red peppers I used sun-dried tomatoes (I'm so glad I did this!). And the leftovers heated up really nicely.
