I love this cozy Sausage Tortellini Soup when the weather turns cold. It’s a hearty, high protein main dish soup – perfect for cool evenings or when you want a meal that feels comforting without a lot of effort. Made with cheese-filled tortellini, spinach, and sausage, this soup feels like a warm hug. Tortellini Soup Ingredients
Here’s everything you need to make this tortellini soup recipe. The exact measurements are in the recipe card below.

- Sausage: Remove the casings from sweet Italian chicken or pork sausage links. Premio is my favorite brand. I usually use their chicken sausage.
- Mirepoix is chopped celery, onion, and carrot, which are the base for this soup.
- Garlic adds a rich, aromatic depth to the broth.
- Liquid: Use unsalted chicken bone broth and water.
- Better Than Bouillon provides more flavor since we’re using reduced- sodium broth.
- Parmigiano Reggiano Rind is optional for flavor, it infuses the broth as it breaks down in the soup. Whenever I finish a block of parmesan, I always freeze the rinds to have on hand for future recipes.
- Black Pepper for seasoning
- Tortellini: I used Buitoni’s three-cheese tortellini, but any brand will work.
- Spinach for extra vegetables
- Parmigiano Reggiano: Top your tortellini soup with grated cheese, if desired.
How to Make Sausage Tortellini Soup
This simple sausage spinach tortellini soup cooks in one pot, making cleanup easy. Scroll to the bottom for the complete instructions.


- Brown the sausage in a large pot until cooked through.
- Vegetables: Sauté the celery, onion, carrots, and garlic until they begin to soften.
- Boil: Pour in the broth and water with the parmesan rind. Increase the heat to medium-high and bring to a boil.
- Simmer: Once boiling, add the bouillon and pepper. Cover and simmer on medium-low for 15 to 20 minutes.
- Tortellini and Spinach: Reduce the heat to low and add the tortellini and spinach. Cook until al dente, then remove the rind.

Variations
This tortellini soup with sausage is versatile and can be customized to suit your preferences.
- Meat: Replace chicken sausage with turkey, pork, or soy. You could also use ground turkey or beef with extra seasoning, like salt, onion powder, and dried Italian herbs.
- Vegetarian Tortellini Soup: Omit the sausage and add more veggies.
- Tortellini: Use ravioli or spinach tortellini.
- Dairy-Free: Replace tortellini with pasta, like orecchiette or farfalle, and skip the parmesan rind.
- Heartier Soup: For more substance, add canned beans or extra vegetables, like zucchini, bell pepper, or canned diced tomatoes.
- Bone broth: I use unsalted chicken bone broth to add more protein. You could also use chicken or vegetable broth.
- Leafy Greens: Sub kale or Swiss chard for spinach.
Serving Suggestions

Sausage Tortellini Soup

Ingredients
- 8 ounces sweet chicken Italian Sausage, or pork sausage, I like Premio, removed from casing
- 1 stalk celery, chopped
- ½ small onion, chopped
- 1 carrot, peeled and chopped
- 2 cloves garlic, minced
- 32 ounce container unsalted chicken bone broth, such as Pacific
- 1 ½ cups water
- 1 small Parmigiano Reggiano Rind, optional
- ½ tablespoon Chicken Better than Bouillon, *
- ¼ teaspoon fresh black pepper
- 9 ounces three cheese tortellini, Buitoni
- 1 cup baby spinach
- Parmigiano Reggiano, grated for serving (optional)
Instructions
- Heat a large pot over medium-low heat and add the sausage. Cook, breaking up with a spoon until cooked through, 5 minutes. Add the celery, onion, carrot and garlic. Cook for 8-10 minutes until vegetables begin to soften.
- Add the chicken broth, water, parmesan cheese rind (if using) and increase heat to medium-high and bring to a boil.
- When broth boils, add the Bouillon and black pepper. Stir to combine, cover and cook medium low simmer 15 to 20 minutes, until the vegetables are soft.
- Reduce heat to low and add the tortellini and spinach. Simmer until tortellini cooks to al dente according to package directions, about 5 to 6 minutes. Once cooked, remove the rind.
- Stir to combine then serve with freshly grated Parmigiano Reggiano (if using)!

I made this however added another carton of broth and used chicken tortellini because my family is allergic to cheese. This soup is delicious and I will definitely make again! I did need to give the vegetable a little extra time to soften but other than that it was ok.
I haven’t even finished it yet and it is already delicious. A member of my huge family doesn’t like sausage and 2 do not eat pork or beef so I substituted chicken meatballs to make everyone happy! Kale is my green, it just goes in earlier. Thank you for this simple and wonderful recipe.

Great taste but tortellini got mushy and next day absorbed all the broth to make it- not soup. Will make it again but leave out the tortellini until last minute and only for what we will serve that meal.

I love this recipe!! I’ve made this 3 or 4 times now and it’s very very good. It’s pretty easy to make, kid approved and makes great leftovers. I use Italian flavored ground turkey and it’s delicious.
Wow! It has to be good when I have the leftovers for breakfast. It’s amazing how something so simple can taste this good. I suspect the parmesan rind imparts a lot of flavor. For those that wonder where to get one, I’ve seen them sold at Whole Foods. I followed the recipe to the letter, using bulk mild sausage, which also likely enriched the flavor and had that extra fat in the pan to soften the veggies. I also used the Pacific brand broth and added the low sodium Better Than Bouillon. It was hearty and rich tasting. The freshly grated parm was perfect over top. This is hearty enough to stand on its own as a dinner meal.

Okay so this was amazing! We ate everything up and it was just me and my husband eating lol. Now I did a few different things. I didn’t add water I just added more broth. I also used regular broth and just added a pinch of regular salt. Also I used Jimmy Dean Italian sausage and an extra carrot and celery because we love veggies. Now outside of that I followed the recipe. Typing all that made me realize I changed a little more than I thought. All that aside the base of this recipe is the same lol. Was amazing!!!! Thank you!

I tried this recipe because it was high protein and within my carb allowance for my meals. I couldn’t find turkey or chicken Italian sausage at the grocery store, so I used bulk pork Italian sausage and just used a paper towel to pick up some of the grease. I did not use bouillon and instead added some garlic salt at the end. I doubled the spinach and gave it a rough chop. The serving size is generous and this will make for easy lunches at school this week.

I have not yet made this soup, but plan to soon. My husband has a blood disorder which excludes beef and dark greens from his diet. I have seen that many of the ST recipes include spinach . This is an ingredient he cannot eat. What ingredient would you suggest as an alternative to spinach. I love the Gina does suggest alternatives in her recipe suggestions, but would love to hear what others have substituted. Thx!
