Baked chicken breasts rolled with spinach and ricotta topped with pomodoro sauce and melted mozzarella. A dish the whole family will love!
Since making chicken rollatini stuffed with prosciutto and cheese a few weeks back my husband has been craving chicken rollatini the way he grew up eating it, stuffed with cheese and topped with sauce and more cheese. I had to sneak some spinach in them against his will, but he was very pleased with the final results. I guess you can say this is a cross between my Chicken Parmigiana and Spinach Lasagna Rolls.
Perfect for a large crowd, or to feed a hungry family. These are very filling, I served this with a big salad and I was very content with just one piece. These re-heated beautifully the next day and we were happy to enjoy them again for leftovers. Enjoy!!

Servings: 8 • Serving Size: 1 stuffed breast • Old Points: 4 pts • Points+: 5 pts
Calories: 194.7 • Fat: 7 g • Protein: 24.2 g • Carb: 7.2 g • Fiber: 1.5 g
- 8 thin chicken cutlets, 3 oz each
- 1/2 cup whole wheat Italian seasoned breadcrumbs
- 1/4 cup grated parmesan cheese, divided
- 6 tablespoons egg whites or egg beaters
- 5 oz frozen spinach, squeezed dry of any liquid
- 6 tbsp part skim ricotta cheese
- 6 oz part skim mozzarella (I used Polly-O)
- olive oil non-stick spray (I use my Misto
)
- 1 cup pomodoro sauce or your favorite marinara sauce
- salt and pepper to taste
Wash and dry cutlets, season with salt and pepper. Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.
Combine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.
Shred or finely chop 1.5 oz of mozzarella cheese and combine with remaining grated cheese, spinach (make sure you squeeze it dry), 2 tbsp egg beaters, and ricotta cheese.
Lay chicken cutlets down on a working surface and spread 2 tbsp of spinach-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.
Dip chicken in egg mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray
Bake 25 minutes. Remove from oven, top with sauce then cheese.
Bake until cheese is melted and bubbling, about 3 more minutes. Serve with additional sauce on the side and grated cheese.

This sounds delicious! I'm impressed that each one is 5 points...and still cheesy! :)
ReplyDeleteThese look YUMMY! I'm making your eggsalad as we speak. Made your peanut noodles the other night, absolutely delicious and took care of my pad thai craving. Ive made the lasagne roll ups many times ...so so good. I made your curry the other night DELICIOUS! Do you think you can lighten up Tikka Masala one day? I can go on and on about how many or your recipes I make on a daily basis and every single one has exceeded my expectations. I've lost 20 lbs and am now on maintenance and you have become my one and only recipe source at this point. If Cook's Illustrated and Martha only understood the competition they have in you. You are simply the best Gina. Thank you!

I agree! (must be the name)
DeleteWow - Seriously.. all that goodness looks like it would be WAY more than just under 200 calories. I love all these yummy recipes - for so few points! Thanks for continuing to AW me.. daily!
ReplyDeleteThis looks incredibly delicious!
ReplyDeleteGina, you are so creative! I can't wait to try this!
ReplyDeleteI could do this with fresh chopped baby spinach, right? Making this TONIGHT!
ReplyDeleteThanks Shannon, I have attempted tikka masala, still working on getting it right without all the fat!
ReplyDeleteLeigh, yes fresh spinach would be great!
I cannot wait to make this. I want to reach in the screen and eat one right now!
ReplyDeleteThis looks terrific!!! A question: what if I can't find thin cutlets? Would my meat counter guy cut a chicken breast for me? I always shred them to pieces when I try.... Thanks for the advice. You're recipes are becoming standard fare in our house!! :)
ReplyDeleteCurrently baking this entrée! It looks delicious Gina!
ReplyDeleteIf you can't find them, take a breast and slice it in half so you have two. Then lightly pound it with a mallet to make it thinner.
ReplyDeleteKathryn - enjoy!
Made this tonight but substituted broccoli for the spinach - my hubby even said it was delicious!
ReplyDeleteSo delish! I had to cook it a little longer as they turned out kind of thick. My boyfriend loved it! =)
ReplyDeleteIs this the kind of thing I can prepare the day before and then throw in the oven when I get home from work or is that a dumb idea?
ReplyDeleteHoly cow this looks so good I am going to try it. My kids are in there early 20's and are still bring there friends over for supper once or twice a week. This would be great and different.
ReplyDeleteMy hubby made this last night, and it was awesome! Thanks so much. Tonight we are making one of your soups.
ReplyDeleteI'm happy you all liked it! I'm sure this would be great prepared the night before.
ReplyDeleteThis sounds wonderful! Can't wait to make it. You say grated cheese and then put cheese on top. I'm not much of a cook, so I need clarification! haha The cheese on top, is that the mozzarella? Thank you!
ReplyDeleteWOW....looks fabulous:)
ReplyDeleteCan hardly wait to make this. Can you clarify the cheese portioins on the 1.5 Mozerella does that go on top to bake & when you say add more cheese in the end is that from cheese specified or add more???
ReplyDeleteOH.MY.GOODNESS.... Gina you have a gift. Every recipe looks good, those I've tried have been delicious, but this one, I don't know why, but I must make this!!! Thank you so much for what you do!!!
ReplyDeletegetting ingredients today. This looks yummy.
ReplyDeleteYes, I added 1.5 oz of mozzarella which I through in my chopper and mixed it in with the spinach so that it all binds well when melted and hot. The remaining mozzarella I thinly sliced and topped on the chicken, but you could use grated or whatever is easier. You just want a nice amount of melted mozzarella on top.
ReplyDeleteGina, this sounds so delicious!! I have currently started 'changing' my lifestyle and eating better. At first, it was for my anniversary vacay my hubby and I are going on in June (trying to get swimsuit ready) but I'm feeling so much better eating healthier and working out that I've decided I will live this way forever! Therefore, I am your newest fan! Love your site, and so thrilled you featured my 'Baked Onion Rings' a while back : )
ReplyDeleteI have just heard about your site from a friend and everything looks AWESOME! I am going to try this recipe tonight. I also love how you respond to questions and comments. Thank you!
ReplyDeleteThese look absolutely fantastic, cannot wait to try them soon!
ReplyDeleteGina, I love your blog! I've enjoyed all the recipes I've tried so far, as have the rest of the family... and they don't even realize that they're eating much healthier. I'll definitely have to try this one too. Thanks again.
ReplyDeleteYummm! Up my alley!! Looks so apetizing
ReplyDeleteI never know how much is enough salt, is there a standard measurement or anything you can help me with? I dont want to but too much salt, but I never seem to but enough. Can anyone help?
ReplyDeleteI made this tonight with your sauce recipe! I had to try it as soon as I saw it. I made a side of whole wheat pasta with some of the sauce. The meal was delicious. My husband loved it too and we have plenty for leftovers. Thanks1
ReplyDeleteIts me again-just thought I would add I used fresh spinach and it was perfect!!
ReplyDeleteGood for you Holly!
ReplyDeleteWelcome Kate! Yes, I'm like a talking cookbook :)
Thank you thank you Martha!
Anonymous - for salt, if you're not sure, you're better off adding less. You can always add more later but you can't take salt away if you overdo it.
Heather - Pasta is a perfect side for this! I bet it was wonderful with fresh spinach!!
Gina, where do you find whole wheat bread crumbs? I have been unable to locate at Publix or Kroger here in TN. Thanks for all your work. I look forward to your new posts. So far mini turkey meat loads are my absolute favorite of yours!!
ReplyDeleteThey carry them in my supermarket, you could make your own or just use what you can find.
ReplyDeleteCurious about the cheese on top... Did you use like a ball of fresh mozzerella or a block?
ReplyDeleteLooks amazing!
OMG! This was the bomb! My husband and I love-love-loved it. I just served it with steamed green beans and it was plenty! I didn't follow the measurements exactly so I ended up with a lot of extra spinach mixture...which was great because I quickly whipped up 4 spinach lasagna rolls for tomorrow night's dinner. Yum!
ReplyDeleteThanks, Gina!

One word -- DELICIOUS! Another keeper, and so easy to make. Thanks, Gina!
ReplyDeleteI made these tonight and I have not heard my family rave so much about one of my meals!
ReplyDeleteSO TASTY! My father and sister are not big on the whole low fat thing and they loved 'em.
Thank you for all your delicious recipes
Tara, this was Polly-O I believe.
ReplyDeleteHeather, Roberta, Jessica, so happy everyone loved them!
This was a great dish, super easy to make and tasty. I am personally not a cooked spinach eater but this recipe changed me. I am eating it as a lunch the next day and I think it tastes better. Thanks for a great new dinner dish.
ReplyDeleteI tried this but couldn't find whole wheat bread crumbs so I just used regular italian bread crumbs. This dish was DELICIOUS! My family loved it - thank you I will definitely be trying more recipes.
ReplyDeleteOh, Gina, this was amazing! I made it for dinner last night. I am so excited to make it again!! We served it with pasta as suggested above and green beans. Thank you so much!!
ReplyDeleteLOVE IT TRIED IT TONIGHT LOVE IT
ReplyDeletehey gina, i made this tonight but it was a bit runny, anything that comes to mind that i maybe messed up??? i actually ended up toothpicking it, then removing the toothpicks when i took them out to put on the sauce and mozza. but i think if i hadnt done that it would have been a soupy ricotta yummy mess! any thoughts???
ReplyDeletei should note, it was still INSANELY good...yummmm 5 points?!?! so amazing as usual.
This was on our dinner table last night and everyone went back for 2nds except my husband - he had thirds! A few weeks ago I made the filling and homemade dough, as my granddaughter wanted calzones. The only thing I changed was adding Italian sausage. So much of the filling was left over, I froze it. Tonight, I made a quick tomato sauce, we cut and pounded the breasts, and they were ready in no time. Served with sauteed spinach. This recipe will now be my go to company dinner - outstanding!
ReplyDeleteDo you think I could make these up and freeze them? I have all ingredients on hand, but no one will be around for a couple of nights. Planning to try a veggie version too with thin sliced eggplant!
ReplyDeletethis dish was absolutely amazing! i made it for my family this past week, and they loved it. i've only made two dishes, but one thing i can say so far is that they are so easy to make and they taste great all the while being healthy for you! i can't wait to try so many more receipes. thank you so much for creating this website, gina!
ReplyDeleteTrying it NOW GINA!!! It is baking as I type and smelling DELISCH'!!! Can't wait for DH to test it out with me. THANKS!!
ReplyDeleteI made this last night and it was AWESOME! My family gave it the rating of "restaurant quality"! Thanks for the great recipes!
ReplyDeleteWell the verdict is out....we had it today for SUNDAY LUNCH! WOWWEEEE!! This is great!! I used PIZZA SAUCE and that made it taste zingy! EVERYONE LOVED IT! I'm a hit! (thanks GINA!)
ReplyDeleteFantastic! Everyone loved it. Served with your asparagus w/dijon vinaigrette and apple sauce. Thanks again, Gina!
ReplyDeleteI tried this recipe last night before i went to work and my absolutely loved it! thank you so much for the recipes you provide to us on your blog :)
ReplyDeleteMy measure of a successful recipe is whether or not the bf likes its. He was looking forward to it all week, and voted it into regular rotation after I finally made it last night. "Definitely make this again! Especially since it's healthy!"
ReplyDeleteTwo thumbs up from us!
I really can't imagine anyone NOT like this, it's that good!!
ReplyDeleteIf I half this recipe how long should I bake? I can't wait to make this tonight!
ReplyDeleteOh wow--another great sounding chicken recipe. Keep em coming! :-)
ReplyDeleteI just realized I didn't answer some comments -
ReplyDeleteTinamarie: It sounds like you didn't squeeze the excess liquid from the spinach which would make this runny. It should actually be thick.
Tracy - A veggie version sounds fab and these would freeze great I'm sure!
Anonymous - Same baking time if you make less chicken.
Another delicious recipe. My husband says I am 4 for 4 now lol. So easy to make too!
ReplyDeletedrooooling.. :) this is baking in the oven at this very moment and i can wait to try it!! I was the winner of that insulated tote bag and i just got it in the mail today! Thank you!!
ReplyDeleteGina, you instruct to preheat the oven to 450; do you continue baking the cutlets for 25 minutes at 450?
ReplyDeleteI made this the other night and it was a HIT. So delicious! My husband is so picky and also sticks to a low carb diet, and he LOVED this! I really enjoyed making this and eating it! Thanks for another Amazing Recipe!
ReplyDeleteheee- Oh glad to hear you got it!!
ReplyDeleteGigi- Yes bake 450.
Toni- So is mine, so happy he loved it!!
Gina, how do you squeeze the liquid out of frozen spinach?
ReplyDeleteHi Gina,
ReplyDeleteI love love LOVVVE your recipes. Everyone has always been impressed with my cooking when I make it and I'm not even a good cook! I'm making these tonight, but have a question...(which shows how little of a cooker I am)
Do you mix the spinach with the cheese, eggs, etc WHILE its frozen? Or do you thaw it first? If you do it while its frozen, do you just put the frozen spinach in a paper towel to squeeze out the extra liquid? haha, sorry, I'm a little slow when it comes to cooking ;)
I thaw the spinach in the microwave, then squeeze it dry in a mesh colander. I even use a paper towel to help soak up any remaining liquid. Enjoy!
ReplyDeleteGina,
ReplyDeleteI just made this last night and it was yummy!!! My husband and I had the left overs today! We truly love your website! The food is so good! Thank you for creating these ideas and sharing it with us!
Gina,
ReplyDeleteMy partner and I made these. Incredible. Your blog is amazing and an inspiration for all bon vivants wanting to keep healthy/fit. Keep it up!
Gina how great are all your recipes.
ReplyDeletejust a question.
how do you get these point values?
when i put them into my recipe builder it comes out higher.
thanks
I'm assuming you are in the US Laura but they shouldn't! I use either the ww calculator by calculating the nutritional info first, or recipe builder. Keep in mind that different brands can alter the n.i. Also I use cooked weight for meat, 4 oz raw = 3 oz cooked.
ReplyDeleteThis was the best meal I have ever made on my own ...haha so grown up I know ! But truly tasty and now is definitely in my top 3 favorite meals of ALL TIME! This will be a staple in this Diva's kitchen for the rest of my life! Thanks Gina!!
ReplyDeleteWhat a fantastic recipe! Two of my favorite dishes in one :) I just wanted to stop by your blog and say ‘hi’ :) We met at the ICBN event in NYC earlier this year. Also, I just added you to the Better Recipes blogroll! (Yep, I am a bit slow…) Hope all is well!
ReplyDeleteI made this today! It was awesome! I will definitely make it again! Next time I need to buy better chicken breast that is already cut in the sizes I need. :)
ReplyDeleteGina,
ReplyDeleteThank you so much for your recipes! I have been a "fan" for a while, but had never actually tried any of the recipes. I made this with a side of asparagus and a nice salad, along with the pina colada cupcakes (in cake form) for Mother's Day. It was a huge hit, an nobody knew they were WW friendly. I'm hooked and can't wait to try more of your recipes!
Julie
So glad you liked it! Doesn't taste light at all!!
ReplyDeleteThis was delicious! I even blogged about it here: http://www.hungrycook.com/2011/05/09/recipe-italian-style-stuffed-chicken-breasts/
ReplyDeleteI'm so glad my friend introduced me to your site. I foresee many more Gina-inspired dishes in the future. :)
Hi Gina - I made this dish a few nights ago and LOVED IT! Even my husband, who isn't a fan of any slimmed down recipe, LOVED it. I had panko bread crumbs and italian seasoning on hand so I used that instead of the whole wheat. It turned out great. Thanks so much for sharing your recipes! I am new to your site and can't wait to try more recipes!
ReplyDeleteI'm happy you both enjoyed it, let me know what else you try!
ReplyDeleteI'm a huge chicken parmesan fan and LOVED this recipe! It was the perfect portion size and absolutely delicious! My whole family loved it and was impressed with my skills. :-) It took me a while to make, maybe because I'm not an expert cook yet, but very delicious. I'll be making it again, without a doubt!
ReplyDeleteMade this and it was EXCELLENT. Can't believe it's healthy. It was a little involved, but the results were worth it!
ReplyDeleteThese are delicious!!!! Even my spinach hating husband was a fan and we fought over left overs.
ReplyDeleteMade this for dinner tonight. Very yummy! My husband loved it! Thank you Gina! So many great recipes I've already made with tons more to try! :)
ReplyDeleteThis. Was. Awesome!! Even my relatively picky husband went bak for more and - drumroll please - my non-chicken-eating 4 year old ate half of one BY HERSELF!!!!! Amazing. We had it with pasta (to please the 2 year old) and steamed green beans and we were ALL so happy! Thank you. You rock. :)
ReplyDeleteLove this! I used reduced fat provolone slices on top (it's what I had in the fridge) and it was awesome. Definitely in my top 10. Thanks!
ReplyDeleteI just made these tonight and they were FABULOUS! A new favorite for my family. Can't wait to make them again!
ReplyDeleteOH WOW! My whole family devoured this meal in minutes. This is my 1st recipe by Gina, but somehow I just knew it was going to be great. I am so excited to have stumbled upon this website & look forward to trying out so many more of your recipes! Thank you for all your hard work!!! : )
ReplyDeleteCan I use canned spinach instead of frozen? If so how much should I use?
ReplyDeleteI've never used canned spinach but I guess it would work, use 5 oz.
ReplyDeleteA friend just showed me your site the other day, and I made this recipe tonight! It was delicious, I used fresh spinach, and the ratio of spinach to cheese was much higher, but still delicious. Can't wait to make your Swedish Meatballs this weekend. It's giving me lots of hope for WW! Thanks for the great recipes!
ReplyDelete-Ashley
I made this the other day...It was AWESOME!!!! I've made a few of Gina's recipies and they have all turned out good. (the pineapple cupcakes were a hit too)
ReplyDeleteThanks for all the great ideas!!!
This looks great!! What size baking dish did you use?
ReplyDeleteI made this wonderful dish tonight. I ran out of the marinara sauce I used for my side of pasta, instead I used jarred sun dried tomato pesto to top the chicken. It was aMazing!!! Thank you Gina for such a wonderful dinner idea! And so low calorie, to boot!
ReplyDeleteMade this last night - super awesome! Worked out very well with a side of spaghetti and a green salad! However, I was under the impression that I had frozen spinach in my freezer; turned out it was broccoli. I went ahead and used the broccoli (just steamed it really quickly); turned out sooo goood! Cannot wait to try it again with the spinach though...
ReplyDeleteThanks Gina!
-Catherine
OMG!!! It was delicious next time I will put some seasoning in my spinach/cheese stuffing.
ReplyDeleteI bet it was great with broccoli!!
ReplyDeleteLa-la-LOVE your site and this recipe! I improvised with panko bread crumbs mixed with some Italian seasoning. It was a massive hit! So tasty, my BF didn't even know it was "skinny." TY!
ReplyDeleteI made this for dinner last night and my husband loved it! Your website definitely gives us great new ideas to get away from boring dinners!!! Making the pepper steak tonight!
ReplyDeleteGina, do you recommend freezing UNCOOKED portions? Or cooked? Thanks!
ReplyDeleteI think cooked would freeze better.
ReplyDeleteI just made this for dinner tonight and it was a big hit.
ReplyDeleteThanks for the sugestion ;)
This recipe was on our 'make' list for a good month...just made it tonight and it was delicious!! Made it with a small amount of pasta as a side - so good...thank you!
ReplyDeleteHi, someone I know has lactose intolerance (not severe though I think) Would there be a good substitute for the ricotta cheese? Because I heard they're really bad for people with lactose intolerance. Your recipes look sooooo yummy!!
ReplyDeleteYou could replace the ricotta with mozzarella, although I'm not sure that wouldn't be an issue for someone who is lactose intolerant.
ReplyDeleteThis has become a new family favorite. Perfect and pretty too!!!
ReplyDeleteThis was fabulous! Will definetly make this again! Whole family loved it!
ReplyDeleteMade this last night and it was sooo good! Question - is the spinach 5oz before draining the liquid or after? My box of spinach was 9 oz so I just used half, but I felt there was not enough filling for all 8 chicken breasts...
ReplyDeleteBTW, I love your blog! This weekend I will be making the Sofrito Chicken Stew. Would love to see all your recipes in a cookbook one day :)
Luckily I'm not following weight watchers anymore.. I accidentally bought 4 chicken cutlets, so there's double the filling in each, haha. My lap-band buddy won't let me eat too much though, so I guess I'm just writing to say that these are in the oven and they smell so goooood. I can't wait for dinner tonight :)
ReplyDeleteGina - you truly are talented and I really appreciate all of your hardwork on this blog. I made this tonight and it was (surprise - surprise) a huge hit with my husband. I had extra spinach filling and he had hinted that I make it again tomorrow. Thanks again for the delish meal and all of the time you put into this amazing blog!
ReplyDeleteJen- before draining, funny are they making boxes of spinach smaller these days?
ReplyDeleteStephanie- I am not surprised :)
This is delicious and easy and reheats so well! Thank you Gina, again!!
ReplyDeleteI made this for my family on Sunday and they loved it. It was so easy to make and was wonderful. The filling was great. Another meal to add to the favorites. You are great at what you do and I would love to see you make a cookbook. It would be nice to have something right at my finger tips in the kitchen. Thanks Gina!
ReplyDeleteThis was absolutely wonderful! I served it for dinner with my mom and it was really, really good. Thanks for this recipe & your blog. Bravo!
ReplyDelete~Kim, Indianapolis, IN
I made these tonight and omg.... so.good. I do have to say that one cutlet was not enough.....not because I wasn't full, but because they were so good I wanted to eat the whole pan.
ReplyDeleteMade this for the first time tonight and it was SO YUMMY! My one year old at a whole serving herself while my husband and I both had seconds. Thanks for making eating fun again =)
ReplyDeleteI made this for dinner last night and it was soooo good! Although I am not surprised... I have never tried one of your recipes we didn't like!! I contemplated halving the recipe since it makes quite a bit, and there's only me and my husband eating them, but I went ahead and made the whole thing. I just only put the sauce and cheese on 4 cutlets, and saved the other 4 for tonight. I'm so glad I made the whole batch... my husband ate 3 cutlets last night, and as soon as he finished he asked, "Can we have these again tomorrow night too?" LOL... he LOVES all the cheese. Tonight I am going to serve them with the creamy cauliflower puree and can't wait for dinner!!
ReplyDeleteI made this last week and it was simply delicious!! My guests really enjoyed it, and I can't wait to make it again. Thank you for all of your wonderful recipes!
ReplyDeleteI made this recipe last night (along with the Santa Fe Chicken)and OMG, it's awesome! I did make one substitution, swapped out the ricotta cheese for low fat cottage cheese. My roommate doesn't like ricotta. It still came out phenomenal! Thank you for the recipes! They really make me feel like I know how to cook!
ReplyDeleteI loved this recipe. I added a few spices to the spinach cheese mix. It was REALLY good. It is now in my cooking rotation. Thanks so much.If I can find recipes this good I can continue to lose weight and keep it off for good.
ReplyDeleteThis was really, really good and totally worth the time to put together. Next time, I will probably add some garlic and onion to the filling. The only change I made tonight was using Vodka sauce instead of straight marinara - we just aren't fans of tomato sauce.
ReplyDeleteMade this last night and it was awesome! Changed up the steps a little bit to dip chicken cutlet in eggs, both sides in breadcrumbs/parm mix; spread ricotta/spinach/mozz mix; then roll and place in pan. (Just like the prosciutto rollatini).
ReplyDeleteAmazing!!!
ReplyDeleteAlice T
Love your site
Finally got round to making this for the first time, I'm the one who asked if ricotta cheese would be suitable for someone with lactose intolerance, answer is not really, not even for the mild intolerant ones.
ReplyDeleteJust thought I will post this so other people with similar problem can find a substitute for the ricotta cheese.
REALLY YUMMY recipe though, my other half enjoyed it nonetheless
Made these tonight and they were fantastic! My parents loved them. Thanks for another winner, Gina!
ReplyDeleteThis is my first SkinnyTaste recipe that I've tried. It was excellent and boyfriend approved! I think this might be added to one of my regular recipes! Very excited to try other recipes too!
ReplyDeleteFreezer safe? Anyone tried it?
ReplyDeleteWe just finished making, and devouring, these! They are so delicious, juice and flavorful. Mine came to a few more points that the 5 posted here (I think because I used a larger piece of chicken breast), but it was still under 8 points and for such a filling dinner, it's still perfect in my book! Thanks for all your wonderful recipes!
ReplyDeleteI love this recipe very easy to make i was is Ok to use fresh spinach?t
ReplyDeleteI prepared these the night before I served them, and although I was worried they would be soggy, they came out great! This was the second time I've made these, and there were a few things I did differently that I think made them better. First, I made sure to really squeeze the spinach dry, including following Gina's suggestion to use a paper towel to get any excess liquid out. Second, I bought the thin chicken cutlets, but I also pounded them to make sure they were all even thicknesses. I think this also tenderized the meat a bit. Lastly, I used panko bread crumbs which added a little extra crunch. Both times I made these were a hit with no leftovers!
ReplyDeleteI made this the other night and it was fantastic...We enjoyed it so much that I also used the Spinach filling as a base for manicotti...just added a little crushed fennel seed and some extra ricotta, parmesan, and spinach and there was plenty to fill an entire box of shells!! Your recipes are great! Thank you!
ReplyDelete~Beth
I just found your page a couple of days ago, and I made your Chicken Taco Chili last night (my 2 year old had 2nds, and my picky eater even loved it)! I would like to make this, it looks so yummy, but I was wondering if you could recommend anything to replace the spinach? I just can't get the family to eat it! Thanks
ReplyDeleteI suppose you could use zucchini instead, shred it and saute it first, then mix it with the cheese.
ReplyDeleteI made this and my kids and my husband loved it!! I have a very very pickey 4 year old and she ate every last bite. It was hard to get her to take the first bite but as soon as she did, she cleaned her plate! So so so good!! Thanks for a wonderful site, as a working mom I always am looking for great healthy meals and this is where I come every Sunday as I do my planning for the week.
ReplyDeleteMy girlfriend decided to make these tonight with my help of course, and let me tell u , what a treat. Although I'm not a big lover of spinach, the combo of sauce , cheese, chicken, of course, and spinach was simply splendid.
ReplyDeleteWith a side a angel hair pasta with the pomodoro sauce, and a glass (bottle!) of chianti, it made for a terrific dinner. And the best parts is, seconds will be had for Monday night football. BRAVO!!!!
Yes, the spinach flavor is subtle, we all love this too!! (especially my husband!)
ReplyDeleteThank you so much for sharing this recipe! I made it for the first time at Thanksgiving dinner and everyone loved it (rare feat in my family!)
ReplyDeleteYour site is so helpful- especially for a cooking novice like myself! Thanks again.
Alesha
So glad to hear you all loved it!
ReplyDeleteHi Gina, I've been a fan of your site for sometime now but don't comment alot even though I've tried and liked many of your recipes, but, I had to tell you that every time I make this one it gets better and better. It's on the menu for tonight with a small side of pasta and a small salad. Can't wait for your homemade sauce to be ready so that I can finish it up.
ReplyDeleteI'm going to freeze leftovers for another meal. Has anyone tried freezing them and if so is it better to freeze cooked or uncooked chicken.
I was surprised at how easy these were! Really the first "stuffed" chicken I've ever made successfully. I love that you don't even have to bother with toothpicks. I used regular chicken breasts and sliced them in half for thin cutlets (a bit tricky but I got the hang of it). The end result was delicious and filling with a caesar salad on the side.
ReplyDeleteI am so excited to cook this tonight for dinner but do ijust thaw out the spinach and then make sure its drained of all jucies
ReplyDeleteThis was insanely delicious and so easy to make! I have yet to make something from this site that is bad. THANK YOU!!
ReplyDeleteLong time lurker here! Got a TON of your recipes in my file. We made this tonight and my 3 and 2 yr old went crazy for it! Thank you so much for all your hard work with this site!!!
ReplyDeleteOmg im so trying this
ReplyDeleteI have been basically living off of your recipes lately. Every single one has been delicious, and I finally feel like I can eat delicious food and be healthy! We made these chicken rollatinis for our New Years dinner, and really enjoyed them! I posted a picture over on my blog. If it's okay with you, I'd like to add your website to my blogroll because I love your website so much.
ReplyDeleteThanks for making such great recipes!
My son and I made this dish last night - homemade pomodoro sauce & all! We loved it! I will be making this again. Delish!
ReplyDeleteI made this for dinner tonight and we loved it! Thank you so much for a great tasting, low calorie dish!
ReplyDeleteI can't wait to try this recipe!! Your blog is an inspiration to everyone trying to stay healthy!
ReplyDeleteI made this tonight, and it was fantastic! I only added a bit of chopped garlic to the spinach mixture because I am a huge garlic person. My whole family enjoyed it! I just love this site!
ReplyDeleteI totally just realized that in trying to halve this recipe I forgot to put the mozarella in the spinach mixture and my chicken is already rolled up and ready to go...oh well it seems like it should still be good. I will still put some on the top at the end of baking. Yummy!
ReplyDeleteThis is SOOO good! I made it with fresh spinach because I was trying to use up a bag. Hubby scarfed down 2 servings and I was soo tempted to join him! Saved a portion for lunch Monday instead. I laughed out loud though, because when I was putting the leftovers in a container, he took the spoon from me and made sure every single scrap possible was scraped out of the casserole dish-- he didn't want me to accidently throw a bite away!
ReplyDeleteI'm not a big cook, but your step-by-steps are great. I tried this tonight--mine didn't look near as pretty, but it tasted AMAZING!! Thank you!
ReplyDeleteTwo teenage sons both said "As good as anything we can get at a restaurant". Thanks for such a great recipe that is both light in calories and easy to make!
ReplyDeleteHi Gina-I see you mentioned that you can replace Ricotta w/Moz cheese. My son is allergic to eggs, so cannot have ricotta, but I have read that you can use drained cottage cheese as replacement...do you think that would work in the recipe or just go w/moz??? Thanks, have loved every recipe I have made of yours so far! Nikki Y
ReplyDeleteMade this last night- a little labor intensive, but delicious! And I can't believe the low WW P+! THANK YOU for sharing these recipes and sharing the points plus values. I got a little hung up on the "6 tablespoons of egg whites" but after looking it up, I learned each egg white is 2 1/4 Tb, so I just used three. Tonight I'm going to try the sausage and bean soup. Thanks again!
ReplyDeleteI am new at cooking, but I made this last night and it was AWESOME! My husband loved it and it was in my diet! Thanks!
ReplyDeleteMade this tonight and it was so yummy! It tasted indulgent, but I was so glad it was only 5 points. I used Newman's Own marinara, but other than that I followed the recipe as written. I can't wait to take leftovers to work tomorrow.
ReplyDeleteMmmmm, that stuffing looks amazing. Same thing could happen with some pork tenderloin as well. Thanks for sharing!
ReplyDeleteI just finished making these, yummiest things ever!! Thank you for another amazing meal!
ReplyDeleteI made this last night for the first time and it was delicious! I am not much of a cook but lately I am experimenting more. I was so proud of myself. Great dish!!
ReplyDeleteMade these tonight and they were AMAZING! And really quite easy! Can't believe they are only 5 points. Planning on freezing the rest, since as a single gal trying to loose a few pounds but not wanting to eat so many pre-packaged, processed foods I'm trying to cook more. Made the kalua pork this weekend and that was fantastic too.
ReplyDeleteThanks for what you do Gina.
I made this tonight and it was delicious! I shared it with all my FB friends as well. I dont like ricotta cheese so i substituted with low fat cottage cheese. sooo good!
ReplyDeletePerfectly simple, perfectly delicous. My husband can't wait for me to make them again!
ReplyDeleteAMAZING, I love these, I can't believe they are only 5 pts each. My husband loved them too. I'm definitely going to make them again soon.
ReplyDeleteThe family LOVED this, going to be a new regular for dinner. Simple to make and healthy too! Thanks so much :)
ReplyDeleteSo good!! I made them without breading to save on the carbs. I also (accidentally) mixed all of the mozzarella in the filling! I didn't use sauce or top with cheese. I topped them with sauteed spinach and mushrooms. Will definitely make them again! Thanks for sharing! :)
ReplyDeleteHave you ever used any gluten free bread crumbs? I just found out that my 14 year old son is allergic to wheat.
ReplyDeleteThis was SO incredibly yummy!!!! Best 5 point dinner ever! Made with sauteed snow peas and rice pilaf. Delish!!
ReplyDeleteI made this recipe tonight and my boyfriend and I LOVED IT! Today was the first time I had ever seen this site and will be back! Thank you for the great recipe.
ReplyDeleteSO glad you all liked them!
ReplyDeleteI never used cottage cheese in place of ricotta, but if I had to, I think it would work.
I have not used gluten free crumbs, I did try them with almond meal but was not a fan. I might leave the crumbs off for a gluten free option.
I made this one last night, and it is amazing! It was good the next day, too. I'd love to try it with the broccoli!
ReplyDeleteMade this tonight and everyone, including my picky 16 month old, loved it. Thanks for sharing!!!
ReplyDeleteI have whats probably a dumb question. I am just learning to cook now and don't understand this step:
ReplyDeleteCombine breadcrumbs and 2 tbsp grated cheese in one bowl and 1/4 cup egg beaters or egg whites in another.
In the second bowl is it the egg whites with the breadcrumbs or the eggs with the cheese?
LOVE the blog! Ive never seen stuff so easy and everything I have made so far has come out great!
Leria, I read that as:
ReplyDelete1st bowl = breadcrumbs and cheese
2nd bowl = egg whites/beaters
Hope that helps!
It sure did help! I made it last night and my husband actually said it was "Fantastic!"
ReplyDeleteI have never cooked before and everything ive tried he has loved!
This recipe was lick the plate delicious! I cooked them and froze the extra portions and they were just as amazing reheated.

Made this dish last night (used fresh spinach) and it was such a HIT! I will make is over and over again. I stuck to one serving and my husband ate 3!! I think he would have had more if I hadn't packed up the rest for lunches ;-) thanks for making me the hero tonight!
ReplyDeleteThis was my first Skinny Taste recipe and everyone loved it!! I had some leftover spinach mixture, which I put in an egg white omelette for breakfast the following morning. It was delicious and really filling! I'm definitely a Skinny Taste believer!! Thank you for the amazing recipes :)

ReplyDeleteFound this recipe via Pinterest, just made these tonight and WOW! So tasty!! The local grocery store has the very nicest boys working behind the meat counter--I grabbed a pack of tenderloins from the case and they ran them trough their magic tenderizing machine. They worked perfectly!
ReplyDeleteIs there a way to make this without breadcrumbs? This looks yummy but I need to avoid grains as part of a diet I am on. PS LOVE all your recipes I have trie so far!

ReplyDeleteI am making this tonight for our Valentines dinner tonight. Can't wait to actually eat it! Thank you!
ReplyDeleteWow! Made this for my Sweetheart for Valentines. It was a hit. We both loved it. I did especially, one of my favorite places to eat out is Olive Garden. I haven't been there in ages. This made me feel so special, even though I cooked (which I love to do) I felt like we were eating at a very nice restaurant. What a treat! I will definitely repeat this meal.

ReplyDeleteMaking this for the 2nd time and plan to keep the recipe stored away bc it was such a crowd pleaser. Also I dubbed cottage cheese as I do with manicotti and it turned out awesome yum yum! Thanks for posting :)
ReplyDeleteI just made this and it is SOOOO gooooddd! I had to add a little cream cheese to the cheese-spinach mixture because my ricotta cheese wasn't very creamy. I also left half of the chicken breasts w/out tomato sauce and cheese and they were amazing as well. Thank you so much for the recipe!
ReplyDeleteWhen I made this dish I didn't have any spinach but did have chopped broccoli. Yummy!!! It is now a family favorite!
ReplyDeleteThis recipe was fabulous! My husband and kids LOVED it! Thank you!
ReplyDeleteI made this tonight for my family & it was a huge hit! I added some pesto to the spinach stuffing simply because I love pesto & it seemed appropriate! I also made it a little lower in carbs by using low carb bread mixed with almond flour for the bread crumbs!...fabulous recipe! Very tasty!
