Roasted potatoes, onions, sausage and peppers roast in the oven with a drizzle of extra virgin olive oil and rosemary. Don't you love a meal that only dirties one pan? This is an easy one-dish meal that makes clean-up a breeze, and the smell in your kitchen will make everyone hungry!
Anytime I find a great alternative to fatty Italian pork sausage, I'm all over it! I have nothing against pork, I just wish they would make leaner pork sausage. I'm pretty picky about my Italian sausage, but I loved al fresco's sweet Italian chicken sausage, I almost forgot it was chicken while I was eating and it's 75% less fat that pork sausage, and it's gluten-free, so that's a plus!
This is a really easy dish to make, the main thing is cutting everything about the same size and don't crowd the pan. The potatoes take the longest to cook, so if you cut them small it all evens out. The onions get a little charred which I love, if you want to avoid that you can add them with the sausage. I've even made this with Turkey Kielbasa and it turns out cheap, simple and great. Try it with red potatoes, new potatoes or russet.
Roasted Potatoes, Chicken Sausage and Peppers

Ingredients:
- 1.5 lb (about 3 large) potatoes, russet or new
- 1 medium onion, peeled and quartered, layers separated
- 2 red bell peppers, seeds removed and cut into 1 inch pieces
- 2 tsp extra virgin olive oil
- kosher salt and fresh cracked pepper to taste
- 1 tsp chopped rosemary (fresh or dry)
- 1/2 tsp garlic powder
- olive oil spray (I use my Misto)
- 1 lb Italian chicken sausage (al fresco's) cut each link into 6-7 slices
Directions:
Cut the potatoes into small 1" x 1/2 inch pieces. These take the longest to cook so cutting them small ensures everything cooks evenly.
Preheat oven to 375°. Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. Mix well to be sure everything is coated with oil and seasoned evenly. Pour onto the prepared baking sheet and place in the center of the oven; bake for 15 minutes.
Use a spoon to toss so nothing sticks or burns.
Add the sausage to the baking sheet with the potatoes and vegetables and bake, tossing once or twice for 25-35 minutes, or until your potatoes are cooked through. Cooking time will vary depending on the thickness of your potatoes and sausage, keep an eye so they don't burn.

You can leave the rosemary out if you're not a fan, I personally love them with potatoes but it will still be good without.
I think using sweet potatoes would be nice, I think I would add some hot paprika to the sweet potatoes to balance the sweetness.

I make a similar recipe, but do it in the crock pot with oregano. I'll have to try rosemary next time. I put the potatoes on the bottom, then sausage, topping off with onions and peppers. I add a little fat free, low sodium chicken broth at the bottom to keep moisture so nothing burns. The sausage is so tender. When I have left overs, I add it to some scrambled eggs for breakfast.

ReplyDeleteWhen I use red or new potatoes I don't peel them, all I had was russet so I prefer them peeled. It's a matter of taste.
ReplyDeleteIf it's cooked sausage, add it the last 10 minutes of cooking so it heats through. This dish will be as good as your sausage, so keep that in mind.
The chicken sausage was made from dark meat I believe. Not sure what I would sub it with, kielbasa if he eats that.

ReplyDeleteThis is delicious! I made it tonight and because I had extra points to use, I added a little shredded Parmesan to my serving. Also, I used green bell peppers because that's what I had on hand. It was a lot of food and we split it into 6 servings instead of 4. I also had some bread that was only 2 points that I put along with it. It was just a delicious meal all by itself! Just wanted to share.

ReplyDeleteWow! I am not a sausage fan, but have fallen in love with chicken sausage. We only used 12 oz of sausage, not the full lb and the portions were still SO GENEROUS! I love food and have been having difficulty managing my portions, but this was easy to do. I served this with a garden salad with light parmesan peppercorn dressing. If I wanted to go all out I would add some garlic bread, but that would be an all-out feast!

I love how easy, but delicious dishes like this are. I only wish chicken sausage was available in Japan! It's hard finding good sausage at all, much less chicken or turkey sausage. I usually make my own turkey sausage, but I just make patties, not links.

Gina, you advised Jenn to add pre-cooked sausage in the last 10 minutes, but according to the website for the sausage you used, it is in fact pre-cooked. I'm making this right now, also using pre-cooked chicken sausage, and I will be adding it after 15 minutes and hoping it turns out as well as yours!

I had Bistro Sensations Habanero and Monterrey Jack Chicken Sausages on hand so I took the recipe in a spicy direction by omitting the rosemary/garlic and using cajun seasoning.

Made this tonight with some tweaks, forget to buy onion, but subbed mushrooms out for the potatoes since we're on a no grains & starch diet this month (Thanksgiving will be the exception!). Since there were no potatoes to cook, peppers, mushrooms & uncooked sausage all went into the oven at 350 degrees for 25 minutes. HEAVENLY! :) Thanks for sharing this one, Gina!

ReplyDeleteMade this dish for dinner last night. I substituted the potatoes with sweet potatoes, and used apple flavored chicken sausage, instead of Italian. I also substitued agave nectar for the rosemary. It was all super yummy!!

I'm pretty picky about my sausage, too, which is why I end up making my own when possible (usually with turkey and pork, and for dishes where I can brown it instead of using a casing). I do love that this is a one dish meal...makes cleanup a blast!

I made a portion of this with Tofurkey sausage for my vegetarian husband and added extra veggies too but kept the oil the same. My whole family raved how good it was . I bought a big bag of potatoes and made your yummy baked potato soup on Monday and I was looking for a recipe using potatoes for tonight when I remembered this one. Can't wait for dinner tonight!

ReplyDeleteWow. I made this for lunch today, using Turkey Kielbasa in place of the chicken (had some opened that I had to use up). It was delicious! Hubby and I added 2 tbsp ketchup (well, he added 3) to our bowls and stirred it in to make a delicious skinny hash. Hubby was over the moon. I think this is his new favorite dish.

The chicken sausage was much easier to cut after throwing it in the freezer for 15 minutes while I chopped the veggies, then while the veggies cooked it had a chance to thaw out.
