What happens when you combine Skinny Baked Jalapeño Poppers with chicken??
Oh yeah baby!! Cheesy stuffed chicken breast stuffed with diced jalapeño, cream cheese, cheddar jack cheese, scallions and bacon!
I basically deconstructed my jalapeño poppers and stuffed them into chicken and the results where mouth watering!! I used bread crumbs because I was out of panko, but I think seasoned panko would give these a wonderful crunch like I used on my Skinny Baked Jalapeño Poppers.
I made the serving size a generous two pieces, so a simple vegetable, fiesta lime rice, or a salad on the side would make this a complete meal. Trust me, you won't want to stop at just one!

OHMAHLAWS I could not pin this fast enough! Can't wait to try, it looks incredible...
ReplyDeleteditto! looks amazing!
DeleteThis is very good, I made it last night. Yum Yum
DeleteThis looks incredible! What a great idea.
ReplyDelete2 breasts per serving!!! AMAZING! Can't wait to make this!
ReplyDeleteThese sound SO YUMMY!!! I just pinned this, and will be trying it VERY soon! :)
ReplyDeleteLooks amazing.. making it for dinner tonight! Thanks for the recipe.
ReplyDeleteohhhh, this looks absolutely wonderful! Great Cinco de Mayo recipe!
ReplyDeleteThanks Lori!
DeleteWOW! this looks delicious! I'm adding this to my recipe list that I must try. Pinned it!
ReplyDeleteThis looks amazing!!!
ReplyDeleteThis is one I am definitely going to have to try. I like that if you aren't big on spicy food, you could probably cut the jalapenos and it would almost be like a "loaded baked potato" chicken breast.
ReplyDeleteThis looks soooo good! I will have to try both this and the buffalo chicken wraps you recently posted...I love spicy food!
ReplyDeleteThe buffalo chicken was AMAZING! Just throwing that out there :)
DeleteI think I just died and went to heaven. Yuuuuuuuuuuum!
ReplyDeleteI don't know that I have seen 1/2 fat cream cheese. I will make it with the 1/3 less fat kind. Can't be that much difference in the nutritional value. This looks AMAZING!!
ReplyDeleteoops, typo thanks for catching that!
DeleteThey do however have fat free cream cheese
DeleteWould I add the panko with the breadcrumbs, or substitute the breadcrumbs for the panko?
ReplyDeletePanko is a type of breadcrumb - in the same aisle of the grocery store.
DeleteI was thinking panko as well. Thoughts?
DeleteIn the opening remarks Gina says you can substiture seasoned panko for the breadcrumbs..
DeleteMaking this for dinner tonight!
ReplyDeleteToo funny....I just posted something similar on my blog this morning!
ReplyDeleteDo you get your thinly cut chicken breasts at a butcher or...???
ReplyDeleteI bought them pre-sliced.
DeleteWhere do you find the chicken pre-sliced? I don't think I've ever seen that?
DeleteWe have found them at Walmart. Or we just slice them ourselves.
DeleteThey are labeled thin sliced cutlets. I often cut them myself as well or ask your butcher.
Deletedon't know where you are from, but I"ve seen thin sliced chicken breasts in almost every grocery store I've ever been to - Shoprite, Stop & shop, Pathmark, A&P, Superfresh, etc. I think any big chain grocery store carries them. Or, you can just thin slice the cutlets yourself.
DeleteI may just try pounding out regular breasts? Obviously the points would be different, but that might work, right?
DeleteChristi, I did that last night for dinner and it still tasted good, but the chicken was hard to roll/stuff. BUT it tasted just fantastic
Deletethin slice regular breasts into 3oz pieces and it will be the same points.
DeleteWe don't have pre-packaged thin cutlets in stores where I'm from, but we do have chicken tenders (about 2 oz each and 12 tenders in a package). Pounded them out myself and then it's 3 tenders per serving. This recipe pretty much takes one of my favorite dips and puts it into breaded chicken... delicious yet again Gina!
DeleteGoing to make this with the Southwestern Black Bean salad this week. Very excited :) xoxo
ReplyDeleteI'm speechless. Absolutely speechless. Must have this immediately!!! Thank you!
ReplyDeletei want 2 try this... it really looks gd mmmmmm..... thank you
ReplyDeleteThis looks amazing... i can't wait to try it....yum!!!
ReplyDeleteThis is SO exciting!! lol
ReplyDeleteoh boy decadence, need these tonight!
ReplyDeleteThese look wonderful -- can't wait to make a batch! What do you think about using a blend of queso fresco and fat-free cream cheese instead of just the 1/3 less fat cheese?
ReplyDeleteI've had a bit of trouble with some of the stuffed chicken in the past - the filling ends up oozing out for me. What do you think about using one thicker cutlet, then slicing a pocket into it, and stuffing it that way (double the filling)? One 6oz cutlet would then be 1 serving for 9 points.
ReplyDeleteI honestly think that would be harder.
DeleteHmm.. I might give it a try for the heck of it. I'll let you know how they come out!!
DeleteI've done it before. it's MUCH easier! No rolling and tooth picking! I'm making this tonight and that's what I'm gonna do.
DeleteI also make a pocket in my chicken breasts instead of rolling them when I make stuffed chicken. It's a trillion times easier!!
DeleteDo you still cook yours at 450 for 25 minutes? Or will they take longer since the breasts are thicker? Thanks!
Deletethanks, I will definitely try it then! I've made chicken with a pocket before and thought it was pretty easy too.. I was curious about the cooking time as well though. I'm thinking since they would be thicker cutlets, that they would take longer..
DeleteThese look soooo good! Now I am craving Mexican food for dinner. I'll have to try this!! Thanks!
ReplyDeleteThis looks yummy and oh so cheesy! Will give this one a try for sure... thanks!
ReplyDeleteHey Gina - This looks great. Just a recipe idea- maybe you could do Jalapeno Poppers for appetizers? I bet if you grilled them or baked in oven with some of the low fat cheeses that are out now, you could make them 1pt apps!
ReplyDeleteShe already has a baked Jalpeno Popper appetizer - that is what she based this recipe off of.
Deletehttp://www.skinnytaste.com/2011/01/skinny-baked-jalapeno-poppers.html
Thanks, Cindy! Missed it on my first search.
DeleteWow! I have made jalapeno stuffed chicken before but not to the level of a jalapeno popper! Love this.
ReplyDeleteOoooh... sounds divine! I'm planning on making this... my boyfriend won't believe this is a healthy version!
ReplyDeleteI want this now! All my favorites in one. Thanks for the great idea!
ReplyDeleteYup we just tried it and it was absolutely delicious! I used cornflakes instead of bread crumb - not sure if that changes the ww points.
ReplyDeleteI LOVE jalapeno poppers and will be trying this recipe ASAP! Thanks Gina.
ReplyDeleteI made this tonight, and it was absolutely fabulous! Thanks for the recipe. Please keep them coming.
ReplyDeleteWow, definitely going to try this! You have the best ideas :)
ReplyDeleteMade thisfor dinner tonight, my first "skinny taste" recipe:) And it was amazing, almost made forget I was trying to diet! Can't wait to start cooking some more of the recipes! Thanks so much:)
ReplyDeleteMade this for dinner and it was wonderful! My husband thought it was a big hit, too. Definitely only needed 20 min in the oven. Panko was the way to go...perfect light crunch. Will add a bit more salt to the Panko next time.
ReplyDeleteThanks so much! I think I'm gonna go with panko!
DeleteI just made these for my husband and we both loved them!! I knew it was going well when he starting "yumming" while eating. He could not believe I got them "off that healthly website". He's Mexican and the fresh jalapenos were what sealed the deal for him. Thanks for a great recipe, it's going into our regular rotation!
ReplyDeleteWow, this looks amazing--thanks for sharing!! I can't wait to try it...Cinco de Mayo sounds perfect! : )
ReplyDeleteGenius idea! I love incorporating the jalapeno popper things into other dishes. I once made cornbread crusted chicken with a jalapeno popper sauce and it was amazing. I think jalapeno poppers just makes everything better.
ReplyDeleteI made this for my family and they loved it , the instructions are pretty easy. thanks for the recipe.
ReplyDeleteDam, these look GOOD!!!! I love jalapenos, bacon and cheese! You hit the love button! Wonderful recipe.
ReplyDelete: )
DeleteCan't wait to try this!! I am cooking it this week along with the Buffalo Quesadilla Burger! I'm so excited!
ReplyDeleteBrilliant!
ReplyDeleteWe just bought 20 pounds of chicken breasts when they went on sale- this recipe looks amazing, and couldn't have come at a better time! SO making this tonight for dinner!
ReplyDeleteMy only difference is to lay a cookie cooling rack in the baking sheet so the chicken can get heat all the way around.. yum!
ReplyDeleteI cannot wait to try this !!
ReplyDeleteGina, I have a dumb question...I'm fairly new to cooking and we are about to get a freezer for the garage. Would it be ok to roll these up and then freeze them for later on? I'm about to go on vacation for a month and want to make sure that my BF is well fed. Is there anything that's not ok to freeze and bake later?
ReplyDeleteI think that would be fine! Thaw them before baking.
Deletequick question, if I eliminated the bacon, would that lower the points at all? (I know I could put the ingredients into a recipe builder), but I'm being lazy, lol!
ReplyDeleteThanks!
I would like to know the answer to this one also. My husband and I do not eat pork, but I am DYING to make this for him!!
DeleteI made it with turkey bacon and it was fine.
DeleteYou should put a warning by the jalapenos part, being a complete idiot, I didn't use gloves while chopping the jalapenos and had a terrible reaction!! but this meal was amazing :)
ReplyDeleteI made this last night and it was DELICIOUS!!! I paired it with the black bean and corn salsa and it was a perfect combination. I was afraid that the jalepeno's would be too spicy for my children but the cream cheese cut the spicy level down which was great. These definitely taste like jalepeno poppers and would never guess that they are light! This one is a keeper!!!
ReplyDeleteMy boyfriend is going think I'm a Goddess when I make this! He LOVES all things jalapeño popper! Thanks so much for another amazing recipe!
ReplyDeleteMade these last night, I had not planned on it so had to scrounge for bread crumbs. I used half panko and half baked tortilla chips that I crushed in the food processor. They were amazing, a keeper for sure.
ReplyDeleteWhat a brilliant idea! I can't wait to try it!
ReplyDeleteThis looks AHmazing!! DH is NOT a jalepeno fan but I could totally leave them out of his. Adding this to the grocery list right now!!
ReplyDeleteI am a new reader and just made these tonight. It was SOOOOO GOOOOOOD!!!!!!!!!!! I will be making these again for sure!!!! I now have a whole list of your recipes I want to try. :)
ReplyDeleteFamily loved this - Thank you
ReplyDeleteHad this for dinner tonight! It was so good!
ReplyDeletelooks so mouth watering! I am saving this recipe for the weekend!
ReplyDeleteI want this in my belly RIGHT NOW.
ReplyDeleteTried and loved. Thank you!
ReplyDeleteOMG! This looks DELICIOUS!! I can't wait to give it a try! :)
ReplyDeletei loved this! i also had a little trouble getting all the filling to stay in, but no biggie... i just spooned it up and now its a dipping sauce.
ReplyDeleteGina- in most of your rolled stuffed breasts, you never use tooth picks and they manage to stay together just perfect! I'm wondering why these have to get the picks (im pretty lazy if you cant tell)... is it the lack of cheese on top?
ReplyDeleteThanks for everything! 25lbs down and have you to thank for much of it!!!!
Katie
I Made this last night and it was amazing! My Boyfriend Loved it!!!
ReplyDeleteI can't wait to try this recipe! Always looking for new ways to make chicken!
ReplyDeleteGina, you are a kitchen magician!! Your creativity never stops amazing me!!
ReplyDeleteI stumbled across this website by accident and I love it!! Thank you for all the healthy ideas!!
ReplyDeleteThis was delicious! I had it last night for dinner. I didn't like how the thin sliced chicken breasts looked at the store, so I just bought regular boneless, skinless chicken breasts. Then I cut them in half length wise and put them between two pieces of plastic wrap and pounded them thin with a rolling pin. Worked great!
ReplyDeleteAbsolutely DELICIOUS!!!!!!
ReplyDeleteMade this tonight. AMAZING! This would be one I could make for a dinner party and my guests would think I was going off of my eating plan! I paired it with a great brown rice side salad. 2 cups cooked brown rice, 1 jar Trader Joe's corn salsa, 1 yellow pepper (seeded and diced), 2 jalapeno peppers (seeded and diced), 1/2 diced red onion, juice from 2 limes, 1/4 cup cilantro (chopped), 1 can black beans, 1 can kidney beans (both 15 oz size, drained and rinsed), 1 teaspoon chopped garlic, 1 1/2 teaspoons cumin, and a little salt and pepper. I wonder what the points are on this side dish. Everything is healthy.......Gina??
ReplyDeleteThese sound fabulous! I want to make these for everyone in our camping group at Rock Fest this summer.....think these would do alright on a grill, if I soak the tpicks?
ReplyDeleteThanks for all the fabulous help all the time!
Becky
In the oven right now, I can't wait to try them!
ReplyDeleteSo delicious! Even my picky BF loved it!
Deletei am going to try this with pork loin chops that i will pound thin. and only because that is what i have thawed for dinner :)
ReplyDeleteUsed cinnamon toothpicks by mistake...Don't do that !!
ReplyDeleteHeh. I just chortled out loud at my desk.
DeleteI made this last night. Unbelievably good!! I used fat free cream cheese (that's what i had on hand) and it was still soooo tasty!
ReplyDeleteThe mister also loved it, which is a plus :) This will definitely be going in our regular rotation
Thanks!
I made these last night for dinner as well! Excellent! I followed the recipe as written EXCEPT for on three of the rolls I used the cheese mixture before I put the jalapenos in (DD & I are not big jalapeno fans) and then for the rest of them I added in the peppers. My daughters boyfriend loved them and and 4 roll-ups (I made 10 total). Hubby liked them quite a bit but said he thought they needed more filling, and they probably did as I didn't up the amount of filling I just made it stretch for the extra two rolls. I also think next time I may try cutting the pockets into the chicken breasts and filling them that way rather than making rolls out of them, just to see the different.
ReplyDeleteEither way, this recipe will be a repeat in our house and will be added to the cookbooks that I'm putting together for my kiddos. Thanks for a great one!
Awesome recipe. It was a little trickier than I anticipated as I only had regular chicken breasts and tried to pound them out to make them thinner....except I don't have a meat mallet, so I used my pestle. Which then ripped through the chicken. Nevertheless, I soldiered on and other than it being a bit messy (the cheese mixture melted out of the chicken), no harm done.
ReplyDeleteI will just buy the chicken cutlets next time for a much faster/less messy experience.
Cover the chicken with plastic (or put in a plastic veggie bag or unzipped ziplock) and slap it a few times with a sturdy frying pan. Better than a meal mallet!
DeleteOr just cut your regular chicken breast in half length-wise ;)
DeleteThis was delicious! I skipped the breading and put them on the grill. A-W-E-S-O-M-E!
ReplyDeleteMade this and the fiesta rice for dinner and it was wonderful!! I used canned jalapenos (much easier) and served a little marinara sauce over the chicken. My husband who is not a fan of light recipes has loved everyone that I have made from your blog. Thanks!!
ReplyDeleteThis was delicious!! I was a little skeptical at first, because it didn't seem like it would be enough filling but it was soo yummy! My 2 year old LOVED it (I made one for him without the jalapenos in it) I will DEFINITELY be making this again!! Thank you so much Gina :)
ReplyDeleteThese were amazing! AMAZING...serious. I made two modifications, I used canned green peppers (anaheim style) and no bacon. I made my daughter's without the peppers. She was so excited.
ReplyDeleteEven my cheese hating husband loved them, he didn't notice there was cheese. Or maybe he did...lol
This was awesome! I wish I hadn't halved the recipe because we would have eaten more!
ReplyDeletemade this for dinner last night along with the black bean salad and cilantro lime rice. everyone loved it, it was delicious! thanks :)-nicole
ReplyDeleteMade this tonight but instead of baking with breadcrumbs we put them on the grill. Very good! Definitely a good way to give chicken more flavor!
ReplyDeleteThis comment has been removed by a blog administrator.
ReplyDeleteI made this also last nite(I love to read comments from all those who tried, as opposed to I am going to try it, that way I feel like its been tested). Anyways, I "cheated" on the bacon and sprinkled in Bacon Bacon from Tastefully simple, mmmmmmm. NO mess/smell/grease to clean up. I also don't care for spicy food and I enjoyed the crunch of the fresh jalepeno and it seemed not "hot", I am guessing cuz it was fresh? I left in 80% of seeds. Thumbs up overall.
ReplyDeleteI made this tonight without the bacon and scallions and it was delicious! I used fat free cream cheese and extra jalapenos and the spice level was perfect! Next time I will try them with the bacon and scallions, I just didn't have any and being VERY pregnant, I didn't want to go to the store today. Very yummy!
ReplyDeleteI made this last night using chicken breast! It was SO easy and so amazing!!! Loved it!
ReplyDeleteI made this and a side of Gina's easy yellow rice--it was a great side dish! Added some black beans and had a perfect cinco de mayo meal!
ReplyDeleteMade these last night & they were a huge hit w/ the hubby! He suggested I make them next time we have company & to put on our weekly menu! DELICIOUS!!!
ReplyDeleteCan't wait to try these! My husband and I are big fans of jalapeno poppers so I am sure we will love these!!
ReplyDeleteJust wanted to say thank you very much! this recipe made our sunny weekend way better! I invited my family and everybody loved it! I will have to do it again sometime next week!
ReplyDeleteHi
ReplyDeleteWe'd like to invite you to submit your food photos on a food photography site called http://www.foodporn.net so our readers can enjoy your creations.
It is absolutely free and fun to make others hungry!
Thanks :)
Made these yesterday, Definately making again!! Awesome!!
ReplyDeleteAs an Australian who misses jalapeno poppers, I had to make this!! Was sooooooo tasty!! I used whole breasts and just made a pocket and still worked wonderfully.
ReplyDeleteThank you so much for a recipe that reminded me of my many holidays in USA without all of the fat and calories!!
I made this for Cinco De Mayo. SO, SO, So good! Excellent!
ReplyDeleteI am a bigger woman, and I have just started Weight Watchers on the Points+ program. I just have to say that this site is a wonderful discovery! I wasn't so sure that I could make it, but I have faith now! This recipe looks amazing, and you get 2 breasts per serving, for only 9 points, INCREDIBLE!
ReplyDeleteMy husband wants to know if you could make the filling into a dip! He loved it! Thanks so much!
ReplyDeleteThis chicken recipe was amazing!! Everyone loved it and it just tasted so good, definitely making this again.
ReplyDeleteMy boyfriend asked if i could make this every night!
ReplyDeleteSo Good!!! Just finished eating and had to come and tell you how delicious this was. Thanks for another great rescipe!!!!
ReplyDeleteI just made this for dinner tonight and it was one of the best chicken dishes I have ever made. My husband wanted to know when I would make this again! Thanks for all of the recipes Gina!
ReplyDeleteMade this for dinner this week, it was terrific! It has made it into the dinner rotation binder
ReplyDeleteI was an idiot and forgot to buy jalapenos and didn't realize it until I was in the middle of making them! Oops! They were still fantastic! Definitely a keeper!
ReplyDeleteI made this tonight and my BF loved it! This is totally his kind of food - and I left the jalapenos out of mine cause I am a wimp about spice. Another tasty recipe:)
ReplyDeleteMade this for dinner tonight...and it was Amazeballs. The DH had 3 pieces, and was making yummy noises the entire time. Great recipe- thank you for sharing!!
ReplyDeleteThank you for this! It was only my husband and I eating, so I made 4 pieces, but made the same amount of filling - which was a good idea, because even though I toothpicked the ends, some of the filling still baked out. So I just nuked the leftover filling and made a little "bed" on the plate and put the 2 pieces of baked chicken on top - problem solved and no cheesy goodness lost :) I also seasoned my plain panko bread crumbs with a lime zest/pepper spice blend. We LOVED it, and it will definitely be a regular on our dinner menu. I served it with cilantro lime rice and sauteed green beans with some citrus flavoring.
ReplyDeleteMade this for dinner; delicious!
ReplyDeletemade it for dinner tonight and it was awesome !
ReplyDeleteI prepped this last night and popped in in the oven today and it was AWESOME (as any of your recipes I've tried so far are)
ReplyDeleteI didn't use bacon since I'm not a big fan.
I had leftover backed mac and cheese that I had to use or lose so that and steamed string beans were the side. I used the mixture that came out of the cutlets on my string beans. I'm going to use the rest of the cream cheese to make a warm dip it was that good.
As someone else suggested I'm going to try either a pocket or just fold over a cutlet rather than roll them next time and I wish I had a BBQ to try them grilled.
I made this over the weekend and it was so delicious. My family loved it as well. I followed the recipe exactly; it's a definite keeper. I served it with the fiesta lime rice.
ReplyDeleteThis recipe was great! I agree it is a keeper!
ReplyDeletesuper good! drizzled extra lime at the end. Biggest takeaway is that I made an extra batch of the filling and keep it in the fridge. Makes an awesome egg white omelette with some chipolte seasoning added! So yummy!
ReplyDeleteInstead of bread crumbs I used Fiber One cereal that I put in the blender and made crumbs out of it. Has more flavor and less calories...they were wonderful
ReplyDeleteThese are awesome! We used panko bread crumbs with some garlic pepper salt and italian seasoning.
ReplyDeleteI loved the filling so much that I have used it on a grilled portabella mushroom and to make potato skins. Both were delicious.
ReplyDeleteOf all the recipes I've tried so far (and I've loved them all) this was the BEST. Absolutely delicious. I have to admit, I used Hormel bacon bits to save time. Thank you for a site which has made dieting easy.
ReplyDeleteI removed the bacon what would the health nutrition be after this instead of nine points would it be 6 or 7
ReplyDeleteI am a huge fan of jalapeno popper everything and these stuffed chicken breasts sound amazing!
ReplyDeleteOh my goodness this was super yummy. Thanks for this one. Now I just can't decide which of your many recipes is my favorite.
ReplyDeleteThis is sooo delicious. I didn't coat the chicken in bread crumbs, instead I sprayed it with a little extra virgin olive oil and sprinkled some Mrs. Dash chicken rub on it. Baked it for 20min and it was amazing. Will definently be making this again :)
ReplyDeleteAnyone else put this into the recipe builder? Did it today, left out the bacon since we are not fans and the points came to 10. The only difference I made was I couldn't find chicken cutlets in the database so used chicken breast, raw - 24 oz. Help!
ReplyDeleteMake sure you are used center cut bacon COOKED. If you use raw, it would be more points. The chicken should not have changed the points. Also the right cream cheese, etc.
DeleteIf you use different brands than Gina did, then it might affect points as well.
Actually, I just put it in the recipe builder and got 11 pts as written.
DeleteMaybe it was a typo since the old points and new points are the same. Almost always points plus values are a little higher.
This was ridiculously delicious!!!!!!!!!!!! Kroger is silly & runs out of chicken breast really fast but I was able to get the small strips of chicken breast. I was worried all the cheese would come out but it actually worked really well! They were like bite size jalapeno popper chicken! This was amazing!!! Seriously amazing!!!!! Although my mouth is slightly on fire. :)
ReplyDeleteDelish!
ReplyDeleteWe loved it!
Loved, loved it! Even my husband the non-chicken person in our house loved it and asked for me to make it again.
ReplyDeleteNext time I will make with a pablano pepper which is a little less spicy and I totally love its smokey sweet flavor. If I am short on time, I think it would be good with a can of green chilis as well.
I have used jalapeno flavored kettle chips crushed instead of bread crumbs. also used poblano peppers. its great!
ReplyDeleteI made this tonight and it was great! I don't like spicy food, so I was a little apprehensive about using all three jalapenos (even with seeds removed). There was no need to worry; these turned out great!
ReplyDeleteI made a couple changes: 1) I used turkey bacon, and 2) I only made 6 cutlets. I recalculated points given my changes (keeping the same amount of filling, even though I didn't quite use it all, and subtracting 1.3 oz of breadcrumbs since I only used 1.1 oz). My points turned out to be 7 points per piece, but having one piece paired with the fiesta rice and a big serving of veggies is more than enough!
Thanks for another great one, Gina!
I made these last week and my dad said it was the best chicken he's ever had! We don't eat a lot of carbs so I paired it with a mixed green salad with black beans corn and avocado which was delish!
ReplyDeleteThese were awesome!! I have the hardest time with stuffing and rolling chicken, (I'm just challenged that way), so I cut a pocket and stuffed them, then just put them pocket up in the pan, so they wouldn't leak, and it worked great. Not messy at all, crispy and good! Loved every bit of it. I couldn't really taste the bacon, though, so I might leave it out next time.
ReplyDeleteYum, yum, yum. Made this for dinner, and it is restaurant quality!! Drooling just thinking about it and sad there are no leftovers. THANK YOU!!
ReplyDeleteI am on weight watchers and I cooked this last night for dinner (sans the Japs because I'm not into spicy food) and OMG it was DELISH!!!!! I am sooo glad I found this site :D
ReplyDeleteI made this yesterday, and OMG i can't wait to make it again! My BF loved it and he is hard to please... Can't wait to try many many many more!!!!
ReplyDeleteThese are SOOOO good !!! I made 24 of them for my freezer. 45 minutes at 450 did the trick ! YUM !
ReplyDeleteLoved this! And so did my boyfriend, which is great! He loves spicy so I added more jalapeno, used the panko as you said, used turkey bacon instead, and used fat free cream cheese! Delicious. He even heat up the leftovers and ate them the next night! I love being able to cook something with a lot less calories, but still having that feeling of eating something that isn't "diet" food. My BF asked me if I was sure it was from skinnytaste:) Thank you for your website...it's amazing!! I am making the shephard's pie tonight! (He is British, so I hope he approves:))
ReplyDeleteThis was AMAZING!! This is the first recipe I made from this site and now I can't wait to explore more! I honestly couldn't believe how wonderful this was considering the nutritional stats.
ReplyDeleteOne quick question. Well, maybe two. 1) Can we email Gina directly with questions? If so, how? 2) I am an online Weight Watchers member and tried to calculate the points by using the recipe builder but ended up with two points higher than listed above. When, however, I used just the nutritional information provided by Gina, I found it to be exactly as she has reported. I didn't include the jalapenos as I know sometimes the recipe builder adds for 0 point veggies, so I really don't see what happened! Thanks for your thoughts.
2)
This was really delicious! I used panko bread crumbs and seasoned them with Fiesta Party Dip mix from Tastefully Simple. I also made the Lime Fiesta Rice for the side, as suggested. Everything was fresh, flavorful and light. Will definitely put this into my normal rotation. Glad to know that it is easily freezable as well!
ReplyDeleteOh these are like heaven!! I will definately make these again and they're so easy to make!!
ReplyDeleteYou've outdone yourself (once again)!!! We had this for dinner tonight and it was amazing. We can't thank you enough!
ReplyDeleteMaking this for the second time tonight! When I first made it my husband said with a big smile on his face, "I insist this is on our dinner rotation weekly!". He absolutely loves jalapeno poppers and this is a great way to make the same taste into a meal.
ReplyDeleteHow many points do you think would be cut out if you omit the bacon? Thanks!
ReplyDeleteI'm a casserole kind of girl and luckily my husband is a casserole kind of guy. As delicious as this recipe looks and sounds I didn't want to mess with chicken cutlets mainly because I had boneless/skinless chicken breasts in the freezer. I took them out, cut them up (frozen, with a good knife), mixed everything up together and threw it in one dish. I'm eating it now, with a Pampered Chef skinny margarita and some lime tortilla chips and it is TO DIE FOR!!! Thanks so much!!!
ReplyDeleteI just thought of something.... The lime chips would probably be great as a topping/crust.
DeleteMade this for dinner tonight and it was a HUGE HIT...even my 6 year old asked for seconds! I had to substitute red onions for scallions, as I didn't have scallions on hand. I look forward to what it will taste like with the right ingredients :). I sautéed tomatoes, mushrooms, red onions and garlic and served that as a side. They paired nicely together.
ReplyDeleteThis will be regular in our house!! Thank you so much!
Another winner! I only had one fresh pepper so I added a bunch of jarred jalapeños as well- such a good addition. I can't get over how much these really taste like poppers... you hit the nail on the head with this one Gina! Thanks so much!
ReplyDeleteMy huband and I made this last night and it was delicious!! He absolutely loved it. We used seasoned Panko in place of the bread crumbs and substituted chopped green chiles from the can in place of jalapenos just to make it easier. It was fantastic and is going into the regular rotation.
ReplyDeleteThis was so good! I have recommended it to all my friends who are looking for healthy filling recipes.
ReplyDeleteI absolutely love your website!!!
ReplyDeleteAll of your recipes are phenomenal .... and sooooo easy!!!
Thank you! Thank You!
Just curious if I could use something other than cream cheese?
ReplyDeleteI made these tonight for dinner and they are delish! I could not believe the flavor...oooo the bacon was so good! I made it with your black bean, tomato, avocado side dish. What an amazing complete healthy meal. Thanks as always Gina.
ReplyDeleteThis was delicious, my husband had seconds (always a good sign). I'm even a wuss with spice but the jalapenos added so much flavor and very little bite. But I think the points+ that was listed is wrong...I followed it to a tee and imputed it in the recipe builder myself and it read 11 points+
ReplyDeleteThis was a big hit in our family. My guy said that it was his favorite. i made the Fiesta Lime Rice recipe, as suggested and it was perfect! He doesn't really like rice but he ate a ton of this. And, of course, i felt great that i was making him a healthy meal.
ReplyDeletei found this very easy to make. i've rolled chicken breasts up before. Learned how to make cutlets (cut a breast in half) on the internet. i find that if i dip the chicken thoroughly, in this case, the oil mixture, then the breadcrumbs, it seals the rolls up and makes the inside mixture not leak as much. Even if it does leak - it's still great!
Thank you so much. You're a genius!
easy to make and so delicious!
ReplyDeleteMade this tonight. Huge hit with the hubby!
ReplyDeleteMade these this week with the suggested side... Amazing!!!!!!!!! My hubby and I are having friends over tonight and are using the popper filling for some mushrooms we are going to stuff!
ReplyDeleteI make something similar after dh feel in love with buffalo wild wings app. Similar to this but I use this glutin free tortilla cumbd. They are amazing.
ReplyDeleteI made this last night with chicken breast that I cut and pounded down - it was AMAZING! My fiancee woke up in the middle of the night to have his 3rd helping! I skipped the scallions and didn't miss them. I LOVE the idea of using the lime and oil to help the breadcrumbs stick - I could faintly taste the lime on the cooked chicken. PERFECT!
ReplyDeleteIf you're not into spicy (like myself) - you can substitute with the jarred tamed jalapenos. It gives you the flavor, without the hot! My absolute favorite.
ReplyDeletemade this for dinner tonight, soooooo good. Will be making this again.
ReplyDeleteI've made this at least 4 times since I've discovered this recipe and I couldnt be more in love with it! I skip the bacon and add a bit more lime and it's amazing! Thanks for the great blog with the most delicious recipes!
ReplyDeleteI just wanted to say thank you for this recipe! I made it for dinner last night with the Fiesta Lime Rice, and it was the best meal I've cooked in a long time! You hit a home run with this one!
ReplyDeleteGreat recipe! It is definitely a keeper... Next time I might put the jalapenos in the food processor somyoumdont have as much as a crunch.
ReplyDeleteOnce again, a GREAT recipe. We had this tonight with the Cauliflower fritters (yes, a bit rich all together, but YUM). My husband's first words were, "I like the lime breadcrumbs." We loved it. As usual, it halved perfectly. I used turkey bacon instead of regular. And I love the suggestion of the poster who mentioned putting the chicken on a rack in the dish so it gets toasty all around. I'll have to try that one.
ReplyDeleteOh, one other difference, I put the chopped jalepenos into the pan with the bacon (once the bacon was all crispy) and just cooked it for a minute to soften. BUT BE CAREFUL! Cooking hot peppers can make strong, fumes - do not breath them in. But that kept them from being crunchy.
