What happens when you combine Baked Jalapeño Poppers with chicken?? Oh yeah baby!! Cheesy jalapeno popper stuffed chicken breast stuffed with diced jalapeño, cream cheese, cheddar jack cheese, scallions and bacon!

Jalapeño Popper Stuffed Chicken Breast
Serve it with fiesta lime rice, cilantro lime rice or a two bean salad or black bean cucumber salad on the side to make it a meal.
For this recipe, I basically deconstructed my jalapeño poppers and stuffed them into chicken and the results where mouth watering!! Now updated to include Air Fryer directions!
Variations and Tips:
- Use panko in place of breadcrumbs for a crunchier texture.
- To make this gluten-free, use gluten-free panko.
- For a milder version, take out the jalapeno seeds and membranes.
- To make them spicy, leave them in.

I have made this on several occasions. It is one of my favorite chicken recipes. Made it for a good friend of mine and she loved it too. I can’t eat spicy foods but this was just perfect when removing the seeds and membrane. If you haven’t tried it yet I recomend that you give it a chance.
Fantastic chicken recipe! Loved all the flavors combined! This will be a regular addition to our dinner menu.
Wow – This was fantastic! I forgot the bacon but it still tasted fabulous. Chicken was so moist and just enough spice. Cheesy but not over the top. Used with the panko bread crumbs and only coated the top to save carb calories, even though there are not a lot. I will recommend this to all my friends and it will be a regular on the menu!
Love love love this recipe! The chicken is so good fresh and reheated. I didn’t have cheddar jack so I used half pepper-jack, half shard cheddar. This will definitely get added to our meal rotation.
I’ve made this a couple times now and my husband and I love it. It’s a perfect blend of cheesy spicy goodness. I followed the recipe exactly for the first couple times I made it. Last night, I rolled the chicken, covered it in lime, and then put it right into the skillet (no panko). It was just as good! I know a little bit of panko isn’t going to make or break the points/calories for this, but I wanted to try it.
We served the chicken with a Mexican-ish stir fry style rice – cauliflower rice, corn, jalapenos, poblanos, and onion.
5 STARS – I don’t know how I missed the stars on my initial review.
I made this last night and it was a huge hit! I don’t have much luck rolling chicken so I just sliced my four regular chicken breasts in half and stuffed the filling. So delicious!!! Will definitely make this again.
This was super tasty and felt quite easy to make. Thank you!
This was delicious! Will definitely make again, need to practice on my rolling technique a little but we loved them!
I make this with Costco rotisserie chicken. I know that probably changes the calorie content some however I omit the breadcrumbs doing this too. I keep the lime and the cream cheese/jalapeno stuffing then mix everything together in a sort of casserole. Husband and I love it. I made it once as recipe said and was time consuming for our busy house. A+
These were wonderful. Thanks!
Great and Tasty. Easy to prepare. The temperature was way too hot in my oven. I reduced after the first 10 minutes.
Definitely will prepare again.
Cooked this and it came out a little dry. Anyone have any idea what I did wrong to fix this?
Cooked this in the air fryer last night and it was packed with flavor. It will definitely be a staple in our household from now on. Had some leftover cream cheese mixture that we ate on a bagel this morning and it was equally delicious!
At what temperature and for how long did you cook them in the air fryer? I was thinking the same thing!
By the way, I LOVE your recipes!! They help me tremendously.
Easy and delicious. I just sliced regular-sized breasts in half. Worked well.
This was stellar, Gina! Absolutely had the flavor of jalapeño poppers.
For those who are looking for something spicy, definitely leave in the membranes and seeds. I removed them out of habit, and the jalapeño really mellows when it’s baked.
So delicious!!! I thought it was going to be too much jalapenos but it was perfect! So delicious, My husband loved it too! I served it with roasted rainbow carrots and it was a delightful and healthy meal.
My hubby said, “definitely add this one to the favorites list!”
Such a creative idea, and I can’t believe its such low calorie for how much rich, gooey, delicious it is stuffed with!
I did double the bacon, I figured it was worth the extra point to me. We cooked this in the air fryer and it came out perfectly!
This was divine. Whole family loved it! Our third Skinny Taste meal this week and all three were flavor explosions. Thank you so much.
Thanks Jennifer!
I put everything in the recipe builder and this came out as 8 points?
I got the same result!
Made this last night and OMG!!!!!!!! My husband just told me that this is hands down the best chicken he has EVER eaten…and that includes restaurants. This is absolutely delicious and will be our little “cheat meal” at our house. Thank you for making such flavorful recipes!
I hate rolling chicken but I love the flavors of this recipe so much. So I just breaded the cutlets and air fried them flat. Then I topped them with the cheese mixture and air fried or broiled them until the cheese was melted and bubbly. Same flavor. Less hassle.
I love this idea! I too hate trying to roll chicken breasts!

Hi! This was amazing! Howeve, I put this in recipe builder and it came up as 8 points. Are the servings off? Or did I do something wrong? I didn’t just put in the nutrition info.
I came up with 8 points also on the Blue Plan.
I did also.
I will double check.
Gina, is it possible that you removed points for unused breadcrumbs? I’ve seen you note that on other breaded recipes. I came up with 8 on blue too
I just made this tonight and I got 9 points on the blue plan. VERY delicious!
Why would this be higher on purple, than on blue?
What am I missing?
Thanks for the recipe! How did you roll yours so perfectly? I used half the filling and mine were just a mess to roll up. LOVE the flavor combinations though.
Lots of practice lol.
Can you freeze the stuffed chicken and then bread it later?
I have been making this recipe for several years and love it. However, air fryer took it straight over the top. Thank you!
You did it again!!!! Yummy creamy delicious!!!!!
I just put this in the recipe tracker in the WW app because I wasn’t going to use bacon. It came out to 8 freestyle points? I put I. All ingredients minus the bacon. Just want to know what I might have done wrong.
This is one of my favorite recipes and I’ve been making it for years! So tasty and filling!
Hi Aisling. The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.
The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.
This was truly delicious but a bit labor intensive, which I’m not used to with Gina’s recipes. Hubby LOVED it, as did I.
This is so fantastic! I have to make it at least once a week. It’s hard for me to get thinly cut chicken breasts in my small town so I filet my chicken and beat it semi-thin. Still comes out oh so tasty!
The best part is it doesn’t feel like your eating a low calorie/diet kinda meal!
Absolutely delicious! Oooey, gooey goodness! Don’t try to cut the chicken thin enough yourself, though! It’s worth the money to buy the cutlets (lesson learned 🙂 )
You recipes NEVER disappoint. This is absolutely delish!
This a seriously great dish! Only thing I changed was to sauté the jalapeños with some fresh garlic before adding them to the cheese/scallion mix. I’ve made it twice and it’s a keeper!!!
FIrst recipe I tried with our new Air Fryer and, as usual, Gina’s recipes continue to knock my socks off. Make sure to turn the chicken.
This was amazing!! My boyfriend and I both loved it!! So easy, simple and delicious!
I’ll be making this again!
My husband does not like cream cheese. has anyone tried making it without the cream cheese? Maybe add extra cheddar?
Thank you in advance.
Sure
Can you freeze the leftovers? Will the filling still taste good heated up after being frozen?
Can these be prepped ahead frozen and warmed later?
This is delicious and will by on regular rotation. My picky mom and husband both loved it.
Amazing ! Made it for Super Bowl LIII. Sliced chicken breasts into 1/4 ” thick pieces. Really flavorful. Will make it again
Hey there, just wondering if anyone has tried this in casserole form? I used the breasts from my chicken already and wondered if I could cook the remaining chicken in the IP and cut up and mix this all together for a yummy casserole?
Delicious! I can’t believe it was only 5 WW smartpoints .
It says Freestyle points. Not Smartpoints. I put it in recipe builder and it came up as 8 points for the 2 pieces.
My boyfriend and I made this as is with the only substitution being shallots instead of scallions. We both really enjoyed it; highly recommend!
This was AWESOME, and I never comment on anything- but my husband who is NOT at all interested in changing his diet LOVED this. I told him after he licked the plate clean that it was a WW recipe and he said- BS! I added a side of brussel sprouts with bacon and parm to mix it up and it was a great dinner. Everyone should try this!
All I can say is wow! I have made this dish several times now. It’s so delicious ????. I had it for everyone at Christmas. They all loved it! It was a big hit. Everyone was asking me how I made it. I had 15 people over. Bought frozen chicken breasts from Costco. Sliced them lengthwise in half as they were thick. Then I slightly pounded them flat. I used 9 breasts. Had two left. We also had tri-tip and a few side dishes although everyone raved about this dish the most. I made the cream cheese mixture the day before. Just doubled the ingredients and took out most of the seeds and membranes so it wasn’t to spicy. ????
My Skinnytaste One & Done cookbook came yesterday, and I’m excited to try this as my first dish tonight! Ref fineness, what temp should the chicken register on the thermometer when it comes out of the air fryer?
This is fabulous! Not too spicy!
Wow, these were fantastic! Didn’t change a thing. Used the panko crumbs and it gave it a nice crunch. My husband wasn’t able to eat it until the next day, and he texted me and said “Holy crow, that chicken you made last night is wicked good!” So I’d say this is a keeper recipe!!
Great! 🙂
This is a wonderful recipe!! My whole family loves it. I just love your recipes. Thank you for sharing them!!
This recipe is AMAZING!! I’ve been making your recipes for years and my husband (who will eat virtually anything) said “I LOVE Skinnytaste!” after I made this (I didn’t even have to tell him it was your recipe). Thanks for keeping recipes healthy yet delicious!
My boyfriend told me this was the best thing I had ever cooked. It’s delicious!
These are totally delicious!
Delicious! I made it with about 1oz of cooked pork sausage in place of the bacon and it was still great! It tasted to luxurious and creamy. I served it with steamed broccoli, but I wish that I had baked the broccoli tossed with some of the leftover cheesy mixture.
I made this last week and it was definitely a winner winner chicken dinner ! I am making it again tonight! I went mid spice and left half the jalapeño seeds and it was just right for us.
Thanks for your skinny recipes !!! I use them a lot!
Hi there,
I just wanted to know how to make this in advance, can I set it all up and then freeze the chicken? And just go straight from freezer to oven? (does this impact the baking time?
thanks so much!
Made this tonight. Left out the bacon cause believe it or not I am not a bacon lover. Omg!!!! This is freaking delicious!! It is definitely something I will make very often!! Thank you for this recipe!!
GREAT recipe! So many positives. First, it was so much easier than I thought it was going to be. I cut larger chicken breasts into fillets myself, so they weren’t all exactly 3oz, some were 4oz. That was the hardest part! At first I was trying to insert the toothpick right after stuffing, but that made it difficult to coat in the lime and breadcrumbs, so I finally figured out to just hold it together and pin it once in the pan. OK – my guests LOVED it. It looked great, tasted great and we loved that we could have 2 and still be within our WW points! Thank you! I would have never given this a chance on another food blog because the ingredients sound quite indulgent. Thanks for finding skinny ways of doing comfort food!
Made this tonight. Everybody loved it!
I made this tonight following the recipe exactly. My husbands response was “this is better than i ever expected. We are keeping this recipe”. My brother said eloquently “holy crap this is good!”. I’d say it was a hit. Thanks!
Lol that’s great! 🙂
This was delicious! We skipped the bacon and used our own homegrown, smoked jalapeño peppers for the filling. So flavorful! Your recipes never disappoint. My hubby chose this one and made it from start to finish. Thanks for keeping us in good dinners!
This was super yummy and a bit easier than some of the other roll-up recipes since there was no layering. I will definitely make this again!
did you use the 1/3 less fat cream cheese and the pablo bread crumbs?
This was delicious!!!!!!!!!!!! I made it twice within days. Yum!
We made this last night and loved it! I plan to make it again next week. Another great recipe, Gina! I can’t wait to get the new cookbook.
Thanks Sarah!
PHENOMENAL!!! I used the jalapenos without seeds, and it had very little kick to it – so people who aren’t into spicy can rest easy. I’ll probably keep the seeds in next time, but regardless this is going under my list of favorite recipes!!
I made this for dinner for my husband and I – WOW. Totally putting this in the rotation. It’s perfectly spicy, not too spicy, creamy, cheesy, etc. it literally tastes like a jalapeño popper! The breading is very light and crisps up so well in the oven (I don’t have an air fryer). I halved the recipe and wish I hadn’t! It was great for leftovers the second day and again, wish I had more to eat leftover! Thank you Gina for always coming up with creative, delicious recipes even my husband gets on board with and loves! It makes eating healthy so easy and we never feel like we sacrifice, because frankly, we don’t!
This recipe is AMAZING! My husband loved it and told me I could make this for him ANYTIME at all. Leftovers for lunch today and I can’t wait. Thanks Gina for all of your great recipes!
AMAZING!
I’ve been making your recipes for years now and love all of them but after making this dish over the weekend it is hands down my favorite! My hubby agrees! I even dreamed about it last night! ? LOL! Thank you for all of your amazing meals!
Lol!! Glad you enjoyed it!
My favorite new recipe of the year!
Amazing!
Amazing! I used reduced fat Mexican instead of cheddar. I have five kids so it’s hard to please everyone, but this did the trick!
Great!
This is sooooo good!! I don’t have much experience cooking with raw jalapenos so I was conservative and scooped out the seeds and membranes. It still had the flavor of the jalapenos, but not the heat. My kids told me I could make it a bit spicier next time, which I will do since this will definitely stay in the dinner rotation. I used the air fryer instructions and it came out crispy and delish.. I served it with yellow rice and steamed broccoli. Thank you for this yummy recipe!
I just made these and they were really good! Unfortunately a lot of the cheese leaked out despite my best efforts (I’m not the greatest at stuffed chicken, maybe with practice I’ll get better!) and I found the bottoms got really soggy.
I also realized part way through I didn’t have any bacon but they still tasted great!
Would love to try this fried one day if I’m feeling like a greezy cheat day.
We loved these, Definitely company worthy. Any suggestions as to what would work best for reheating leftovers?? Thanks
Air fryer or oven
Wonderful, I cut back on amount of cheese as I picked up whipped cream cheese “regular” by mistake! Exceptionally creamy isn’t it! So used 1.5 ounce or 4 tabs of it and 1/4 cup daisy cottage cheese and just 28 grams of shredded reduced fat Mexican cheese., to make up for it. We loved it and could eat it every day! I had plenty of filling as I had (5)- 4-5 ounce chicken breasts that I pounded thin. Made a combo of your cauliflower rice and the skillet zucchini–(just no cheese in it) combo and it was a wonderful vegetable medley to go with it. Thank you. Just wonderful
I’ve been looking forward to making this since I saw the recipe posted. Made it tonight and it was delicious. My son ate my second piece before I had a chance to grab it but that was okay because one piece filled me up and it was soooo good. I think my son ate 5 pieces of chicken but he is a growing teen and a football player so I often have to double your recipes for my family of 4. Thanks so much for your recipes, Gina. I recommend your site to everyone I know. ?
Thanks Lisa!
I loved this!!! So, so good and boyfriend approved!! My 14 yr old however declared it “gross” because he didn’t realize I put real jalepenos in it…….uhm, hello?? It’s called JALEPENO popper stuffed chicken for a reason!!! I served with broccoli and grape tomatoes for myself and my boyfriend opted for waffle fries lol. Thanks for a great recipe that I will definitely make again!!
Amazing. Soooooo good!
Never wash chicken. NEVER. You just spread bacteria everywhere. Cooking kills the bacteria…NOT washing. Otherwise, lovely recipe.
WINNER RECIPE! I used the breading from your AF pork chop recipe. DEFINITELY going on rotation!
Made this for our main meal (lunch) today. It is delicious!! Best part: leftovers for tomorrow!!
Made this tonight for husband and me and we both loved it. I didn’t have scallions or cream cheese so i substituted yellow onions & ricotta cheese
make the cheeses full fat, substitute grounded up plan pork rinds [add seasonings of your choice] for bread crumbs and you have KETO! no rice of course… maybe some riced cauliflower or just some broccoli or spinach. ;–)
If you use fat-free cream cheese instead of reduced-fat and leaving everything else the same, the Recipe Builder drops the SmartPoints from 8 to 5.
What is the name of the corn/bean salad shown on the plate with the chicken?
thanks.
That is black beans and corn side. You can find the directions as a side dish of the following recipe: Smoky Spice Rubbed Salmon with Black Beans and Corn.
Made this tonight and it was delicious. However—the Smarts Pointa given on this site seem to not correspond with my app. I created a recipe and added all the ingredients and I am still getting 8SP. Is anyone else getting the same?
Hi Heather!

I also just put it into the recipe builder and also got 8 SP. Maybe if we switch to turkey bacon it would be less.
I get 8 points also, just putting in the ingredients that have points, not zero point foods.
I want to make this so I plugged this into the recipe builder on the WW app. I only entered the ingredients that have points plus values. I got 6 points per serving.
Seasoned Bread Crumbs – 7 points
1/3 less fat Cream Cheese – 9 points
Center Cut Bacon (2 slices) – 2 points
Sargento reduced fat Cheese – 5 points
23 divided by 4 came out to 6 points…
?
Still going to make it based on reviews, but noticed others got different point values also.

Hi Gina, she does say that she used the recipe builder and not SmartPoints calculator.
I still get 6, but maybe the ingredients are different?
Don’t forget to figure in the olive oil too
Love this recipe so much! I like to make a double batch then freeze some for lunches 🙂
I just started WW and I typed in the nutritional information on there freestyle calculator and its saying 7 points per serving….and the recipe says 5…what am I doing wrong?

Really good! Not very spicy…maybe I need to leave the seeds in next time? I was worried because my wrapping was a little shoddy, but even though the filling leaked a little it stayed all together in a clump and was very tasty!
Absolutely Delicious!!! Great flavor I seeded out jalapeño so perfect amount of spice for family. Simple sided of grilled asparagus and unsweetened applesauce.
great!
Great flavor, large portion (two rolls), I could only eat one! My points were higher because I couldn’t find whole wheat bread crumbs. This is definitely a keeper!
My 11 year old asked if we could have this for supper every night! The rest of the family loved it as well. We also made the Fiesta Rice as the suggested side, and it was also very good.

My husband doesn’t love spicey. Should i leave out the jalapeño.?
If you take out all the seeds and and veins it shouldn’t be spicy, just flavorful.
I just made it and took out the seeds, and didn’t find it spicy at all.
When I use the recipe builder, I get 7 Smart Points per serving. Checking to see if all your recipes have been updated to the new system?
Breakdown of the points it was showing below. Just wondering if I’m calculating wrong. 🙂
bacon – 1 pt.
cream cheese – 9 pts
cheese – 12 pts
olive oil – 4 pts
Yes they have been updated but I will double check the points.
I just double-checked in the WW recipe builder and got 5 Freestyle points. Looks like you might have calculated using full-fat cream cheese and cheddar. Looking forward to making these tonight!
I still get 6, tell me the breakdown
I’m getting 8 points…
bacon – 1
cream cheese – 9
shredded cheese – 12
olive oil – 4
breadcrumbs – 4

Delish! Made this last night. Followed the directions exactly. Turned out really good and was very easy to put together. Would make again!
I made this last night with your warm Mexican corn salad. It was a super hit, and my boyfriend and I both loved it.
I’m horrible at beating chicken breasts, but my store didn’t have cutlets. I just cut four breasts in half and did the best I could rolling them with toothpicks. Between my shoddy work and high altitude, I baked them for 25 minutes at 375 and then an additional 20 minutes at 450 (turning them once).
Like I said, they were fantastic! And even better with the corn salad as a side. Rolling them in the lime juice before the panko was a wonderful touch.
I made this in my air fryer tonight and it is insanely delicious !!!
Great!
Hands down the best skinnytaste recipe I have made, and I’ve made quite a few! This was delicious!
Thanks Kristin!
My kiddos can’t handle the spicy-ness of at he jalapenos. What would you recommend for a substitute? Thank you!!
I would recommend using a green bell pepper in however many your are planning on making for them. They’re mild and would make a great substitute.
Try a poblano pepper. They’re not nearly as hot, but flavorful and with similar flavor as jalapeno. I’d avoid the bell pepper.
Absolutely fantastic! My family loved this. I served it with Fiesta Lime Rice. I actually only ate one. I put the entire serving in my Weight Watcher ap before dinner but had to change it. Very filling! Thanks again for another great one my family loves.
Friggen delicious…enough said!!
Gina-this is one of my favorite recipes! I want to make it for a casual dinner with family but one person is a vegetarian any suggestions for an alternative meal that would also compliment this?!
You can click on the vegetarian section to get ideas!
I made these without the bacon and used panko breadcrumbs. I also added cumin and cilantro to the filling. It was FABULOUS! I also had bigger pieces of chicken that couldn’t get as thin as I wanted them to, so I baked them for 375 for 25 minutes, then 450 for another 5+ minutes to get the golden color. Thanks for another phenomenal recipe! This meal was husband approved.
Great!
OMG – Soooo good!
A keeper, will definately make again – wish your site had a recipe box (pinning for now)
Thanks again
Does she mean 4 ounces of cheese by weight? Or does she mean half a cup. Because 4 ounces of cheese is a LOT of cheese.
By weight
450 degrees people. Read.
Bake at what temperature????
I've made several of your recipes and have been wanting to try this one but my boyfriend can't have citrus. Can I leave the lime juice out or is there something I can substitute?
If I make them the day before can I just let it sit in the fridge for 24 hours?
If I freeze them, should I bake them straight from frozen? Or let it sit in the fridge overnight and then bake? if I do either of these does the temp or baking time change?
loved this and will make often. Thank you.
This is SO good – I've made it twice in the past two weeks. Would love to see a recipe for a lightened up jalapeno popper dip! 🙂
I made this last night, and it was just the yummiest!
I had some problems with the chicken. The package SAID thin-sliced cutlets, but what I got were two cutlets and one breast. Grrrr! So I pounded that breast out thin and cut it in half, et voila. Took longer than it should have for my hungry guy, but I hooked him up with a beer, and he waited happily, then he inhaled the meal!
This is definitely a keeper, and is going into the rotation!
This is so amazingly delicious!
OK just have to say thanks for this fab recipe! The taste is amazing and the portion is good sized! I made these as written a few months ago and wished I had done a double batch, so yesterday I made that double batch and froze them! I parbaked the completed chicken rollups for 10 min at 400, then "flash froze" for 3 hours on plates in my freezer… Then I put them in a gallon freezer bag. Just reheated a couple straight out of the freezer for 25 min at 450 (I think the higher heat keeps the inside moist and the outside crispy) and enjoyed them so much! It might seem like a lot of work, but the reward of getting home at 9 pm and having dinner basically ready without eating fast food is so, so worth it. Thank you Gina!!
This is just perfect the way it is!! I don't use bacon though, I use the lower fat bacon pieces you can buy in a bag with the salad fixins at the supermarket. Way easier than frying bacon.
Bake for 22 minutes at what? 350? Doesn't say.
It says to preheat oven to 450. My chicken cutlets were thicker and I didn’t want the breading to burn, so I did 30 mins at 375 and cranked it up to 450 for the last 5 minutes to get the color.
Shhhhhh, don't tell my husband these are skinny! He loved them and so did I. This is probably our 6th recipe from this site lately, they're all hits.
So I tried putting this in the recipe builder thing on Weight Watchers and it says it is 13 points….
It is 8 servings and when I put it in it comes up 3 freestyle points.
According to the recipe:
Yield: 4 servings, Serving Size: 2 stuffed breasts
When I used the recipe builder is shows 4 points for 1. And 9 points for 2. Looks like its worth it though. I plan on having 2.
I made this today but a few things went wrong- first, i put my ingredients in the blender thinking that would be a good way to cut them without taking a lot of time, but it just made the cheese/cream cheese/bacon/jalapeno mixture more like a puree. Anyway I continued, but once I put the chicken in the oven, the entire thing just oozed together into one huge ball of mushy chicken and cream cheese/popper mixture. 🙁
Oh. My. Goodness. I made this tonight along with the fiesta lime rice, and my husband was speechless and weak in the knees! Once he regained his strength, he said that this was the best chicken he's ever had! The rice was the perfect compliment also. This will definitely be in our permanent rotation!
I just made these last night and substituted turkey bacon and it was AMAZING. Eating leftovers for lunch right now. THANK YOU!
I just made this receipt last night and I am absolutely hooked! Was a little too hot (even with the seeds out of the jalepeno for my 9 year old daughter, but both my hubby and myself absolutely loved this! This is my first time doing a skinnytaste.com recipe and I am just amazed with all of the flavor. I am not a creative cooker, so I am very excited to see what else I can find on here to make. THANK YOU!
AMAZING! I have never posted a review on any recipe before probably because I never cook. But made this last night for dinner it was amazing and pretty simple! I used turkey bacon and of course added more pieces then recommended because bacon makes everything better!
Could you use laughing cow cheese instead of cream cheese just like the buffalo chicken recipe on here?
I made this last night and was happy with it. I made the mistake of not getting enough chicken at the grocery store though. The recipe calls for 8 3oz pieces of chicken, so I though "Hey, that's about a pound and a half-ish, I'll just get one container of a pound and a half." I should have gotten two containers, because I only ended up with four pieces of chicken and a lot of mixure left. Derp.
The only thing I did different was I brushed on the oil/lime mix with a basting brush instead of dipping it, for neatness. When I make this again (and I will) I think I'll pound out the chicken (just a little) to make it more of a consistent thinness. I think it will provide a bigger surface to spread the mixture too.
FANTASTIC! Made these for an early Cinco de Mayo dinner! Will be making again, for sure!!
I made this on Sunday for dinner on Monday (I left the breadcrumbing step to do right before) and it was utterly delicious. I'm not positive about the points – I must be misunderstanding some part of that – but regardless it was so good! Seriously delicious. We froze half to have on another occasion and I can't wait to eat this again!
5 STARS—I made this for dinner tonight and it's awesome. I added a little bit of TJ's roasted peppers & onions frozen veggie mix to the filling, and I coated the chicken in crushed tortilla chips since I didn't have breadcrumbs. Don't skip the bacon, it really adds a nice smokey note to the dish.
I served it with tortilla chips and a red cabbage salad with roasted corn, black beans, tomato, cilantro and lime juice.
Best recipe i've ever made on here! and thats a lot! Thanks Gina!!!
I cannot wait to try this! What kind of breadcrumbs do you suggest?
These are totally awesome!!! I have lost 25 pounds now with weight watchers and I thank you so much for helping with great recipes!
I know this post is on the old side, but I made this for dinner tonight and it was delicious! I subbed plain panko for the breadcrumbs because that is all I had, but it still came out wonderfully! It's one of the hubby's new favorite recipes!
I love this recipe!! I think I found this site through this recipe. It is the first thing I've made that people request me to make it again:)
I have been craving jalapeno poppers ever since I made your baked version for a luncheon 2 months ago (everyone raved about those by the way). This chicken hit the spot! My stepdaughter got sent home sick today, vomiting, she went straight to bed and got up about 30 min after dinner was done and begged for some chicken! Lol Obviously it was a hit all around!
when they said the way to a mans heart is through his stomach, this is the recipe they were talking about!
This was amazing. Like, really amazing. I made it last night and my boyfriend and I devoured our portions in literally two minutes. Thank you for making me seem like a good cook!
Made this tonight and came right on here afterwards and pinned it and sent it to my friends doing weightwatchers. This is one of my favorites from the site, SO good. And I am STUFFED for 9 points!
So delicious! Definitely will make this one again. We paired it with sweet potato fries…not the healthiest option but yummmm!
Made these last night. Absolutely amazing! We used planko crumbs instead of italian bread crumbs and the crunch WAS awesome. I only had one chicken as we served it with couscous and I got very full. I've been excited for the left overs since last night. So happy I found this recipe, it will definitely be made again!
Made this last night. Absolutely amazing. I left the bread crumbs off to keep it low carb and used turkey bacon instead of regular. Very very good!
YUM! I used panko breadcrumbs instead of Italian, and cooked the chicken on a cooling rack in the oven– soo crispy and delicious! My husband loved the filling so much he had me make extra the second time so he could eat it straight out of the bowl 😛 Thanks so much!
Made this last night but skipped the breadcrumbs, just baked. SO GOOD! absolutely loved the kick of the jalapenos and the flavors compliment the chicken perfectly! Another great recipe to add to my tops!
Made this today, and it was amazing! Although, when I put this all into the recipe builder for WW, it said it was 10 pts for the same serving? Could it be because I used panko? Either way, absolutely AMAZING!!!! Recommend to anyone!
These were delicious!! I used regular chicken breasts, sliced them in half and pounded them slightly. I used turkey bacon. And while I liked them with scallions, I might leave them out next time for a more original "jalapeño popper" taste. Thanks for the great recipe! 🙂
We Loved it!!!!! Thank you for sharing. I left the jalapenos out of the kids and my husband and i had extra with ours. OUTSTANDING!!
I just made these and they were amazing. Even my picky boys ate and loved them. The filling did ooze out a bit, but the part that oozed out got nice and brown and tasted wonderful.
Love your recipes. Everything I have tried has been excellent!
Made this tonight….YUM! Like a previous commenter, I also served it with the fiesta rice, great combo. Kind of a lot of prep work for a work night, but with a good payoff! Will definitely make both again.
I made this last night and it was delcious! I accidently put the lime juice in the cheese mix rather than with the oil but it still tasted great. Super filling and was a hit!
I made these last night. I think next time I will have the butcher pound my cutlets a little. They didn't roll up very well and my filling was coming out, so I could only use 1/2 of the filling. BUT I persevered and they are really delish. I want to try them again with all the filling this time. I also used Italian panko. Great recipe and I really love this site. You use real ingredients and that is very important to me. Thanks Gina!
Thank you for making our dinner routine not so "routine." My kids loved this 🙂
I loved this recipe! Definately saving this in my recipe box.
I just made this last night and it turned out wonderful. I used laughing cow queso cheese and it added even more flavor, thanks for the idea!
Had this tonight. Didn't come out exactly like the picture but still tasted great! The jalapeño gave it a great kick and wasn't too spicy.
Will be making this again soon!
I made these for dinner without the bacon and shollots, added regular onion instead and they were absolutely amazing! My boyfriend was shocked that he could eat so much cheese and still be within calories. I bought a pack of 6 thin slied chicken breasts so each had just a little extra stuffing.
This is very delicious! I made it two nights in a row by request. Love the lime!
Thanks for sharing! We made this last night and loved it!!
I just discovered your website and made this tonight for the family. OH MY GOODNESS, it was soo delicious!! This will definitely be roatating back into our regular menu. Everyone loved it.
Just made this tonight and all I can say is Wow! Thank you so much Gina for inspiring us to cook healthy and delicious food. I have used many of your recipes over the past year which have helped me on my WW journey to lose 80lbs!
This is one of my new absolute favorite recipes. My whole family loves it and requests that I make it at least once a week! Thanks for the awesome recipe.
Thanks Gina. i agree, you are a genius! My husband absolutely loves this dish. i make the Fiesta Lime Rice as suggested. Made it just now. Put it in fridge and then all i'll have to do is pop it in the oven when we wanna eat tonight.
I make great recipes all the time but rarely remake them cos I'm always wanting to try something new. This, however, I make often. I prefer it with whole foods thinly sliced chicken.
Sooooo yummy! It was very filling too. Made it with some fiesta lime rice and it totally fulfilled my Mexican craving!
Delicious! I made this tonight and my boyfriend said it was so good he could eat every piece! Thanks for the great recipe!
I made this over the weekend (without the bacon) and it was VERY good! My husband and I loved it! I will definitely be making these again:)
Made this dish on sunday- it was realy good!!!!!
Found this recipe on pintrest. I tried it and I loved it! So delish!
My husband LOVES poppers so I thought I would try this tonight. He LOVED it so much he informed me that it was in his top ten. I figured that meant he wanted it in our regular rotation, but he stopped me to clarify. He thought it was one of the top 10 recipes he has EVER had, including restaurants and his mother. WoW! Thanks for the recipe I foresee us making this recipe over and over and over again.
My husband and I have made this several times now, and we agree it is the BEST chicken recipe we have. Thanks!
Your recipes are the only ones that I stick to 100%.This is now a weekly recipe in my house! Thank you.
