For this recipe, I basically deconstructed my jalapeño poppers and stuffed them into chicken and the results where mouth watering!! Now updated to include Air Fryer directions!

Variations and Tips:

  • Use panko in place of breadcrumbs for a crunchier texture.
  • To make this gluten-free, use gluten-free panko.
  • For a milder version, take out the jalapeno seeds and membranes.
  • To make them spicy, leave them in.

  1. Love love love this recipe! The chicken is so good fresh and reheated. I didn’t have cheddar jack so I used half pepper-jack, half shard cheddar. This will definitely get added to our meal rotation.

  2. I’ve made this a couple times now and my husband and I love it. It’s a perfect blend of cheesy spicy goodness. I followed the recipe exactly for the first couple times I made it. Last night, I rolled the chicken, covered it in lime, and then put it right into the skillet (no panko). It was just as good! I know a little bit of panko isn’t going to make or break the points/calories for this, but I wanted to try it.
We served the chicken with a Mexican-ish stir fry style rice – cauliflower rice, corn, jalapenos, poblanos, and onion.

  3. I made this last night and it was a huge hit! I don’t have much luck rolling chicken so I just sliced my four regular chicken breasts in half and stuffed the filling. So delicious!!! Will definitely make this again.

  4. This was super tasty and felt quite easy to make. Thank you!

  5. This was delicious! Will definitely make again, need to practice on my rolling technique a little but we loved them!

  6. I make this with Costco rotisserie chicken. I know that probably changes the calorie content some however I omit the breadcrumbs doing this too. I keep the lime and the cream cheese/jalapeno stuffing then mix everything together in a sort of casserole. Husband and I love it. I made it once as recipe said and was time consuming for our busy house. A+

  7. These were wonderful. Thanks!

  8. Great and Tasty. Easy to prepare. The temperature was way too hot in my oven. I reduced after the first 10 minutes.
    Definitely will prepare again.

  9. Cooked this and it came out a little dry. Anyone have any idea what I did wrong to fix this?

  10. Cooked this in the air fryer last night and it was packed with flavor. It will definitely be a staple in our household from now on. Had some leftover cream cheese mixture that we ate on a bagel this morning and it was equally delicious!

  11. By the way, I LOVE your recipes!! They help me tremendously.

  12. Easy and delicious. I just sliced regular-sized breasts in half. Worked well.

  13. This was stellar, Gina! Absolutely had the flavor of jalapeño poppers.

For those who are looking for something spicy, definitely leave in the membranes and seeds. I removed them out of habit, and the jalapeño really mellows when it’s baked.

  14. So delicious!!! I thought it was going to be too much jalapenos but it was perfect! So delicious, My husband loved it too! I served it with roasted rainbow carrots and it was a delightful and healthy meal.

  15. My hubby said, “definitely add this one to the favorites list!”
Such a creative idea, and I can’t believe its such low calorie for how much rich, gooey, delicious it is stuffed with!
I did double the bacon, I figured it was worth the extra point to me. We cooked this in the air fryer and it came out perfectly!

  16. This was divine. Whole family loved it! Our third Skinny Taste meal this week and all three were flavor explosions. Thank you so much.

  17. I put everything in the recipe builder and this came out as 8 points?

  18. Made this last night and OMG!!!!!!!! My husband just told me that this is hands down the best chicken he has EVER eaten…and that includes restaurants. This is absolutely delicious and will be our little “cheat meal” at our house. Thank you for making such flavorful recipes!

  19. I hate rolling chicken but I love the flavors of this recipe so much. So I just breaded the cutlets and air fried them flat. Then I topped them with the cheese mixture and air fried or broiled them until the cheese was melted and bubbly. Same flavor. Less hassle.

  20. I hate rolling chicken but I love the flavors of this recipe so much. So I just breaded the cutlets and air fried them flat. Then I topped them with the cheese mixture and air fried or broiled them until the cheese was melted and bubbly. Same flavor. Less hassle.

  21. Hi! This was amazing! Howeve, I put this in recipe builder and it came up as 8 points. Are the servings off? Or did I do something wrong? I didn’t just put in the nutrition info.

  22. Why would this be higher on purple, than on blue?
    What am I missing?

  23. Thanks for the recipe! How did you roll yours so perfectly? I used half the filling and mine were just a mess to roll up. LOVE the flavor combinations though.

  24. Can you freeze the stuffed chicken and then bread it later?

  25. I have been making this recipe for several years and love it. However, air fryer took it straight over the top. Thank you!

  26. You did it again!!!! Yummy creamy delicious!!!!!

  27. I just put this in the recipe tracker in the WW app because I wasn’t going to use bacon. It came out to 8 freestyle points? I put I. All ingredients minus the bacon. Just want to know what I might have done wrong.
This is one of my favorite recipes and I’ve been making it for years! So tasty and filling!

    • Hi Aisling. The only accurate way to determine any recipe’s SmartPoints® value is to plug the ingredients into the recipe builder on the Weight Watchers website (Click on “My Foods,” select “Recipe,” and click “Create a recipe.”) which does not count fruits and vegetables in recipes in the calculations as they are now 0 points.

The SmartPoints® calculator isn’t meant for recipes and will often give you the wrong points (usually higher) because it’s counting the fruits and vegetables. So if you see a recipe with a SmartPoints® value that’s different from what the calculator tells you, now you know why.

  28. This was truly delicious but a bit labor intensive, which I’m not used to with Gina’s recipes. Hubby LOVED it, as did I.

  29. This is so fantastic! I have to make it at least once a week. It’s hard for me to get thinly cut chicken breasts in my small town so I filet my chicken and beat it semi-thin. Still comes out oh so tasty!

The best part is it doesn’t feel like your eating a low calorie/diet kinda meal!

  30. Absolutely delicious! Oooey, gooey goodness! Don’t try to cut the chicken thin enough yourself, though! It’s worth the money to buy the cutlets (lesson learned 🙂 )

  31. You recipes NEVER disappoint. This is absolutely delish!

  32. This a seriously great dish! Only thing I changed was to sauté the jalapeños with some fresh garlic before adding them to the cheese/scallion mix. I’ve made it twice and it’s a keeper!!!

  33. FIrst recipe I tried with our new Air Fryer and, as usual, Gina’s recipes continue to knock my socks off. Make sure to turn the chicken.

  34. This was amazing!! My boyfriend and I both loved it!! So easy, simple and delicious!

  35. I’ll be making this again!

  36. My husband does not like cream cheese. has anyone tried making it without the cream cheese? Maybe add extra cheddar?

    Thank you in advance.

  37. Can you freeze the leftovers? Will the filling still taste good heated up after being frozen?

  38. This is delicious and will by on regular rotation. My picky mom and husband both loved it.

  39. Amazing ! Made it for Super Bowl LIII. Sliced chicken breasts into 1/4 ” thick pieces. Really flavorful. Will make it again

  40. Hey there, just wondering if anyone has tried this in casserole form?  I used the breasts from my chicken already and wondered if I could cook the remaining chicken in the IP and cut up and mix this all together for a yummy casserole?

  41. Delicious! I can’t believe it was only 5 WW smartpoints .

  42. My boyfriend and I made this as is with the only substitution being shallots instead of scallions. We both really enjoyed it; highly recommend!

  43. This was AWESOME, and I never comment on anything- but my husband who is NOT at all interested in changing his diet LOVED this. I told him after he licked the plate clean that it was a WW recipe and he said- BS! I added a side of brussel sprouts with bacon and parm to mix it up and it was a great dinner. Everyone should try this!

  44. All I can say is wow!  I have made this dish several times now. It’s so delicious ????. I had it for everyone at Christmas. They all loved it!  It was a big hit. Everyone was asking me how I made it. I had 15 people over. Bought frozen chicken breasts from Costco.  Sliced them lengthwise in half as they were thick. Then I slightly pounded them flat. I used 9 breasts. Had two left. We also had tri-tip and a few side dishes although everyone raved about this dish the most. I made the cream cheese mixture the day before. Just doubled the ingredients and took out most of the seeds and membranes so it wasn’t to spicy.  ????

  45. My  Skinnytaste One & Done cookbook came yesterday, and I’m excited to try this as my first dish tonight! Ref fineness, what temp should the chicken register on the thermometer when it comes out of the air fryer?

  46. This is fabulous!  Not too spicy!

  47. Wow, these were fantastic! Didn’t change a thing. Used the panko crumbs and it gave it a nice crunch. My husband wasn’t able to eat it until the next day, and he texted me and said “Holy crow, that chicken you made last night is wicked good!”  So I’d say this is a keeper recipe!!

  48. This is a wonderful recipe!! My whole family loves it. I just love your recipes. Thank you for sharing them!!

  49. This recipe is AMAZING!! I’ve been making your recipes for years and my husband (who will eat virtually anything) said “I LOVE Skinnytaste!” after I made this (I didn’t even have to tell him it was your recipe). Thanks for keeping recipes healthy yet delicious!

  50. My boyfriend told me this was the best thing I had ever cooked. It’s delicious!

  51. These are totally delicious!

  52. Delicious! I made it with about 1oz of cooked pork sausage in place of the bacon and it was still great! It tasted to luxurious and creamy. I served it with steamed broccoli, but I wish that I had baked the broccoli tossed with some of the leftover cheesy mixture.

  53. I made this last week and it was definitely a winner winner chicken dinner ! I am making it again tonight! I went mid spice and left half the jalapeño seeds and it was just right for us.
Thanks for your skinny recipes !!! I use them a lot!

  54. Hi there,
I just wanted to know how to make this in advance, can I set it all up and then freeze the chicken? And just go straight from freezer to oven? (does this impact the baking time?
    thanks so much!

  55. Made this tonight. Left out the bacon cause believe it or not I am not a bacon lover. Omg!!!! This is freaking delicious!! It is definitely something I will make very often!! Thank you for this recipe!!

  56. GREAT recipe! So many positives. First, it was so much easier than I thought it was going to be. I cut larger chicken breasts into fillets myself, so they weren’t all exactly 3oz, some were 4oz. That was the hardest part! At first I was trying to insert the toothpick right after stuffing, but that made it difficult to coat in the lime and breadcrumbs, so I finally figured out to just hold it together and pin it once in the pan. OK – my guests LOVED it. It looked great, tasted great and we loved that we could have 2 and still be within our WW points! Thank you! I would have never given this a chance on another food blog because the ingredients sound quite indulgent. Thanks for finding skinny ways of doing comfort food!

  57. Made this tonight. Everybody loved it!

  58. I made this tonight following the recipe exactly. My husbands response was “this is better than i ever expected. We are keeping this recipe”. My brother said eloquently “holy crap this is good!”. I’d say it was a hit. Thanks!

  59. This was delicious!  We skipped the bacon and used our own homegrown, smoked jalapeño peppers for the filling.  So flavorful!  Your recipes never disappoint. My hubby chose this one and made it from start to finish. Thanks for keeping us in good dinners!

  60. This was super yummy and a bit easier than some of the other roll-up recipes since there was no layering. I will definitely make this again!

  61. did you use the 1/3 less fat cream cheese and the pablo bread crumbs?

  62. This was delicious!!!!!!!!!!!! I made it twice within days. Yum!

  63. We made this last night and loved it!  I plan to make it again next week.  Another great recipe, Gina!  I can’t wait to get the new cookbook.

  64. PHENOMENAL!!! I used the jalapenos without seeds, and it had very little kick to it – so people who aren’t into spicy can rest easy. I’ll probably keep the seeds in next time, but regardless this is going under my list of favorite recipes!!

  65. I made this for dinner for my husband and I – WOW. Totally putting this in the rotation. It’s perfectly spicy, not too spicy, creamy, cheesy, etc. it literally tastes like a jalapeño popper! The breading is very light and crisps up so well in the oven (I don’t have an air fryer). I halved the recipe and wish I hadn’t! It was great for leftovers the second day and again, wish I had more to eat leftover! Thank you Gina for always coming up with creative, delicious recipes even my husband gets on board with and loves! It makes eating healthy so easy and we never feel like we sacrifice, because frankly, we don’t!

  66. This recipe is AMAZING! My husband loved it and told me I could make this for him ANYTIME at all. Leftovers for lunch today and I can’t wait. Thanks Gina for all of your great recipes!

  67. I’ve been making your recipes for years now and love all of them but after making this dish over the weekend it is hands down my favorite! My hubby agrees! I even dreamed about it last night! ? LOL! Thank you for all of your amazing meals!

  68. My favorite new recipe of the year!

  69. Amazing! I used reduced fat Mexican instead of cheddar. I have five kids so it’s hard to please everyone, but this did the trick!

  70. This is sooooo good!! I don’t have much experience cooking with raw jalapenos so I was conservative and scooped out the seeds and membranes. It still had the flavor of the jalapenos, but not the heat. My kids told me I could make it a bit spicier next time, which I will do since this will definitely stay in the dinner rotation. I used the air fryer instructions and it came out crispy and delish.. I served it with yellow rice and steamed broccoli. Thank you for this yummy recipe!

  71. I just made these and they were really good! Unfortunately a lot of the cheese leaked out despite my best efforts (I’m not the greatest at stuffed chicken, maybe with practice I’ll get better!) and I found the bottoms got really soggy.
I also realized part way through I didn’t have any bacon but they still tasted great!
Would love to try this fried one day if I’m feeling like a greezy cheat day.

  72. We loved these, Definitely company worthy. Any suggestions as to what would work best for reheating leftovers?? Thanks

  73. Wonderful, I cut back on amount of cheese as I picked up whipped cream cheese “regular” by mistake! Exceptionally creamy isn’t it! So used 1.5 ounce or 4 tabs of it and 1/4 cup daisy cottage cheese and just 28 grams of shredded reduced fat Mexican cheese., to make up for it. We loved it and could eat it every day! I had plenty of filling as I had (5)- 4-5 ounce chicken breasts that I pounded thin. Made a combo of your cauliflower rice and the skillet zucchini–(just no cheese in it) combo and it was a wonderful vegetable medley to go with it. Thank you. Just wonderful

  74. I’ve been looking forward to making this since I saw the recipe posted. Made it tonight and it was delicious. My son ate my second piece before I had a chance to grab it but that was okay because one piece filled me up and it was soooo good.  I think my son ate 5 pieces of chicken but he is a growing teen and a football player so I often have to double your recipes for my family of 4. Thanks so much for your recipes, Gina. I recommend your site to everyone I know. ?

  75. I loved this!!! So, so good and boyfriend approved!! My 14 yr old however declared it “gross” because he didn’t realize I put real jalepenos in it…….uhm, hello?? It’s called JALEPENO popper stuffed chicken for a reason!!! I served with broccoli and grape tomatoes for myself and my boyfriend opted for waffle fries lol. Thanks for a great recipe that I will definitely make again!!

  76. Amazing. Soooooo good!

  77. Never wash chicken. NEVER. You just spread bacteria everywhere. Cooking kills the bacteria…NOT washing. Otherwise, lovely recipe.

  78. WINNER RECIPE! I used the breading from your AF pork chop recipe. DEFINITELY going on rotation!

  79. Made this for our main meal (lunch) today. It is delicious!! Best part: leftovers for tomorrow!!

  80. Made this tonight for husband and me and we both loved it. I didn’t have scallions or cream cheese so i substituted yellow onions & ricotta cheese

  81. make the cheeses full fat, substitute grounded up plan pork rinds [add seasonings of your choice] for bread crumbs and you have KETO! no rice of course… maybe some riced cauliflower or just some broccoli or spinach. ;–)

  82. If you use fat-free cream cheese instead of reduced-fat and leaving everything else the same, the Recipe Builder drops the SmartPoints from 8 to 5.

  83. What is the name of the corn/bean salad shown on the plate with the chicken?

    • That is black beans and corn side. You can find the directions as a side dish of the following recipe: Smoky Spice Rubbed Salmon with Black Beans and Corn.

  84. Made this tonight and it was delicious. However—the Smarts Pointa given on this site seem to not correspond with my app. I created a recipe and added all the ingredients and I am still getting 8SP. Is anyone else getting the same?

    • Hi Heather!

    • I also just put it into the recipe builder and also got 8 SP. Maybe if we switch to turkey bacon it would be less.

  85. I want to make this so I plugged this into the recipe builder on the WW app. I only entered the ingredients that have points plus values. I got 6 points per serving.
Seasoned Bread Crumbs – 7 points
1/3 less fat Cream Cheese – 9 points
Center Cut Bacon (2 slices) – 2 points
Sargento reduced fat Cheese – 5 points
    23 divided by 4 came out to 6 points…
Still going to make it based on reviews, but noticed others got different point values also.

    • Don’t forget to figure in the olive oil too

  86. Love this recipe so much! I like to make a double batch then freeze some for lunches 🙂
I just started WW and I typed in the nutritional information on there freestyle calculator and its saying 7 points per serving….and the recipe says 5…what am I doing wrong?

  88. Really good! Not very spicy…maybe I need to leave the seeds in next time? I was worried because my wrapping was a little shoddy, but even though the filling leaked a little it stayed all together in a clump and was very tasty!

  89. Absolutely Delicious!!! Great flavor I seeded out jalapeño so perfect amount of spice for family.  Simple sided of grilled asparagus and unsweetened applesauce.

  90. Great flavor, large portion (two rolls), I could only eat one!  My points were higher because I couldn’t find whole wheat bread crumbs. This is definitely a keeper!

  91. My 11 year old asked if we could have this for supper every night!  The rest of the family loved it as well.  We also made the Fiesta Rice as the suggested side, and it was also very good.

  94. When I use the recipe builder, I get 7 Smart Points per serving. Checking to see if all your recipes have been updated to the new system?

Breakdown of the points it was showing below. Just wondering if I’m calculating wrong. 🙂

    bacon – 1 pt.
    cream cheese – 9 pts
    cheese – 12 pts
    olive oil – 4 pts

  96. Delish! Made this last night. Followed the directions exactly. Turned out really good and was very easy to put together. Would make again!

  97. I made this last night with your warm Mexican corn salad. It was a super hit, and my boyfriend and I both loved it.

I’m horrible at beating chicken breasts, but my store didn’t have cutlets. I just cut four breasts in half and did the best I could rolling them with toothpicks. Between my shoddy work and high altitude, I baked them for 25 minutes at 375 and then an additional 20 minutes at 450 (turning them once).

Like I said, they were fantastic! And even better with the corn salad as a side. Rolling them in the lime juice before the panko was a wonderful touch.

  98. I made this in my air fryer tonight and it is insanely delicious !!!

  99. Hands down the best skinnytaste recipe I have made, and I’ve made quite a few! This was delicious!

  100. My kiddos can’t handle the spicy-ness of at he jalapenos. What would you recommend for a substitute? Thank you!!

    • I would recommend using a green bell pepper in however many your are planning on making for them. They’re mild and would make a great substitute.

    • Try a poblano pepper. They’re not nearly as hot, but flavorful and with similar flavor as jalapeno. I’d avoid the bell pepper.

  101. Absolutely fantastic! My family loved this. I served it with Fiesta Lime Rice. I actually only ate one. I put the entire serving in my Weight Watcher ap before dinner but had to change it. Very filling! Thanks again for another great one my family loves.

  102. Friggen delicious…enough said!!

  103. Gina-this is one of my favorite recipes! I want to make it for a casual dinner with family but one person is a vegetarian any suggestions for an alternative meal that would also compliment this?!

  104. I made these without the bacon and used panko breadcrumbs. I also added cumin and cilantro to the filling. It was FABULOUS! I also had bigger pieces of chicken that couldn’t get as thin as I wanted them to, so I baked them for 375 for 25 minutes, then 450 for another 5+ minutes to get the golden color. Thanks for another phenomenal recipe! This meal was husband approved.

  105. OMG – Soooo good!

A keeper, will definately make again – wish your site had a recipe box (pinning for now)

    Thanks again

  106. Does she mean 4 ounces of cheese by weight? Or does she mean half a cup. Because 4 ounces of cheese is a LOT of cheese.

  107. 450 degrees people. Read.

  108. Bake at what temperature????

  109. I've made several of your recipes and have been wanting to try this one but my boyfriend can't have citrus. Can I leave the lime juice out or is there something I can substitute?

  110. If I make them the day before can I just let it sit in the fridge for 24 hours?

If I freeze them, should I bake them straight from frozen? Or let it sit in the fridge overnight and then bake? if I do either of these does the temp or baking time change?

  111. loved this and will make often. Thank you.

  112. This is SO good – I've made it twice in the past two weeks. Would love to see a recipe for a lightened up jalapeno popper dip! 🙂

  113. I made this last night, and it was just the yummiest!
I had some problems with the chicken. The package SAID thin-sliced cutlets, but what I got were two cutlets and one breast. Grrrr! So I pounded that breast out thin and cut it in half, et voila. Took longer than it should have for my hungry guy, but I hooked him up with a beer, and he waited happily, then he inhaled the meal!

This is definitely a keeper, and is going into the rotation!

  114. This is so amazingly delicious!

  115. OK just have to say thanks for this fab recipe! The taste is amazing and the portion is good sized! I made these as written a few months ago and wished I had done a double batch, so yesterday I made that double batch and froze them! I parbaked the completed chicken rollups for 10 min at 400, then "flash froze" for 3 hours on plates in my freezer… Then I put them in a gallon freezer bag. Just reheated a couple straight out of the freezer for 25 min at 450 (I think the higher heat keeps the inside moist and the outside crispy) and enjoyed them so much! It might seem like a lot of work, but the reward of getting home at 9 pm and having dinner basically ready without eating fast food is so, so worth it. Thank you Gina!!

  116. This is just perfect the way it is!! I don't use bacon though, I use the lower fat bacon pieces you can buy in a bag with the salad fixins at the supermarket. Way easier than frying bacon.

  117. Bake for 22 minutes at what? 350? Doesn't say.

    • It says to preheat oven to 450. My chicken cutlets were thicker and I didn’t want the breading to burn, so I did 30 mins at 375 and cranked it up to 450 for the last 5 minutes to get the color.

  118. Shhhhhh, don't tell my husband these are skinny! He loved them and so did I. This is probably our 6th recipe from this site lately, they're all hits.

  119. So I tried putting this in the recipe builder thing on Weight Watchers and it says it is 13 points….

  120. I made this today but a few things went wrong- first, i put my ingredients in the blender thinking that would be a good way to cut them without taking a lot of time, but it just made the cheese/cream cheese/bacon/jalapeno mixture more like a puree. Anyway I continued, but once I put the chicken in the oven, the entire thing just oozed together into one huge ball of mushy chicken and cream cheese/popper mixture. 🙁

  121. Oh. My. Goodness. I made this tonight along with the fiesta lime rice, and my husband was speechless and weak in the knees! Once he regained his strength, he said that this was the best chicken he's ever had! The rice was the perfect compliment also. This will definitely be in our permanent rotation!

  122. I just made these last night and substituted turkey bacon and it was AMAZING. Eating leftovers for lunch right now. THANK YOU!

  123. I just made this receipt last night and I am absolutely hooked! Was a little too hot (even with the seeds out of the jalepeno for my 9 year old daughter, but both my hubby and myself absolutely loved this! This is my first time doing a recipe and I am just amazed with all of the flavor. I am not a creative cooker, so I am very excited to see what else I can find on here to make. THANK YOU!

  124. AMAZING! I have never posted a review on any recipe before probably because I never cook. But made this last night for dinner it was amazing and pretty simple! I used turkey bacon and of course added more pieces then recommended because bacon makes everything better!

  125. Could you use laughing cow cheese instead of cream cheese just like the buffalo chicken recipe on here?

  126. I made this last night and was happy with it. I made the mistake of not getting enough chicken at the grocery store though. The recipe calls for 8 3oz pieces of chicken, so I though "Hey, that's about a pound and a half-ish, I'll just get one container of a pound and a half." I should have gotten two containers, because I only ended up with four pieces of chicken and a lot of mixure left. Derp.

The only thing I did different was I brushed on the oil/lime mix with a basting brush instead of dipping it, for neatness. When I make this again (and I will) I think I'll pound out the chicken (just a little) to make it more of a consistent thinness. I think it will provide a bigger surface to spread the mixture too.

  127. FANTASTIC! Made these for an early Cinco de Mayo dinner! Will be making again, for sure!!

  128. I made this on Sunday for dinner on Monday (I left the breadcrumbing step to do right before) and it was utterly delicious. I'm not positive about the points – I must be misunderstanding some part of that – but regardless it was so good! Seriously delicious. We froze half to have on another occasion and I can't wait to eat this again!

  129. 5 STARS—I made this for dinner tonight and it's awesome. I added a little bit of TJ's roasted peppers & onions frozen veggie mix to the filling, and I coated the chicken in crushed tortilla chips since I didn't have breadcrumbs. Don't skip the bacon, it really adds a nice smokey note to the dish.

I served it with tortilla chips and a red cabbage salad with roasted corn, black beans, tomato, cilantro and lime juice.

  130. Best recipe i've ever made on here! and thats a lot! Thanks Gina!!!

  131. I cannot wait to try this! What kind of breadcrumbs do you suggest?

  132. These are totally awesome!!! I have lost 25 pounds now with weight watchers and I thank you so much for helping with great recipes!

  133. I know this post is on the old side, but I made this for dinner tonight and it was delicious! I subbed plain panko for the breadcrumbs because that is all I had, but it still came out wonderfully! It's one of the hubby's new favorite recipes!

  134. I love this recipe!! I think I found this site through this recipe. It is the first thing I've made that people request me to make it again:)

  135. I have been craving jalapeno poppers ever since I made your baked version for a luncheon 2 months ago (everyone raved about those by the way). This chicken hit the spot! My stepdaughter got sent home sick today, vomiting, she went straight to bed and got up about 30 min after dinner was done and begged for some chicken! Lol Obviously it was a hit all around!

  136. when they said the way to a mans heart is through his stomach, this is the recipe they were talking about!

  137. This was amazing. Like, really amazing. I made it last night and my boyfriend and I devoured our portions in literally two minutes. Thank you for making me seem like a good cook!

  138. Made this tonight and came right on here afterwards and pinned it and sent it to my friends doing weightwatchers. This is one of my favorites from the site, SO good. And I am STUFFED for 9 points!

  139. So delicious! Definitely will make this one again. We paired it with sweet potato fries…not the healthiest option but yummmm!

  140. Made these last night. Absolutely amazing! We used planko crumbs instead of italian bread crumbs and the crunch WAS awesome. I only had one chicken as we served it with couscous and I got very full. I've been excited for the left overs since last night. So happy I found this recipe, it will definitely be made again!

  141. Made this last night. Absolutely amazing. I left the bread crumbs off to keep it low carb and used turkey bacon instead of regular. Very very good!

  142. YUM! I used panko breadcrumbs instead of Italian, and cooked the chicken on a cooling rack in the oven– soo crispy and delicious! My husband loved the filling so much he had me make extra the second time so he could eat it straight out of the bowl 😛 Thanks so much!

  143. Made this last night but skipped the breadcrumbs, just baked. SO GOOD! absolutely loved the kick of the jalapenos and the flavors compliment the chicken perfectly! Another great recipe to add to my tops!

  144. Made this today, and it was amazing! Although, when I put this all into the recipe builder for WW, it said it was 10 pts for the same serving? Could it be because I used panko? Either way, absolutely AMAZING!!!! Recommend to anyone!

  145. These were delicious!! I used regular chicken breasts, sliced them in half and pounded them slightly. I used turkey bacon. And while I liked them with scallions, I might leave them out next time for a more original "jalapeño popper" taste. Thanks for the great recipe! 🙂

  146. We Loved it!!!!! Thank you for sharing. I left the jalapenos out of the kids and my husband and i had extra with ours. OUTSTANDING!!

  147. I just made these and they were amazing. Even my picky boys ate and loved them. The filling did ooze out a bit, but the part that oozed out got nice and brown and tasted wonderful.

Love your recipes. Everything I have tried has been excellent!

  148. Made this tonight….YUM! Like a previous commenter, I also served it with the fiesta rice, great combo. Kind of a lot of prep work for a work night, but with a good payoff! Will definitely make both again.

  149. I made this last night and it was delcious! I accidently put the lime juice in the cheese mix rather than with the oil but it still tasted great. Super filling and was a hit!

  150. I made these last night. I think next time I will have the butcher pound my cutlets a little. They didn't roll up very well and my filling was coming out, so I could only use 1/2 of the filling. BUT I persevered and they are really delish. I want to try them again with all the filling this time. I also used Italian panko. Great recipe and I really love this site. You use real ingredients and that is very important to me. Thanks Gina!

  151. Thank you for making our dinner routine not so "routine." My kids loved this 🙂

  152. I loved this recipe! Definately saving this in my recipe box.

  153. I just made this last night and it turned out wonderful. I used laughing cow queso cheese and it added even more flavor, thanks for the idea!

  154. Had this tonight. Didn't come out exactly like the picture but still tasted great! The jalapeño gave it a great kick and wasn't too spicy.

Will be making this again soon!

  155. I made these for dinner without the bacon and shollots, added regular onion instead and they were absolutely amazing! My boyfriend was shocked that he could eat so much cheese and still be within calories. I bought a pack of 6 thin slied chicken breasts so each had just a little extra stuffing.

  156. This is very delicious! I made it two nights in a row by request. Love the lime!

  157. Thanks for sharing! We made this last night and loved it!!

  158. I just discovered your website and made this tonight for the family. OH MY GOODNESS, it was soo delicious!! This will definitely be roatating back into our regular menu. Everyone loved it.

  159. Just made this tonight and all I can say is Wow! Thank you so much Gina for inspiring us to cook healthy and delicious food. I have used many of your recipes over the past year which have helped me on my WW journey to lose 80lbs!

  160. This is one of my new absolute favorite recipes. My whole family loves it and requests that I make it at least once a week! Thanks for the awesome recipe.

  161. Thanks Gina. i agree, you are a genius! My husband absolutely loves this dish. i make the Fiesta Lime Rice as suggested. Made it just now. Put it in fridge and then all i'll have to do is pop it in the oven when we wanna eat tonight.

  162. I make great recipes all the time but rarely remake them cos I'm always wanting to try something new. This, however, I make often. I prefer it with whole foods thinly sliced chicken.

  163. Sooooo yummy! It was very filling too. Made it with some fiesta lime rice and it totally fulfilled my Mexican craving!

  164. Delicious! I made this tonight and my boyfriend said it was so good he could eat every piece! Thanks for the great recipe!

  165. I made this over the weekend (without the bacon) and it was VERY good! My husband and I loved it! I will definitely be making these again:)

  166. Made this dish on sunday- it was realy good!!!!!

  167. Found this recipe on pintrest. I tried it and I loved it! So delish!

  168. My husband LOVES poppers so I thought I would try this tonight. He LOVED it so much he informed me that it was in his top ten. I figured that meant he wanted it in our regular rotation, but he stopped me to clarify. He thought it was one of the top 10 recipes he has EVER had, including restaurants and his mother. WoW! Thanks for the recipe I foresee us making this recipe over and over and over again.

  169. My husband and I have made this several times now, and we agree it is the BEST chicken recipe we have. Thanks!

  170. Your recipes are the only ones that I stick to 100%.This is now a weekly recipe in my house! Thank you.

  171. This recipe is absolutely fabulous! Since I've found it (two weeks ago) I've made it twice, can't get enough! My grocery store has Perdue thinly sliced breasts so I just use them but typically only 5-6 in a package. I make the filling the same amount and any leftover I put in a small bowl and put it in the oven for 10-15 minute and it makes an amazing dip! I am headed to a party this weekend and might just make the filling in a dish as a dip for the party!

  172. very good

  173. DE-LISH!! We loved it!!

  174. This was delish! I didn't have any cream cheese on hand so I used the Laughing Cow cheese spread and it was heaven! Gina, you totally RoCk and can't thank you enough for your creative, healthy recipes.

  175. Made this last night with the fiesta lime rice. WOWZERS!!! Normally I avoid jalapenos, but my boyfriend loves them so I thought it'd be a nice treat. I LOVED THIS DISH!!! The jalapenos (minus seeds) added awesome flavor and warmth without burning your mouth out. Unbelievably tasty! And the rice paired perfectly with the chicken. Definitely making this one again!

  176. If you can believe it, this recipe got my husband in the kitchen and cooking. He prepared it all himself..and followed your recipe exactly. It was to die for! It was SOOOO good. He was so proud of himself. Please keep the "husband friendly" recipes coming!

  177. I agree with JesseGirl – briefly sauteing the jalepenos calms the heat and sweetens them a bit. In an effort to make this recipe gluten-free, I tried it without the breadcrumbs. It turned out a bit too tart for me, so I think I might try adding some sugar-free sweetener to the lime juice-olive oil mixture next time to make it taste like "margarita" chicken. Filling was great though.

  178. 371 calories for 2 chicken breasts that does not sound right, this recipe has cheese, bacon and cream cheese…

  179. Thanks for the recipe! Where can I find the recipe to the side dish pictured with the chicken?

  180. This is one of my favorite recipes. I dont use bacon or scallions and I use part skim mozzarella cheese and panko breadcrumbs. One of the most delicious things I have ever tasted in my life!

  181. This is our new favorite recipe. Making it again tonight!

  182. I made this chicken tonight and it was delicious! I thought I may taste the lime on the chicken but you couldn't really at all. It was just really, really spicy because I didn't take the seeds out of the jalapenos, which I will probably do next time I make it (which will be soon!).

  183. Is there a big difference in Calories if I use a 4oz Chicken Breast instead of the 3 oz Breasts?

  184. I made this for dinner last night and had the left overs for dinner tonight. Super good both nights! It's on my regular menu now! THANKS!

  185. Made this tonight(minus the bacone..didn't have any) for my brother and my boyfriend!! The boyfriend wasn't thrilled with the jalapeno but he enjoyed them anyway. As for me they were delicious and I'll definetely be saving this recipe! Thanks 🙂

  186. Made this for the second time today and my boyfriend and I absolutely love it. It's so good and it's one of those recipes where you can't it's skinny.

I didn't have bacon so I added chorizo instead and it worked absolutely great. The smokiness and spices of the chorizo really worked well with the cheese.

Thank you again for such an awesome recipe and I can't wait for your cookbook to come out!

  187. I made this the other night for my boyfriend with your oven baked onion rings and he LOVED it! It wasn't difficult at all to throw everything together and it tasted great. I'm relatively new to this site and so far I have NOT been disappointed. Love it and the daily recipes that pop up on my Facebook!

  188. This was absolutely amazing!

  189. This is so easy and flavorful! Gina you are amazing 🙂

  190. DELICIOUS!!! My hubby took the leftovers to work the next day!

  191. Just made this for the second time tonight, I love all your stuffed chicken recipes.

  192. I made these tonight, and they were yummy! A bit spicy for me, probably because I kept some of the seeds in for my hubby. He loved them. Ate four.

I used panko breadcrumbs, but 1/2 cup wasn't enough. I probably used close to a full cup. I used turkey bacon because it's what I had on hand. We couldn't really taste the lime, not sure why not. Maybe because of the panko? I had my hubby make me cutlets from the breasts of a whole chicken I bought, and now I'm making your stock recipe with the carcass. Well, it'll be stock, not broth, but yummy all the same. I think next time we will cook the jalapenos a little. They were a tad crunchy for us.
    Thanks for a great recipe!

  193. Delicious recipe. Used turkey bacon and subbed corn flake crumbs for half the breadcrumbs. Not sure which is better…this recipe or the blue cheese buffalo stuffed chicken.

  194. I have to tell you… I have made this about four times now. We LOVE IT!!!! I'll be making it AGAIN tomorrow…. DEEEEEELICIOUS!!!!! 🙂

  195. YUM. My husband is super picky and he loved it. I didn't have cream cheese so I used light Laughing Cow swiss wedges and a little sour cream. Fantastic! Thanks Gina!

  196. My husband loved this, but I thought it was just okay. I didn't like the way the lime juice tasted, so if I do make this again, I will use just oil or oil and egg whites.

  197. I made this recipe last night and it was AMAZING! I made a few changes to the recipe mainly because I had just made your jalapeno poppers and wanted to use up for ingredients. I used panko crumbs instead of bread crumbs, regular cream cheese because that was what I had on had, and extra scallions to use up the rest. I loved this recipe so much and my boyfriend says he wants to eat it again soon! Next time, I will add a little cayenne pepper to the lime mixture to add a little heat on the outside of the chicken. I was surprised how NOT spicy this dish is and we LOVE spicy so cayenne is a must in my pantry! Thanks for the recipe!

  198. WOW! This was so awesome. My husband said this was his new favorite kind of chicken. I made it with the Fiesta Lime rice and the entire meal was a hit! Thanks Gina!!

  199. I have made this recipe SO many times now….it's one of my defaults for impressing guests! (And they don't even know it's skinny!) Thanks Gina!

  200. I made this last night, and it was so good!!! It was my first skinnytaste recipe and I was so impressed! My husband is so sick of feeling like he is on a diet too. Your website is helping me bring the food we love back into our house without the guilt!

  201. I made these the other night for 3 hungry boys and they could not get enough of them. They couldn't even tell that they were "skinny" thanks for all your wonderful recipes!

  202. This was delicious and turned out great!! My husband loved it! I am so excited to try other recipes from your website!

  203. Delicious as usual Gina! You are truly my weight watchers life saver! This is one of my new favorites!

  204. This was absolutely delicious. My husband liked it too. Will definitely be making again!

  205. Just tried this recipe…LOVED IT!! Only did a couple things different; omitted the cheddar cheese, used plain bread crumbs, and baked them a little longer. My husband, who is hard to please, suggested roasting the peppers the next time!! The next time was a positive from

  206. Instead of breading them I left the bacon out of the filling and instead wrapped it around the chicken roll and threw them on the grill then brushed a bit of BBQ sauce on them! Gracious it was good! Thank you for this one! Keeper!

  207. i made this in a pork roast. it was great. will make again!

  208. I love all the stuffed chicken recipes. But I HATE the processing of rolling and stuffing the chicken! So I chopped the chicken small, mixed everything together and baked it like a casserole. It took longer to bake, but tasted the same as when I rolled it and soooo much easier 🙂

  209. Fixed this for my boyfriend tonight…..said it's the best thing I've made so far. It was awesome!!!

  210. just put them in the oven. This is my second time making them. yummy!

  211. I just want to thank you for all the work you put into this site. I started Weight Watchers again about 2 months ago and having your recipes available has made it so much easier. I have made so many of your recipes and they have all been delicious and I've lost 11 lbs, so far.

I made this recipe for dinner this week and oh my goodness, was it delicious. My husband actually put his fork down in the middle of dinner and said, "you will be making these again, right? They are amazing!" This is coming from a guy who really is not a foodie (unless it comes to cookies and cake).

I had to fight over the left overs because he wanted them all for his lunches for the week.

Thanks again. I don't know what I would do if I hadn't discovered your site.

  212. My boyfriend and I made these last night, they were SO GOOD! We couldn't get enough. Thanks!

  213. I made this today… Yummy!

I used mozzarella because cheddar is not easy to find where I live. I only used 2 jalapeños. I used lemon instead of lime (I always do that) and I added the zest to the breadcrumbs. I ended up with a few tiny breast pieces that I couldn't roll so I just breaded them and put some of the cheese mixture on top, those browned really really nice I might try doing that instead of rolling next time.

Thanks Gina for all your recipes, I've been trying at least one of them every weekend for the last month or so and I am yet to be disappointed', I have made the buffalo turkey burgers a few times, so easy and tasty.

  214. Just made these for dinner. Sooo yummy!!! I will be making these again. A big thank you for the recipe 🙂

  215. I traded the center cut bacon for turkey back and this was still so delicious… Thank you for your recipes and making WW a little less boring 😉

  216. My daughter made this last night for dinner and it was delicious. Instead of purchasing a whole package of bacon (which we usually don't eat) she used a bacon bits pkg which worked well.

  217. I made this last night, It was really good, husband liked it too! And he is not a big chesse fan. Although I cooked it a couple minutes too long, the cheese came out on the sides. But, I didnt think the way I toothpicked them was right… Regardless it was refreshing and good!

  218. Amazing! So glad I found this website!

  219. I have no idea how no one has commented on the burning of their hands after chopping the jalapenos, but my hand is burning like crazy right now.

WEAR GLOVES. PLEASE. DO IT. You will regret not wearing them.

  220. OMG!! this was so yummy! Everything you touch turns to deliciousness. Thanks for all the recipes. Keeps dieting a little easier when you have so many great yummy recipes to choose from.

  221. Has anyone else done this, but made it low carb by omitting the panko/topping entirely? That would be the way I'd want to do it for me and my hub.

    • Kristin, I thought of doing that too. I would still use the lime juice and oil so not to dry them out:)

  222. Oh, one other difference, I put the chopped jalepenos into the pan with the bacon (once the bacon was all crispy) and just cooked it for a minute to soften. BUT BE CAREFUL! Cooking hot peppers can make strong, fumes – do not breath them in. But that kept them from being crunchy.

  223. Once again, a GREAT recipe. We had this tonight with the Cauliflower fritters (yes, a bit rich all together, but YUM). My husband's first words were, "I like the lime breadcrumbs." We loved it. As usual, it halved perfectly. I used turkey bacon instead of regular. And I love the suggestion of the poster who mentioned putting the chicken on a rack in the dish so it gets toasty all around. I'll have to try that one.

  224. Great recipe! It is definitely a keeper… Next time I might put the jalapenos in the food processor somyoumdont have as much as a crunch.

  225. I just wanted to say thank you for this recipe! I made it for dinner last night with the Fiesta Lime Rice, and it was the best meal I've cooked in a long time! You hit a home run with this one!

  226. I've made this at least 4 times since I've discovered this recipe and I couldnt be more in love with it! I skip the bacon and add a bit more lime and it's amazing! Thanks for the great blog with the most delicious recipes!

  227. made this for dinner tonight, soooooo good. Will be making this again.

  228. If you're not into spicy (like myself) – you can substitute with the jarred tamed jalapenos. It gives you the flavor, without the hot! My absolute favorite.

  229. I made this last night with chicken breast that I cut and pounded down – it was AMAZING! My fiancee woke up in the middle of the night to have his 3rd helping! I skipped the scallions and didn't miss them. I LOVE the idea of using the lime and oil to help the breadcrumbs stick – I could faintly taste the lime on the cooked chicken. PERFECT!

  230. Made these this week with the suggested side… Amazing!!!!!!!!! My hubby and I are having friends over tonight and are using the popper filling for some mushrooms we are going to stuff!

  231. Made this tonight. Huge hit with the hubby!

  232. easy to make and so delicious!

  233. This was a big hit in our family. My guy said that it was his favorite. i made the Fiesta Lime Rice recipe, as suggested and it was perfect! He doesn't really like rice but he ate a ton of this. And, of course, i felt great that i was making him a healthy meal.
i found this very easy to make. i've rolled chicken breasts up before. Learned how to make cutlets (cut a breast in half) on the internet. i find that if i dip the chicken thoroughly, in this case, the oil mixture, then the breadcrumbs, it seals the rolls up and makes the inside mixture not leak as much. Even if it does leak – it's still great!
Thank you so much. You're a genius!

  234. This was delicious, my husband had seconds (always a good sign). I'm even a wuss with spice but the jalapenos added so much flavor and very little bite. But I think the points+ that was listed is wrong…I followed it to a tee and imputed it in the recipe builder myself and it read 11 points+

  235. I made these tonight for dinner and they are delish! I could not believe the flavor…oooo the bacon was so good! I made it with your black bean, tomato, avocado side dish. What an amazing complete healthy meal. Thanks as always Gina.

  236. This was so good! I have recommended it to all my friends who are looking for healthy filling recipes.

  237. My huband and I made this last night and it was delicious!! He absolutely loved it. We used seasoned Panko in place of the bread crumbs and substituted chopped green chiles from the can in place of jalapenos just to make it easier. It was fantastic and is going into the regular rotation.

  238. Another winner! I only had one fresh pepper so I added a bunch of jarred jalapeños as well- such a good addition. I can't get over how much these really taste like poppers… you hit the nail on the head with this one Gina! Thanks so much!

  239. Made this for dinner tonight and it was a HUGE HIT…even my 6 year old asked for seconds! I had to substitute red onions for scallions, as I didn't have scallions on hand. I look forward to what it will taste like with the right ingredients :). I sautéed tomatoes, mushrooms, red onions and garlic and served that as a side. They paired nicely together.
This will be regular in our house!! Thank you so much!

  240. I'm a casserole kind of girl and luckily my husband is a casserole kind of guy. As delicious as this recipe looks and sounds I didn't want to mess with chicken cutlets mainly because I had boneless/skinless chicken breasts in the freezer. I took them out, cut them up (frozen, with a good knife), mixed everything up together and threw it in one dish. I'm eating it now, with a Pampered Chef skinny margarita and some lime tortilla chips and it is TO DIE FOR!!! Thanks so much!!!

  241. Making this for the second time tonight! When I first made it my husband said with a big smile on his face, "I insist this is on our dinner rotation weekly!". He absolutely loves jalapeno poppers and this is a great way to make the same taste into a meal.

  242. You've outdone yourself (once again)!!! We had this for dinner tonight and it was amazing. We can't thank you enough!

  243. Oh these are like heaven!! I will definately make these again and they're so easy to make!!

  244. This was really delicious! I used panko bread crumbs and seasoned them with Fiesta Party Dip mix from Tastefully Simple. I also made the Lime Fiesta Rice for the side, as suggested. Everything was fresh, flavorful and light. Will definitely put this into my normal rotation. Glad to know that it is easily freezable as well!

  245. This was AMAZING!! This is the first recipe I made from this site and now I can't wait to explore more! I honestly couldn't believe how wonderful this was considering the nutritional stats.
One quick question. Well, maybe two. 1) Can we email Gina directly with questions? If so, how? 2) I am an online Weight Watchers member and tried to calculate the points by using the recipe builder but ended up with two points higher than listed above. When, however, I used just the nutritional information provided by Gina, I found it to be exactly as she has reported. I didn't include the jalapenos as I know sometimes the recipe builder adds for 0 point veggies, so I really don't see what happened! Thanks for your thoughts.

  246. Loved this! And so did my boyfriend, which is great! He loves spicy so I added more jalapeno, used the panko as you said, used turkey bacon instead, and used fat free cream cheese! Delicious. He even heat up the leftovers and ate them the next night! I love being able to cook something with a lot less calories, but still having that feeling of eating something that isn't "diet" food. My BF asked me if I was sure it was from skinnytaste:) Thank you for your website…it's amazing!! I am making the shephard's pie tonight! (He is British, so I hope he approves:))

  247. These are SOOOO good !!! I made 24 of them for my freezer. 45 minutes at 450 did the trick ! YUM !

    • Did you freeze them uncooked? Did you defrost them before putting them in the oven? Sorry, one more question – did you freeze them in the pan or put them in another container? Thanks!!

  248. I made this yesterday, and OMG i can't wait to make it again! My BF loved it and he is hard to please… Can't wait to try many many many more!!!!

  249. I am on weight watchers and I cooked this last night for dinner (sans the Japs because I'm not into spicy food) and OMG it was DELISH!!!!! I am sooo glad I found this site 😀

  250. Yum, yum, yum. Made this for dinner, and it is restaurant quality!! Drooling just thinking about it and sad there are no leftovers. THANK YOU!!

  251. These were awesome!! I have the hardest time with stuffing and rolling chicken, (I'm just challenged that way), so I cut a pocket and stuffed them, then just put them pocket up in the pan, so they wouldn't leak, and it worked great. Not messy at all, crispy and good! Loved every bit of it. I couldn't really taste the bacon, though, so I might leave it out next time.

  252. I made these last week and my dad said it was the best chicken he's ever had! We don't eat a lot of carbs so I paired it with a mixed green salad with black beans corn and avocado which was delish!

  253. I made this tonight and it was great! I don't like spicy food, so I was a little apprehensive about using all three jalapenos (even with seeds removed). There was no need to worry; these turned out great!

I made a couple changes: 1) I used turkey bacon, and 2) I only made 6 cutlets. I recalculated points given my changes (keeping the same amount of filling, even though I didn't quite use it all, and subtracting 1.3 oz of breadcrumbs since I only used 1.1 oz). My points turned out to be 7 points per piece, but having one piece paired with the fiesta rice and a big serving of veggies is more than enough!

Thanks for another great one, Gina!

  254. I have used jalapeno flavored kettle chips crushed instead of bread crumbs. also used poblano peppers. its great!

  255. Loved, loved it! Even my husband the non-chicken person in our house loved it and asked for me to make it again.

Next time I will make with a pablano pepper which is a little less spicy and I totally love its smokey sweet flavor. If I am short on time, I think it would be good with a can of green chilis as well.

  256. Delish!
    We loved it!

  257. This was ridiculously delicious!!!!!!!!!!!! Kroger is silly & runs out of chicken breast really fast but I was able to get the small strips of chicken breast. I was worried all the cheese would come out but it actually worked really well! They were like bite size jalapeno popper chicken! This was amazing!!! Seriously amazing!!!!! Although my mouth is slightly on fire. 🙂

  258. This is sooo delicious. I didn't coat the chicken in bread crumbs, instead I sprayed it with a little extra virgin olive oil and sprinkled some Mrs. Dash chicken rub on it. Baked it for 20min and it was amazing. Will definently be making this again 🙂

  259. Oh my goodness this was super yummy. Thanks for this one. Now I just can't decide which of your many recipes is my favorite.

  260. Of all the recipes I've tried so far (and I've loved them all) this was the BEST. Absolutely delicious. I have to admit, I used Hormel bacon bits to save time. Thank you for a site which has made dieting easy.

  261. I loved the filling so much that I have used it on a grilled portabella mushroom and to make potato skins. Both were delicious.

  262. These are awesome! We used panko bread crumbs with some garlic pepper salt and italian seasoning.

  263. Instead of bread crumbs I used Fiber One cereal that I put in the blender and made crumbs out of it. Has more flavor and less calories…they were wonderful

  264. super good! drizzled extra lime at the end. Biggest takeaway is that I made an extra batch of the filling and keep it in the fridge. Makes an awesome egg white omelette with some chipolte seasoning added! So yummy!

  265. This recipe was great! I agree it is a keeper!

  266. I made this over the weekend and it was so delicious. My family loved it as well. I followed the recipe exactly; it's a definite keeper. I served it with the fiesta lime rice.

  267. I prepped this last night and popped in in the oven today and it was AWESOME (as any of your recipes I've tried so far are)
I didn't use bacon since I'm not a big fan.
I had leftover backed mac and cheese that I had to use or lose so that and steamed string beans were the side. I used the mixture that came out of the cutlets on my string beans. I'm going to use the rest of the cream cheese to make a warm dip it was that good.
As someone else suggested I'm going to try either a pocket or just fold over a cutlet rather than roll them next time and I wish I had a BBQ to try them grilled.

  268. made it for dinner tonight and it was awesome !

  269. Made this for dinner; delicious!

  270. Thank you for this! It was only my husband and I eating, so I made 4 pieces, but made the same amount of filling – which was a good idea, because even though I toothpicked the ends, some of the filling still baked out. So I just nuked the leftover filling and made a little "bed" on the plate and put the 2 pieces of baked chicken on top – problem solved and no cheesy goodness lost 🙂 I also seasoned my plain panko bread crumbs with a lime zest/pepper spice blend. We LOVED it, and it will definitely be a regular on our dinner menu. I served it with cilantro lime rice and sauteed green beans with some citrus flavoring.

  271. Made this for dinner tonight…and it was Amazeballs. The DH had 3 pieces, and was making yummy noises the entire time. Great recipe- thank you for sharing!!

  272. I made this tonight and my BF loved it! This is totally his kind of food – and I left the jalapenos out of mine cause I am a wimp about spice. Another tasty recipe:)

  273. I was an idiot and forgot to buy jalapenos and didn't realize it until I was in the middle of making them! Oops! They were still fantastic! Definitely a keeper!

  274. Made this for dinner this week, it was terrific! It has made it into the dinner rotation binder

  275. I just made this for dinner tonight and it was one of the best chicken dishes I have ever made. My husband wanted to know when I would make this again! Thanks for all of the recipes Gina!

  276. So Good!!! Just finished eating and had to come and tell you how delicious this was. Thanks for another great rescipe!!!!

  277. My boyfriend asked if i could make this every night!

  278. This chicken recipe was amazing!! Everyone loved it and it just tasted so good, definitely making this again.

  279. My husband wants to know if you could make the filling into a dip! He loved it! Thanks so much!

  280. I am a bigger woman, and I have just started Weight Watchers on the Points+ program. I just have to say that this site is a wonderful discovery! I wasn't so sure that I could make it, but I have faith now! This recipe looks amazing, and you get 2 breasts per serving, for only 9 points, INCREDIBLE!

  281. I made this for Cinco De Mayo. SO, SO, So good! Excellent!

  282. As an Australian who misses jalapeno poppers, I had to make this!! Was sooooooo tasty!! I used whole breasts and just made a pocket and still worked wonderfully.
Thank you so much for a recipe that reminded me of my many holidays in USA without all of the fat and calories!!

  283. Made these yesterday, Definately making again!! Awesome!!

  284. Just wanted to say thank you very much! this recipe made our sunny weekend way better! I invited my family and everybody loved it! I will have to do it again sometime next week!

  285. Made these last night & they were a huge hit w/ the hubby! He suggested I make them next time we have company & to put on our weekly menu! DELICIOUS!!!

  286. I made this and a side of Gina's easy yellow rice–it was a great side dish! Added some black beans and had a perfect cinco de mayo meal!

  287. I made this last night using chicken breast! It was SO easy and so amazing!!! Loved it!

  288. I made this tonight without the bacon and scallions and it was delicious! I used fat free cream cheese and extra jalapenos and the spice level was perfect! Next time I will try them with the bacon and scallions, I just didn't have any and being VERY pregnant, I didn't want to go to the store today. Very yummy!

  289. I made this also last nite(I love to read comments from all those who tried, as opposed to I am going to try it, that way I feel like its been tested). Anyways, I "cheated" on the bacon and sprinkled in Bacon Bacon from Tastefully simple, mmmmmmm. NO mess/smell/grease to clean up. I also don't care for spicy food and I enjoyed the crunch of the fresh jalepeno and it seemed not "hot", I am guessing cuz it was fresh? I left in 80% of seeds. Thumbs up overall.

  290. Made this tonight but instead of baking with breadcrumbs we put them on the grill. Very good! Definitely a good way to give chicken more flavor!

  291. made this for dinner last night along with the black bean salad and cilantro lime rice. everyone loved it, it was delicious! thanks :)-nicole

  292. This was awesome! I wish I hadn't halved the recipe because we would have eaten more!

  293. These were amazing! AMAZING…serious. I made two modifications, I used canned green peppers (anaheim style) and no bacon. I made my daughter's without the peppers. She was so excited.

Even my cheese hating husband loved them, he didn't notice there was cheese. Or maybe he did…lol

  294. This was delicious!! I was a little skeptical at first, because it didn't seem like it would be enough filling but it was soo yummy! My 2 year old LOVED it (I made one for him without the jalapenos in it) I will DEFINITELY be making this again!! Thank you so much Gina 🙂

  295. Made this and the fiesta rice for dinner and it was wonderful!! I used canned jalapenos (much easier) and served a little marinara sauce over the chicken. My husband who is not a fan of light recipes has loved everyone that I have made from your blog. Thanks!!

  296. This was delicious! I skipped the breading and put them on the grill. A-W-E-S-O-M-E!

  297. Awesome recipe. It was a little trickier than I anticipated as I only had regular chicken breasts and tried to pound them out to make them thinner….except I don't have a meat mallet, so I used my pestle. Which then ripped through the chicken. Nevertheless, I soldiered on and other than it being a bit messy (the cheese mixture melted out of the chicken), no harm done.

I will just buy the chicken cutlets next time for a much faster/less messy experience.

    • Cover the chicken with plastic (or put in a plastic veggie bag or unzipped ziplock) and slap it a few times with a sturdy frying pan. Better than a meal mallet!

    • Or just cut your regular chicken breast in half length-wise 😉

  298. I made these last night for dinner as well! Excellent! I followed the recipe as written EXCEPT for on three of the rolls I used the cheese mixture before I put the jalapenos in (DD & I are not big jalapeno fans) and then for the rest of them I added in the peppers. My daughters boyfriend loved them and and 4 roll-ups (I made 10 total). Hubby liked them quite a bit but said he thought they needed more filling, and they probably did as I didn't up the amount of filling I just made it stretch for the extra two rolls. I also think next time I may try cutting the pockets into the chicken breasts and filling them that way rather than making rolls out of them, just to see the different.

Either way, this recipe will be a repeat in our house and will be added to the cookbooks that I'm putting together for my kiddos. Thanks for a great one!

  299. I made this last night. Unbelievably good!! I used fat free cream cheese (that's what i had on hand) and it was still soooo tasty!
The mister also loved it, which is a plus 🙂 This will definitely be going in our regular rotation

  300. In the oven right now, I can't wait to try them!

  301. Made this tonight. AMAZING! This would be one I could make for a dinner party and my guests would think I was going off of my eating plan! I paired it with a great brown rice side salad. 2 cups cooked brown rice, 1 jar Trader Joe's corn salsa, 1 yellow pepper (seeded and diced), 2 jalapeno peppers (seeded and diced), 1/2 diced red onion, juice from 2 limes, 1/4 cup cilantro (chopped), 1 can black beans, 1 can kidney beans (both 15 oz size, drained and rinsed), 1 teaspoon chopped garlic, 1 1/2 teaspoons cumin, and a little salt and pepper. I wonder what the points are on this side dish. Everything is healthy…….Gina??

  302. Absolutely DELICIOUS!!!!!!

  303. This was delicious! I had it last night for dinner. I didn't like how the thin sliced chicken breasts looked at the store, so I just bought regular boneless, skinless chicken breasts. Then I cut them in half length wise and put them between two pieces of plastic wrap and pounded them thin with a rolling pin. Worked great!

  304. I Made this last night and it was amazing! My Boyfriend Loved it!!!

  305. i loved this! i also had a little trouble getting all the filling to stay in, but no biggie… i just spooned it up and now its a dipping sauce.

  306. Tried and loved. Thank you!

  307. Had this for dinner tonight! It was so good!

  308. Family loved this – Thank you

  309. I am a new reader and just made these tonight. It was SOOOOO GOOOOOOD!!!!!!!!!!! I will be making these again for sure!!!! I now have a whole list of your recipes I want to try. 🙂

  310. Made these last night, I had not planned on it so had to scrounge for bread crumbs. I used half panko and half baked tortilla chips that I crushed in the food processor. They were amazing, a keeper for sure.

  311. I made this last night and it was DELICIOUS!!! I paired it with the black bean and corn salsa and it was a perfect combination. I was afraid that the jalepeno's would be too spicy for my children but the cream cheese cut the spicy level down which was great. These definitely taste like jalepeno poppers and would never guess that they are light! This one is a keeper!!!

  312. You should put a warning by the jalapenos part, being a complete idiot, I didn't use gloves while chopping the jalapenos and had a terrible reaction!! but this meal was amazing 🙂

  313. Gina, I have a dumb question…I'm fairly new to cooking and we are about to get a freezer for the garage. Would it be ok to roll these up and then freeze them for later on? I'm about to go on vacation for a month and want to make sure that my BF is well fed. Is there anything that's not ok to freeze and bake later?

  314. My only difference is to lay a cookie cooling rack in the baking sheet so the chicken can get heat all the way around.. yum!

  315. I made this for my family and they loved it , the instructions are pretty easy. thanks for the recipe.

  316. I just made these for my husband and we both loved them!! I knew it was going well when he starting "yumming" while eating. He could not believe I got them "off that healthly website". He's Mexican and the fresh jalapenos were what sealed the deal for him. Thanks for a great recipe, it's going into our regular rotation!

  317. Made this for dinner and it was wonderful! My husband thought it was a big hit, too. Definitely only needed 20 min in the oven. Panko was the way to go…perfect light crunch. Will add a bit more salt to the Panko next time.

  318. Made thisfor dinner tonight, my first "skinny taste" recipe:) And it was amazing, almost made forget I was trying to diet! Can't wait to start cooking some more of the recipes! Thanks so much:)

  319. I made this tonight, and it was absolutely fabulous! Thanks for the recipe. Please keep them coming.

  320. Yup we just tried it and it was absolutely delicious! I used cornflakes instead of bread crumb – not sure if that changes the ww points.

  321. I've had a bit of trouble with some of the stuffed chicken in the past – the filling ends up oozing out for me. What do you think about using one thicker cutlet, then slicing a pocket into it, and stuffing it that way (double the filling)? One 6oz cutlet would then be 1 serving for 9 points.

    • I honestly think that would be harder.

    • Hmm.. I might give it a try for the heck of it. I'll let you know how they come out!!

    • I've done it before. it's MUCH easier! No rolling and tooth picking! I'm making this tonight and that's what I'm gonna do.

    • I also make a pocket in my chicken breasts instead of rolling them when I make stuffed chicken. It's a trillion times easier!!

    • Do you still cook yours at 450 for 25 minutes? Or will they take longer since the breasts are thicker? Thanks!

    • thanks, I will definitely try it then! I've made chicken with a pocket before and thought it was pretty easy too.. I was curious about the cooking time as well though. I'm thinking since they would be thicker cutlets, that they would take longer..
