Sweet champagne mangos pair superb with creamy haas avocados and grilled chicken for a sweet-savory salad to delight your taste buds. This meal is ready in minutes, perfect for a hot summer day or night!
I could live on a tropical island and never miss the fruit from the states.
When I was a kid, I spent many summers at my cousin's house in Puerto Rico and I remember the mango trees and mangoes all over her yard. I would pick them up and try to save them, but even I couldn't consume the overabundance of mangoes she had falling off those trees. Back then mangoes weren't as popular here in the states, but luckily today you can find them in every supermarket. I'm hoping one day guanabana (soursop) and guava will make it's way here too!
Have you seen the new Salanova butter lettuce from Dole, they come two in a container – simply cut the core off and you have baby lettuce!
For this salad I used the red butter variety, but you can use any baby lettuce, especially home grown if you have any in your garden!
For the dressing I kept it real simple, extra virgin olive oil and white balsamic vinegar which is naturally sweet and perfect on this salad. You can easily halve this recipe for 2 servings or double for 8. Enjoy and stay cool!

ReplyDeleteGrowing up in Hawaii, we used to always go to my uncle's house to pick mangoes when they were in season. They're so good! I'd just cut them in half and eat it with a spoon :) This salad looks perfect and so fresh!
ReplyDeletearen't they so good!
ReplyDeleteThey have frozen guanabana puree in the freezer section at Vons :)
DeleteThis dish looks so flavorful and I'm loving the avocado/mango combo! Adding avocado to your salad is such a simple way to boost your fiber intake for the day.
ReplyDeleteThat looks DIVINE!
ReplyDeleteMango is my absolute, hands-down favorite fruit. I never thought to pair it with avocado!
I must try this!

Guava is all over Miami from pastries to yogurt :) hopefully it will make its way farther north!
ReplyDeleteWe can find the jelly, but not the actual fruit. I used to eat them off the trees :)
Deleteoh GINA!!!! this looks amazing and I cannot wait to get all the ingredients to try this.,
ReplyDeleteThat looks like the perfect salad. I love mango-just made a black bean and mango summer salad.

Any suggestions for a substitue for Mango? I detest Mango and Guava.
ReplyDeleteI've substituted peaches for mangoes and that has always worked well.
DeletePineapple!
DeletePapaya!
DeleteI've done a pineapple and avocado salad that was amazing. You could even toss in some slices of low-fat ham and do a kind of Hawaiian theme!
Deletegreat ideas, thanks, I love Pineapple, papyaya, mango, and guava, make me shiver. Thanks, will try the peaches idea and my fav is pineapple.
DeleteThis recipe sounds fantastic, other than the mango! I just can't eat it - too much like canteloupe, which I don't like!!! Haven't tried papaya, might give that a try, but will def. try it w/ pineapple!!!
DeleteMmm, so rare for me to find a recipe I'm actually allowed to eat. I'm so happy to have found this one, it sounds divine!

Yum! I love this time of year with all the fresh fruit and veggies and I can't get enough avocado!
ReplyDeleteMight have to try this for lunch one day....totally LOVE avocados! :)
ReplyDeleteLooks absolutely wonderful! Refreshing, yet filling, salads are the perfect way to beat the heat! :-) And gotta love avocado and mango!!! Can't wait to try this!
ReplyDeleteyum, this looks wonderful! I had a version of this at harrods when i was in london and have been wanting to recreate it ever since. thanks for the motivation!!
ReplyDeleteDidn't even think of cutting the mango the same way I do avocado. Nice tip!
ReplyDeleteI totally agree with you about living on a tropical island! When we go to DR, I loveee grabbing limonsillas (I think they are called Spanish limes?). My aunt lives across the street and she has a mango tree and as much as I think I can eat all the ones that have fallen, I can't!
ReplyDeleteAlso can't wait for guava to reach the states! I occasionally grab a Goya guava drink when I'm in the supermarket. So yummy!
Recipe looks amazing and will be trying this soon. Anything with avocados is a must have for me. Thanks Gina!
Can you tell me how to tell if a Mango is ripe??
ReplyDeleteI love this recipe, but I'm not a fan of the mango.
ReplyDeleteDo you think fresh pineapple would work, or what do you think would be a good substitution?
Thanks!
YUMMM!!! So happy that here in south Texas we have mangoes, guava and all kinds of crazy tropical fruits!!
ReplyDeletethis is great I pick up a roasted chicken took skin off and cut it up small and the only thing i added was some nuts for crunch needless to say i am having it tonight to for dinner
ReplyDeleteMy fiance would hate this. I would ADORE this. I might have to have this during lunch one day. Sounds delicious!
ReplyDeleteBig time yum on all of this you've got going on here!
ReplyDeleteYum, this was lunch today! Just happened ti have an avocado and mango ripened, perfect timing! I did not have white balsamic on hand so I used white wine vinegar and a dash of stevia, it was awesome!
ReplyDeleteThe minute I saw this recipe, Iknew that I wanted to try it. So, I did. It was fabulous!! I will use it next week when I have a friend over for lunch! Thanks Gina!!
ReplyDeleteWow.... makes me hungry.. great combination of taste and texture... creaminess of the avocado and the sweet taste of mangoes.. great!!!
ReplyDeleteOh yum! Had this for dinner last night and the whole family really liked it. It was super refreshing and something I will be making a lot this summer. Added some black beans I had left over from a previous dinner and they were a great addition. Thanks!
ReplyDeleteLong time reader, first time commenter here. :)
ReplyDeleteGina, this was so good. My husband and I loved every single bite. It's going to be enjoyed many a time this summer.
Mangos + Avo = Delicious! What a great paring.
ReplyDeleteThis looks soo good! I loooove soursop and guavas too. Soursop ice cream is THE BEST !! :)
ReplyDeleteThis is also great with prawns (shrimp) in place of the chicken
ReplyDeleteMade this for lunch with the husband, and we both loved it! I think your citrus vinaigrette would be great with it, too. Thanks!
ReplyDeleteThank you Gina... your recipes are AMAZING. I don't know why you don't have your own show on the Food Network! I just made this for lunch. I didn't have any lettuce, so I just had the salad alone. I used my Misto Olive Oil sprayer instead of the dressing, with a little salt and pepper, and it was so YUMMY!
ReplyDeleteCan't wait to try this. I didn't start to eat Avocado's until last year when I realized just how healthy they were. Honestly, I didn't like the taste either, but I did learn to like it. I even eat Guacamole now too... which if you knew me you wouldn't believe that lol.
ReplyDeleteBut this recipe not only looks delicious but is healthy... you can't beat that.
I had doubts about this one.....I've done tons of your recipes and so far not one flub (except the quinoa fried rice...but that's just because I realized I detest quinoa).....BUT this one WAS AHHHHHHH-MAYYYYYY-ZING!!!!! And so easy!
ReplyDeleteSo glad you liked it! Aww, not a quinoa fan, huh!
DeleteI loved it... I added fresh cilantro because I love the taste it adds to salads. Thank you for sharing your wonderful recipes.
ReplyDeleteNice use of avocado. It would be super if you linked this post in to Food on Friday Series which is all about avocado this week.
ReplyDeleteGreat, easy recipe, had everything I needed at home already. Everyone liked it...even the kiddies!
ReplyDeleteCan't wait to make this today! How do you prepare your chicken breasts? Do you bake or boil? Thanks!
ReplyDeleteThese were grilled.
DeleteWell, there was one state that mangoes were popular since it became one in 1959 --- Hawai'i! I grew up eating mangoes...the best. Now that I live in California, I like avocados. This recipe meshes both my favourite fruits in one. The grilled chicken, the butter leaf lettuce, and the vinaigrette dressing makes it a great (and healthy) California meal. Love it!
ReplyDeleteI love the combination too!
DeleteJust made this for dinner - it was awesome. I used white onion instead of red, just personal preference, but it was delicious!
ReplyDeleteIs white wine vinegar the same as white balsamic vinegar???
ReplyDeleteNo but it would work.
DeleteGreat combination! I can't wait to make it again.
ReplyDeleteI just had this for lunch and it was delicious! I almost left out the mangos because I wasn't sure if I would like them, but I'm glad I didn't. They were the star of the salad for me!
ReplyDeleteI come from India and during the summer we get a massive variety of mangoes but the sweetest of all is the Alphonso which you rarely get here in the US. Would recommend a good Indian store between April - June to get the Alphonso mangoes and you will never go back to having any other kind... Oh by the way it works great in this Salad too.
ReplyDeleteHi there! I'm a loyal follower and doer of your recipes and I'm from Puerto Rico, it's a nice to know you have family over here in my beautiful island :) keep posting yummy goodness
ReplyDeleteCan I use any other vinegar like Red wine vinegar, reg balsamic vinegar or apple cider vinegar or even just regular vinegar?
ReplyDeleteThis is a very good article, I discovered your blog checking all for a related subject matter and came to this. I couldn't find to much other information on this article.
ReplyDeleteQurbani
Just curious, the serving size for this delicious recipe only says 1/4th and I was curious as to what the unit was. A cup? Thanks!
