If you're looking for a healthy snack of appetizer for St Patrick's Day, these green deviled eggs are the perfect solution.
My mom adds hard boiled eggs to her guacamole, so I thought why not add guacamole to hard boiled eggs? The results were lovely, and since I was testing them out for the blog, I actually enjoyed them for lunch.
These are a fun, "clean" snack or appetizer, not just as a green food for St Patrick's day, but for anytime of the year. Loaded with a good dose of healthy fats and perfect for any dietary restriction – vegetarian, gluten-free, weight watchers, low-carb, paleo, and more!
Guacamole Deviled Eggs

Servings: 12 • Size: 1 piece • Old Points: 1 • Weight Watchers Points+: 1
Calories: 44 • Fat: 3 g • Protein: 3 g • Carb: 2 g • Fiber: 1 g • Sugar: 0.2 g
Sodium: 30 mg (without salt)
Ingredients:
- 6 large eggs, hard boiled (recipe here)
- 1 medium haas avocado
- 2-3 tsp fresh lime juice
- 1 tsp red onion, minced
- 1 tbsp minced jalapeno
- 1 tbsp fresh cilantro, chopped
- kosher salt and fresh ground pepper, to taste
- 1 tbsp diced tomato
- pinch chile powder (for garnish)
Directions:
Peel the cooled hard boiled eggs.
Cut the eggs in half horizontally, and set the yolks aside.
In a bowl, mash the avocado and 2 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeƱo, cilantro, salt and pepper and adjust to taste. Gently fold in tomato.
Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color and arrange on a platter.

I love this idea and can't wait to try it out. Do you have issues with the avocado turning brown? Meaning, if I make it the night before and put it in the fridge, will they be brown the next day?

ReplyDeleteGREAT idea! Just a helpful hint. Whenever I make deviled eggs, I find it handy to use a disposable sandwich baggie. Just fill it with the gooey ingredients/filling for the hard boiled egg halves, and close the top. (I prefer the zipable closure kind) Then clip off the corner of one end at bottom of baggie. Simply squeeze the ingredients into the egg "cup" and you have a simple, clean way to fill the eggs! You can control the amount in each egg and even add a creative twist to the top when you really get the hang of things! HA!

I had to give up deviled eggs, as they are a trigger food for me. However, I think that at 1point+ a piece, and being filled with yummy (not triggery) guac, these may be the option I've been looking for!

ReplyDeleteWow, I wish I'd seen this a week ago- I just threw my daughter a Dr. Seuss party and just added green food coloring to deviled eggs to make the green eggs and ham thing, but this would have been so much more delicious! And, since I just can't get past the taste/texture of the yolks (especially when mayo is added- yuck), this might be the perfect solution for me. Thanks!

ReplyDeleteInstead of "discarding" the other 4 yolks, dice them and put them in your bird feeder. Many birds LOVE cooked yolks, and birds that normally won't come to your feeder for seed (insect eaters) WILL come for yolk...

What a great idea! I love guacamole but the idea of eating a ton of chips to consume it is not so appealing.....problem solved!

I'm anxious to try this. I love deviled eggs but have never been able to eat egg salad. (I think it is the amount of Mayo in it that turns me off.) I might make the deviled eggs with guests coming then save those extra yolks and make some guaca/egg salad the next day on whole grain bread!
