This traditional Chicken Salad recipe, made with simple ingredients is perfect for make-ahead lunches. My mom used to make this when she owned her luncheonette and I always loved it on a garlic bagel, but there’s so many ways to eat it! Enjoy it as a chicken salad sandwich, on a bagel, over a salad or in lettuce wraps. It’s is my go-to lunch to keep on hand in the refrigerator to eat throughout the week, or to bring to potlucks and it’s dairy-free, gluten-free, high protein, and low-carb. Here’s what you’ll need to make the best chicken salad at home. See recipe card below for exact measurements:

  • Chicken: Chop 12 ounces of cooked chicken breasts from 1 whole roasted chicken. You can also use rotisserie chicken to save time. See directions below on how to poach a chicken breast if making from scratch.
  • Mayonnaise: I use light mayo to reduce the calories, but feel free to use your favorite mayo.
  • Celery: Chop celery for some crunch and veggies.
  • Red Onion: Swap red onion for scallions or chives.
  • Chicken Broth: If the salad is a little dry, stir in two tablespoons of broth.
  • Dijon Mustard for a little tang
  • Seasoned Salt and Black Pepper for flavor

How to Make Chicken Salad

Chicken salad is really easy to make and a great way to use up leftover chicken breast from a whole roasted chicken. You can also poach the chicken in chicken broth (see below) or use my air fryer chicken breast recipe to make this salad.

To make the salad, remove the chicken breast from the roasted chicken and chop it fine with the veggies, then combine with mayonnaise, celery, onions, Dijon mustard, a little chicken broth if needed and season with salt and pepper.

How to Poach Chicken Breast

If you want to poach your chicken breast rather than using a roasted chicken, follow these simple steps:

  1. Cover chicken breast in broth in a small pot, add water if it doesn’t cover the chicken.
  2. Add salt and pepper, a piece of celery and it’s leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil. Reduce to a simmer and cook 5 minutes.
  3. Remove from heat, cover tight and let it sit for 15-20 minutes or until thickest part of the breast registers 160 degrees. Chicken will be cooked through. Let it cool and chop.

Serving Suggestions

Here are some ways to serve this salad.

  • Wraps using whole wheat or grain-free tortillas
  • Bagels: I love everything bagels or garlic bagels with this salad.
  • Bread, like sourdough bread or your favorite sandwich bread
  • Lettuce wraps for a low-carb option.
  • Collard Green Wraps are another healthy low-carb option.
  • Salad: Enjoy over lettuce, and add other veggies, like avocado, cucumber, or cherry tomatoes.

Proper Storage

Homemade salad lasts about 4 days in an airtight container in the refrigerator.

Variations

  • Mayo Swap: Substitute Greek yogurt for the mayonnaise or use half yogurt, half mayo.
  • Add some diced apples or grapes for sweetness and crunch.
  • You can add nuts like almonds, walnuts or pecans.
  • Mix in dried cranberries or cherries for a pop of sweetness.
  • Add some chopped pickles for a sour bite.
  • Herbs: Sprinkle in fresh dill, green onions or parsley.
  • Curry Salad Version: Add some powdered curry seasoning and chopped cilantro, swap the mayo for yogurt.
  • Chicken Salad Pasta: Mix the chicken salad with some elbow macaroni and a little more mayo to make it a meal.
  • Add more seasoning like everything bagel seasoning, onion powder or garlic powder.

What do I do if my chicken salad is too dry?

Since I use less mayo than most traditional Chicken Salad recipes to keep it light, I like to add a little chicken broth to keep it moist without needing more mayo or yogurt. This is a great dairy-free option.

Another option is to add some fat-free Greek yogurt along with the mayo which also adds more protein.

Ingredients

  • 12 ounces cooked chicken breast, finely chopped (from 2 breasts of rotisserie chicken)
  • 1/3 cup light mayonnaise
  • 1/2 cup celery, chopped
  • 1/3 cup red onion, diced (or scallions or chives)
  • 2 tablespoons chicken broth, optional
  • 1 teaspoon Dijon
  • 1/2 teaspoon seasoned salt
  • black pepper, to taste

Instructions

  • Combine all ingredients in a medium bowl and mix well. Season with salt and pepper to taste.

        I made it with a rotisserie chicken from walmart. I added a little yellow mustard and a pinch of sugar to cut the mayo taste. It was SOOOOOOOO GOOD!

    Great recipe! I had a bunch of chicken tenderloin that I grilled and chilled after making a different meal. I took thenders and cut up into 1/4 teaspoon sized, recipe as follows but diced red onion and celery just as small as chicken. Only addition is dried cranberries. Delicious!!!!!

      1. I don’t keep chicken broth on hand because I always use better than bouillon so I swap out the broth with 2 tablespoons of unsweetened coconut milk and it comes out really good.

    I am so happy to find a chicken salad recipe that I really like. Because I want a little sweetness and more crunch, I’m going to chop up a few bread and butter gherkins into chunks and see how I like it.

  24. I cook chicken in oven with little water, onion and pepper. I also add zucchini relish and celery seeds. Great recipe. I eat on little gem lettuce cups.

  27. Quick, easy and delicious. I measured out about 2/3 of the mayo and added about 2 tablespoons of low-fat yogurt for a healthier twist. Threw in a half teaspoon of dried dill (did not have fresh dill on hand) mixed well with a pinch of salt, pepper, and the tsp of whole grain mustard , threw in a 12 0z can of chopped chicken breast, mixed in the celery and onion. Also added a few toasted walnuts and dried cranberries. Tasted great!

  38. This is a great chicken salad recipe. I made this from memory after reading it during a day. I’m sure I didn’t adhere perfectly but the recipe is so good, it didn’t matter and came out great. The second time I made it, I stuck more closely to the recipe. Same result. It was great. Side note, I didn’t have the Lawry’s seasoned salt either time and just mixed the ingredients of that in its approximate proportion. It’s a nice touch in the recipe. Lastly, I did add a small bit of ground celery seed too. I have no idea if it mattered at all. Thanks for a good go to chicken salad recipe.

  55. Wonderful recipe! I add various items for sweetness or crunch but I will warn you not to make my mistake – tried to make it “healthier” by using half mayo and half greek yogurt. I love greek yogurt but breaks down in the fridge and it ends up being too much liquid.

Poached the chicken and used some of the strained broth to stir back into the salad (side note: I’ve been poaching chicken per Gina’s directions for years and it comes out perfect, flavorful, and juicy every time. Always strain the broth and save for later in the week!) I made this last night knowing we’d be out in the sun all morning and would be hungry for lunch right when we got home. Wrapped 1/2 cup in lettuce for each serving and they were so refreshing for a summer Saturday lunch! Will keep leftovers for tomorrow and Monday’s lunches.

    1. I will definitely try this light chicken salad!! But for a hint about making chicken go further, simmer breasts or hind quarters (cheap!) In water with celery and onion. Remove chicken. Add egg noodles and one or two chicken bouillion cubes to broth, cook until a couple minutes before done, add salt and pepper, any other favorite herbs. Add back half of chicken in bite size pieces, cook 2 more minutes. You have great chicken and noodles. By itself or over mashed potatoes, it’s divine. I know, not diet food!)
      Then make rest of your chicken into chicken salad or a chicken casserole. Two dinners on the cheap!

    Turned out very good , i had shedded chicken so i add a little more mayo because the chicken was sticking together also added dill relish and had to work at mixing to get everything mixed together, but it was worth the extra work

  70. Love this. It reminds me of my favorite chicken salad from Gemini Deli in Melville! Since I am across the country now I am glad to have found a chicken salad recipe I love. The only thing I did differently is add dill and leave out the mustard.

    Basically just used light  mayo, diced celery, salt, and pepper., and Italian spices. I diced it in small cubes that were probably quarter of an inch.  Simple but very flavorful. I let it chill for about 4 hours then used it in a wrap with mixed greens, tomatoes, cucumber. and red onion. It was awesome. Thank you for a recipe that was flavorful and healthy. 

  77. I’ve been using a 1/2 non-fat greek yogurt and 1/2 regular mayo for the dressing. I also use a bit of lemon juice and the zest of 1 lemon.

  89. Just made this and it was yummy, yummy, yummy!!! I've always been leery of "lite" products but the Hellman's lite had just as much flavor as the full-fat stuff. Hubby wolfed it down (I didn't mention it was "lite"). Very tasty!

  95. This was delicious. Seedless grapes would be a great addition also, or pineapple chunks. The great thing is that you can't even tell it is made with light mayonnaise. For a sandwich I used Pepperidge Farms deli flats for the bread, lettuce and tomato and had a 4 point sandwich!
