It’s quick, fresh, filling, and protein-packed—just the kind of weeknight dinner I love to eat on repeat. I initially tested this dish as a foil packet recipe, thinking it would be the perfect all-in-one dinner for the grill or oven. I had a hunch, though, that it might work even better in the air fryer, and I was right. The air fryer gives the chicken those beautiful golden edges while keeping everything tender and juicy. The zucchini and red onion caramelize just enough, the tomatoes burst, and the chickpeas soak up all the flavor from the briny olives, creamy feta, and fresh dill. - Greek Classics: Briny Kalamata olives, salty and tangy feta cheese, and fresh dill elevate this chicken, providing maximum Mediterranean flavor.
How to Air Fry Greek Chicken
Feel free to marinate the chicken for up to 5 hours if that works better for your schedule. See the recipe card at the bottom for printable directions.



- Make the Greek Marinade by whisking together the oil, lemon, oregano, Dijon, and salt.
- Marinate the chicken, veggies, chickpeas, and olives.
- Air fry Greek chicken and vegetables in a single layer at 400°F for 10 minutes. Top with feta and dill.
No air fryer? No problem!
Bake the chicken and vegetables on a parchment-lined sheet pan at 400°F for 20 minutes.

Variations
- Acid: Replace lemon juice with red wine vinegar.
- Vegetables: Use yellow squash, grape tomatoes, or white or yellow onions, depending on what’s available. You can also add other veggies, like bell peppers or mushrooms.
- Chicken: Substitute boneless, skinless chicken thighs.
- Olives: Swap Kalamata for Castelvetrano or another green olive.
- Dairy-Free: Omit the feta.
- Herbs: Swap the dried oregano or fresh dill with basil, oregano, parsley, or chives.
Tips for Success
- Simplify cleanup and line the basket with perforated parchment paper.
- Cook in batches. For the chicken to get crispy, it needs space for the hot air to circulate around it. So, place everything in a single layer and don’t overcrowd the basket.
- Shake the basket a couple of times while it’s cooking to ensure the food cooks evenly.

Equipment

- 2 teaspoons extra virgin olive oil
- 2 ½ tablespoons lemon juice
- ½ teaspoon dried oregano
- ¾ teaspoon Dijon mustard
- ¾ teaspoon kosher salt
- 12 ounces boneless skinless chicken breasts, cut into 1-inch cubes
- 1 medium zucchini, 8 ounces, sliced into ¼-inch thick half moons
- ½ cup cherry tomatoes, halved
- ½ small red onion, cut into wedges
- ½ cup canned chickpeas, rinsed and drained
- ¼ cup kalamata olives, pitted and sliced
- 3 tablespoons feta cheese, crumbled
- 1 tablespoon fresh dill, chopped
Instructions
- Add the olive oil, lemon juice, dried oregano, Dijon mustard and salt to a mixing bowl and whisk to combine.
- Add the chicken, zucchini, tomatoes, red onion, chickpeas, and olives to the bowl and toss to coat everything in the marinade.
- In a single layer, (in batches as needed for smaller baskets), transfer the chicken and vegetables to the air fryer basket and cook 400°F about 10 minutes, shaking the basket 2 to 3 times, until the chicken is browned and the vegetables are tender.
- Top with feta cheese and chopped dill and serve right away.

This was so good!! It was flavorful and filling. I accidentally used basil instead of oregano and it was still delicious. I doubled the recipe, served it with boil-in-the-bag quinoa, and there were plenty of leftovers.
Awesome flavor and really filling! I served it with some pita bread on the side. Next time I’m going to make a sauce with Greek yogurt, some dill, and a little lemon juice to dollop on top!

This recipe has become one of our most favorite WW friendly recipes! Neither of us care for olives, so I leave them out, and I added green peppers. This amazing dish is in our regular meal rotation!
I did this on a sheet pan. It turned out pretty soggy and the vegetables were overdone. Do you have a recommendation to make it better? I will probably need to add more seasoning each time too. It definitely needs more. I marinated for several hours before cooking.
I did the same and it was seriously underwhelming. All the liquid from the tomatoes and zucchini created a very soggy dish. I used the sheet pan because I had a one pound chicken breast and it would have been two or three runs through the airfryer to cook all of it, leaving the earlier batches cold.

I try my best to add other cooking directions in the narrative of the recipe- on this one it is- Bake the chicken and vegetables on a parchment-lined sheet pan at 400°F for 20 minutes.
This was so delicious! I made it as written in an air fryer. It made a lot of food! I used one large chicken breast, 1 zucchini, a pint of grape tomatoes, about 1/4 cup of Kalamata olives, sliced. I did add a Greek Seasoning blend I have as well as the other seasonings. I served it with Fat free, plain Greek yogurt, nut tzatziki sauce would be great.
The only think I would do differently next time (and there will be a next time!), is to use parchment paper and add the tomatoes after 5 minutes so they aren’t quite as mushy. I served in a pita pocket with done fresh basil. It would be great over a salad, or in a bowl with rice, couscous, pasta or some other type of cooked grain.
How would you do this if you don’t have an air fryer!
Maybe just do it in a sheet pan. Will take a bit longer but will be similar.

My husband and I thoroughly enjoyed this. I can’t use chickpeas so I used a couple bell peppers instead, doubling the recipe for leftovers. I will make it again. It wasn’t difficult and came together pretty quickly. I’d have liked a grilled version since mine was a little bit soggy. I plan to share this with some family after I finish my review.

It was easy and simple to prepare and cook. The only ingredient I was missing was the chick peas (next time), so I added some capsicum.
This was delicious! I accidentally added the full can of chickpeas so added another bit more olive oil and seasoning. Ended up stretching this into 3 large/filling portions. We ate it solo, I didn’t find it lacking without a side or grain.
I did two rounds in the air fryer, but could have potentially done it in one if I didn’t dump the whole can of chickpeas in.
This recipe was so yummy! My husband and I both had seconds! This will definitely be in the dinner rotation from now on.

This was such a great flavor combination and relied on things I had mostly had in the pantry. Healthy, delicious and easy to make. I just cooked it in the oven as I made a double batch and was too impatient to try it in the airfryer.

SO easy and SO delicious! Made tonight for my family, my 3 kids and husband gobbled it up. We skipped out on the olives, but added red bell pepper and served with tzatziki and Greek orzo pasta salad- it took an additional couple minutes in my ninja air fryer…but will definitely add this to my rotation!

Do you put this on the air fryer tray or remove the tray then add the chicken and veg directly on the bottom of the basket? It looks like you use the tray from the picture, which allows for more air circulation.

This is a quick and easy meal that is loaded with flavor. It’s a perfect meal for using up produce from the garden. Since we’re having brutally hot temperatures, being able to prepare this in the air fryer was a huge plus. We’ll definitely put this one on repeat.
