Kielbasa Veggie Sheet Pan Dinner
If “quick and easy” is your jam, you definitely need to add sheet pan dinners to your repertoire. Cooking meat and veggies side by side on a single pan means less time, less stress, and less cleanup.
This recipe is modified from the The Wholesome Yum Easy Keto Cookbook (affil link) by Maya Krampf. Her cookbook is filled with lots of gorgeous photos and recipes for those of you on a Keto diet. If you look on Amazon, she has a 5 star review from everyone who purchased her book. Since Keto is typically high fat, I modified this recipe to be lower in calories and fat. Simply swapping the Kielbasa for turkey kielbasa and using less (I used a whole package), I was able to easily make it work.
I chose this recipe because I love sheet pan dinners. And kielbasa provides a nice variation over the usual chicken and beef protein options. Hope you enjoy this as much as we did.

Kielbasa Veggie Sheet Pan Dinner

Ingredients
- 14 ounces turkey kielbasa, cut on the diagonal into 1/2-inch-thick slices
- 1 pound asparagus, trimmed, cut into 2-inch pieces (3 cups)
- 1 1/2 cups 8 ounces grape tomatoes, halved
- 1 large orange bell pepper, cut into 2-inch pieces (1 1⁄2 cups)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F. Line a 20 × 14-inch baking sheet or two 14 × 10-inch pans with foil and grease well.
- Arrange the kielbasa in a single layer on the baking sheet. Roast for 12 to 15 minutes, until it starts to brown on the bottom.
- Meanwhile, in a large bowl, toss together the veggies.
- In a small bowl, whisk together the oil, sea salt, Italian seasoning, paprika, garlic powder, and black pepper. Pour over the veggies and toss to coat.
- When the kielbasa is done, remove the pan from the oven but leave it on. Flip the kielbasa pieces over and move them to one side of the pan, leaving space for the veggies.
- Arrange the veggies in a single layer on the other side of the extra-large pan, or on the second pan if using two pans.
- Roast for 18 to 20 minutes, until the veggies are tender and the kielbasa is further browned.

Such a simple but delicious meal! Turkey kielbasa is lower sodium and higher protein than the traditional kielbasa. To add some fiber, protein, and bulk up the meal I added garbanzo beans. Delicious and easy meal prep! I alternated eating the meal with rice and bread

This is perfect for a “I don’t have time/energy/patience to make a healthy dinner dinner” And I just throw everything in the oven at the same time, small pieces of kielbasa cook pretty fast with the veggies. So many veggies – I love it!
Really tasty and easy to pull together! Based on other comments, I put everything in at the same time as well, tossing halfway through the cook time (about 20 minutes total). While the flavors were great, something about the italian seasoning didn’t jive so I might tweak the spice mix a little bit next time.

This was very good. Only thing I would do different next time is to put it all in at the same time. Halfway through I would turn the kielbasa over. It was overcooked by following the recipe.
I agree! I’ve mastered this one, I make it so much. I put the skinless turkey sausage in at the same time as the veggies and I flip halfway through. I also use parchment instead of foil and the sausage doesn’t stick. Seriously so good, make it once a week!

Why wouldn’t you cook the keilbasa at the same time as the veggies?
Easy to make, taste was great however the 1 tsp salt was wayyyyyy too much. I had to deal with a racing heart after I made it lol. But I’ll just know for next time to maybe reduce the salt to 1/4 tsp. I also will cook the kielbasa for a shorter time period as mine were a little overdone.

made this tonight but using what I had (brussell sprouts, potatoes, green pepper and red onion and celery and used Turkey smoked sausage. Love it, I steamed my potatoes first, and roasted the brussel sprouts first, then added everything else with one table. olive oil, garlic powder, salt and pepper, It was great and very filling

This was great! I didn’t find it too salty. I did roast the kielbasa with the veggies for 20 minutes, and they were perfect.
Overall this was a quick healthy dish. The veggies came out incredibly flavorful and I couldn’t stop snacking on them. I accidentally burned some of the kielbasa but I realize I cut some of them to thin – lesson learned!
So, I didn’t read the comments ahead of time. I still REALLY liked this, but agree it was too salty for me with the amount of salt already in the kielbasa. I LOVED it, otherwise, though (even with the cook time on the kielbasa- I’m one of those people who likes my hot dogs black on the BBQ).
Next time, I’ll probably just cut the salt out of the veggie seasoning altogether and I bet it will be perfect. I love the versatility with roasted veggies, too; I used broccoli, carrots, and peppers and it was great.

This is outstanding and couldn’t be easier (and love it’s few dishes for clean up). Added onion chunks and subbed green beans and yellow squash for the asparagus (what I had in the frig fro the farmer’s market). A keeper.

Cooked this tonight and my wife went berserker over it in a good way. I used Thomas Brand spicy Cajun kielbasa.. Cooked it on the grill for twenty, sliced it up like the recipe said, and added it to the veggies roasting on the top grate. Tossed in my tomatoes and dropped the lid for 10 minutes. We eat good and this was the best thing we’ve had in a while.

This was super easy and a lot quicker than I thought. I did read the comments before hand and found them helpful regarding the amount of salt and oven temp. I found that having the oven on 375 and cooking the sausage on both sides for the same amount of time worked wonders. Still cooked everything with out it turning out too crispy as others had said in the comments, though I was using turkey kielbasa. I also used less salt than recommended — it still tasted great but I can imagine that if I had used the recommended amount the veggies would’ve been too salty alongside the already salty kielbasa. Overall it was delicious and I will be making this again.
I love all of your recipes but this one missed the mark completely. The veggies were too salty to eat with the already salty kielbasa. The cook time for the kielbasa is too long. It’s already cooked so roasting it at 400 degrees for over 30 minutes made it crunchy.
This was very good. My husband doesn’t like asparagus so I subbed broccoli. He liked it. Easy clean up. Will definitely make this again.

Fast and very easy cleanup. I’d follow other suggestions and lower the oven temp as well as decrease the amount of salt. The seasoning was quite tasty but the kielbasa was too Brown so I removed it while the vegetables cooked, then added it back in to reheat. Otherwise, it’s excellent!
Made this tonight. Yummy! I used pork/beef kielbasa since that’s what I had on hand. And same for veggies. No asparagus so tossed in carrots, red onions, and zucchini with my peppers and tomatoes. I would cut back on the salt next time. But still very good. Love that it’s easy to prep and easy to clean up. Plan to use some of leftovers tomorrow morning with my eggs! Thank you!!

My husband and I really enjoyed this; it’s quick easy and delicious. I roasted some potatoes too and it was a very satisfying meal.
This was delicious, but I found that roasting the kielbasa first resulted in a few burnt sausage slices. If your oven runs a bit hot like mine, I’d recommend just roasting the kielbasa and vegetables together rather than starting the kielbasa first.

This was excellent! Made it exactly as listed once, and then the second time with an extra bell pepper thrown in for some additional veg. Super delicious, easy-clean up, and a good choice for those nights where time is short.

We just had this for dinner and ate as is, however my son dipped his kielbasa in A1 sauce. Personally I’ would use ketchup if I were to use anything for the kielbasa.
I served it with some Trader Joe’s cauliflower gnocchi that I browned in a skillet with a little olive oil. It was divine!

Great concept. I will probably make a few modifications next time though to please the family. Tomatoes were quite tart. I’ll probably just use a few tomatoes next time and up the portions of other veggies so my toddler and husband will enjoy it more. Vegetable seasoning is wonderful! I will note that I did half beef kielbasa and he turkey just to see the difference (don’t usually cook with this) and the beef kielbasa browns quickly and would need less time to not be charred. The turkey kielbasa browned perfect on lowest time. Gina – do you have any suggestions of other veggies that I could substitute for tomatoes that would cook a similar amount of time?

I’m new to cooking. I have a disability that can make cooking difficult. I’m trying to be healthier though so giving cooking a try. This recipe seemed easy enough. It turned out very well! Based on comments I did omit the salt and only cooked the kielbasa with the veggies instead of putting them in the oven the first time. I split it into 3 filling meals and am enjoying every one. I’m looking forward to trying your other recipes!
Can sheet pan style recipes essentially be done in the air fryer also? I just got an air fryer so of course i am trying to turn every recipe into an air fryer recipe! LOL Thanks so much for providing these great recipes and sharing them with us.
