Skinnytaste Dinner Plan (Week 41). Â While I love Labor Day and the parties and BBQ’s that go with it, it also makes me a little sad because it is the unofficial end of summer! Back to school time!! This week I featured some of my favorite family-friendly meals including Madison’s Favorite Slow Cooker Taco’s from my new cookbook Skinnytaste Fast and Slow (recipe coming tomorrow!).
Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here.

Tuesday: Madison’s Favorite Slow Cooker Beef Tacos (recipe coming Tuesday!)
Wednesday: Baked Potato Soup
Thursday: Â One Pot Cheesy Turkey Taco Chili Mac
Friday: Leftovers
Saturday: Crock Pot Balsamic Pork Roast with  Broccoli and Orzo
Sunday: Spaghetti with Sauteed Chicken and Grape Tomatoes
Shopping List:
MADISON’S FAVORITE BEEF TACOS
- 2 pounds 93% lean ground beef
- cumin
- kosher salt
- chili powder
- paprika
- dried oregano
- onion
- garlic
- red bell pepper
- tomato sauce
- bay leaf
- 16 corn taco shells (such as Ortega)
- shredded romaine lettuce
- shredded cheddar
- plum tomatoes
BAKED POTATO SOUP
- russet potatoes
- small head of cauliflower
- fat free chicken broth
- 1% reduced-fat milk
- salt and freshly cracked black pepper
- light sour cream
- reduced-fat shredded sharp cheddar cheese
- chives
- bacon, cooked and crumbled (you can use turkey bacon if you prefer)
ONE POT CHEESE TURKEY TACO CHILI MAC
- garlic powder
- cumin
- kosher salt
- chili powder
- paprika
- oregano
- 1.3 lb 93% lean ground turkey
- onion
- garlic
- red bell pepper
- can rotel tomatoes with green chilies
- can pink or red beans
- tomato sauce
- fat-free refried beans
- reduced sodium chicken broth
- DeLallo Gluten Free pasta shells (or DeLallo whole wheat)
- part-skim shredded sharp cheddar cheese
- fresh cilantro
- scallions
CROCK POT BALSAMIC PORK ROAST
- 2 pound boneless pork shoulder roast
- kosher salt
- garlic powder
- red pepper flakes
- chicken or vegetable broth
- balsamic vinegar
- Worcestershire sauce
- honey
BROCCOLI AND ORZO
- uncooked orzo pasta
- fresh broccoli florets only (no stems)
- garlic
- extra virgin olive oil
- salt and fresh pepper
SPAGHETTI WITH SAUTEED CHICKEN AND GRAPE TOMATOES
- 2 skinless chicken breast halves
- cooking spray
- dried oregano
- dried basil
- kosher salt and fresh pepper
- gluten-free or whole wheat spaghetti
- grape tomatoes
- garlic
- extra virgin olive oil
- fresh basil

Love all your recipes! We use them all the time to meal plan… in fact just the other week I got my husband to help me create a bunch of freezer meals to just thaw and toss in the crock pot.
